Happy Thanksgiving (Number Two!)

I lied.   I didn’t intentionally lie, but I did lie. I said I was going to take a walk after Thanksgiving Dinner on Thursday. I said I would blog everyday over the Thanksgiving Holiday. I said I would go to my WW meeting on Friday morning AND weigh.   I did none of those things. I swear I had really good intentions. Here is what I did right. On Thanksgiving Day, I put small portions of what I really liked on my plate. I did NOT go back for seconds. I drank a LOT of water. Happy Thanksgiving!

  We picked up Tess at the airport at midnight last night! I was sooo happy to see her and I am so excited for the next few days together! She mailed me a birthday card last week and included in it was the sweetest letter! Then last night she gave me this coffee mug (this girl know’s her mama loves her coffee!) that she drew the cutest design on!     Moving from Kansas City…..     all the way…….     to Dallas! Simple Post….

Running behind this morning, so basically I’m just telling you what I ate yesterday. I LOVE the baked oatmeal. I individually wrapped the rest of it in wax paper and put it in freezer bags and popped it into the freezer, so I’ll let you know how those frozen portions taste when I eat them! I made chicken in the crockpot and Mike ate that for dinner, but I had some other chicken that needed to be eaten, so I had that. I cooked a lot of food this week that had absolutely NOTHING to do with Thanksgiving!! I will post through Thanksgiving and through the weekend, even though I know things will be busy. Baked Oatmeal, Chicken & Eggs!

In preparation for Thanksgiving Dinner on Thursday, then again on Saturday, I’m planning on basically eating Chicken and Vegetables all week, and by all week, I mean Monday, Tuesday and Wednesday. After Sunday night’s Chicken & Green Bean Casserole success, I decided to cook up some more chicken in the crockpot to have for the next few days. I’ve mentioned before how I know that planning is so helpful for me when it comes to eating healthy. If I have a plan, and I have food prepared, or at least on hand, I am so much more apt to be successful. Crockpot Shredded Mexican Chicken

This is maybe the easiest and tastiest way to have shredded chicken on hand for Taco’s, Quesadilla’s, Enchilada’s, Nacho’s, Taco Pizza, Taco Salad, Omelets or just to eat out of the bowl! Top a bowl of this with a bit of cheese and light sour cream and I am good to go! I can’t remember who first told me about this recipe? I know a lot of my friends make it, and everyone loves the fact that it IS so easy and you can use the chicken for so many different meal ideas. Ingredients 4-6 Frozen Chicken Breast 1 (24 oz) Jar of Salsa 1 Packet of Taco Seasoning (I like to use Homemade Taco Seasoning) Directions Put the frozen chicken breast in the crockpot. This recipe comes from Rachel over at RachelCooks, which she apparently adapted from allrecipes. I want to give credit where credit is due. Why I Love Target Stores!!

I have been a fan of Target Stores for a long time. I kind of joke sometimes about how I didn’t know other stores existed. I like Target for a lot of reasons. I REALLY like the Target Super Stores! I like to get a Starbuck’s and wander through the store. If you live in Kansas, you know that we can’t buy liquor in our stores, but being so close to the Missouri state line, I like to hop over to the Missouri Target store on occasion where I can pick up a few bottles of wine too! I find myself looking through the clothes, the shoes, the accessories, the home items. I can pick up socks, batteries, mascara, and dinner. What’s NOT to love??? I’ve Missed You, Blog!!

Let’s Get Caught Up! I don’t think since I began blogging two and a half years ago, I’ve missed that many days in a row! I blogged on Tuesday morning, and I said in my post that my blogs would be short and simple, but I didn’t think I’d skip them all together! Bacon Egg and Cheese, Please….

I said yesterday that I had a busy week ahead and that my post would be simple, likely boring too. Sorry. 🙂 Yesterday was an awesome and productive day that included a nice long walk with a friend at Shawnee Mission Park! I’m getting together with girl friends for breakfast this morning to discuss our upcoming “Chicago Girls Trip”!! After breakfast I am going shopping for Thanksgiving Dinner and then I’m baking Pumpkin Bars, as requested by my Mother-In-Law for Thanksgiving Day. A Great Sunday!

It was the perfect Sunday (well, almost….I really wanted the Chief’s to win) that included sleeping in, a yummy breakfast, coffee on the couch with Mike and the dogs, and later, a great visit to the Dog Park with Tucker! I’d had a really busy week, so I was looking forward to having absolutely nothing planned for Sunday! It is another busy week ahead though, so I would imagine that my post will be short and to the point for the next few days. My weight is hanging around 153-155, and my goal for the rest of November and December is to not let my weight go OVER 155! I plan to enjoy the special food that comes with the Holidays, but I also plan to track my food and not go overboard on anything.
