I rarely get in any exercise before my Friday morning WW meeting. For a long time, Friday was my scheduled “day off” of exercise. I liked having a scheduled day off, because it let me not exercise for the day without any guilt, which I was struggling with for a long time. I don’t seem to be on any particular schedule right now, but am trying to run more frequently. I decided to get out for a short run before my meeting on Friday! I must say…..it always feel good to get a little exercise in first thing in the morning! I ran the same route as Thursday, but I didn’t stop running until I got to the top of that darned sidewalk!! Whew! Then I walked about .3 miles home. It was quick, but it was good! I can’t believe how consistent my pace is at a 12 min mile. I’m going to try to speed up a little this week!

I’m playing with different routes in the neighborhood, and I’ve discovered a great one for a quick little workout.

I left the house with Tucker to go for a ONE mile run. My route actually ended up being over a mile, and towards the end of it, I have a sidewalk I have to run up that is a pretty good little hill. I kept my head down and only looked at the sidewalk square in front of me. When I thought I could possibly die, I stopped, only to realize I was only TWO sidewalk squares from the top of the hill!! Arg! So I started back up. I was pleased when I got home to see that I had run over a mile.

My time doesn’t reflect how fast I felt like I was going though, because along the run, we had to stop for a poop. Tucker, not me.

Before I left for my run, I got in about 15 minutes of Yoga. I’ve enjoyed learning some Yoga moves these last few weeks and it feels good to stretch and actually know what I’m doing. A few of my favorite’s are “Happy Baby”, “Downward Dog” and “Child’s Pose”. 🙂

After a nice little workout and a shower, I met a couple of girlfriends for lunch at a new shopping center super close to our house. One of the new restaurants, Rock & Brews, is apparently owned by Gene Simmons and Paul Stanley, of the rock bank, KISS. They are in town for the opening of the restaurant, and as we pulled up to park, they were outside doing a little photo shoot. I took a picture, but that guy right in the middle in the blue shirt was blocking my VIEW!!! If you look real hard, you can see them both in their dark hair and sunglasses!

Anyhow, it was kind of exciting. We tried to go in, but it was closed to the public for the afternoon. 🙁

I ordered this sandwich because Sidney, owner of Beauty of the Bistro Food Truck, has added a Chicken Banh Mi Sandwich to her menu recently and it is AWESOME! It’s not the most point friendly with it’s Butterred Toasted Bread and secret sauce, but it IS delicious! This is a picture I took of it when I first tried it!

Late Night Snack 

After dinner snacking has never really been an issue for me. My biggest struggle has ALWAYS been between lunch and dinner. Mike was golfing last night, my On-Demand TV stations were NOT working, and I guess I just got frustrated and bored. I ate TWO bowls of multigrain Cheerios. I did not take a picture. I’m irritated with myself because I had such a great week of eating and exercising, then I feel like I may have messed up my weigh in for this morning. I forgive myself, but I am frustrated with myself at the same time.

I found a recipe for Avocado Enchilada’s on Pinterest, and it sounded so yummy, I knew I had to try it! You can check out the website and the original recipe by clicking HERE! I made a few changes. I only used ONE avocado, and I added a few extra black beans. I didn’t have any corn tortilla’s. but would totally use them next time. My low carb flour tortilla’s were a bit soggy? The filling was great though, and although the recipe did NOT call for chicken, I seasoned some shredded chicken with taco seasoning, and added that to the filling.

Finally, All Clean!

Yesterday was Tuesday, which means Yoga! I’m really liking the Yoga on Tuesday mornings! I might be adding another day a week! After Yoga, the carpet cleaners came and I practically had them do the whole house, and two chairs. They even did the rug under the dining room table for FREE!! They said it was because I was so nice. I offered them solo cups of Ice Water while I watched them sweat. I would have offered them a pizza had I known I was going to get something for FREE!! Anyhow, the whole house now feels so clean.

Next week, I have hired a dog trainer and they will be here Tuesday. Tucker needs some help. Julie needs some help. It’s a pricey thing, and I can think of so many other things I’d rather spend this money on, but if it means a manageable and happy dog, and a happy dog mom,  it will be worth it! Wish us LUCK!

 I spent the rest of afternoon going through paperwork, and looking for better rates on cable and insurance. Around 5:00, I decided to mow. Then I had one of my favorite kind of evenings. I showered, put on p.j.’s, cranked up the stereo, poured myself a small glass of wine, and spent a couple of hours in the kitchen cooking. I love that! 

Okay, that’s all the excitement I have for now. Off to work the Food Truck today. If you’re local, come see us!

A Great Lazy Day

Monday’s plans were…..nothing. Not a thing. Zilch. Zero. Except for balancing the check book, and getting in some exercise. And that’s exactly what I did.

Relaxed all morning. Made myself a yummy omelet, took the pups for a nice walk, then ran 1.25 Miles, and walked almost 3 after that. Looked at the checkbook for a long time and tried to figure out where all the money goes, then went out to dinner, and remembered that’s where some of it goes. 🙂 Not nearly as often as it used to though.

Sangria?

Late in the afternoon, I really wanted to sit on the deck and have a beer or two, or open up a bottle of our new wine, but I didn’t want to spend the Points, and since I did look at the scale on Friday, I’m anxious for a loss this week. I know if stay as close to 26 points a day as possible, and get my exercise in, those gained pounds will come off. 

I decided to try to make a simple Sangria. I used 16 oz of Trader Joe’s Sauvignon Blanc ($2.99), and one can of Diet Ginger Ale. I added just a few ice cubes (I didn’t want it to get watery) and several frozen strawberries. Not too shabby. Makes four servings at 4 PointsPlus per serving. One completely satisfied my want for a drink on a lazy afternoon.

Omelet’s

I love an omelet. I eat Egg Whites several days a week because….A) I like them. B) They keep me full for a long time.

I’ve tried several times to figure out the best way to make my omelet look like a real omelet, and more times than I can believe, I’ve ended up making scrambles eggs, I toss in my omelet fillings, and I call it a breakfast skillet.

I’ve figured out, it’s confidence that makes the perfect omelet!

 I’ve got the flipping thing down pat now. The secret is to cook the eggs until they are just set, then flip with confidence! Don’t over think it. Just toss those set eggs in the air, and you’ve done it! Add your favorite fillings!

You guys all probably already know how to do this……

I woke up super early and my only desire was to cuddle up on the couch with my frothy coffee and watch a movie. So I did. It was so nice and relaxing, I watched another one. Mike had gone into the office for a few hours and I knew when he got home, we had a few chores to work on together for most of the day.

I took a great walk Sunday after my movie watching. I headed out ready to run ONE mile, then walk. I had an idea of the route I would take. If I went the way I had planned, I could start out running my mille, and it would all be downhill. It was perfect! I kept a good pace and enjoyed the scenery.

I was going to run to the end of the path, then turn and come back, but there were a LOT of noises going on in the woods that were freaking me out. I’ve had enough animal business this week, and coming face to face with a snake, or a fox, or even just a squirrel wasn’t what I was in the mood for. At the end of the path, I headed out onto the street instead of turning back. This street is a two lane street with no curb and no sidewalks. Everybody and their mother seemed to be driving down it at the same time that I was walking down it. It became obvious to me that I had just traded the possibility of running into a harmless snake for the possibility of getting hit by a car!

It ended up being a great run/walk though! I ran the first mile, no stopping, then walked the last 2.3 miles at a great pace!

Well, the cleaning continues. Would you believe, and you probably will, that the dead rabbit head in the bag in the trash in the garage (you’ll have to go back a couple of post to know about that!) brought maggots??? Good golly, this last 5 days of cleaning up stuff that all leads back to Tucker needs to be OVER!! Mike had planned on spending the day cleaning out the garage and completing a ‘Honey Do List” that I had so graciously made up for him. Maggots were NOT in the plan. His list was big enough, so I actually cleaned up the maggot mess, but I hope to never have to do that again!

Now the entire house really is clean. The carpet cleaner comes on Tuesday, then my life will resume. I hope.

We actually talked about drinking water at my WW meeting on Friday. Specifically, flavored waters and fruit infused waters. I actually really like to drink plain Ice Water. I bought a few of these last summer, and I did really like them for a variety. As I went through the check out at the grocery store on Sunday, I saw these in the cooler and decided to grab one. I totally forgot how good they are! I still think plain pure water feels like it’s best for me, but I’ll stock up on a few of these flavors for something tasty to drink over the summer!

After finishing up the chores, it felt good to take a cold shower and just chill for a little bit. We talked about going out to dinner, but we found ourselves in the middle of a movie we stumbled across, and decided neither had the energy to go out, and an extended movie night on the couch (right after an ice cream drive) sounded like the perfect night!

It’s been an incredibly productive weekend, it should be a calm week. Fingers crossed.

We rarely order dessert at a restaurant or go out for ice cream, but after spending a hot afternoon cleaning out the garage, Mike said he was craving a DQ Chocolate Malt (there was a DQ commercial that prompted this craving). I agreed that ice cream sounded good, but I was wanting frozen yogurt. We decided to get off the couch for just a bit, and take a drive and hit both spots!  I decided to save my dinner points for Frozen Yogurt! I topped it with fruit and a few Reece’s crumbles.

I had plans with my Little Sis to head to downtown to the big City Market for a fun Saturday morning, but due to the rain, we changed our plans. Samone snapped a few pics of us with my phone……

It seemed like a perfect movie day, and we just happen to have a new Movie Theatre! Cinetopia! So we checked it out. We got tickets to the Parlor. In the Parlor, it pretty much looks like a great big living room.There was a fire place, book shelves with actual books, (we debated if we could actually pick them up and browse through them or not) and lot’s of cozy seating. You can bring food in from the concession stand, or order from the menu. We decided to order from the menu. I ordered the Mediterranean Wrap with Sweet Potato fries and a Latte. This is the third time I’ve ordered food in a Movie theatre, and I don’t think I’ll do that again. I alway sneak a coffee in, so I like that I can order that, but it’s just weird for me to eat in the dark! The wrap was good, but the fries were NOT Sweet Potato fries. I’m not really sure what they were. They were fried sticks of some sort, but due to the dark, I couldn’t tell, so I just didn’t eat them, and you know what? I didn’t need the points anyhow. 🙂

We saw the Adam Sandler, Drew Barrymore movie.

It was cute, but there were some really corny parts that would have made the movie a LOT better if they’d just left those parts out…in my opinion. Mike say’s that’s what makes it an Adam Sandler movie!

Attending my weekly Friday WW meetings has been a part of my life for a long time now, and not going to those meetings for the last 6 or 7 weeks has felt a little odd. In April, I watched baby Charlotte, and getting there with her was not quite as easy as I thought that it would be. I made it to one meeting that month. The first weekend in May, we were out of town, the second Friday in May, I worked, and the third weekend in May, we were out of town, so honestly, I was really looking forward to getting back to my Friday morning routine of a Starbuck’s and my meeting!

I stopped looking at the scale at my weekly weigh in several weeks ago. I really don’t even know when that was. Maybe March? The number on the scale was messing with my mind in a way that it shouldn’t have been, so I decided it was time for me to take a break from the scale, and focus on eating healthy and learning to run. Except for my trips, I was eating fairly well, but I had stopped weighing and measuring my food, and I was likely eating more points than I thought I was.

On my recent two trips, I didn’t count points, and honestly I ate anything but healthy.

Long story short, I decided that it was in my best interest to look at the scale Friday morning and get back to being an active Weight Watcher. I’m surprisingly still in a really good mood. I had told myself that if I did look at the number, that I would NOT let it change the good mood that I woke up in. It didn’t. I shopped. I planned out a few meals. I have a lot I want to accomplish this weekend. LIfe is good. 

It’s so funny when I go into my WW meetings sometimes, only to discover that the topic of the week is something I have been thinking a lot about, or actually doing.

I had JUST posted a picture of my empty fridge! I like to keep it fairly empty when I travel. I toss out anything that I know won’t be good when I get home. So most of the time, I return to a pretty bare fridge.

I had a really full afternoon following my WW meeting. More house cleaning, laundry, phone calls, appointments made, mowed and trimmed the lawn…..which earned me 3 Activity Points!

As I was eating my dinner, feeling so proud of myself for weighing and measuring my food and eating 26 Points, I realized I just ate a bacon wrapped piece of meat and didn’t count the bacon!!! Damn. I was so on track too. Ah well. It was a good day.

I cut in half and boiled a few small white potatoes. Then I drained them, smashed them and added a dash of skim milk and 2 Laughing Cow Cheese Wedges along with a little black pepper and sea salt. Nothing fancy, but perfect to go with our Two for $8 Sirloin Steaks that I tossed on the grill! The carrots were the Green Giant Steemers. Not a fan.

Wake-Up-And-Smell-The-Routine

I spent most of the day cleaning and disinfecting! Ick. I do feel better though. If you read yesterday’s post, then you know why I did this.

I really need to spend some time meal planning…..and possibly shopping as well. I have milk, eggs and english muffins. They were on the counter when I took this picture. This is one sad fridge.

Due to a lack of groceries in the house, I made up a pizza that I’d never had before for breakfast. For lunch, I had Breakfast Quinoa?? We ate dinner out. Maybe I’ll buy some groceries today……

Breakfast

Black Bean and Egg Breakfast Pizza, Apple

Un-pictured Coffee with Frothy Skim Milk

Ingredients

1 Light English Muffin, sliced

2 T. Pizza Sauce

3 Scrambled Egg Whites

1/8 Cup Black Beans, rinsed

Diced Red Bell Pepper

2 T. Part Skim Mozzarella Cheese

Directions

(If you like a crispy crust, you could lightly toast the english muffin before you add anything to it. I did not, and it was still yummy, but next time I will do that.)

Top each English Muffin half with 1 T. of Pizza Sauce. Divide Scrambled Egg Whites between the two halves. I had some left over egg whites that didn’t quite fit, so I just ate em. Top with black beans and diced Red Bell Pepper. Top each half with 1 T. of the cheese.

I popped these in the toaster oven at 350 for about 8 minutes.

I’ve made scrambled eggs before and added black beans and I really liked it, so this may sound like an odd combo, but I thought it was really good. My only doubt was how would it taste with pizza sauce?? Uh….YUM!!

Breakfast Quinoa

This was an experiment, and I was pleased. I’ve tried the Breakfast Quinoa thing before, and haven’t been a fan. I wouldn’t call this a favorite of mine, but if you’re a huge quinoa fan, I think you’d like it. I like my oatmeal sweet, so I made the quinoa sweet too. It may be too sweet for some of you, so the last ingredient is optional.

Ingredients

1/4 C. Quinoa

1/2 C. Water

1/2 Smashed Banana

1/4 tsp Butter Extract (Vanilla would be great too, I was just being adventurous)

1/4 tsp Cinnamon

1/2 Smashed Banana

1 T. shredded Coconut

1 T. Almond Slivers

5 Drops of Sweet Leaf Sweet Drops Vanilla Creme – optional

(Or any sweetener of your choice if the banana doesn’t make it sweet enough for you.)

Directions

Cook Quinoa in water according to package directions. It make take less time to cook with such a small amount of quinoa. When the quinoa has absorbed most of the water, add the other ingredients and stir well.

Silly Rabbit!

Okay, really there is nothing Silly about this Rabbit story at all!!

My dog, Tucker…..

….seems to be taking some backwards steps as far as House Training goes. We’re dealing with a few other issues too, but the house training is the biggest problem. I’ve tried to crate him, and he just poop’s in it and rolls in it, which is a really big mess for me to have to clean up. I’ve tried to confine him to the kitchen while I am gone, but no matter what kind of a gate I rig up, he seems to get out.

Mike has designed a special gate for the large opening to our kitchen and he should have it put together and in place by the end of the weekend. Wait, he WILL have it put together by the end of the weekend. 🙂

Each time I go out of town, the problem gets worse, yet I just can’t seem to bring myself to board him. According to his paperwork, he spent the first year and a half of his life being in a kennel. I’m assuming he has a lot of anxiety about crates due to that. Makes sense.

Due to some other issues, barking, not following commands, attempting to get food off the table when we walk away from it, blah, blah, blah….I’ve decided it’s time to spend some money on a trainer. If I don’t, I’m afraid I am going to want to get rid of him, and I know that’s not really what I want. 

After stopping by my Vet’s office yesterday afternoon, to discuss the expense of a trainer and get my vet’s opinion, I came home to make some calls. When I walked into my house, a Rabbit’s HEAD (YES, THE HEAD ONLY!!!) was staring at me on my carpet! I screamed and ran outside. I had the total weebie jeebies and all I could think about was the fact that I had been gone for 5 hours and I wondered just how much of the house Tucker had dragged that thing through!!! I immediately called a friend (Thank you Kelly!) to PLEASE come remove it, then I made him search the house and look for the BODY!!!! No body was found. Still makes me vomit a little.

I felt like I just wanted to leave my house and have someone come and decontaminate it. Everything feels so disgusting. It’s possible he just brought it into the house, and never moved it (that’s what Stephanie tells me…she said he probably just wanted to show it to me), but I’m still disgusted. I didn’t sit down anywhere for over an hour.

Today, I will be washing every blanket, pillow, and cushion possible. The carpet cleaner is coming Tuesday. I kinda wanna move.

It will go down as one of my worst afternoons EVER!! I’m not good with dead animals. Dead animal PARTS may be even worse! Dead animal parts IN MY HOUSE???? ugh.

I know bringing that in the house has nothing to do with any dog training, but I’m still calling the trainer and getting it all scheduled TODAY!

Later in the afternoon, Tess called. Actually she decided to FaceTime me! We decided to have Happy Hour together and chat about our day. She was dying laughing while I shared my recent discovery. After I calmed down a bit, I had a good laugh too. We ended up chatting for a couple of hours, and Mike joined us when he got home. Then we all had dinner together over FaceTime. We shourd really take advantage of that more often. I totally felt like we spent the evening together!

It’s time for some short term goals. It’s time to get back to weight loss. It’s time to recommit to Weight Watcher’s. I’m only going to eat 26 Points a day for the rest of May.  I’m going to change things up a bit in June and challenge myself, but I haven’t yet decided what I am going to do. I’ve thought about trying new produce…..each week? Each day? Maybe just produce in a new recipe? I haven’t decided yet.

I am also going to do some sort of a goal for myself with my running. I haven’t decided yet. I’ve pondered “Running 30 Miles in 30 Day’s”. That really isn’t a whole lot, but my thinking is that if I head out the door everyday to run just ONE mile, I’ll actually end up running more. If I only do run ONE mile each day for 30 days, then I know running that mile will get easier and easier, but I’m still pondering if that is challenging enough.

I did my third Tuesday of Yoga this week, and I am really liking that! My (non surgery) shoulder has really been bothering me, and the stretching in the Yoga class is making it feel so much better!

I allowed myself to get away from the scale, and I still have no regrets about that, but I do know I’ve gained weight. I am going to my WW Meeting on Friday, and honestly, I haven’t decided if to look at the scale or not. I had let the scale really mess with my mood, and I don’t want that to happen again. Even though I have gained some weight, I feel good. I feel healthy. My mind feels in the right place. 

So, I have a little thinking to do and some short term goals to set for myself, but for now, 26 Points a day in my food choices and lots of fruits and veggies.

Snack

Zucchini Fries, Pizza Sauce

2 PPV

Very simple. Cut Zucchini into wedges. Lay a sheet of foil on a baking sheet. Spray the baking sheet with Olive Oil flavored Cooking Spray. Lay the wedges on the foil. Spray lightly with the cooking spray. Sprinkle with Sea Salt and Black Pepper. Then sprinkle with freshly grated parmesan cheese. You can pat any loose cheese onto the zucchini. The spray helps it to stick. Bake at 350 for about 15 minutes. I broiled them at the end for about 1 minutes to make the cheese crispy! Tasty little snack!
