Pumpkin Pancakes

  This was a little different than the Pumpkin Pancakes that I have made using more oatmeal, and greek yogurt. They were less points, and more dense. But I do like both! The “icing on the cake”, (pardon the pun) is the Pumpkin Butter on the top! You really need a good Pumpkin Butter to make these complete! “love the life you live, live the life you love”

Super Successful Saturday!

It felt really good to wake up on a Saturday morning not feeling bloated and puffy from the alcohol and snack’s that I might have consumed Friday night.  I’m leaving Thursday night to go visit Tess in Dallas for her birthday, and I know that we will go out. I just need to make a plan this week to really minimize what I do so that I don’t come home from that trip feeling all blahhhhh…….then frustrated. Saturday was a full day of yard work, lunch and a little afternoon shopping with my mom. We had some unexpected things come up in the evening, so dinner was weird, and all I could really think about was……I could use a drink. Feeling Strong!

It’s just been a really good last few day’s. My Weigh In went WAY better than I was expecting after the weekend I had last weekend. I actually lost weight! The last three days, I’ve gotten in two walks like this one I did yesterday……     ……I’ve consumed a LOT of water, went to bed early, and I’ve eaten really well. I already feel a lot better than I did just a few days ago! I met another WW member for coffee after my meeting Friday morning. She read’s my blog, and she had said that she thinks that we have very similar struggles and she wanted to get together and discuss. Great Day for a Walk Outside!

It was a busy morning and I had a lot of things on my “to do list”. After running a few errands in the morning and enjoying the weather outside, I knew I wanted to get out and walk. I have a few friends that like to walk outside just as much as I do, and I know I walk further when I go with someone, so I sent out a few text messages. Becky almost ALWAYS say yes to a walk, and she did not disappoint yesterday! A Day in Control

I’ve got a full day today, so I’m keeping this super short! I didn’t get a post written yesterday, and I struggled on Tuesday to make the best food choices. I was gone all day, then didn’t take pictures, but basically I ate meat and tortilla’s and a few pieces of fruit.  Yesterday, I was back on track, and it felt good to be in control.   Breakfast Frothy Coffee Oatmeal topped with Warm Cinnamon Apples 5 PPV   Lunch at the Food Truck Shredded Chicken, Chipotle Mayo and Secret Sauce! 8 PPV   Snack Fruit 0 PPV   Dinner Salmon, Baked Sweet Potato Grilled Zucchini topped with 1 T. Chores and a Chicken Enchilada Casserole

Yesterday was a great day full of chores. Getting organized for the week, doing some much needed housework, menu planning, grocery shopping, then working out in the yard for about four hours. For some reason, I never did get to the mulching that needed to be done this Spring. So I chose yesterday to do that. What better way to spend an afternoon, while aching from head to toe from tubing over the weekend!! It actually loosened up my tight neck, and I felt much better! 🙂  While meal planning, I found some chicken in the freezer that I wanted to use for dinner. Lake Weekend’s are the Best!

It was a great long weekend with lots of relaxing, lots of playtime, and lots of people! My lake weekend began with a four hour drive south to the beautiful Table Rock Lake…… ……..which is the clearest and cleanest lake that I have ever been to! I should have taken a picture of my feet dipped into the water so you could see how clear it was! Thursday I’m not a super fan of night time driving, and the drive to the lake ended in the dark, on your typical winding lake road, IN THE RAIN!! I was 10 and 2 on the steering wheel, leaning forward just as far as I could (seriously, how does this help??) and gripping that steering wheel just as tight as I could! Bright Eye’d and Bushy Tailed!

That’s how I felt when I woke up yesterday morning! Bright Eye’d and Bushy Tailed! Between my Advil PM, and the breathing technique’s I’ve learned in Yoga, I’ve been going to sleep easier, and actually staying asleep. I had TWO good nights in a row, and that just never happens. I’m a total tosser and turner. Some mornings I wake up exhausted from all of the tossing and turning!! Not yesterday morning though. I woke feeling super rested and ready for the day! I always say I am going to exercise before leaving to go work the Food Truck on Wednesday’s, but I rarely do. Yesterday morning, I took care of my morning chores, put on my exercise clothes and headed out the door with Tucker! Small Meals

On Monday, I ate only a banana for breakfast, and it was late when I had lunch, which left me with lots of points for snacks, or small meals,  throughout the rest of the day. At the end of the day, I still had 2 points left. At my WW meetings, I have heard other members talk about how they eat small meals (around 5 points) throughout the day. So yesterday, again, I ate small meals, and I ate often. After looking at what I ate, I only ate two fruits and the only veggie I got in yesterday was the tomatoes in my marinara sauce! Oops. I brought bread into the house for the BLT’s the other night, and it’s a total trigger food for me. I love the Trader Joe’s bread as toast, and it’s only 1 Point for one piece, but it will be a good thing […]

Learning to Run

Last night Mike asked…..”How did “Running One Mile Everyday” for the month of July go? I said….”I think I only missed 5 days.”  The awesome thing about my blog is that, I can look back at anything I need to and see just how I did. I MISSED 17 DAYS!!! Okay, I will say only five of those days I did NO exercise at all, but I couldn’t believe I missed 17 days. It felt like such an active month!!
