Italian Chicken…..this was a good one!

So, I’ve realized during my “Four Week Chicken Challenge”, that I really haven’t been cooking very much lately, and I don’t really seem to have a lot of chicken recipes in my cookbook! I have been cooking, but I have been making simple things, and the same things. I like to throw a bunch of veggies in a skillet with some Olive Oil, salt and pepper, and then toss in some cooked meat of some sort. I like to throw something simple on the grill and eat a salad with it.  It’s not really cooking. I mean, I guess it is. Avocado Egg Salad?

         Avocado Egg Salad This is one of those combinations that I couldn’t decide if I thought sounded disgusting? Or delicious?     So I decided I had to make it and see for myself.     I adapted this from a recipe I found on Pinterest! I know, surprise. Click HERE for the original recipe that calls for mayo, and is served as a wrap,  but I decided to use just a small amount of Olive Oil and eat it topped with a fresh chopped tomato! Protein and healthy fats! Chicken Taco Stew

Chicken Taco Stew? I’ve been a WW member for a really long time. There have always been different versions of Weight Watcher Taco Soup floating around over the years, and really, I like them all. One of my favorites, includes one packet of taco seasoning and one packet of Hidden Valley Ranch Dressing. My WW leader suggested putting a can of fat free refried beans in it, so I gave it a try. It really thickened things up a bit, and I loved it!     Ingredients 1 Pound, Cooked Shredded Chicken Breast (Click HERE for a recipe to boil and shred chicken breast) (You could replace the shredded chicken breast with the meat from one Rotisserie Chicken if you’d like a little dark meat too! Nicely played, Chiefs!

Friends, Food and Football. I love Fall and I am soooo ready for it! I started off my Sunday with a Pumpkin Nonfat Latte from Starbucks, then we headed to friends house to cheer on the KC Chiefs! Our wonderful hostess did an awesome job of making lots of yummies too!   Sunday evening at home was a whole lot of Football and very little of anything else. I loved it! Keeping it short today…..lots on the “To Do List”. Breakfast   Snacks (she made little footballs out of Dark Chocolate Covered Almonds!) More Snacks….Peanut Sauce Chicken Skewers!! The Farmer’s Market!

I love everything about going to the Farmer’s Market. The people, the live music, the samples and all the fresh food! I was headed to my dad’s house to work on our Parade project for the upcoming Overland Park Fall Festival on September 28th, when I drove through Downtown Overland Park. It was hopping and I hadn’t been to the Farmer’s Market in a while, so I HAD to stop! I started out with a coffee after entering through this door to a little bakery………So Cute!     Then I headed down the aisle with the hustle and bustle of all the Saturday morning shoppers! Yesterday was crazy busy, and I did NOT cook for Mike and I. This means I did NOT make a new chicken recipe. One of my readers emailed me a recipe after I had blogged about making chicken recipes for a month. I hadn’t even thought to ask readers for their recipes, but I love the idea! I have now received a couple of recipes from readers that I plan to share, so if any of you have a delicious Chicken recipe that you would like to share, I would LOVE to have it! Roasted Veggies

I originally found this on Pinterest! This is an awesome recipe for Roasted Veggies. Click HERE for the original recipe. I like to make these to go along with anything I throw on the grill, but they’re also great tossed into the skillet with some roasted chicken or diced chicken sausages. I started eating them like that after working on the food truck, Beauty of the Bistro. Sidney, (the owner) makes an awesome Cowboy Skillet during the Fall that I tried to repeat, and although this really doesn’t taste anything like her Cowboy Skillet, it’s pretty darn tasty. I’m Pleading the Fifth, But I Did Make Chicken!

About yesterday’s eats……I’d like to plead the fifth. But…..I can’t keep my mouth shut, so I’ll tell you all about it. It all started so innocently too. Short Visit with Tess and Day One of Chicken!!

Monday was a really nice and unexpected day spent with Tess! She came in town on Friday evening and Mike picked her up at the airport, then dropped her off at a friends, who then took her to Pitt State for the Football Home Opener!! Pitt State Wins!! She came back here late Sunday, and then I took her to the airport on Monday! She had decided to take the day off on Monday and catch a late flight, so we took advantage of her day off and enjoyed some Mother/Daughter time! We headed to one of our long time favorite breakfast spots! Succotash!     Tess ordered the Kitchen Sink! Four Week Chicken Challenge!

My “coach” and I met for the first time in a few weeks on Sunday morning to catch up and see how my plan was going. We talk and/or text daily, but getting together in person has been a part of our “coaching” plan too, and I’m always happy to get together with her so we can catch up a bit. Knowing that it was going to get hot QUICK on Sunday morning, we decided to meet early at a park before the heat was too much to take! I’m so glad we did too, because it DID get hot!! We had a great meeting discussing some of our challenges over the last several weeks while also discussing some ideas for our future. “Coach” came up with this idea that I challenge myself to come up with some sort of “30 days of chicken” recipes”?????
