Beautiful In Scottsdale!

I arrived with my friend, Ashli, in beautiful Scottsdale, Arizona yesterday and I am so happy I came on this trip! The view from the resort is beautiful. I’ll take lots of pictures today, and post them tomorrow!

Ashli is here on a business trip, and she invited me to come along. There are about 150 women here for a women’s conference and they have a full schedule today and tomorrow!

Yesterday was a challenge, and I didn’t do as well on my points as I had hoped. Breakfast was smart, lots of protein with egg whites and greek yogurt. Lunch was pretty smart as well. We were sitting around the pool and the menu that they offered had lots of healthy options. We went with the Mahi Mahi Taco’s on corn tortilla’s, and Ashli and I shared the order.

While sitting poolside and having lunch, we had a Mia Tia…..and a beer.

Dinner was a challenge, as expected. I went to a Happy Hour and Welcoming event with Ashli. There were different stations of food set up around the pool. There was a pizza station, a station with egg rolls and potstickers and a few other fried items, one station was a variety of cheese of olives, one was a risotto station, and then there was a bar.  I had a glass of white wine, and the wait staff did an incredible job of keeping all of our drinks full! Every time I turned my head, my wine glass was full again! It was hard to say no to complimentary wine!

That’s how yesterday went and I’m just going to give it my best guess on my points that I ate.

Here is my pan for today!

I found my way around the resort yesterday and while checking out the gym, I met Heather. After chatting with her for a bit, we became BFF’s! I am meeting her at 8:30 this morning, and she is taking me on a three hour, private guided hike up the mountain! I’m super excited, and a bit nervous. We talked a lot about my activity level and my routine, and she described the hike to me. She said she’s certain I can handle it!

I’m hoping to earn lots of activity points and work off some of those extra points that I ate yesterday!

Then for my afternoon, I scheduled a massage and facial package that includes a lunch on the rooftop looking out at the mountains!

Here’s to an awesome day!

  2. It sounds like a wonderful trip. Enjoy your hike today. My girlfriend and I hiked for almost 2 hours with our Nordic Walking poles on Sunday and had the best time. We both have knee issues so we go at a slow pace but it is my absolutely most favorite thing to do! And the view from the top is wonderful……not to mention the activity points you earn.

I admire you for staying accountable when you don’t know your points and when you go over. That’s when I tend to just start over the next day and it doesn’t work well. I need to estimate my points more and stay on a weekly basis and not just daily.
