I Will Never Quit

November 13, 2014

Activity

Yesterday, I went to my third Yoga class in a row this week, and I walked 4 Miles on my treadmill. I’m loving the Yoga classes, and I even got out of the house nice and early and went to an 8:00 am class! It was really cold here in Kansas yesterday, so I decided to stay in during the afternoon and walk on the treadmill. Ellen kept me entertained, and I’ll probably be back on the treadmill again for the next several days. Baby it’s COLD outside!

Food

I went out of town last week, and I did really well with my food and drink choices. I know that going into this holiday season, I have got to be really careful, which is one of the reasons that I made the decision to track so well while I was out of town last week. I felt like I was preparing myself for the way that I wanted to handle these next several weeks.

I made Weight Watcher Friendly Pumpkin Spice Muffins yesterday, a total trigger food for me. I ate two for lunch, packaged up a few, and took the remainder of them to Book Club last night. (Side note: I dropped out of book club a long time ago, and last night, I rejoined! Yay!) While driving home from Book Club with my leftover muffins, I ate four of them, and then when I got home, I made a cup of coffee and ate TWO more! I drank more wine at book club than I had planned, and I had a few bites of sweets while I was there. When I woke up this morning, I felt like a big blimp!

The rest of November and the month of December are really going to be hard. I was down in the 150’s last year for several months, and then in November and December of last year, I went back into the 160’s. I’ve struggled all year with food decisions and not being able to get back into the 150’s. It seems that just when I get serious and get five pounds off, I lose sight of my goals and I gain seven pounds. This year, I’ve seen 160, 165 and 170. I know if I’m not super careful this holiday season, I’ll gain weight like crazy and be miserable, and dissappointed. My great week last week has turned into such a weak week these past few days, again, losing focus. I let trigger foods back into the house, and I’ve failed with having them around.

I seem to start off every day so well, but I am really struggling with food between lunch and dinner.

I know that I have got to be more disciplined and that I can not let myself go crazy with the wine and the sweets this Holiday Season, and honestly, I don’t have a plan right now for how I’m going to do that.

Here is what I know for sure.

I will always fight the food demons.

I will live the rest of my life striving to live a healthy life.

I will have good days.

I will have bad days.

 I will never quit.

Sorry for the vent.

Here’s yesterday’s mess.

Breakfast after Yoga

I grilled a Flatout Bread in a grill pan on each side for about 1 minute. I topped the bread with salsa, then scrambled egg whites, cooked turkey sausage, and 1 piece of 2% cheddar cheese. I set a lid over the top so the cheese would melt, and left it on the burner so the bread would get a bit crispy in the grill pan. This was pretty tasty!

Weight Watcher Friendly Pumpkin Spice Muffins

You’ve likely all seen this before. One box of any flavored cake mix, and one can of pumpkin. That’s it! No oil, no eggs, no mess. If you have not seen this before, it really does work! I’ve tried this with a few different cake flavors, and I think this one is my favorite!

These are the easiest Weight Watcher Friendly Pumpkin Spice Muffins EVER!

It’s only TWO ingredients!

IMG_2563

You don’t even need your mixer!

IMG_2564

I like to make mini muffins…I made 30.

IMG_2565

I put most of them in a container to take to Book Club!

Who wouldn’t like to have a Weight Watcher Friendly Pumpkin Spice Muffin??

IMG_2569

I think they are best right out of the oven!

My coffee with Pumpkin Spice Creamer had me in a Pumpkin Paradise.

Weight Watcher Friendly Pumpkin Spice Muffins

Ingredients

1 Box of Spice Cake Mix

1 15 oz Can of Pumpkin

Directions

Put both ingredients into a bowl. Mix really well! Lumps taste bad!

Spoon batter into muffin tins sprayed with nonstick cooking spray.

Bake at 350 for 20-25 minutes.

When I put the nutritional information into my Weight Watcher’s ETools, they come out to be 1.3 PointsPlus.

2 muffins = 3 PointsPlus.

I made Pumpkin Cookies last Fall with these exact same two ingredients.

To Do List and Activity Points

November 12, 2014

We went from a high of almost 70 on Monday, to somewhere in the 30’s on Tuesday! Egads!!

I had a lot going on at home yesterday that included a large “to do list”, and I had a really tough time not snacking! I snacked on peanuts, pretzels, and eventually just fruit. The peanuts and pretzels are gone now, so I should be good, but I hate that I snacked like I did yesterday. I did stop while in the middle of a mouth full of pretzels and think about why it was that I was eating like that, and I realized I was overthinking a particular thing that had been on my mind lately that was apparently bothering me more than I had realized. Damn you anxiety!! I made myself stop thinking about it, and moved forward with my day.

Before phone calls, errands, (bingeing on peanuts and pretzels) cleaning out Tucker’s dog crate of pee and giving him a bath, I went to a 75 minute stretch Yoga class. I have been to this class before and it really does feel good. I’m not sure how many activity points to log for it, but I did look up “stretching” on my etools, and gave myself 3 activity points.

After Yoga, I needed to go to Walgreens. While there, I found these! Two Pairs for 12 bucks!! Have you seen these? I was told they were awesome, so I bought them.

IMG_2500

I decided to put my new pants on and brave the cold. I wore long socks under them, and I wore several layers on top. Thanks to my 100 Mile Challenge in November, I got outside and got a few miles in! I even bundled up my pups and took them too! Okay, Mishka only made it a mile, then we brought her back home, and Tucker and I headed out again!

IMG_2546

Look at that face! His. Not mine. Ya can’t really see mine! The only cold thing on me when I got home was my butt, so for the most part, my new pants were a good purchase. Super comfy and a little high waisted (helps hold in the tummy!) When I got home, I made some hot tea and sat by the fire. Happy Place!!

Yesterday’s Focus? Activity!

November 11, 2014

It was a really productive day yesterday!

I got a lot of housework done, I ate well, (I was however only going to eat 26 points, and I ate 30) I drank a lot of water! I’d love to know how many steps I took going to the bathroom!

I’m trying to get a lot of activity in this week, and I had a successful day of that! I walked 6 Miles yesterday afternoon and I went to a 60 minute Yoga class last night. I got a good night’s sleep, and I feel ready to do it all over again today!

Yesterday was absolutely gorgeous outside, and today, I woke up to a light dusting of snow on the deck this morning, so those miles might be taking  place on the treadmill today. I’ll be going to a Yoga Stretch class this morning!

Breakfast

I took a few Left Over Roasted Potatoes, diced them up, chopped up a little bell pepper, and tossed them in a skillet coated with cooking spray. I cooked them until the potatoes were crispy. I then added 2 wedges of laughing cow cheese and stirred until the cheese was soft and blended in. I put that on a plate, cooked and egg and added it to the top. I poked the egg so the yolk would run over the potatoes. Delish!

Walking This Week!

November 10, 2014

I went to my mom’s on Sunday morning to meet her and my brother to discuss our Thanksgiving Menu. While we talked about all of the yummy food that we will be eating for Thanksgiving, my mom and brother were enjoying gigantic cinnamon rolls, heated, with butter dripping off of them. I drank black coffee and pretended that I was content.

After deciding who would bring what to Thanksgiving Dinner, I headed to Heritage Park to get a few miles in!

When I did my 100 Mile Challenge in September, I did a pretty good job of spreading my miles out through the month. This month I’m starting off a little slow, so I’ve got some miles to catch up on if I’m going to be at the halfway point come the middle of the month!

I’ve got some walking to do this week!

Keeping it Real….

November 9, 2014

Typically when I go out of town for a fun trip, I try to be careful about what I eat, I try to drink a lot of water,  I basically drink whatever alcohol I want, sometimes I exercise, sometimes I don”t and I don’t think that I have ever gone on a trip and tracked my points.

I blogged this past week in detail about going out of town and facing the challenges of food and drinks while traveling. I made last week different. I tracked everything (I did have to guess on a lot of foods) that I ate, drank lots of water, and I earned activity points!

Throughout my Weight Watchers Week last week, I ate my daily points, I ate all of my weekly points, and I ate all of my earned activity points.

I wasn’t able to make it to my meeting on Friday morning, but I did weigh at home on Saturday morning. I was down one pound.

That was a huge success considering the challenges that I felt I faced over the week.

I missed blogging the past two days, but I’ve been tracking. My pictures aren’t loading to my computer, so I’m emailing everything to myself, then downloading it. It’s a pain in the butt, so I won’t go into detail with my food the last two days, but I did keep track of my points.

Friday night, after all of the yummy food and drink I’d had all week, I decided Roasted Chicken and Veggies sounded like a good idea.

photo 1

Saturday night, we went to a Shrimp Boil, and the food was amazing!

photo 2

My WW week begins on Friday, and so far, I haven’t earned any activity points! I’ve dipped into my 49 Weekly points, and don’t want to eat any more of those this week, so my goal is to only eat 26 Points a day for the rest of the week.

I’m really behind in my 100 Mile Challenge for November, and the weather is going to get chilly this week! I’ve got some serious miles to get in, and unfortunately, more of those than I would like will probably be on the treadmill.

Here’s to a great Sunday! I’m headed to my mom’s to meet her and my brother to discuss Thanksgiving Dinner! After that, I’ll be planing what Mike and I will be eating for the rest of the week and walking some serious miles!

Plan, Track, Success!

November 6, 2014

I’ll keep this short. My fingers are tired from typing yesterday!

Breakfast in my hotel room yesterday morning was an apple that I had brought, and black coffee. I was enjoying my hotel robe too much to leave the room, and I had decided that I had spoiled myself enough, so I passed on room service.

Lunch was fish taco’s, a banana and a latte at the airport.

Snack’s were wine and nuts and random things that Ashli kept pulling out of her purse while we were on the plane.

Dinner was the quickest plate of scrambled egg whites that I could throw together as soon as I walked in the door when I got home. I was starving!

It was a challenging last three days of food and drinks, but I feel like I got through it successfully, and after the little mountain climbing excursion, I think I earned enough activity points that it will end up being a successful week! I feel great!

I think this was the first time that I have gone out of town, knew that I would be having drinks and be in a vacation environment, and tracked my food and activity! I’m patting myself on the back for simply taking the time to try to keep track of it all and guess as best as possible. I know that it made a difference in the choices that I made.

I have an overnight trip tonight with a girlfriend that will include a little wine drinking I’m certain, but I plan to get a lot of walking in today and tomorrow!

Here are yesterday’s eats!

Have a great day!

Best Day Ever!

November 5, 2014

First, let me say thank you to my friend, Ashli. Thank you for thinking to ask me to join you on your business trip. Thank you for remembering that my daughter has this kick ass job that allows her mom to fly for free. Thank you for sharing your hotel room with me. Thank you for being so sweet, and thank you for having a business conference at the Omni Hotel and Spa in Scottsdale, Arizona!

Thank You, Thank You, Thank You!

I knew that yesterday would be a great day, but I didn’t realize that it would be one of the best day’s ever!

I like the saying…..”Stop and Smell the Roses”. I like to think that I do that often. Yesterday…..I did it all day long.

I really don’t even know where to start, so I guess I’ll start with waking up at 6:00 am in the morning!

I was a little nervous,  yet excited about the day I had planned for myself. Nervous about my hike, excited about my spa day. Ashli had a full day ahead of her, and she was awake too, so we made coffee, then each of us climbed back into ours beds with our coffee. I was mentally preparing for my hike up Camelback mountain,  while Ashli was preparing for her work day, but possibly pondering how she could get out of work and spend the morning hiking with me! While Ashli got ready for her work day, I decided I should have a good breakfast so I would have the energy to climb Camelback!  I decided that breakfast in bed was the best idea ever! So I ordered myself an Egg White Frittata and fruit, and soon, room service delivered!

Ashli was off to meetings while I had coffee and breakfast in bed and thought about my day. I was soaking up the beautiful hotel room, the bed, and the view of the courtyard from our patio. I was just beginning to smell the roses.

At 8:30, I met my new BFF, Heather. She had two bottles of water for me, and a kick ass fanny pack that would hold my water bottles!

We had a 1 mile walk to the mountain, so as we walked, we started getting to know each other. Seriously, this girl is a doll. My day was completely meant to be, and I could just feel it.

We arrived at the mountain and got busy….

IMG_2236

Now, this wasn’t really a hike you guys. This was a real mountain climb! I had no idea what I was in for. This was some serious stuff. There were hand rails to hold on to on a portion of the climb, then after that, you were on your own! Pick a boulder, step on it, climb! I guess I had pictured a dirt or gravel trail that we would basically walk up at a steep incline, and that it would be tough. Nooooo. It was a bunch of big ass boulders! At some areas of the mountain, I was actually on all fours grabbing and climbing! It was awesome!

This was close to the beginning….where we had a railing!

IMG_2239

This was fairly close to the beginning too….before I knew what I was in for.

I introduce you to…..Boulders.

IMG_2245

The views were unbelievable.

IMG_2263

They took my breath away….wait, that was all of the climbing.

IMG_2248

It was pretty amazing….

IMG_2253

I did have to stop a few times just to catch my breath. It felt pretty good to stop and look down at what we had climbed. I was soaking up the view and I was smelling the roses!

It felt great to get to the top! I felt proud. It felt good to take on a challenge and not question myself as to if I would be able to make it to the top or not. I knew that I would be able to make it!

Heather was doing an awesome job of leading the way and encouraging me! We were also really getting to know each other and having some great girly therapy chat! We talked moms, we talked marriage, we talked kids, we talked exercise, we talked food, we talked, talked, talked, We were a great match!

We are now Facebook Friends Forever!!

Thank you for getting me to the Summit, Heather!

IMG_2260

Selfie at the top!

IMG_2256

Me and Heather….BFF’s!

IMG_2261

Coming down was quicker, but a whole different challenge. I had to remind myself to not go to fast, and to really look at where I was stepping. I slipped a couple of times, but just enough to make me pay attention.

When we got back to the hotel, we checked Heather’s Fitness App on her phone. Not a bad day’s workout, huh??

IMG_2266

I added 4.5 miles to my November 100 Mile Challenge!

IMG_2316

I entered the actual mountain climbing time info into my Weight Watcher’s app. We walked 15 minutes to the mountain, then 15 back, so I gave myself 2 activity points for that 30 minute walk.

I wasn’t really sure if to call it “hiking” or “mountain climbing”, so I checked the points on both. Mountain climbing gave me 36 points, but hiking only gave me 14 points.  I decided to take an average of the two, and credit myself with 25 activity points!

Mountain Climbing…..

IMG_2288

Hiking…..

IMG_2289

When I came back to the room, all I could think about was how happy I was that I had scheduled a massage and facial package! I couldn’t think of anything that I’d rather do, well, except for maybe a nap!

I headed to the spa where I met Donna. Donna gave me an awesome massage and we barely spoke. It was perfect. Then, I went to the top of the hotel to a private pool for Spa Guest. There, I had lunch while sitting beside the pool in my robe. As I was taking my first bite of my Quinoa and Zucchini Cake…..

IMG_2281

…….the waitress brought me a glass of champagne and told me that Heather had sent it up, and it was to congratulate me for making it to the top of the mountain! I also mentioned to the waitress how much I liked the Quinoa Cake and wished I could make it at home!

She brought me this from the Chef! Can I live here, please??

IMG_2291

I was in heaven, and my day wasn’t over.

IMG_2286

After lunch, I had a facial. I’ve only had one other facial before. Hannah gave me an awesome facial, and not only did she exfoliate and moisturize my face and neck, she massaged my arms and neck all over again! I think I actually moaned a couple of times.

After my facial, I went into the women’s Whisper Room! There, I took a spot on one of the beautiful beds, and pulled the curtains closed around me. Hannah told me to wait at least 10 minutes before showering, so I took a nap in the Whisper Room.

I took complete advantage of all that the spa had to offer. After my nap, I took a shower. Was it the best shower ever? Yes! Everything about the entire day was the best ever!

After my shower, I walked back to my room, in my robe, naked underneath. I was feeling so happy and energetic and healthy, I may have entertained the idea of joining a nudist camp. But then I came back to reality, and hurried on to my room.

I was able to join Ashli both nights with all of the women at the conference. Everyone that I have met over the last two days has been super sweet and I’ve had some great conversations. The Omni did an awesome job of taking care of these ladies. Last night there was a champagne bar at dinner.! Dinner was outside in a beautiful courtyard with several different stations of food. Seafood, Taco’s, Salads, Crab Cakes, a full bar, and a dessert table.

For dinner, I had lots of small bites of a variety of foods.  I had a half of a beer, and one glass of wine. I felt so great about my morning workout, I was fine with not drinking much. I took three bites of dessert, and had 1/4 cup of gelato.

When we got back to the room, I tracked everything as best as I could.

I drank water ALL day long.

I have so much more that I could say about this day, but I’ve got to get packed up.

I’ll remember every detail of this day for a really long time.

It truly was One of the Best Day’s Ever and I am so glad that I had the opportunity to come!

Beautiful In Scottsdale!

November 4, 2014

I arrived with my friend, Ashli, in beautiful Scottsdale, Arizona yesterday and I am so happy I came on this trip! The view from the resort is beautiful. I’ll take lots of pictures today, and post them tomorrow!

Ashli is here on a business trip, and she invited me to come along. There are about 150 women here for a women’s conference and they have a full schedule today and tomorrow!

Yesterday was a challenge, and I didn’t do as well on my points as I had hoped. Breakfast was smart, lots of protein with egg whites and greek yogurt. Lunch was pretty smart as well. We were sitting around the pool and the menu that they offered had lots of healthy options. We went with the Mahi Mahi Taco’s on corn tortilla’s, and Ashli and I shared the order.

While sitting poolside and having lunch, we had a Mia Tia…..and a beer.

Dinner was a challenge, as expected. I went to a Happy Hour and Welcoming event with Ashli. There were different stations of food set up around the pool. There was a pizza station, a station with egg rolls and potstickers and a few other fried items, one station was a variety of cheese of olives, one was a risotto station, and then there was a bar.  I had a glass of white wine, and the wait staff did an incredible job of keeping all of our drinks full! Every time I turned my head, my wine glass was full again! It was hard to say no to complimentary wine!

That’s how yesterday went and I’m just going to give it my best guess on my points that I ate.

Here is my pan for today!

I found my way around the resort yesterday and while checking out the gym, I met Heather. After chatting with her for a bit, we became BFF’s! I am meeting her at 8:30 this morning, and she is taking me on a three hour, private guided hike up the mountain! I’m super excited, and a bit nervous. We talked a lot about my activity level and my routine, and she described the hike to me. She said she’s certain I can handle it!

I’m hoping to earn lots of activity points and work off some of those extra points that I ate yesterday!

Then for my afternoon, I scheduled a massage and facial package that includes a lunch on the rooftop looking out at the mountains!

Here’s to an awesome day!

Here are yesterday’s eats!

Scottsdale? Sure!

November 3, 2014

I’m on my way to the airport this morning nice and early for a last minute get away!

Since my daughter, Tess, started working for Southwest Airlines, Mike and I, as her parents, have enjoyed the benefits of “Parents Fly for Free!”. We are required to fly stand by, and we have learned to fly with a relaxed attitude since we might not get on the flight that we prefer. We’ve taken several trips using our “free flights”, and so far, each trip that we’ve taken has worked out perfectly! Tess say’s that we’ve been really lucky!

A few weeks ago, a friend of mine mentioned a business trip that she was going to be taking to Scottsdale, Arizona. After chatting for a bit, she told me that I should just hop on one of those free flights and go with her and stay in her room for free, then enjoy an evening out! I’m thinking, fly for free, stay in her room for free, be her dinner date for the evenings…..why would I NOT go?

So, I”m going!

She’ll be working during the day, I’ll be attending Yoga class, walking, sitting by the pool, and trying my best to make healthy choices when it comes to food and drinks!

We come home Wednesday night, and I’m taking my computer and blogging my way through my challenges these next couple of days.

I got in a great walk yesterday before noon! I walked with a friend, and I swear the time just flies!
