Friday afternoon, I attended a funeral. I, along with many other people in the community, have had the family heavy on my mind since Tuesday, the day they lost their 13 year old daughter, far too early in her young little life. My heart goes out to all of them,  and they are in my thoughts and prayers.

I’ve skipped a few pictures these last few days…..but here are some of the eats….

Thursday

I was in a cooking mood on Thursday. For lunch, I cleaned out the fridge and filled a skillet with red onions, yellow squash and a little olive oil and sea salt. I had a cooked sweet potato that I chopped up and added to it at the end. As I looked at it, I decided it needed a runny egg on top of it! It was delicious. I liked it so much that I made it again on Saturday for lunch, and added a little avocado! This will be a low point favorite meal for the future for certain!

I really don’t know what I ate the rest of the day on Friday, but this Peanut Butter Pancake was breakfast.

Saturday

Saturday morning I picked up a couple of girl friends, and my Little Sis, Samone, and we headed Downtown to the big City Market! I came home with tomatoes, peppers, and a squash called a Cucuzza!

Scientific Name: Lagenaria siceraria

Pronunciation:
ku-koo-za or “goo-gootz” (abbreviated speech of Campania, Calabria, Sicily, and all regions of southern Italy.)

Description/Taste:
Long and firm, this Italian squash has a light green skin and pure white flesh. An Italian import, it can grow three feet in length. The stem remains attached to continue nourishing the squash up to one month after picking. The cucuzza squash offers a slightly sweet mild flavor and a fairly firm inviting texture.

 

I think it looks like something you would paint and decorate for Fall, or add to an arrangement, but you really can eat it! Actually, it looks like a Goose Neck!

Some friends invited us over for an impromptu cookout, and dinner was delicious!

I’ve never had Watermelon and Feta, but I had heard of it. I am a FAN!! She combined Watermelon, Feta, Basil and Balsamic Vinegar. That was delicious!! I made a big Greek Salad with everything but the kitchen sink….Romaine, Pepperoni, Feta, Kalamata Olives, Sun Dried Tomatoes, Red Onion, Cucuber, Cherry Tomatoes and Greek Dressing. I must say, with a grilled chicken breast added to it,  it too was delicious!

We have nothing exciting planned for Labor Day, but these next two weeks are packed full! Maybe we’ll just enjoy having nothing to do! 🙂

A Nearly Picture-less Day??

Well, it doesn’t happen often, but yesterday I only took a picture of my breakfast, then I’m not sure really what happened.

I had a nice breakfast, walked the dogs, made a few phone calls, and headed out to The Food Truck for my regular Wednesday routine. It was hotter than H E double tooth picks (or double hockey sticks, depending on where you’re from)  in that truck yesterday!! The flies had decided to multiply like crazy around our feet and ankles, and there was literally NO BREEZE whatsoever!!! Before we even opened up for business, I was ready to chug my first bottle of cold water!

We were pretty busy, and at the first break, I was STARVING!! I had a Pork Taco with no tortilla, then I had some of Sidney’s awesome Buffalo Chicken, and added the tortilla to make it a wrap.

The rest of the afternoon was busy, and full, and then Mike called to remind me that he was golfing for the evening. I had a fund raiser – Happy Hour to go to, so I skipped dinner all together, and instead ate a handful of wheat thins and drank three bottles of beer at the Happy Hour!

Today will be a much healthier day. 🙂

National Dog Day? Who Knew?

National Dog Day?

Thank GOODNESS for Facebook, otherwise I never would have known that it was National Dog Day! These two refused to pose for me, so I had to settle for a nap photo. I mean, it was THEIR day, who am I to interfere in a good nap on the couch? Mishka did manage to open one eye for me though.

The Dog Training – an Update

At the beginning of June, I hired a Dog Trainer to help me with Tucker. We have had Tucker now for 2 1/2 years, (Tucker is 5) and house training has always been an issue. It gets better, then we go backwards. Then it gets better, then we go backwards. My house was starting to feel “dirty”, and I hated it. I had decided it was time to bring in a professional. This particular dog trainer had lots of great advice. They also happened to offer a “money back guarantee”, and they were pricey, so I liked that I could get my money back if things didn’t work out.  After three months of doing ALMOST everything they said to do, Tucker still likes to occasionally, and sometimes more than occasionally, do his outside jobs…..inside. Upon the advice of the dog trainer, I’ve changed up the daily dog routine a lot. They get fed twice a day now instead of just leaving the food out, they eat a higher quality food, so they actually do eat when I put the food out, the water is put away shortly after the dogs eat their dinner, they no longer sleep in our bed (well, Mike is a sucker for our aging little Mishka…..so she kinda sleeps wherever she choses) I have gated off the basement and the upstairs during the day, the dogs get a reward each time they do their business outside, and Tucker has now learned to “bark” on command.

It was, and is, still a hope, that eventually Tucker will come to us and “bark” when he needs to go outside.

Here is how this particular trainer handled the whole house training issue. If your dog should happen to pee or poop in the house, the trainer wants you to sit down with your dog on a leash, right beside the potty or poop, and have a 15 minute conference with them about why this is wrong and how they need to learn to “go” outside. Okay, you guys……15 minutes is a REALLY long time to just sit and talk to your dog! Especially when they don’t talk back. The idea is that they will not like these 15 minute conferences just as much as you don’t like these 15 minute conferences, and they will catch onto the idea that when they go outside, they get a reward, and when they go inside, they get a 15 minute conference. With each conference, you are supposed to increase the intensity of the way you talk to your dog. The trainer said that most dogs get it within 7 to 8 conferences. Okay….I did about 15 conferences, but I only could last about 7 or 8 minutes. At the end of the conference, I had a headache and Tucker just looked bored. It was just not working for us. I was honest with the trainer, and said I hadn’t actually done 15 minutes, but I had done the conference each time there was an accident. Last week, I got my money back and they were very nice about the whole thing.

Monday, I brought in Dog Trainer number TWO! His name is Earl. He has a much lower price, he does not offer a money back guarantee, but his services are for life. I can call him any time I need to for advice. He refers to the whole 15 minute conference idea as “dog shaming” and is in complete disagreement with the whole idea. His method? A crate. Well, I tried that in the very beginning, and Tucker not only hated the crate and barked the whole time he was in it, (getting him to GO in it was a total pain!) , but he pooped and pee’d in it, AND rolled in it. After several afternoons of cleaning that whole mess up, I said screw it and let him have the run of the house, crossing my fingers that he would just hold it and figure out that the backyard was the only place that he was supposed to “go”. Obviously, that didn’t work out either.

The last time I had a crate,  I had one of those that looks to me like a cage, and it may have been too big. This time, based on Earl’s suggestion, I have the plastic crate with just a small cage type door. The trainer, Earl, assures me that dogs like small spaces, and he approved the crate size that I purchased. Earl says that Tucker should learn to enjoy his crate. He wants him to eat his meals in it, play with toys in it, and look forward to spending time in it. ME TOO!! He says there is to be no blanket or pad in it, otherwise he will likely soil it.

On Monday, Tucker ate his dinner in his crate with the door closed, and then stayed in there for a while. He didn’t whimper or bark at all. Monday night, I was prepared for an entire night of barking, but that didn’t happen. I had the crate right beside my bed, and I never heard a peep! I was gone on Tuesday from about 9:00 in the morning until about 2:00 in the afternoon, and when I came home, he hadn’t pooped or pee’d in his crate, but he went outside right away and did both jobs! Last night, Tucker slept in the crate, and it was another quiet and peaceful night for all of us!

Earl thinks that since Tucker has never been properly house trained, he hasn’t been forced to strengthen and develop those muscles that allow him to “hold it”. He says that the small crate will allow him to learn to hold it since he won’t want to be in his mess, and eventually he will know that going outside is the only option.

I HOPE SO!!

I swear, if the only thing I needed to do all this time, was buy a smaller crate, I’m just gonna slap myself!!!

Thursday…

I exercised and had a good breakfast Thursday morning. I worked a short shift at The Food Truck, and in record time, I drove home, showered, gathered up my things, and hopped in the car to catch a 2:20 flight instead of the planned 4:00 flight. I live 45 minutes from the airport. I pulled out of my driveway at 1:15, and somehow walked onto the plane at 2:15. I really have no idea how that happened, but as soon as it did, I received a text that my 4:00 flight was delayed until 9:30 pm! So, needless to say, I was ecstatic and the weekend was off to a great start!

Tess started a new position on Wednesday, and I arrived in Dallas just in time to go see her new office and get a nice little tour. We went to our traditional “first night in Dallas” restaurant, Fireside, where we had dinner and got caught up! We had Beers, Bruchetta, Salad and Shrimp. We have ended up at this same restaurant the first night that I’ve gotten in town, every time I have gone to visit. 🙂

Tess has made a lot of great friends in Dallas, and three of the guys that work with her just moved into her apartment complex this week. They came over for a visit when we got home from dinner. With her two roommates being home, and the boys coming over, I felt like I was living in an episode of “Friends”. They were all ridiculous together. It ended up being a very entertaining night!

Friday…

Friday was Tess’ birthday, so I let her celebrate by sleeping in while I had coffee. The roomies were already off to work. The birthday girl? She took the day off.

When Sleeping Beauty awoke, we had coffee, a good chat, then we went for a nice, hot walk, and planned the rest of our day. She ordered this Chiefs shirt last week, and it arrived in the mail on her birthday! This girl is a ridiculous football fan, so the fact that it arrived on her birthday could not have been more perfect! (she will not be happy about this picture….but I’m her mom, and I think it’s adorable)

Tess has been talking about this dish since she had it for the first time several weeks ago. It’s a Burgerbowl. It’s a burger, in a bowl, on a bed of Sweet Potatoes, topped with an over easy egg and avocados!! What’s NOT to love??? (Yes, there is a burger under there, and Yes, it was delicious!)

After dinner, a few more friends met up with us, and basically I went bar hopping with a bunch of 20 somethings, and it was awesome!!!

Saturday…

Saturday was a chill morning with Tess and her roommates. We chatted about the evening and napped off and on. Just like 20 somethings do on a Saturday. I flew home around dinnertime, and Tess and the roomies went out and did the whole thing all over again. I was so glad I was home.

Sunday…

Sunday I slept in, and it was heaven. Then I mowed while Mike went and picked up our paint (We are getting the house painted in two weeks! Yay!) , then I made us Bacon Egg and Cheese Sandwiches…..

…..then I rearranged my bedroom. Changing out the bed skirt on a King Size bed is not one of my favorite task, but Mike and I can’t seem to move a coffee table well together, so it was actually easier to do by myself, so I did. Hopefully, paint to come soon for the master! I’ve been pondering a new wall color for months now. 

After receiving a text that it was the last day for the produce stand down the road,  I went and bought some fresh yumminess! Marinara and Zoodles this week!

After four loads of laundry (how can two people have so many dirty clothes???) we met my dad and his wife for dinner. I was totally going to order the grilled chicken salad, but ended up with the shrimp quesadilla……I only ate half, and it was delicious. I didn’t eat much all day, back to small meals, and fruits and veggies today.

We were home by 7:30 and binge watched Naked and Afraid on the Discovery Channel.  It…..is……soooo weird.

HaPpY BirThdaY, Tess!!

I’m leaving on a flight to Dallas this afternoon to go visit one of the coolest kid’s in the whole world, my daughter Tess, for her birthday. If you’re new to the blog, Tess works for Southwest Airlines, and mom and dad fly for FREE!! I don’t know how I would have handled her moving so far away if we didn’t have the chance to see each other as ofter as we do with the free flights! It really is a HUGE benefit!

I worked hard all week to get in a lot of whole foods, drink a lot of water, and exercise. I’ve been in the zone, and I’m mentally prepared to go out of town for the weekend. I’ve packed my walking clothes, and I’ll only be gone two nights this visit.

I missed my long walk yesterday, but I did get Tucker outside for a sniff and stroll yesterday morning. This morning, I woke up at 6:00 am (which I never do) and headed out the door first thing for a 3 mile walk. I’ve already had lots of water, and I’ve had my breakfast.

Stretch and Restore…..

Yesterday, my body felt tight from head to toe! Thankfully, there is a large variety of Yoga classes that are offered between the two places that I have been going to. One Yoga class that I have tried, and liked, is called Stretch, Relax and Restore. And that’s exactly what you do. It’s basically an hour and 15 minutes of holding long stretches, relaxing, and leaving feeling restored. I did that class yesterday, and it felt great. I took a break from walking yesterday, but I’ll get in a few miles today. 

I’m keeping this short so I can get those miles in and take the dogs on a “sniff and stroll” before going to work the Food Truck today!

A Snacky Afternoon…..

August 19, 2014

It was a full afternoon of snacking! For some reason, I just never felt satisfied. The snack’s that I listed between lunch and dinner, I consumed from about 3:30-7:30. We didn’t eat dinner until almost 8:00, which is about an hour later than usual. I was home all afternoon, and while I didn’t feel like it was stress eating, I did have a lot on my mind. I kept telling myself to focus on the phone calls I was making, and the task that I was trying to complete, and forget about the food, but I just kept on snacking. While I did not take pictures of the snacks, I know what I ate, and I tracked the points.

I fixed Mike leftover spaghetti for dinner. There wasn’t enough for both of us, so I had planned to come up with something quick and easy for myself to eat for dinner. I maybe should have just skipped dinner!

When I look at it now, my afternoon snacking really wasn’t too awful! It’s not like I ate a sheet cake or anything! 🙂

In the last 6 days, I’ve walked almost 27 Miles and I’m really pleased with what the scale is doing this week!

After walking all of those miles, Yoga should feel really good today!

Instructions
  1. Blend all ingredients in a blender or food processor until the consistency of ice cream. Add a splash of milk if ice cream seems to thick or needs help moving around the blender.

  2. SmartPoints = 1 (When made with Unsweetened Vanilla Almond Milk
  3. For additional sweetness, you may want to add one packet of sweetener of your choice.

I thought it was going to be a relaxing day, but it ended up being another chore day. I think I am caught up for awhile now though. 🙂

I got in another great walk, and I am really liking what the scale is doing these last few days!

Breakfast

All of the Pumpkin items on Pinterest had me craving it before Fall even gets here!! I have another Pumpkin Pancake recipe that is four pancakes for 8 PointsPlus. I created this one without using any greek yogurt, and less oatmeal that is in the other recipe. I think they both taste great though! This recipe makes three pancakes.

The real yumminess for both of these recipes, is topping them with Pumpkin Butter!

 1/8 Smashed Avocado with Lime Juice and Sea Salt,

Two Slices of this bread = 3 PointsPlus, and it is fabulous! Crispy crust, soft in the middle, not too much garlic butter!

Weight Watcher’s Points Plus

I can eat 26 PPV a day.

I can earn Activity Points by doing exercise, and eat them if I choose.

I have an allowance of 49 extra points that I can dip into throughout the week if I choose.

I should drink a minimum of 6 (8 oz) glasses of water each day.
