Archives For June 2012

I saw the saddest, little, mangled bird sitting on my BBQ. He looked like he had been attacked! No feathers to speak of. He looked scared and lost. While I was watering the flowers on the deck, it was just looking at me. I was a little concerned he might be scared from his apparent attack and fly at my head or something trying to defend himself from anything that frightened him. So I kept my eye on the little guy, feeling bad for him and afraid of him all at the same time. I came inside and watched out the window, waiting for his attacker to return. I wasn’t sure what I was going to do, but something! That’s for sure. Then the attacker appeared……he sat beside him on the BBQ. He hopped along the handle of the BBQ, closer, and closer, and closer, until all of a sudden the victim opened its mouth wide and the attacker put something in it! It was the baby that belonged to the mommy Robin I had been keeping an eye on! How is it I can be soooo stupid sometimes? Then I watched in delight as they made a feeble flight down to the grass for breakfast. Don’t you love a Happy Ending?

I woke up starving again, but waited on the coffee so I didn’t make yesterday’s mistake and get all buzzed on caffeine and eat the pantry and the fridge! I had a nice, warm bowl of oatmeal topped with an apple. I like to chop up an apple, sprinkle it with cinnamon, and put it in the microwave for two minutes. Then I stir it in with my oatmeal. I highly recommend it. Unless of course, you don’t like apples……or oatmeal. Then I highly recommend something completely different.

Went to the dentist for a cleaning today! I think I need some white strips. I wish that could be an at home, inexpensive, tasty, pleasant, 10 minute process. Don’t you?

I stopped for gas and a snack. I went to my High School QT. that thing has been there for YEARS!! My snack at QT always used to be a diet coke and peanut M&M’s. Here is my new “go to”. I love that they offer fruit now! The Sugar Free White Peach Tea is pretty tasty too! And the bathrooms are almost always clean! BONUS!

Lunch was a Salad Bar salad from HyVee, with no pics. Forgot. My bad.

Afternoon snack…….

Dinner was easy, low points, and I would say “Kid Friendly” too!

Italian Chicken Tenders

I think I found this recipe on the back of the Parmesan package a long, long time ago.

1 lb chicken tenders
1 packet Good Seasons Italian Dressing
1/2 C. Parmesan Cheese
1/2 tsp garlic powder

Combine the dressing, cheese and powder in a shallow dish.

Rinse the chicken and dip into the mixture, coating both sides.

Line a baking sheet with foil and spray with cooking spray. Place chicken on baking sheet and bake for 20 minutes at 425 degrees.

It taste great as is, or on a Caesar salad, which is how we ate it tonight. It’s also delicious with red or white sauce served with pasta. Makes a great leftover lunch too!

For the Points? I weigh my chicken to determine how many ounces it is. The chicken is 1 PPV per ounce. I add 1 PPV for the coating.

Usually when we eat salad, I put all of it, including the dressing, in a big bowl, give it all a good stir, then chop it all up. The dressing really seems to go a lot further. Just a thought.

This is the Caesar I like, and it is FIVE PPV for 2 Tablespoons. I used 3 T. for us combined, and it was plenty.

I tried this tonight on some sautéed zucchini. Not a fan. Too rich. Maybe I tried it on the wrong thing. I only used about 2 Tablespoons. Just wasn’t for me.

After dinner, the dogs and I headed out for a good walk……..that turned into a 45 minute stroll and lots of sniffing. It was good to be up and active and in the great outdoors, but I don’t think that earned me any activity points.

Refresh…I can eat 26 points a day.
I can earn Activity Points by doing exercise.
I have an allowance of 49 points that I can dip into if I chose.
I should drink a minimum of 6 (8 oz) glasses of water each day.

The food I ate today and it’s PPV.

I like this quote. My “miracle” weighs 150 pounds.

“love the life you live, live the life you love”

These are the first things out of my mouth if someone wakes me up from a nap, or before I’m ready to get up in the morning…..

Most nights, I could sleep through a thunderstorm without a problem. If I do wake up during a storm, I assume if it’s really dangerous, Mike will wake me up, right? Well, he kinda thinks I’ll do the same thing for him. So if a storm comes in the middle of the night, and we are supposed to go to the basement, we’re screwed. Because I often sleep so deep, I hate to nap. I get to sleeping really deep, then I wake up startled, not knowing where I am, what day it is, am I late for something? Then I’m baffled why I was even asleep! So this morning when the alarm went off at 5:30 am, for the third Wednesday in a row for Bootcamp, I was startled and confused. I was really sleeping good! I’m usually only up this early to go to the airport for vacation! When I realized I hadn’t packed anything for any kind of fabulous vacation, I remembered I was just getting up for a small trip…..down the road……to Bootcamp. Here’s when I made it to the kitchen for a cup of Jo.

Who knew clocks ran all night long? They must be exhausted!

Pre-workout breakfast.

Post-workout breakfast….

Egg, strawberry jam and a spread of Laughing Cow Cheese all on an English Muffin……..Awesome combo!

Afternoon snack!

I had a little shopping to do this afternoon……I bought two Size M’s!! He he!

My skirt was a bargain for $9.99! It feels like I’m wearing PAJAMA’S! BONUS!

The dress was NOT $9.99, but who cares??? It’s a size M!!! Yes, I am posing. Hey, I had to get my IPad out of the photo, and give a little sassiness to my picture!

Lunch…..salad bar…….

Now for dinner!

Zucchini..

Roasted tater’s and onions…..

And some baked tilapia……In a cast iron skillet…..with butter!

Refresh…I can eat 26 points a day.

“love the life you live, live the life you love”

I woke up HUNGRY! I decided to just have some coffee to start, so I could really think about what I wanted to eat for breakfast……..yes, I had four cups while pondering my eats and completing my morning task. You think I wasn’t wired after all that? That’s right…..I had some Vanilla, a little Butter Toffee, Caribou and my all time favorite? Donut House Cinnamon Roll!

Well, now I am bouncing around the house. I had 1/4 C Kashi (1 PPV), the last cubes of the fabulously creamy Havarti (2 PPV), the last of the Cheddar Soy Chips (3 PPV) AND the last of the Turkey Skillet Lasagna (3 PPV)! It all tasted great, but I didn’t sit down and actually enjoyed any of it. Looks like fruits and veggies the rest of the day!

This was my snack around noon….grapefruit….(should I cut down on the coffee?)

Then I ate 2 of these…..(4 PPV)

Then I remembered this great…..old…..WW idea. Low Fat Graham Crackers/Fat Free Cool Whip Frozen Sandwiches! Each one is 2 PPV!

Made em…

Froze em…….

Topped em with chocolate……

Ate em! Both.

Oh, did I say fruit and veggies the rest of the day?

Before I left the house for a little work….I had some leftover chicken. wow. 1 good choice today. (2 PPV)

While out and about, I did eat this.

Dinner was taco salad. While shopping for ground turkey, I saw this and thought we should give it a try. Then I got to thinking…..if Pork is the “Other White Meat”, what exactly is Turkey? The “OTHER Other White Meat”? Well, we ate the “First White Meat”.

Cooked with some onion…..

Love Williams Taco Seasoning, but they have several varieties and I accidentally bought the Tex-Mex and almost DIED while eating dinner! It tasted good, but waaayyyyy too hot for me!

I grabbed this at the salad bar to simplify my dinner prep…….

My salad had no chips, little cheese, and was topped with salsa and sour cream. Mikes had chips, more cheese and Fat free Catalina Dressing, which I love, but ate too much earlier in the day and the salsa is zero PPV!

My mouth was ON FIRE! But I did really like the chicken.

To put out the fire in my mouth, I decided these might do the trick!

I only ate half. Shocking! (2 PPV)

I felt like I had a large softball lodged in my knee after the lunges at Bootcamp. I thought a days rest and some Advil would help, and I could do cardio at night, but it was still pretty achy, so I took the day off, but my points didn’t really end up too awful, I just ate the wrong foods.

Refresh…I can eat 26 points a day.

“love the life you live, live the life you love”

I ran on the treadmill for a mere 20 minutes on Sunday. I really was crunched for time, but wanted to get at least a little cardio in before Father’s Day got started. I had things to do, places to go, and people to see! I don’t like to run, and I really should refer to Sunday’s cardio as more of a jog, but getting my heart rate up was the goal, and I achieved that. I get a little panicky when I run, and I believe it has to do with childhood memories of running in gym class, then unexpectedly having asthma attacks with no inhaler available. I have learned to try to take my mind off of the breathing and running and focus on my body and my muscles, and what the cardio is doing for my heart and overall health. Sometimes I count weird things. Like how many steps do I run in a minute, or how many steps does it take to run a certain distance? Sometimes I can really zone into the music that is playing and up my pace. Sunday I tried different strides. I know that sounds weird, but I’m weird, so really it makes perfect sense. I wanted to be the person that looks like they almost float when they run. It hurts me when I see that person running that almost looks choppy? Soon, my arms were close to my chest and I was making a fist. I imagined myself as Rocky in training. Before I knew it, I was throwing jabs and felt the need to jump up and down with my fist in the air, but on a moving treadmill, I had the wisdom to think that through. Then all I could think about was, I hope Mike doesn’t walk by and witness my “Rocky” face. I’m not sure which character I’ll be portraying today on the treadmill, but I’ll keep you posted! It certainly made the time fly!

I started yesterday off with a 7:00 am trip in for an oil change, trying to be the first customer in line! Tess had come in town for Father’s Day, so she stuck around an extra morning and assisted me in my errands. We hit the Starbucks for breakfast while waiting on the car, and I enjoyed another “Perfect Oatmeal” made with steamed skim milk. I didn’t take my favorite toy, my IPad, so this is last weeks picture of my new favorite breakfast out……

Then I was off to work for a few hours while my exhausted college student napped on the couch with the dogs. 🙂

By the time I got home, it was meal time again. The fridge was pretty stocked, so I started pulling things out for a nice filling lunch……Grilled zucchini, cherries, grilled chicken…feta…tomatoes….topped with balsamic vinegar and olive oil.

So my body is super duper sore from Saturday’s Bootcamp, and going again is going to KILL ME! A nap and some Advil were prescribed for the afternoon. (I’m not a nap person. Makes me cranky. But it was just what I needed.) Then off to Bootcamp. I swear every time I walk out the door after an hour of class, I think it was the hardest class yet. Yesterday was no exception. All I could think about was dinner, Advil, shower…and bed.

Tess stuck around for dinner too! FREE FOOD! I had her order take out and have it there when I got home. Perfect timing. Mike had his usual salad, and I convinced Tess to try my new favorite, the Hawaiian Skewers. She ordered them with steak, I had Chicken. She eats ridiculously slow (like beyond healthy slow eating, it’s annoying slow eating). But today is was convenient, because I totally forgot to take a picture of my food, so I got a pic of hers, with the steak, of course.

We all had a great chat over dinner, and back to Pittsburg she went. 🙁

Mike made me watch the Bachelorette with him, then I got my much needed shower and sleep……Thank GOODNESS Ryan is gone!

Happy Father’s Day!

June 17, 2012

The best way to keep within your points at a family function? Host it!

I really like to have the family over and cook. I also like to keep the menu point friendly, but in a way that nobody feels they are eating light. I just want everyone to enjoy the meal, and of course I want everyone to feel satisfied!

Sidenote: I can make a gazzillion bazzillion excuses to not exercise. Company arriving at my house at 9:30 am sounds like a really good reason to not exercise. When would I have time? How can I exercise, AND shower, and cook? But I am feeling pretty good about the Bootcamp thing and I really want it to pay off in the end. We go to class three days a week, and then do cardio on our own three days a week. I knew if I didn’t get it in this morning, it wouldn’t happen tonight. In the middle of muffin baking and coffee making and before anyone had a chance to get there, I took a break and went to the treadmill. I only did 20 minutes, but I ran most of it! Yay me!

Whats for breakfast? Who doesn’t like fresh fruit? (my 17 year old niece!)

You gotta have a muffin! These are fat free, but I don’t think they taste free of anything!

You just add water! I love EASY!

I made mini’s. Two muffins….3 PPV.

Then a skillet full of eggs, turkey sausage, crumbled bacon, potatoes and topped with cheese. I also made Pillsbury reduced fat biscuits, but somehow they got left out of the family photos of food?

Everyone had second’s, but me! 🙂

We had a great morning of laughs and food and pots of coffee, but I ate toooooo many of the fat free muffins!

We are going to the in-laws for BBQ! Eeeekkkkk!

I played it cool. Mom Rita had lots of fresh fruit and a big green salad, so I loaded up on those, had some turkey, (no bun, no cole slaw, no potato salad, and one bite of Mike’s Apple Pie) and a couple of dill pickles and one deviled egg.

By the time we got home, it was close to dinner time, so I ended my food for the day with the last of the fruit from brunch. I might have had a fruit overload today.

Refresh…I can eat 26 points a day.

I have an allowance of 49 points that I can dip into if I chose.

“love the life you live, live the life you love”

I wish my butt looked like it felt from Bootcamp. Do you know that feeling when you have just finished lifting weights and your whole body feels a little bulky? I love that feeling! Then you look in the mirror and see you just look like you? That parts a bummer. Today my legs and butt are killing me from all the squats in Bootcamp yesterday morning, but this tells me I did them right. I just wish my butt looked as tight as it feels right now! 🙂

Yesterday’s Eats…

Before Bootcamp……..Greek yogurt and fruit.

After Bootcamp (I was starving!), so I had some more protein…

Egg whites, cheese……

Lunch was a salad with a little chicken, feta, tomatoes…..and one talespoon of my Tzatziki . I could eat this stuff on Toast! (actually, that sounds gross)

afternoon snack…..

These are tiny, but tasty. 1 PPV

And then later…….a few soy chips…..

Dinner was a new discovery! I combined a few recipes together and came up with this. I can’t wait to make it again. Healthy….Easy….Delicious!

Turkey Skillet Lasagna

Before the cheeeeeeese……

After the cheeeeeeese…….

I gave myself a 4 oz pour with dinner. It’s good for my heart and we were celebrating. We moved into our house 13 years ago this week! It was one alcohol exception this week, and I included it in my daily points!

Table for two please! (kitchen bar and a couple of stools will work too)

Refresh…I can eat 26 points a day.

Turkey Skillet Lasagna

June 17, 2012

I was browsing Pinterest looking for something different, yet healthy, yet EASY for dinner. I came across a recipe for skillet lasagna. I love lasagna and was intrigued by the whole “skillet” meal, because I also like a one dish meal! When I went to check it out, I couldn’t find it, so referred to my buddy Google, and of course found several options. None were as easy as I hoped, so I combined a few things from a few of the recipes that I found, and came up with my own. Success, and only 7 PPV per serving!

1 lb ground turkey, 93% lean.
1 chopped onion
2 jars marinara, or spaghetti sauce, or whatever you like best
6 whole grain lasagna noddles, broken into bite size pieces (cool, huh?)
1 C. Low fat cottage cheese
2 egg whites
1/4 grated Parmesan cheese
Shredded mozzarella (1/4 to 1/2 C)

I love this Ragu. It’s Light Tomato Basil. These noodles cooked up great!

Brown meat and cook onion together. Drain. Add jars of sauce. Add noodle pieces and cook on medium high heat for 20 minutes, stirring often to avoid sticking, until noodles are tender.

Combine cottage cheese, egg whites and Parmesan cheese. Drop by spoonfuls onto lasagna and continue cooking for additional 5 minutes. Top with mozzarella for garnish.

This recipe makes 6 LARGE servings at 7 PPV.

Dinner tasted like I spent all day in the kitchen, instead of all day on my IPad looking for an easy, healthy recipe! 🙂

“love the life you live, live the life you love”

After my “No Weigh-In” WW meeting, and the boost in motivation I needed, I headed to Hy-Vee to stock up on fruits and veggies for the week. I like to stroll through the Health Food section too, just to check if there is anything new I think I need to try.

Yesterday, I found these….Soy Chips, Cheddar Cheese. 17 of them are 3 PPV. They remind me of a rice cake and they were pretty tasty!

And I found these……they were both on sale, so I had to try them!

These are also soy chips, but these are Cinnamon Streusel. 10 of these are 3 PPV. I loved these. Crispy and sweet! Great mid morning snack, but you have to be able to stop at 10, and that was hard.

Yesterdays exercise included mowing the lawn (I love the new mower, but I did stick with a push mower, vs. the self propelled mower, because it’s a good 45 minute workout!) and trimming the lawn, followed by bathing both dogs after they literally rolled in something dead in the backyard. That was a real chore, so I called it a day on the activity.

We were going to a friends house for dinner with a few other couples, and I had no idea what the menu was, so I tried hard to save up my points for the unexpected evening. Dinner at a friends could not have been a more perfect menu! Grilled chicken and pork chops, corn on the cob and a lettuce salad was what ended up on my plate, but there was also lots of beer, potato and macaroni salad, and tater tots, all of which I politely passed on. I took little packets of Crystal Light and my own glass, and it was easy and I stuck with my plan!

Yesterday’s eats…..

Breakfast was my new Soy Chips and an apple.

Lunch was the last of my soup and some fruit….

I had a light snack before going to our friends for dinner….

I took one of my favorite dips and a platter of raw veggies and pretzels for dipping……I buy this at Costco and 1 T. is 1 PPV. If you haven’t had it, it’s the sauce you would eat on a Gyro! It is soooo good!

Refresh…I can eat 26 points a day.
I can earn Activity Points by doing exercise.
I have an allowance of 49 points that I can dip into if I chose.
I should drink a minimum of 6 (8 oz) glasses of water each day.

The food I ate today and it’s PPV.

Breakfast = 9
Lunch = 3
Snack = 3 (pretzels, veggies and dip)
Dinner = 11

Total = 26

Activity Points Earned Today = 3
Remaining points from my 49 Points Allowance = 49

I found so many great quotes today that were so appropriate, it was hard to pick! I went with this. It is soooo me in my weight loss journey.

The "No Weigh-In" Pass

June 15, 2012

Today’s blog is a pretty good example of why I titled my blog……

“The Weight of My Weight”

The stress of “Losing Weight” is something I have lived with for as long as I can remember. Even at my lowest weight, when I feel so much better, I know I’m not done, and the road is longer. I don’t remember a day that I didn’t get out of bed and my weight wasn’t my first thought when my feet hit the floor. My weight is on my mind when dressing, when cooking, when shopping, when vacationing, when meal planning, when exercising, when eating. Hopefully one day that will change.

I certainly live a happy life, and I think my personality has allowed me to be able to put those thoughts to the side throughout the day and truly live. I know I am a naturally happy person that likes to have a good time, make people laugh and experience all that life has to offer whenever I can. So I hope I don’t sound extremely depressing. When I am writing the blog, my weight and my struggles with it are on my mind the most, and my deepest thoughts regarding it come out. The purpose of the blog is to be honest, share, and maybe let someone else know they are not alone in their own struggles.

Well, I said I had stopped beating myself up, but I am truly not looking forward to weighing in today. If I am no longer 160 something, I am going to feel extremely defeated. I know it may sound ridiculous, since I am only talking about 1 or 2 pounds, but they are critical pounds, pounds I really had to fight to get off, and in one afternoon of bad decisions, I feel certain they are back. I know they will come off. I will never quit. I will get to 150 pounds. But the breakthrough to see 160 something was a really hard task and a huge accomplishment, and now I have to do it all over again. I woke up every morning this week and went to my scale, which never says exactly what WW scale says, but close enough for me to know that I did gain. I have been super cranky, short tempered and irritable all week. When I go to my meeting today, I am going to opt for the “No Weigh-In” pass. It’s not something I would recommend doing often, but today I know I need the meeting, but don’t want my WW book to have 170 something printed in it. I have a plan for the week that will bring me back to the 160’s, and then I can continue.

I know for me to be successful, I have to have a plan.
Here is the plan for this week……..

1. no alcohol
2. lots of water
3. 6 days of exercise
4. no dipping into those extra points
5. lots of fruits and veggies and lean protein.

Here are yesterday’s eats…..

Breakfast….Oatmeal pancake.

Oatmeal Banana Pancake

Lunch was an apple, string cheese and cinnamon almonds.

Dinner……Grilled Chicken, baked fries and salad topped with Parmesan cheese.

“love the life you live, live the life you love”

This is a breakfast I eat often, and I always like it, but I am also always tweaking it a bit. I have made a pumpkin version recently that I liked too. This one I made without using the packet of instant oatmeal, and it turned out tasting just as I hoped it would!

Today’s Oatmeal Banana Pancake (4 PPV)

1/2 smashed banana
2 egg whites
1/3 C. Quick Cooking Oats
1 packet Truvia
1/2 tsp vanilla
1/2 tsp cinnamon

Smash the banana, add all other ingredients, and mix well. Heat skillet on MEDIUM LOW. Spray with cooking spray. Pour mix onto skillet and heat about 3 minutes, then flip and cook an additional 2 minutes.

I topped mine with 1 T. Better N Peanut Butter and the remainder of my banana. (1 PPV)

Loved it!
