Just Checking In….

Things are not going exactly as planned for my week!

Friday, the first day of my Weight Watcher Week, was an early birthday celebration with too many cocktails, but I did get my walk in.

Saturday, I didn’t make the best choices where food was involved for my birthday dinner, but I did walk.

Sunday, Thanksgiving number one seemed to be a plate full of carbs with a side of wine.

Tucker and I took a misty three mile walk on Sunday, but I am really behind in this challenge!

I picked up Tess at the airport early Monday morning and we got all caught up over latte’s and breakfast.

I spent the rest of Monday getting the house ready for Thanksgiving. If I wasn’t doing something in the kitchen or dining area, then I was making a list of something that needed to be done before Thursday.

Monday included lots and lots of water, healthy food choices and a beer, but I didn’t count points, so I really have no idea where I am at.

I did not walk yesterday, and I needed to be walking everyday in order to get my 100 Miles in before the end of the month!

Tess and I went to the grocery store around 8:30 last night, then came home, unloaded the Thanksgiving goods, and baked my mom’s Pumpkin Bread. I can’t imagine a Thanksgiving without it!

Today is a much more organized day than yesterday was. Meals are planned and I will get my walk in!

This post is not about beating myself up, I’m just saying…..Hey guys, here how things are going. I knew that this week was going to be really tough, and so far, I’ve don a pretty crap job!

On a positive note, I’m so excited to have Tess here! It’s hard to not feel good when she’s around!

Happy Birthday to Me!

Yesterday was my 48th birthday and I’ve been spoiling myself all month long. I like having a birthday month!

I know there are some who would rather not discuss their age, some who don’t want to make a big deal of their birthday, some who say “It’s just another day”, and some who don’t expect much on their birthday. 

I am none of those people.

I say celebrate all month long! I like card’s. I like girly lunches. I like Happy Hour’s. I like massages. I like coffee in bed. I like the traditional birthday song sung to me. I like birthday phone calls. I like birthday cake. No need to tell the waiter it’s my birthday, I told the hostess when we walked in the door! I’m all for it ALL! I think your birthday should be just as special as the day you were born. Everyone was so excited when you entered the world, why not celebrate that special day every single year!

I started the month with a little “ME” time and a spa trip.

I spent the next two weeks enjoying Yoga and doing little things for myself. Simple things, but good things. Curled up reading a book, doing my nails, coffee and lunch dates with friends. It’s been a really good month.

Friday night a friend of mine hosted a little 4:00 pm Birthday Happy Hour that ended with Fireball shots and the birthday song at midnight! It was perfect! It’s safe to say that I don’t remember getting into bed that night, and I possibly woke up on my birthday feeling much older than 48!

Saturday I was moving S L O W, but I did get my 5 mile walk in!

I have not counted points these last two days, and today is Thanksgiving number one at my mom’s.

I sat down in front of the mirror to put my make up on, and I looked at myself and I thought….so, this is me at 48. This is what 48 looks like on me.  And I took my picture. I mean, I had to take a “made-up” picture too, right?IMG_3064

Success!

When I rolled out of bed yesterday morning, (it’s not just a metaphor, sometimes I literally roll out!) I went to my coffee corner. Staring me in the face was a baggie with a leftover corn muffin in it. That corn muffin seemed to be staring at me. I really wanted to make that first morning cup of coffee, heat up that muffin, drizzle it with honey and gobble (hello, it’s almost Thanksgiving…..gobble…get it?)  it up! Instead, I threw it away. I promised myself that I was going to have a great week, and Thursday is day 7 of my WW week! I didn’t want to blow the last day of my awesome week! Eating that muffin would have sent me into carb cravings for the rest of the day for sure!

Part of me hated that I couldn’t just let that muffin sit on the counter and have it not bother me. A better part of me likes that I have figured out that trigger foods in the house give me major anxiety. The best way to deal with preventing that anxiety, was to simply throw the muffin away and go on with my morning.

Thanksgiving Prep!

Mike and I are hosting Thanksgiving at our house this year, We offered to give Mike’s mom a break and she surprised us and took us up on our offer!

We’ve hosted once before, (maybe twice?) and I truly think that I have just as much fun setting the tables and decorating as I do cooking!

We don’t have a formal dining room, but we do have a fairly large eating area with one big long table that can seat 10. I’m bringing in some smaller tables too, moving lots of stuff around, and I feel like I am setting up a tiny restaurant! I spent the entire morning rearranging and rearranging and rearranging until I had it all figured out!

I can now seat 24 and we just might need it!  It’s going to be so cozy! Do I have 24 plates???

After spending my morning playing restaurant, I got on the treadmill for 3 miles, then it was time to head out the door!

I picked up Samone, my little sis, at school and we headed over to my mom’s house to help her do a little set up work for our Sunday Thanksgiving meal at her house. We do two meals every year, and my side of the family is a tad smaller. While there, we enjoyed a little pumpkin bread and a couple of games of Yahtzee with my mom! I can’t remember the last time I played Yahtzee, but I love that silly game. I’m not one to brag, but I kicked both of their butts!

That Treadmill

After getting back home and out of the cold, I was glad I had made enough of my Mom’s V-8 Soup to have it for dinner two nights in a row!

After dinner, I forced myself to get back on that dang treadmill and get in two more miles as I watched the Chiefs game. (that did NOT end well)

My 100 Mile Walking Challenge was so much easier in September when the weather was so gorgeous and I was walking outside! I didn’t do a challenge in October and I wasn’t nearly as active as I should have been. 

I knew setting a goal for myself in November was what I would need to keep as active as I should be.  I’m a little behind on my 100 Mile Challenge, but I’ve done a great job of getting in the yoga classes, which I didn’t do so well at in September. There’s only so many hours in a day people!

I have to admit, I have really been having to push myself to get on the treadmill and walk these miles inside!

I only have 10 days left, so I’ll have to get in an average of 5 miles a day to reach my goal!

I’ll do it though. I’m glad I challenged myself. It’s a big food month and I need these activity points!

 Egg Rolls

Now, let me talk about the lunch that I ate yesterday for just a second. Well, its breakfast food, but I ate it for lunch.

I got the idea for this Egg Roll from Danica’s Dalily.

Danica cooks one egg and rolls it up in a corn tortilla with a slice of cheese. It’s awesome!

I like to look at a plate full of food, so I was trying to get a little more bang for my buck! (More food, not many more points!)

I cook 4 egg whites, two at a time in a small omelet pan, then set them aside on a plate.  I tear one slice of Kraft 2% Sharp Cheddar Cheese into pieces and divide it between the cooked eggs.

I heat the small corn tortilla’s, one at a time, in the skillet, for about 15 seconds on each side.

Slide the cooked egg with the melted cheese onto the tortilla. Roll it up!

Repeat with the remaining cooked egg whites and tortilla.

(I had one tortilla on there just a tad longer than 15 seconds, but it was nice and crispy and I liked it!)

Vegetable Tot’s?

I’ve been looking at a lot of recipes lately, and I have loved everything that I have made from Gina’s awesome recipes over at skinnytaste.com.

When I found this recipe for Broccoli and Cheese Tot’s, I knew I had to try it! They were absolutely delicious! Now, I can’t wait to try her recipe for Zucchini Tot’s and Cauliflower Tot’s.

These were easy too!. You mix up a few simple ingredients, roll em in little tater tot shapes, and put em in the oven!

The last thing I would have thought to dip these in was ketchup, but you know what? That’s exactly what we did and they were crazy tot tasty!

Yesterday morning, I made Mom’s V-8 Soup in the crockpot, and the house smelled so good after a day of errands!

I struggled to get to the treadmill yesterday. I actually got on it, walked .25 mile, then got off!

I’ve got some miles to walk today. I might just bundle up and go outside. EEEEKKKKKK!!!!!!! It is currently 28 outside!

Thanksgiving Tease

I planned for a successful week this week, and so far things are really going well.

I planned out my meals for the week on Sunday and I did my grocery shopping,

I am continuing on my 100 Miles in November Challenge, AND I’m getting in some awesome Yoga classes!

I’m keeping myself busy while I’m at home and staying out of the kitchen!

If you read my blog regularly, you know that I work at my friends food truck throughout the week. Her food is really awesome, and that can be a real challenge for me sometimes.  I took this first week of November off, and since then it’s just been to cold for the propane to cooperate, so we haven’t been working. That means that I have not been tempted by her delicious food, but that also means more time at home, and there are days that that can be really difficult, but I’ve done a really good job of staying in control this week.

So far, so good!

 

As I was dressing for Yoga yesterday, I pulled out a fairly new black tank top that I really like. It has ruching down the sides, and it’s extra long. It’s super soft and has a perfect neck line. For some reason I looked at the tag.

It’s a MATERNITY top!

That’ll boost your ego!

Butternut Stuffed Turkey Tenderloin with Cranberries and Pecans

First of all, the turkey tenderloins I purchased were HUGE!!!! This is ONE of them before I baked them, stuffed with all the stuff.

I found all sorts of great ideas on Instagram yesterday! Do you have an IG account? I highly recommend it for inspirational quotes, meal and snack ideas, exercise ideas and motivation, or even cute outfit ideas! My yummy snacks and dinner from today’s post were inspired by Instagram accounts that I follow! More on Instagram in just a sec!

Honestly, today’s blog post is all over the place!

My Monday included a Hot Yoga class that I loved, a six mile walk on my treadmill that I did not love, lots of recipe searching and a little Holiday Planning.

At some point during the day, I stumbled across this blog post that I wrote just after the Holidays last year.

Shedding Those Holiday Pounds

It’s about how careful I promised to be during November and December of 2014! I love writing my blog for so many reasons, and this is one. It was really good to go back almost a year and see exactly what my thoughts were related to my health, my eating, and my mindset.

Did I mention that I walked 6 miles on the treadmill?

Now that I have moved the treadmill into our bedroom and I have my DVR handy, I am caught up on some of my favorite TV shows! I would much rather be walking outside, but I suppose this little set up will get me through these cold months just fine.

I might spend the rest of November watching Holiday movies!

Okay, back to Instagram.

I follow a lot of really creative people on Instagram, one of them being weightwatchers4me, and she is always coming up with some kind of delicious sweet snacks! Often, she cuts a banana in half and tops it with all sorts of great stuff! She inspired me to be a little creative with my banana yesterday!

If you’re on Instagram, and you are looking for a little motivation or snack ideas, you should totally follow her!

If you melt nut butter in the microwave for 10-15 seconds, it spreads much easier! The sea salt on the banana really is yummy!

I found this recipe over at emilybites.com. I modified it just a bit based on what I had in the fridge, but it was good and it was easy. I like good and I like easy. My picture doesn’t look all that appetizing, but Mike and I both liked it a lot all mixed up with our Dole Chopped Salad!

Salted Caramel Smoothie

Healthy Salted Caramel Smoothie

 

Even though it is ridiculously freezing outside, I was craving a cold sweet treat! I always keep a few of the Weight Watcher Smoothie Mixes in my pantry, and I hadn’t had one in a long time!

I stepped away from the fireplace for just a few seconds, and I pulled this out.

I put it in a blender, then I added a few other simple ingredients (frozen banana chunks seem to give smoothie’s an awesome creaminess!) and then I remembered that I had some caramel ice cream topping in the fridge! It’s tough to say why or when I bought that ice cream topping (I’m thinking grand kids), but the shelf date was safe, so I knew I wouldn’t die if I used a teaspoon or two.

Then I made this…..

Ingredients

1 Packet of Weight Watcher Salted Caramel Smoothie Mix

1 cup of cold water

1 cup of ice

1 frozen banana (five to six chunks of frozen banana)

Sea Salt 

1-2 tsp of Caramel Ice Cream Topping

 

Directions

Dip the rim of your glass in a plate filled with water, then dip the wet glass onto a plate of sea salt to generously cover the rim. Set aside.

Melt the caramel ice cream topping in the microwave for about 10 seconds to make it easier to drizzle. Set aside.

Add smoothie packet to a blender. Add water, then ice, then banana and blend well.

Pour into salted rim glass, and drizzle caramel sauce on top.

Drink right out of the glass. DO NOT USE A STRAW! You have to have a little salt with each drink! It’s a must!

Makes One Smoothie

One Serving = 3 PointsPlus

Chicken Sausage Skillet Meal

We came home from our night out on Saturday night (okay, Sunday morning) at 1:00 am. Tucker had pooped in his crate and it was a mess. I spent the next hour giving him a bath and disinfecting the crate. FUN!! 

At 2:00 am, I crawled into bed. Mike was fast asleep. I’d love to tell you about how Mike helped me clean up the poop mess, but the last time this happened he did it all wrong and I let him know it, so this time, I just sent him to bed. I’m fairly certain he did it all wrong so he would never have to do it again, and it worked, so I gotta tell ya, the guy’s pretty damn smart.

I slept in until 10:30 am on Sunday!

After coffee and doggie cuddles, (I never thought I would actually love a dog unconditionally, but damn it, I do.) I watched the Chiefs win, I ate a really late and yummy Breakfast that included french fries, so brunch I guess, then I hit the grocery store, then I went to a 5:00 pm Yoga Stretch and Restore class. It was a nice and relaxing way to spend my rather lazy Sunday afternoon.

After groceries and Yoga, I came home and cooked dinner with these!

Chicken Sausage Skillet Meal 

I cut up the sausage into bite sized pieces and browned them it in the skillet. I set the sausage aside. I boiled 10 small potatoes for 15 minutes, drained them and sliced them. I drizzled Butter Flavored Olive Oil into the skillet and tossed in the sliced potatoes, 1 diced onion,1 diced zucchini and a large handful of shredded carrots. I seasoned them with Cracked Pepper and Sea Salt and cooked them until the onions were tender. Then I added the sausage and gave it a good stir.

I added two wedges of Light Creamy Swiss Laughing Cow Cheese and put a lid on for a few minutes.

They melted into a creamy finish for my quick and easy skillet meal!

Dinner was Delish! Mike thought so too! And if you remember, he’s really smart!

 

Ingredients

4 Chicken Sausages

10 Small Potatoes, cooked and sliced

1 Onion, diced

1 Zucchini, diced

1 C. of Shredded Carrots

1-2 T. Butter Flavored Olive Oil (Regular Olive Oil is great too!)

Salt and Pepper

2 Wedges of Light Cream Swiss Laughing Cow Cheese

 

Directions

Cut sausage into bite size pieces and brown in skillet. Set aside. Cook vegetables in Olive Oil until onions are tender. Season with Salt and Pepper. Add sausage and stir to combine. Top with cheese wedges and set a lid on top until cheese becomes soft. Stir melted cheese in!

Makes Four Servings

One Serving = approx. 8 PointsPlus

Yesterday, I accepted the winter temperatures that we are experiencing here in Kansas, and decided to move my treadmill into my newly decorated bedroom where I can rent movies or watch my DVR’d TV shows. I really hadn’t planned on this as a part of my new bedroom decor, but the 6″ ancient TV in the spare bedroom where my treadmill had been, just wasn’t going to do it for me if I’m going to be walking inside for the next few months. I decided that I could spend a bunch of money on a nice new TV, or I could drag the treadmill down the hall.

I figured moving the darn thing might earn me a few activity points, right?

I prepared myself for a half an hour ordeal and looked at the clock. Within 7 minutes, I had it in it’s new winter home! It actually folds up nicely and slides right back into that corner. For a few months, it’ll be fine.

After getting things situated, I rented The Fault in our Stars, and walked 4 miles in my bedroom!

That was a really good movie! I was a bawling mess at the end of it, but it was a good one!

We had plans last night with some friends to go to dinner at Cooper’s Hawk (we had never been), then to see Natalie Merchant and the Kansas City Symphony at the Kauffman Center.  I love Natalie Merchant, and the thought of her singing with the symphony sounded intriguing, so I was looking forward to our evening out. Thanks for inviting us Rebecca!

This isn’t a great picture, but the theatre was beautiful, the concert was great, and at the end, it was just Natalie and the pianist and guitar player doing a few old tunes. We then went to one of KC’s Blue’s and Jazz bars to end the night! It was a great evening out!

I was at home all day and did a great job of staying out of the kitchen. I knew I would be having wine (the restaurant is also a winery!) at dinner, so without skipping eating entirely for the day, I tried to eat smart, drink lots of water and keep my points low. I had to guess on my dinner, but I think it’s fairly accurate. The rest of the week doesn’t really have any planned socializing, so no real food or drink challenges. I should be able to keep on track, and now that I’ve moved the treadmill, I’ll easily keep up with my 100 Miles in November challenge. The scale this morning confirmed my healthy choices the last couple of days.

I ordered the Surf and Turf, salmon and steak. I gave Mike a half of one of my medallions. They were so delicious that I HAD to share! They brought me a Parmesan Crusted Grouper instead of the salmon that I ordered. I didn’t eat the grouper, and while the rest of my food was absolutely delicious, when they did bring out my salmon, it was a little dry, so I only had a few bites. I only ate about 1/3 of the potatoes, and that was hard because they were really, really, really, really good! I had two glasses of wine with dinner, and one at the concert. I’m giving my dinner points a good guess. It was pretty salty and I’m sure everything was dripping with butter.

This Week

I wrote one of those post this week where I had to admit I’m struggling. I hate writing those post, but I have to admit they do seem to get me back in a serious Weight Watcher Zone, for a while anyhow. I had a few comments on that post that also reminded me that many of us struggle in this food/weight battle, and that again, I am not alone in my struggles.

I keep reminding myself that even though I have gained some of my weight back, this last 5 years is the longest that I have stuck with it, and I have not gone back on my word that I would be a Weight Watcher member for the rest of my life. Staying with Weight Watchers and continuing to work on being the best me that I can be, is keeping me from completely going to back to all of my old habits. I am constantly reminding myself of why I am doing what I am doing. I want to be healthy, today, tomorrow, and in 20 years. The only way to do that, is to never stop trying to be a better and healthier me.

This week, i am going to focus on “this week”.

For those of you that are having some similar struggles as myself, I encourage you to do the same. Focus on just this week. Pat yourself on the back for small successes throughout the week that have nothing to do with the scale. Pat yourself on the back for drinking your water. Pat yourself on the back for getting in some activity. Pat yourself on the back for meal planning. Pat yourself on the back for taking the stairs instead of the elevator. Pat yourself on the back for not eating seconds at dinner. Pat yourself on the back for taking the steps necessary to make this a Healthy Week!

Activity

I forgot how much I really do NOT enjoy walking on the treadmill, in a room, alone, and how much I really do like to walk outside with a friend!

I got on there yesterday. I literarily kept my pi’s on, put on my walking shoes, grabbed the book I had started reading that I couldn’t seem to put down, and got on the treadmill! I walked 6 Miles while finishing my book!

Reading and walking was not as near as easy as I had thought, but I got the job done and knocked off 6 more miles!

I was home most of the day yesterday, and I kept myself busy and out of the kitchen. I drank 15 glasses of water, so that kept me full (and busy!). I kept telling myself that I was doing a great job of staying out of the kitchen! I had a delight pizza from Papa Murphy’s planned for dinner, but I know how hard it is for me to only eat two pieces, so I made the pizza for Mike, and I made a meal for myself that was satisfying, tasty, and an all around better option for me.

It was a successful day, and I feel ready for the weekend! We have plans to go to dinner with friends tonight, and then to a concert, so I will plan accordingly today.
