I lied.


I didn’t intentionally lie, but I did lie.

I said I was going to take a walk after Thanksgiving Dinner on Thursday.

I said I would blog everyday over the Thanksgiving Holiday.

I said I would go to my WW meeting on Friday morning AND weigh.


I did none of those things. I swear I had really good intentions.

Here is what I did right.

On Thanksgiving Day, I put small portions of what I really liked on my plate.

I did NOT go back for seconds.

I drank a LOT of water.

Friday morning, Tess and I met a group of my girlfriends from high-school (one was only here for a few short days from out of town)  for coffee and breakfast. I really didn’t want to miss out on that, but it did mean I didn’t get my blog post written, and then I must admit, I had no desire to go to my WW meeting and weigh in wearing jeans and already having a meal and lots of coffee in my belly, so I skipped it and we shopped instead.

My side of the family is having Thanksgiving Dinner at my house today. I ordered a smoked turkey, which I have done in the past, and it really makes the meal a lot easier. I picked it up yesterday and got it all carved. Today I just warm it in the oven, somewhere between baking the rolls and the sweet potatoes and figuring out that whole puzzle of “How do I keep it all warm???”.

Thanksgiving Day was great at my In-Laws. Mike and Tess and I spent the evening at home playing Pool….

I loved the way our Family photo turned out last year. It was actually a really spontaneous shot in my mother-in-laws window in the dining room. We had all squeezed in and I loved it, so we recreated it this year!

We picked up Tess at the airport at midnight last night! I was sooo happy to see her and I am so excited for the next few days together!

She mailed me a birthday card last week and included in it was the sweetest letter! Then last night she gave me this coffee mug (this girl know’s her mama loves her coffee!) that she drew the cutest design on!

We went to a party, and I ate some BBQ meat. Pulled Pork, Beef, Carrots and just a few chips and a little dip. I had a glass of wine at home and one drink at the party, then lots of water. 🙂

I know I went over on my points this week, but I plan to eat carefully today as we are doing the whole thing all over again on Saturday!

I am going to my meeting in the morning and stepping on the scale. I have really struggled to stay on track this last two weeks!!

We eat at noon today. I will get in a good long walk after that and drink lots of water today.

I’m in my bedroom writing this blog. I can hear Mike and Tess talking downstairs. Football talk. It is sooo good to hear her voice in the house.

Simple Post….

Running behind this morning, so basically I’m just telling you what I ate yesterday. I LOVE the baked oatmeal. I individually wrapped the rest of it in wax paper and put it in freezer bags and popped it into the freezer, so I’ll let you know how those frozen portions taste when I eat them!

I made chicken in the crockpot and Mike ate that for dinner, but I had some other chicken that needed to be eaten, so I had that. I cooked a lot of food this week that had absolutely NOTHING to do with Thanksgiving!!

I will post through Thanksgiving and through the weekend, even though I know things will be busy. I will exercise, drink extra water and keep track of everything I ate. 

My new jeans are tight. Damn it.

Baked Oatmeal, Chicken & Eggs!

In preparation for Thanksgiving Dinner on Thursday, then again on Saturday, I’m planning on basically eating Chicken and Vegetables all week, and by all week, I mean Monday, Tuesday and Wednesday. After Sunday night’s Chicken & Green Bean Casserole success, I decided to cook up some more chicken in the crockpot to have for the next few days. I’ve mentioned before how I know that planning is so helpful for me when it comes to eating healthy. If I have a plan, and I have food prepared, or at least on hand, I am so much more apt to be successful.

Here are the day’s eat’s and a couple of different ways that I ate my Crockpot Shredded Mexican Chicken.



Breakfast Idea No. 13

Baked Mexican Chicken & Egg Cups! 


Makes 6 Muffins

One Muffin = 2 PPV


6 oz. Crockpot Shredded Mexican Chicken

1/2 Cup Shredded Reduced Fat Cheddar Cheese

1/4 Cup Black Beans, Rinsed and Drained

6 Egg whites

Salsa and Light Sour Cream to top with!


Spray muffing tins with cooking spray. Fill each muffin cup with 1 oz. of Crockpot Shredded Mexican Chicken.




Divide 1/2 Cup of cheese between all six muffins.




Divide the 1/4 Cup of Black Beans between all of the muffing cups.



Spoon the egg whites over the filling. Egg whites don’t move too quickly, so I added a little to each one, let it settle, then came back and added a little more. I used the back of a spoon and pressed the mixture down into the cup just a bit, but not too much. Then I added as much egg white as I could to each cup. I started with 8 Egg Whites, but I only ended up using 6 Egg Whites.




I did set the muffin tin on a cookie sheet to prevent any spillage mess in the oven.

(Um, they look like blueberry muffins??)




Bake at 350 degrees for 20-25 minutes, or until eggs are cooked.



I think I top most eggs with salsa and sour cream.

1 T of Light Sour Cream = 1 PPV, so don’t forget to add that if you eat it!





Baked Oatmeal Casserole


Breakfast Idea No. 14

Makes 8 Servings 

One Serving = 6 PPV

(You could cut this into 10 Servings so One Serving would = 5 PPV)


Who say’s Oatmeal is just for breakfast?? Not me!

This recipe is adapted from Megan over at I really only first adapted the recipe a bit because I didn’t have all of the ingredients that she had used. Then a few things I changed up just a little bit to make it as low in Weight Watcher Points Plus Values as I could. It was DELICIOUS!!!


2 cups quick cooking oats

1 tsp baking powder

1 tsp baking soda

1 tsp cinnamon

1/4 tsp salt

24 Dark Chocolate Roasted Almonds, Chopped

1 cup Strawberries (I had some frozen ones that I just sliced up and they worked great!)

1 cup skim milk 

1 cup water

1/4 cup honey

1 Egg 

3 tbsp coconut oil, melted

1 tbsp vanilla extract

1 ripe banana, peeled, 1/2-inch slices (I had frozen banana’s. Worked great too!)

2 packets of Sweetener. I used Truvia.



1. Preheat oven to 375°F and spray a baking dish with cooking spray and place on a baking sheet.

2. In a large bowl, mix the oats, baking powder, baking soda, cinnamon, salt, almonds and half of the strawberries. Save the other half of the berries until later.

3. In another bowl, whisk together the milk, water, honey, egg, the melted coconut oil and vanilla.

4. Pour the dry oat mixture into the prepared baking dish, spreading it evenly. Arrange bananas and the remaining strawberries on top.

5. Sprinkle the Truvia evenly over the top. Pour the milk mixture over the top of that.

6. Bake 35 to 40 minutes or until the top is light brown and the milk mixture has set. 

The ingredients totaled 45 PPV. I divided this into 8 nice, large pieces.

One Serving = 6 PPV!

You could certainly divide this into 10 servings, then each serving would be 5 PPV!

Total = 32


Exercise = 30 minutes on the Treadmill. Walk 1 minute at 4 mph, Run 1 minute at 5 mph. Stretching.

How many glasses of water I drank = 10


Activity Points Earned for the Day = 3

Activity Points Earned This Week = 6

Remaining points from my 49 Points Allowance = 0

Alcohol consumption = none

This is maybe the easiest and tastiest way to have shredded chicken on hand for Taco’s, Quesadilla’s, Enchilada’s, Nacho’s, Taco Pizza, Taco Salad, Omelets or just to eat out of the bowl! Top a bowl of this with a bit of cheese and light sour cream and I am good to go!

I can’t remember who first told me about this recipe? I know a lot of my friends make it, and everyone loves the fact that it IS so easy and you can use the chicken for so many different meal ideas.


4-6 Frozen Chicken Breast

1 (24 oz) Jar of Salsa

1 Packet of Taco Seasoning (I like to use Homemade Taco Seasoning)


Put the frozen chicken breast in the crockpot. Add the salsa and taco seasoning and cover.

 Cook on low 6-8 hours.



 Remove the cooked chicken breast from the juices and shred them using a couple of fork’s.

They pretty much fall apart anyhow. I told you it was easy!



Put all of the shredded chicken back in the crockpot with all of the juices and give it all a good stir.



1 oz. of cooked Shredded Chicken = 1 PPV.

Taco Seasoning

This recipe comes from Rachel over at RachelCooks, which she apparently adapted from allrecipes.

I want to give credit where credit is due.

I just like the fact that it is much lower in sodium…..and it taste great!

1 Tbsp chili powder
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp crushed red pepper flakes
1/4 tsp dried oregano
1/2 tsp paprika
1.5 tsp ground cumin
1/2 to 1 tsp sea salt (more or less to taste)
1 tsp black pepper


1 Tbsp chili powder
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp crushed red pepper flakes
1/4 tsp dried oregano
1/2 tsp paprika
1.5 tsp ground cumin
1/2 to 1 tsp sea salt (more or less to taste)
1 tsp black pepper

Replace your store bought package of Taco Seasoning with 2 – 3 tablespoons of this for one pound of meat. Don’t forget to add 2/3 to 3/4 cup of water.

Why I Love Target Stores!!

I have been a fan of Target Stores for a long time. I kind of joke sometimes about how I didn’t know other stores existed. I like Target for a lot of reasons. I REALLY like the Target Super Stores! I like to get a Starbuck’s and wander through the store. If you live in Kansas, you know that we can’t buy liquor in our stores, but being so close to the Missouri state line, I like to hop over to the Missouri Target store on occasion where I can pick up a few bottles of wine too! I find myself looking through the clothes, the shoes, the accessories, the home items. I can pick up socks, batteries, mascara, and dinner. What’s NOT to love???

Oh, and my mom works there, and through all of her health issues and the time that she has had to take off these past few years, they have been amazing to her!!

I also love the fact that when I need to return something, and I don’t have my receipt, they can locate my purchase with the credit card I used and refund my money!

I recently went in to return my coffee frother that I love and use daily. I’d had it for over six months. It was heating, but not frothing. Not good. I didn’t have my receipt and they didn’t see it on my credit card, but I did have the box that came with it. With your drivers license, they will return up to $70 dollars on an item, once a year! I got my money back and bought a new frother!! Easy peasy…….

I recently redecorated a bedroom and went to Target looking for the bedding that I had seen on Pinterest! A couple of friends had told me that they knew they sold it at Target! An employee happened to be standing close by as I hunted down the bedding. She asked me if she could help me find anything, so I showed her the picture that I had and she led me right to it. She then asked me if I had the Target “Cartwheel” app on my phone. Huh? Cart? Wheel What?? What’s that???

She then had me search for the app as she explained how I could get extra savings if I used it, and she thought that particular bedding had an additional discount if I used the app that day. She also had me use Targets Wifi, which I did NOT know that I could do, so the app would load faster. After loading the App, and many many thanks to this little gal, I headed to the front of the store to fill out a Customer Service form to say what an awesome employee they had and how much I already loved Target stores anyhow!

Wait. It gets better. Now I use the app regularly. I recently bought some boots at Target. Okay, like three pair. The day after I bought the boots, I receive an email via my “Cartwheel” app saying that some of their boots were 40% off that day only!! I got in the car and headed to Target, forgetting the boots AND my phone. You have to have your phone with you and show them the app in order to get the discount. I did have my receipt. When I got there and realized that I didn’t have my phone with me, I decided to give it a try anyhow. When I stepped up to the customer service area, there were two employee’s at the counter. I told them my situation. Without hesitation, one of them said I could use the app on HER phone. They refunded my money, then charged me for the boots at the 40% discount! Done Deal!!!

Why would you NOT shop there?????

Moving onto Food!!

I’m thinking Football, I’m thinking Chief’s, I’m thinking Chief’s Red, I’m thinking Big Breakfast, I’m thinking a Big Red Omelet!!

(I made this before the game. Sad the Chiefs lost, soooo happy the Bronco’s Lost!! Can’t wait until next Sunday! Bring it!!!)

 Breakfast Idea No. 12

“Big Red Omelet”



 5 Egg Whites (2 PPV)

2 oz. Red Potatoes, Cooked and chopped (1 PPV)

Chopped Red Onion, about 1/4 C. (0 PPV)

Chopped Red Bell Pepper, about 1/4 C. (0 PPV)

1/8 Cup Reduced Fat Feta (1 PPV)

1 Tablespoon Light Sour Cream (1 PPV)

1 Tablespoon Salsa. It’s RED!! (0 PPV)

Total = 5 PPV

Sauté the potatoes (I pierced my potatoes with a fork, then cooked them in the microwave for 1 minute, then chopped them up!), bell pepper and onion in a skillet coated with cooking spray until the veggies are tender. Remove from skillet and set aside.



Cook egg whites in skillet until set.




Using a large spatula, flip.

Cook your eggs on medium, make sure they are set, flip. No mess!




Add cooked veggies and feta to the omelet.








Now slide that baby onto a plate, top with salsa and sour cream (or not) and enjoy!




Betsy’s Zucchini Soup

Occasionally, I will make up dinner as I go with whatever we happen to have in the fridge, which allows me to avoid a trip to the grocery store. Occasionally, it turns out pretty darn tasty, and I feel proud. Mike however, would eat just about anything, and actually, so would I. Sometimes I’ll make up something as I go with what’s on hand, and we both choke it down, all the while Mike telling me that it really IS good. (I’ve got him trained like crazy!)

For dinner last night, I had some frozen chicken breast from Costco and a bag of frozen green beans from Trader Joe’s. I knew that somehow, the combo of those two would become dinner. So here’s what I made, and here’s what I will be making again for sure!

I’m really not a great cook and don’t claim to be, so when I give you an idea for a meal, it’s not really a recipe, it’s more of an…..”Hey, I put these things together like this, and this is how many Weight Watcher Points Plus it is, and I liked it!”

So here goes….

This recipe makes Four Servings

1 Serving = 11 PPV

Chicken & Green Bean Casserole


4 Chicken Breast (I used 5 oz. breast) 

4-6 Cups of cooked Green Beans (Or More! They’re Zero Points!)

1/4 C. onion, chopped

2 garlic cloves, diced

2 slices bacon, cooked and chopped into pieces

1 tsp Olive Oil

2 T. Butter

2 T. Flour

1 1/2 Cups Skim Milk

5 Wedges of Laughing Cow Cheese, Light Creamy Swiss Flavor

1/2 Cup Reduced Fat Cheddar Cheese 

Kosher Salt and Cracked Black Pepper, to taste

1/4 Panko Bread Crumbs

Saute Onion and Garlic in Olive Oil until tender. Add bacon and cook for about a minute or so. You just want the bacon to take on some of the garlic and onion flavor, and vice versa! Remove from skillet and set aside.




Saute cooked green beans in a little cooking spray, then add the bacon and onions and garlic.  Let them all soak up each others flavors. Remove from heat and set aside. You might want to put the green beans in a larger bowl for their next step. I did.




Melt 2 tablespoons of butter. Add 2 Tablespoons of flour to the melted butter and stir until smooth. Now add the milk and stir over medium high heat until nice and thick and smooth. Add Salt and Pepper to taste. At this point, I decided it just looked like breakfast gravy???



Add the cheese wedges and the cheddar cheese and stir until the cheese is melted. Still just looks like gravy, but taste good!




Add the cheese mixture to the green beans and stir. This is where that bigger bowl came in handy.



Spray a 9×13 baking dish with cooking spray. Lay the chicken breast in the baking dish. You might want to salt and pepper the chicken now. I didn’t and the only thing missing when this was all done, was a little salt and pepper. Pour the green bean mixture over the chicken.



Sprinkle the bread crumbs over the casserole.



Bake in a 350 degree oven for 45 minutes, or until chicken is cooked through! 




Not too shabby!

I’ve Missed You, Blog!!

Let’s Get Caught Up!

I don’t think since I began blogging two and a half years ago, I’ve missed that many days in a row! I blogged on Tuesday morning, and I said in my post that my blogs would be short and simple, but I didn’t think I’d skip them all together! Well, here it is Sunday morning and I feel like I have sooo much to say!

Let me start with, I haven’t been sleeping so great, which means I haven’t been waking up as easily as normal, which means by the time I DID get out of bed these last few days, it was time to head out the door and I didn’t have a spare two hours to blog.

Since having rotator cuff surgery in February, my right shoulder is getting stronger and stronger, which means I am using it more and more and getting closer to completely healing and full use of my shoulder! Great, right? When I first went to the doctor many many months ago about my shoulder, I went to the doctor about both of my shoulders, but the right was much worse than the left, so we really never did much with my left shoulder, and with reduced activity, I wasn’t really having any issues with it. My right shoulder was hurting so bad and my nights sleep were so messed up because of it, I think all I was really thinking about was that after surgery, I would soon be better, and I could move forward with so many of the things that I had put on the back burner. Now that I am doing more and beginning to lift heavier weights with the trainer, I am noticing my left shoulder is starting to give me some problems, and unfortunately starting to cause me problems sleeping! I know a doctor’s visit is just around the corner, I’m just hoping the cure for this shoulder is therapy, and no more surgery!

Now…..Wednesday I worked at the Food Truck, then ran errands the entire rest of the day!

Thursday I began my birthday celebration by going with some girlfriends on a little overnighter! Sometimes, you just can’t beat some good “Girl Time!”

Friday was my actual birthday, and I was home from my overnight by noon. I spent the rest of the day catching up on my DVR’d shows and treating myself to sweats, coffee and an entire day hanging out doing absolutely nothing! I loved it! Mike and I ended out the night with take out food and renting a movie.

Saturday I met my mom and my aunt for coffee. My aunt and I share the same birthday, so a small celebration Latte was in order! 🙂 I spent the rest of Saturday shopping for Thanksgiving food and doing returns. Mike and I decided to go out for dinner to one of my favorite restaurants, J. Alexanders, and apparently my “traditional” birthday spot! I think we have gone there for the last four years for my birthday!  I love it and I always order the salmon. For some reason, all I wanted was a steak and a glass of red wine, so I did. I don’t know if it’s because I hadn’t had a steak in a while, or what, but that was the best filet I think I’ve ever had!! It was the perfect way to end my Three Day Birthday Celebration!!

Okay, Where Am I On the Scale???

I’m not sure. I’m afraid to step on it actually. I know this is NOT in my best interest.

While with my girls on Thursday, I enjoyed Bloody Mary’s, a few cold beers, and wine in the evening. I also was attached to the peanut M&M’s that followed me from room to room. 

Friday, let’s just say my stomach wasn’t so pleased with the decisions I had made on Thursday, and I finally decided a greasy burger would likely fix things. Mike and I shared it, and I felt much better. That’s pretty much all I ate Friday, except for the sausage breakfast casserole I ate in the morning. 

Saturday, I felt back on track, but I hadn’t really planned on wine with dinner. Of course I made all sorts of excuses that I deserved it because it was my birthday dinner. I really am a Master Excuse Maker!!!

Today? Sunday? I am done celebrating my birthday, and honestly, with Thanksgiving coming up on Thursday at the In-Laws, and then again at my house on Saturday, I am ready to face this week and make myself follow the Weight Watcher rules!

I am going to my WW meeting on Friday morning, and I will weigh and post my weight in my Saturday morning post!!  eeeekkkkkk!!!!!! Anything over 155 will be upsetting, but I know I need the reality check.

Breakfast Quesadilla

2 Fajita Size Tortilla’s (2 PPV)


4 Scrambled Egg Whites (1 PPV)

1 Slice Cooked Bacon, Crumbled (1 PPV)

I said yesterday that I had a busy week ahead and that my post would be simple, likely boring too. Sorry. 🙂

Yesterday was an awesome and productive day that included a nice long walk with a friend at Shawnee Mission Park!

I’m getting together with girl friends for breakfast this morning to discuss our upcoming “Chicago Girls Trip”!!

After breakfast I am going shopping for Thanksgiving Dinner and then I’m baking Pumpkin Bars, as requested by my Mother-In-Law for Thanksgiving Day. I’ve never made them, so I’m trying a recipe to see how it goes. If it’s really really good, then my neighbors will be getting a treat tonight!!

Here are yesterday’s eats!


Breakfast Idea No. 9


Bacon Egg and Cheese, Please

1 Egg + 1 Egg White (2 PPV)

1 Piece of Cooked Bacon, Chopped (1 PPV)

1/4 Cup Shredded Cheddar Cheese (2 PPV)

1 Tablespoon Salsa (0 PPV)

Fresh Fruit (0 PPV)

Total = 5 PPV



I topped my Omelet with 1 Tablespoon of Light Sour Cream and added 1 PPV, but of course that’s optional.

You can also substitute 1 Tablespoon of Oscar Mayer Real Bacon Pieces if you prefer not to cook any bacon.




I guess I was in an EGG mood today!






I made Spaghetti and Meatballs for dinner. After I made it, I decided it would just be for Mike, I just wasn’t in the mood for it and was seriously craving canned peas. I love canned peas! Weird, I know. I don’t eat them much, but I started eating this combo topped with 1 T. of parmesan cheese, sometime last year, and my entire meal, (the soup can and the can of peas), is 8 PPV. I ended up adding Three Turkey Meatballs to the top of this after I took my picture! That made dinner 13 PPV!!



Refresh…I can eat 26 points a day.

I can earn Activity Points by doing exercise, and eat them if I choose.

I have an allowance of 49 points that I can dip into if I chose.

I should drink a minimum of 6 (8 oz) glasses of water each day.

Dinner = Soup, Peas, Parmesan Cheese, 3 Turkey Meatballs (13)

Total = 35


Exercise = An Awesome Walk with a friend at Shawnee MIssion Park! We walked 5.75 Miles and got all caught up with each other!

A Great Sunday!

It was the perfect Sunday (well, almost….I really wanted the Chief’s to win) that included sleeping in, a yummy breakfast, coffee on the couch with Mike and the dogs, and later, a great visit to the Dog Park with Tucker! I’d had a really busy week, so I was looking forward to having absolutely nothing planned for Sunday!

It is another busy week ahead though, so I would imagine that my post will be short and to the point for the next few days.

My weight is hanging around 153-155, and my goal for the rest of November and December is to not let my weight go OVER 155! I plan to enjoy the special food that comes with the Holidays, but I also plan to track my food and not go overboard on anything. I had an exercise plan for this past week, and I didn’t stick to it as strictly as I had hoped, but having the plan did encourage me to exercise more than I had been in the last couple of weeks. I definitely do best when I exercise before doing anything else for the day.

Weighing less than 160 has been a huge Weight Loss Goal for me, but I am still aiming for 150!

Yesterday’s eats……


Breakfast Idea No. 8

Cinnamon Banana French Toast



3 Slices Sprouted 7- Grain Bread (3 PPV)

3 Egg Whites (1 PPV)

2 Tablespoons Skim Milk (0 PPV)

1/4 tsp Vanilla (0 PPV)

1/2 tsp Cinnamon (0 PPV)

1 Tablespoon Maple Syrup (1 PPV)

1 Banana, Sliced (0 PPV)

Cinnamon to sprinkle on top!

Total = 5 PPV

Mix Egg Whites, Milk, Cinnamon and Vanilla. Dip bread slices in egg and cook in a medium heated skillet coated with cooking spray.

Top with Syrup, Banana slices and a dash of cinnamon!





Not Your Mama’s Chicken Soup




I love this seasoning. I buy it at Whole Foods. 



The directions say to make these taco’s with Cod or Halibut, tilapia works too. I’m sure it’s great with whatever fish you choose. Simply mix the packet of seasoning with warm water and stir. Put the fish, cut into bite sized pieces, into a ziploc bag with oil to coat the fish, then add the seasoning mixture. 




Cook in a skillet. 




So Easy! So Good!
