The Trolley Run!

I was a little nervous for the 4 Mile Trolley Run this morning. I had a couple of beers after mowing the lawn yesterday, then some wine last night at a neighbor’s house. I basically skipped dinner, and woke up a little puffy this morning after not drinking enough water yesterday. Not the best physical condition to go RUN four miles. I really hadn’t even decided if I was going to run it, or walk most of it. 

We got all lined up. There were over 10,000 participants. The crowd was pumped, I was starting to feel pumped. The temperature was perfect, and all of a sudden, I decided I would run to the three mile marker, no stopping. Not for a drink, not to tie my shoe, not to catch a breath. Just run. My little, nice, slow pace. So I did. Around 3.25 I took a short break, and counted out 50 steps, then started running again. I did that two more times, and crossed the finish line strong. At the end, I felt like I had kept a fairly good pace (for me anyhow) and I was anxious to get home and look up my time.

I was going to be pleased with anything less than a 12 minute mile. My pace?

11:49!! Barely! Yay!!

Feeling pretty darned good for a girl that doesn’t like to run!!

Stuffed Mushroom’s

Charlotte was taking the longest nap EVER, so I cleaned out the fridge and made myself a yummy lunch with the veggies that I found!

I had some zucchini, red bell peppers, onions and mushrooms. I prepped my mushrooms by washing them and removing the stems. Then I sautéed my diced veggies in a little Butter infused Olive Oil and added Sea Salt and Black Pepper.

Then I decided to add a little cooked quinoa. I almost always have this stuff in the fridge now!

I added a few wedges of Laughing Cow Cheese to hold it all together, and really, this cheese taste great on ANYTHING!

I gave it all a good stir and took a few bites! It was delicious!!

Before stuffing the few mushrooms that I had, I baked them in the oven, open side down, on a cookie sheet sprayed with cooking spray, for about 10 minutes at 375.

I removed them, turned them over, and stuffed em!

I topped them with a few sprinkles of parmesan cheese and baked them for about 10 minutes.

Maybe bake them for 8 minutes, then take a peek!

I had lot’s of stuffing left, so while the mushroom’s baked, I ate it.

The whole pan of filling was 6 PPV.

I used 1 tsp of Olive Oil to sauté the veggies, about 1/4 C. of cooked quinoa, and 3 wedges of the Cheese.

I’ll be making these again for sure!!

When Charlotte woke up, we played all afternoon and she cracked me up! I like to think that I cracked her up too!

Slacker!

If it isn’t obvious, or if I haven’t made it clear, Blogging and Babysitting is not NEAR as simple as I had thought! My “21 Day’s of Simple Weight Watcher Meal’s” took me about 30 days, due to day’s where I didn’t have time to get a blog in, or we ate out, or I didn’t plan well, or we had a celebration where dinner was included, and even if I kept within my points, it didn’t seem right to make “Party Food” a part of my 21 Day Plan, so I thought it’d be fun to drag it out as long as possible!!!

That was possibly the longest sentence that I have ever written!

 

Break-time!

I’m going to be taking a few day’s off (possibly 2 week’s) from the blog. 

This is my last week to watch Charlotte, and next week we are taking a trip with some friends to Wine country! I am so looking forward to this trip!

When I come back home, I need to regroup. I need to refocus. Not just on weight loss, but on my life. I’ve been in a bit of a fog for a couple of month’s now and I just can’t seem to focus on much of anything. Sometime’s, the simplest decisions seem impossible and I often find myself staring into space with my thought’s. Life feel’s so big and overwhelming sometimes. For me, I know it’s time to take it all down a notch. I’ve been thinking about the best way to do this. So, I made a list. (I know….surprise!)

I put things on my list in my life in order of priorities. The list includes my health, my family, my friends, my dogs, my blog and several other things that fill up an average daily life. I’m going to take a break from the blog and all social media, and focus on getting myself back to where I need to be. I hate to take such a long break from the blog, but If I’m not at my best, the blog really isn’t doing me, or anyone else any good.

 

21 Day’s of Simple Weight Watcher Meal’s

I’ll put together a blog post that will include my “21 Day’s of Simple Weight Watcher Meal’s” so it is a simple reference to go to when looking for something fairly quick and simple for breakfast or dinner.

I also plan to make a Page on my blog, under recipes, called “Favorites”, where I will list my “Go To Meal’s” that I’ve come to love due to simplicity and flavor!

My lunch is usually leftover’s or a salad, so the 21 Day Plan was really about finding a variety of food’s (or a variety of way’s to eat foods) to eat for breakfast or dinner, while keeping between 26 and 30 Daily WW PointsPlus.

For the most part, these meal’s are made at home, but I did include a few day’s where one meal was at a restaurant. Weight Watcher’s totally work’s if you eat out, you just need to plan for it.

I hope that you were able to find a few simple and tasty “Meal Idea’s”!

I had carb craving’s ALL day long and then did a terrible job of getting in my veggies. Not the best Food Plan Day, but I will say that dinner was easy and delicious! A salad for lunch would have been a much smarter option!

I had a nice quiet morning cuddled up with these two. Tucker can’t stand for Charlotte to be too close to me without him being right there beside me too! I can’t tell if he’s just in love with her, or jealous! ! After the nap, we got in an awesome 1 hour walk outside.

Easter Day!

Easter Day was great, but I’ve been anything but a “Weight Watcher” for the last two days!

I did make it to my meeting (with Charlotte) for the first time in three weeks on Friday morning! It felt great to get there. I’ve maintained my weight now for several months with no loss. I’m getting eager to get back to losing those final pounds, but taking a break from the scale has been what I needed mentally and I don’t regret the decision to do that.

My ultimate goal in my weight loss journey all along has been to be healthy, and since realizing I really could run 3 miles, I feel really good about what my body can do.

The “21 Day’s of Simple Weight Watcher Meal’s” has been great for making me eat a variety of food’s, but I didn’t end up losing any weight during the process. (I had no intention’s of not doing the 21 Day’s consecutively, but sometimes things just don’t go as planned.)

Here’s how the weekend went….

We had an engagement party on Saturday night, (filled with yummy food at Brio on the Plaza) which then led to an unplanned evening out on the Plaza with our friends from the engagement party for a few drinks and laughs. We then hit the tail end of a neighborhood party that we thought we were going to miss completely! Needless to say, I had a great time, but did NOT count points!

A portion of our Eater plans was to attend Mike’s families traditional Easter Dinner in Winchester, Kansas, a nice little hour and a half drive away. So we hit the road, and I looked like I just rolled out of bed all day long.

Now that our kids have kids of their own, it’s a lot to pack them all up, make the drive, then get back to town to spend time with other extended family members, but we’re hoping to start our own tradition soon so we can have the kids’ Easter Egg hunt in our own backyard.

Well, watching Baby Charlotte really is a full time job. I can’t imagine that last three weeks being any different. This little girl completely has me wrapped around her little finger, and anything else she could wrap me around! When she falls asleep on my lap, I refuse to do anything but just stare at her!! I’m only watching her for one more week, but I’m pretty sure I’ll make regular trips to her Day Care after that and take her for the afternoon! Her mom said I can do that whenever I want to! 🙂

I was going to make Shrimp Fajita’s at home, but most of my day had not gone as planned, so we went out to eat! These still work great for a Weight Watcher friendly meal, you just have a bit more control at home over choice of tortilla’s and how your veggies are cooked. I only ate a few bites of the rice and beans, but ate all three of the un-pictured tortilla’s.

I got the idea for sweet potatoes in my skillets from the Weight Watcher Simple Start Menu Idea’s when Simple Start first came out. I love sweet potatoes, but had never thought of them with my scrambled eggs, but I LOVE them together!!

After my 4:00 snack of leftovers, I wasn’t that hungry. I had planned to make zucchini Fries with this and have a salad. I do highly recommend this Sloppy Joe Recipe! It’s loaded with veggies…..Carrots, Onions, Garlic, Mushrooms and Bell Peppers. Mike said he liked it just as much as I did!

According to her recipe, 1/2 Cup = 3 PPV

You could eat this on light hamburger buns and have an awesome sandwich. I always remember eating this Open Faced as a kid. I ate it on the toast because this delicious Trader Joe’s bread is only 1 PPV per slice!

Well, The Color Run was a SUCCESS!! We did it! We ran it together, we crossed the finish line together! We’re ready for another one!

The run, the scale, some thoughts on life, but blogging while babysitting is not nearly as easy as I had anticipated!! i’ll have lots to say when my regular schedule resumes. right now I’m just happy with baby Charlotte and trying to cook breakfast, dinner, clean up my mess and shower for the day!
