Online Bootcamp

My 8-Week Bootcamp will end this week. I am so glad my neighborhood girls asked me to join! I get really bad about remembering different exercises to do, and I get bored. So having someone tell me exactly what to do, and changing things up a bit, was exactly what I needed. It was also nice to have workout buddies!

Ironically, pictures of me were posted on the Bootcamp 360 Facebook page this week! Not my most flattering look! I think this move is called the Lumber Jack? You swing the weight up over your head as you stand up, then swing it down as you squat. It’s a bitch!

I don’t remember the name of this one, but I learned how to stick my butt way out! Like THAT was a challenge!

As this Bootcamp ends, I knew I needed a new challenge. You know that saying……”A friend of a friend of a friend” kind of thing? Well, this is more a “blog from a blog from a blog” kinda thing. I discovered, through another blogger, that I found through yet ANOTHER blogger, a Bootcamp was being offered online for $25. I signed up! Here is where I found the info for the Bootcamp. The official start day is today, so I am doing my best to do them both this week.

Not a real exciting blog, but lots of variety and some weird choices.

This butter spray is great for just a little taste of butter, and something to make your dry toast, not so dry. Just a few sprays does the trick.

It is also great on Popcorn!

Today’s breakfast was a huge plate of food for only 4 PPV!
4 egg whites = 1 PPV
2 slices of toast (Trader Joe’s) = 2 PPV
1 slice, Kraft 2% Sharp Cheddar, broken into pieces = 1 PPV

I made Beef Stroganoff on Friday, then we ended up going out to dinner. I had to have a little before I threw out what Mike didn’t on Sunday while we vegged around the house all day. 4 PPV.

Later…..more leftovers. This Pizza was DELISH! 5 PPV.

After Bootcamp, I really wasn’t hungry, but they say you’re supposed to eat SOMETHING after you workout. A few bites of turkey burger, some fruit and veggies. Total 4 PPV.

Use this in place of Beef broth or Chicken Broth. Use it in place of water for your taco meat. Sauce veggie in it!

Sprouted Wheat Bread

This bread is super dense and full of flavor. Love it! Makes the best toast and egg white sandwiches!

Chicken Meatballs
4 Meatballs = 4 PPV
Sure, you can eat these with pasta and sauce, but how about chopped up in you salad? Or on a low calorie wheat bun and make your own Grinder?

Ingredients: Bananas
I think you just eat them out of the bag? They have a chewy texture much like a raisin. I love bananas and was super curious when I saw them on the shelf.

GoLean Crunch

This is not a Trader Joes only product, but I did buy it there, and I buy it all the time. I don’t buy cold cereal anymore. It’s one of those foods I had to give up. But I use this in an way I would use Granola. It’s high in fiber and high in protein! I like to eat it dry in a baggies for a snack, on top of smoothies for a little crunch, or on apple slices with peanut butter.

Luna Bar

White Corn Tortillas

It was awesome on the pizza and I only had to use 4 oz. for the entire pizza.

Unsweetened Vanilla Milk

It is a great milk alternative.
I like to cook my oatmeal in it for a little extra flavor and creaminess.

1 T = 2 PPV
Honey is great on a lot more things than just a biscuit!
Waffles, toast, PB sandwich, in your tea or oatmeal!

Better n Peanut Butter
1 T. = 1 PPV
I love this stuff and it has come my complete Peanut Butter replacement.
This is the Low Sodium, and I love that I have that option!

Steel Cut Oats
1 C = 4 PPV
Not Trader Joe’s brand, but it’s where I buy this.

Ok, really probably just lazy. But for some reason that song got stuck in my head and it wouldn’t go away. It was an awesome Sunday doing a whole lotta nothin.

Crockpot Oatmeal DOES heat up just fine! I was glad I had it for my Sunday morning breakfast…….

I made a trip to Trader Joes on Saturday and picked up a few items I hadn’t tried. I had heard of Cookie Butter, but really didn’t know what it was. I’m still not sure I know what it is, but I do know it could be dangerous, and a little goes a long way! In WW world, 1 T. is 2 PPV. I really wanted to try it on my oatmeal, so I only added 1/2 T. and some strawberries. It was like Strawberry Shortcake Oatmeal! I loved it!

Creamy and Sweet!

I am loving my new frother too! My mom came over for coffee, so I had to show it off. I thought it tasted AWESOME! She said it was fine.

I’m going for low point options throughout the day. Pizza is on the menu for dinner and I know I want more than one piece, so planning is key.

After church we came home, put on cozy clothes, and literally vegged out all afternoon.

Lunch…….low fat cottage cheese topped with tomatoes….cantaloupe and strawberries.

I overheard two ladies at Trader Joes talking about the art of picking out a good, ripe cantaloupe. So I jumped right in and asked one of them to PLEASE pick one out for me. They totally hit the jackpot!

I couldn’t stop thinking about my Cookie Butter. (I’m going to have to put that on the top shelf, in the back.) I decided to make Apple Sandwiches.

I originally saw this on Pinterset a while back, then I found it again recently on
Peanut Butter Fingers.

So I sliced up an apple. Don’t you love the star in the middle? I didn’t want to waste any, so I nibbled on the top….

Then I wasn’t sure of the easiest way to get the core out, since I don’t have the proper tools. I tried a beer cap. My slices were too thick! But you know you thought it was a clever idea! Then I found my tiny saw for Pumpkin carving. Perfect!

I filled up the Tablespoon, as FULL as I could get it!

I didn’t see any reason to add anything else….So I licked the spoon, which was really difficult due to the shape of the spoon, but I was certain to get every single little taste of this 2 PPV of Cookie Butter!

See the cute little knife in the above picture? Yeah, that died in the garbage disposal later. Ooops.

It made a perfect 2 PPV Sunday afternoon snack! Probably would taste good any day of the week, any time of the day. 🙂

Dinner was a favorite Pizza. I call it my Thai Chicken Pizza. I am guessing most people would call it that?

I really like this Lite Mozzarella I bought at Trader Joes. 1 oz is 1 PPV.
I used 4 oz on the whole pizza, and it was plenty!

Ten minutes later…….

I served up two and half slices for myself along with an awesome spinach salad. It included the main ingredient…..Spinach, along with a few Walnuts, a bit of Reduced Fat Feta, Olive Oil, Cinnamon Pear Balsamic Vinegar and a Dash of Cracked Black Pepper.

1/6 of this pizza was 7 PPV.

Friday nights dinner was out, but it was on a quiet patio, we visited with a few friends, passed on the drinks, and we were home before 9:00 pm. We cuddled up on the couch to watch The Bachelorette (Men Tell All), and Mike was asleep before the first commercial. It was good to just chill. Before going to bed, I put together a quick and easy Crockpot Oatmeal Breakfast.

Crockpot Oatmeal

I DID make it to Bootcamp on Saturday morning and started off the day with a good workout!

When I got home, I enjoyed and enormous bowl of oatmeal, topped with a Tablespoon of Better n Peanut Butter, and some sliced banana. I like my oatmeal sweet, so I also sprinkled some Truvia on top. 5 PPV.

So creamy and Filling!

Breakfast was delicious! I was home by myself and the crockpot was overflowing with oatmeal, so I separated it into serving bowls and placed Saran wrap on top. I think they will be fine heated up, maybe with a little almond milk, and eaten through the week. I did top one with a few dark chocolate chips! Hope it taste as good as I think it might!

Ran lots of errands, including the drive thru car wash. The guy at the window at the car wash could tell I was having a hard time finding my credit card, so he says, “I’ll just give it to you for free today.” I’m like, “Oh, no, thats okay. I have this other card I can use.” He insist. What a sweetie! I tell him I promise to “Pay It Forward” today, and he gives me a big grin and a thumbs up!

So I meet a friend for lunch, my treat, on behalf of the nice guy at the car wash! Lunch was at a spot we have met at the last few times we have had lunch, and I always order the same thing. And I always get crap for it, but all in good fun. We sit at the bar, cuz that’s how we roll. My friend knows the bartender’s……apparently all of them. 🙂 I order the taco salad, with chicken, no tortilla chips, and all of the toppings on the side. Smart, right? Well, only if you are a “careful eater”. That’s what I’m calling myself, the “careful eater”. I totally make fun of myself when I order it because I feel like I am being a pain in the ass. I don’t actually like ALL of the toppings that come with the salad, but ordering them all on the side sounds much less complicated for the bartender and the person assembling my plate, than saying….”No this or that or this, and these and these and these on the side, please” So I just get it all on the side and eat what I want…..because who is control of me? That’s right. I am.

Oh, I forgot until I looked at this picture that I first ordered water with lemon, then added a Diet Coke, then got cold in the very efficient A/C and ordered coffee too! Geeezzzz, maybe I WAS being a pain in the ass. But I was very friendly about all of my special request, and I smiled a lot. Look at all of my little cups of sides!

I remember reading one time that the way people treat their waitress or waiter, shows what type of person they are. And I thought, well, why would you not be kind to your waiter or waitress? They might not appreciate you being rude and SPIT in your food! Kidding. But I am always nice to the waiter and waitress. Really, why wouldn’t you be?

When I got home, I attacked two rotisserie chickens, put one in a freezer bag and stuck it in the freezer. So handy on a night you don’t want to cook!

Since I am taking pictures all the time, look what my doggies got for dinner! Iams, with REAL chicken and REAL chicken juice stirred in! They were so happy with their mommy.

So, I could eat tacos almost every day. Dinner was turning out to be an absolute disaster! I put my shredded chicken in a pan, added taco seasoning and water, and stir. I tasted it and died! It was a taco seasoning I hadn’t bought before. It was REALLY spicy! I think I made this mistake the LAST time we had tacos! Dummy. So I added more water, some Truvia, some tomatoes, some sugar, more water. Finally! Eventually, they tasted great! We filled white corn tortillas with chicken with lettuce, tomatoes, salsa, cheese, and avocado slices! I mixed some tomatoes, black beans, brown rice, and topped with cheese for a side.

My mom is coming over for coffee in the morning…..wonder if she will think my oatmeal with chocolate chips sounds good?

Chicken Meatballs

I found these at Price Chopper.

3 meatballs are 4 PPV.

I chopped them up and added them to my salad.

I will buy them again for sure to have with pasta and red sauce….

…….or on an 80 calorie hot dog bun with red sauce for a delicious meatball sandwich!

Each new week for me (in Weight Watcher World) starts on Friday. This can sometimes make Wednesday and Thursday difficult, if Monday and Tuesday didn’t go so well. In theory, if Monday and Tuesday don’t go so well, one would think one would make the best of Wednesday and Thursday, so Friday at the scale goes well, and that makes your week end well, right? But on occasion, Wednesday and Thursday become “screw it” days, because you get to start fresh on Friday! Now, the latter is certainly not the recommended way of Weight Watcher living, or any other kind of living, for that matter. But in attending WW meetings on a regular basis, i have found that this can be an all too common practice.

Today I ended my week of drinks and carbs, and got to start fresh. There is definitely a mental thing going on that says …..”Today is a new day”, because the cravings are gone and I am looking forward to Bootcamp in the morning. Today, I get the opportunity to plan and begin my week of what’s going to make me feel good about myself when I wake up the next Friday morning. Today’s Friday was all about actually seeing the finish line, and speeding up to cross it.

I went to Starbucks to reflect……. 🙂

While reflecting, I enjoyed a nonfat Misto and a Perfect Oatmeal!

I only had a banana for breakfast, and since it was now 1:30 pm, I added half of all the goodies to my oatmeal. Half of the package of dried fruit, and half of the package of nuts, a sweetener and some cinnamon. (Oatmeal 6 PPV)

Later in the afternoon, I finished off a little leftover salad. 3 PPV

Dinner was out at Sunset Grill, and the weather outside on the patio in the shade was surprisingly pleasant. Hawaiian Skewers with chicken, and a cup of Chicken Tortilla Soup, and of course, lots and lots of water!

EASY Beef Stroganoff

This is a really old recipe. When I went in to revise it to SmartPoints, I lost the pictures. The horror!

I need to make this soon and get a picture in here. Until then, think Hamburger Helper, but better. My mom always made that when I was a kid, and I loved it!

This recipe reminds of that.

Easy Beef Stroganoff
Serves 4
Write a review
  1. 1 lb 95% lean ground beef
  2. 1 yellow onion, chopped
  3. 2 T flour
  4. 1 10 oz can beef broth
  5. 1 4 oz can sliced mushrooms
  6. 6 oz fat free Greek plain yogurt
  7. Salt and pepper
  8. Cooked Egg Noodles....or Brown Rice....or Mashed potatoes or a Baked Potato!
  1. Cook beef and onion together over medium heat.
  2. Sprinkle flour over the beef mixture and mix well.
  3. Add beef broth and mushrooms and continue to stir over medium heat until heated through.
  4. Turn off heat and add yogurt and mix well.
  5. Add cooked Egg Noodles and stir. Or pour over Brown Rice or potatoes, or even a Baked Potato!
  1. One Serving for Stroganoff Only = 5 SmartPoints
  2. Make sure to add your SmartPoints for Egg Noodles, rice or potatoes!
