June Goals

Wait.

June is over?

Can you believe 2014 is already HALF over? Geeezzzz.

For my June Goals, I decided to try two new produce items each week, and run one mile everyday. 

New Produce Items

Parsnips….While boiling them for Whipped Parsnips, I thought they smelled disgusting, so I threw them out.

Radicchio….I roasted it with Goat Cheese. Looked and smelled delicious. Tasted gross, so I threw it out.

Ancho Chiles….and used them for THIS Copy Cat Chipotle Chicken recipe! Yummy!

Kohlrabi…..I ate it raw and sliced it thin with apple slices and Cara Cara Orange Vanilla White Balsamic Vinegar. I liked it!

Artichoke….I steamed it and it did NOT turn out well. I think it may have been bad? I pledge to try that again….one day.

Mango….I can NEVER seem to pick out a ripe one, so it got tossed!

Eggplant….I was going to make it last week, and it just didn’t happen. Maybe tonight?

Basically I didn’t have a whole lot of luck in trying new produce items, but it’s always good to step out of the box once in awhile. I will always continue to try new things, produce included. 

Running

My hope was to increase my 12 minute mile to a 10 minute mile, which I did! Yay!! I was doing an awesome job on the running until Father’s Day when I tweaked my back. It was just a little, but it was enough that running didn’t seem like such a great idea, so I took a two week break from it. I took a one week break from long walks and Yoga. Last week, I was back at long walks and Yoga. I even added in a HOT Yoga class just for fun!! 

Since June’s running plan didn’t go exactly as planned, I’m doing it all over for the month of July.

Breakfast

3/4 C. Peanut Butter Cheerios, 1/4 C. Skim Milk

Snack

I dipped some berries in Vanilla Yogurt and froze them. It was actually a nice little snack to keep in the freezer and grab a couple once in a while. Not something you make and then set out to eat, that’s for sure.

Dinner

A little Garlic, Olive Oil and Red Bell Pepper Strips

Then I added some Zucchini Noodles

Apparently….They’re called Zoodles!

I topped that with 3 of these Chicken Meatballs! (4 Points)

Weight Watcher’s Points Plus

I can eat 26 PPV a day.

I can earn Activity Points by doing exercise, and eat them if I choose.

I have an allowance of 49 extra points that I can dip into throughout the week if I choose.

I should drink a minimum of 6 (8 oz) glasses of water each day.

My Weight Watcher Week Begins on Friday’s

 

Breakfast = Cereal, Coffee (4)

Lunch = Salmon Salad (12)

Snack =  Yogurt covered berries (1)

Dinner = Zoodles, Meatballs, Parmesan Cheese (6)

Total = 23

Exercise = none

How many glasses of water I drank = 6… Boo Hiss Hiss!

Activity Points Earned for the Day = 0

Activity Points Earned This Week = 0

Remaining points from my 49 Points Allowance = 0

Alcohol Consumption = none

The Yoga instructor in the Hot Yoga class said this last week during the class as we all balanced on one foot in an airplane pose. It was so appropriate for the moment, but it’s such an appropriate saying for so many times in our lives. We are always learning, growing and becoming stronger. We have to expect to fall once in a while. We only fail if we don’t get back up!

Falling Isn’t Failing!

  1. What is your address? I’m coming over to enjoy an artichoke!!

    Did your Quinoa require washing? Some of it does. I buy mine at Costco and it is pre-washed. Did you cook your quinoa in Chicken Broth? The first three times that I tried really hard to like it, I had cooked it in water, and I did NOT like it.

    Try it one more time, but cook it in chicken broth. Toss it in a skillet with some sautéed veggies.

    Hey! You come over and eat quinoa, and I’ll come over and eat Artichokes!!

  2. You are so funny! I agree…parsnips, yuck. Radicchio, yuck. But don’t give up on the artichokes, they are so yummy! Snip the tips off, set them in a pan with lots of room, upside down in about 2 inches of water and steam for an hour. Come over, I will make you one!

    I tried quinoa last night. It tasted like dirt.
