Ingredients

1 C. Almond Milk

1 C. Frozen Cherries

1/2 Frozen Banana

1 tsp Cocoa Powder 

1 Packet Raw Stevia (optional)

Directions

Add all ingredients to a blender and blend until creamy!

January Challenge, Day 25

I had a great weekend, and I hope that you did too!

It was fun hanging out at my dads house along with my brother and my niece while we all played in my dad’s new camper on Saturday. I can’t wait to watch that project evolve! I spent all last night looking at Vintage Camper websites!

Sunday, Mike and I went to my mom’s for coffee and a little chit chat. Then, we went to Amiyah’s (one of our granddaughters) 5th Birthday Party at Pizza Street! Mike and I ate before we went. We passed on all pizza, pasta, cinnamon rolls, ice cream and pop. It smelled pretty darned good in that place!

We focused on this silly little girl instead of the food! I present to you…..Doc McStuffins!

January Challenge, Day 24

It was a full Saturday!
 
I took Samone, my Little Sis, over to my dad’s house for the tour of his new toy! We took a moment for a photo op at the huge tree trunk that my dad has turned into a nice table in his back yard!

My brother helped him get it home last weekend and they spent they day cleaning it out. Yesterday morning, he offered tours to anyone who was interested. Surprisingly…..or maybe not so surprisingly, a few of us showed up for the tour!
 
It’s been sitting for a while, but dad seems anxious to get started putting some life back in to this cute little camper.
 
I’m excited to see it all fixed up! I see camping with my dad in my future, card games around the table, scrambling eggs at the little stove! I’m looking forward to seeing what kind of plans he has for his new little gem!
 
After the camper tour, Samone and I headed out for lunch. I was going to order a big salad, and instead opted for breakfast number two. I didn’t get in a huge variety of foods yesterday.
 
Mike and I went on a date last night. Pretty much anything that could go wrong, did go wrong. But in the end, we still had a good time, and I stuck to my plan.
 
I made a reservation, but they had no record of it. We went elsewhere.
 
We pondered three other places, and stopped at one to discover an hour wait. When you’re not drinking, an hour wait is a really long time! What do people do if they are not drinking when they wait that long??? Well, we’ll never know.
 
We picked another spot, we were seated and we placed our orders. When our food was brought to our table, a waitress, (not ours), came by and literally took Mike’s plate off of the table and said it belonged to someone else! Not kidding. Our waiter sat my plate in from of me and said to Mike….”I’ll be back. I know where your food is.” Eventually Mikes food came out, and it was no longer warm. 
 
The check came, and we had been charged for my meal twice.
 
Let’s just say, we’ve had better date nights. We actually had a really good time though and found all sorts of things to chat about. And really, that’s what date night’s are all about.

January Challenge, Day 23

This blog post is all over the place. In short, I worked hard this week to count points, exercise, drink water and basically, follow all of the rules. When I weighed at home Thursday morning, the scale reflected exactly what I thought it should. When I woke up Friday morning, I didn’t have that lighter feeling that I did on Thursday. When I weighed at my meeting, the scale has me up one pound from last week. This had been my pattern for five years now, so I have no idea why this surprises me, but it does.

 

Below is the long version of the paragraph that you just read.

I’ve been reading labels, counting points and going to WW meetings for over five years now. I know when I’ve had a good day and a good week in my Weight Watcher World. When I wake up in the morning, and I take those first few steps when I get out of bed, and I literally feel lighter, I feel very accomplished on my journey to the healthiest me that I can be. I try to pay attention to my salt intake and get plenty of water in on Thursday, since I weigh in on Friday morning, but sometimes I forget.

When I got out of bed on Friday morning, I didn’t have that lighter feeling that I’d had all week. Thursday morning, the scale reflected exactly what I thought it should be reflecting, and I was really pleased. I really don’t know why Friday morning was different. I know that I have had a really healthy week. I know that I have had a really healthy month! It just seems to take a lot for the weight to come off of my body. It always has.

Week one of January, I lost nothing. Week two of January, I lost 3.2 pounds. Week three of January, I’m up one pound. I’ve eaten pretty much the same foods for the past three weeks and I’m following all of the rules of good health.

Obviously I’m a little bummed, but I have a good feeling that the scale will be my friend again by my meeting next Friday.

I will not be deterred.

After going to Weight Watchers, I was meeting a friend at the movies and I hadn’t had any breakfast, so I went to the grocery store for a few healthy snacks to sneak into the movie theatre. I’m such a rebel.

Our evenings have been very quiet and lacking big time in any kind of social activities. I hope I’m not avoiding people on purpose so I don’t drink! I have a feeling though that I haven’t been seeking out anything to do for just that reason.

We spent our Friday night in PJ’s before 8:00 pm, and cuddled up on the couch watching a movie. I had consumed all of the food that I ate by 4:00 yesterday, so I made Mike dinner and I had hot tea while he ate his Turkey Burger and Green Beans. I wasn’t hungry at dinnertime, but I did eat a really odd variety of foods yesterday.

I thought about opening a bottle of wine for a good 30 minutes last night, and then I never did. 

We are going on a date night tonight. I think we have only gone out to dinner TWO times this entire month! We need a night out, so I’m looking forward to it. I’m up for the challenge of finding something tasty on the menu that fits into my January plan, and skipping the alcohol. (If that scale doesn’t cooperate with me next Friday though, I’m going to punch something!)

January Challenge, Day 22

January 23, 2015

I have so much to say this morning!

First of all, sitting up in bed yesterday morning after doing my first Pilates class on Wednesday, was painful. You know that feeling in your abs when you haven’t done any abby stuff in a while?? Well, it was that! Every single muscle between my belly button and my rib cage was alive! Just thinking about leaning forward….hurt. I always think when I hurt like that, I must have at least done it right. Right??
 
I said in yesterday’s post that I was heading out the door to go to a Yoga Stretch class, because that is what I thought I was going to. Actually, it was a Restorative Yoga class, which was still great. If you don’t do Yoga, the stretch class is awesome and you literally hold each stretch for like 5 minutes. The Restorative Yoga Class is awesome too, but you are in more of a Meditation mode and you are in each position for 10-15 minutes. On the last position that we held yesterday, the teacher came around with this awesome smelling oil and gave everyone a scalp massage. I was dying I was so damn happy! The oil she used made me want to rush right home and make a cup of Chai Tea and the scalp massage made me forget all about those abs!
 
I don’t know how to give myself activity points for 75 minutes of meditation, so I won’t give myself any, but it is the only activity I did yesterday, and i did love it.
 
Wanna know what else I did that I loved? I made Homemade Granola! Have you ever made that before? I don’t know what took me so long! I used six simple ingredients and my house smelled like Grandma’s Oatmeal Cookies! A WW Member sent me an email saying that she made my Warm Cinnamon Apples one night when she was thinking about an Apple Pie, and she ate Granola with it! She said it was really good an satisfied her sweet tooth, so I decided to go in search of a Granola recipe!
 
I discovered several that were Gluten Free and Sugar Free so I could stay with my January Challenge. I combined a few different recipes and came up with this one! The recipe was super easy and it was delicious! Click HERE to see what I came up with!
 
I’ve noticed that I haven’t been as hungry in the evenings, so I’ve been trying to listen to that and not eat the portion of food for dinner that I would usually eat. Maybe this “Eating more whole foods” thing is even more beneficial than I realized! Always learning something about myself! 
 
I ate two small dinners yesterday. I took my Little Sis, Samone, to see Annie yesterday after school and I didn’t want to be tempted by popcorn at the movies, so I ate a little something around 4:00 before I left the house. It worked because I bought her popcorn and I wasn’t tempted at all. When I got home, I had another small dinner. Splitting up my dinnerl did exactly what I needed it to do. 
 
I’m heading to my WW meeting. I am hoping for at least a One Pound loss at the scale this week. Last week was a 3.2 loss, and I know that won’t happen for me two weeks in a row, no matter how I ate or how much exercise I got in. Drinking lots of water does help me at the scale, and I didn’t get in as much water yesterday as I would have liked to. I’ve been trying to get in 80-90 ounces of water each day.
 
It looks like I was all about the avocado’s yesterday!

Gluten Free, Sugar Free, Homemade Granola

I hopped on Pinterest yesterday and started searching for a Gluten Free and Sugar Free Granola recipe! I found several recipes that sounded good, and after a quick run through of what I had on hand in the pantry, I came up with six simple ingredients that I thought might work!

All of the ingredients came together with ease, and it took less than an hour from beginning to end.

I loved it!

Gluten Free, Sugar Free Homemade Granola
Serves 12

Ingredients
  1. 2 1/2 C. Gluten Free Quick Cooking Oats
  2. 3/4 C. Sliced Almonds
  3. 1 tsp Cinnamon
  4. 1/2 C. Pure Maple Syrup
  5. 1/4 Coconut Oil, Melted
  6. 1 Tablespoon Vanilla
Instructions
  1. Mix the first three ingredients in a bowl.
  2. In a separate bowl, combine the next three ingredients and whisk well.
  3. Now add these to the dry ingredients and stir well until all of the dry ingredients are moist.
  4. Spread granola mixture on a cookie sheet lined with parchment paper.
  5. Place in a 300 degree oven for 35-40 minutes, making sure to stir the mixture every 10 to 15 minutes.
  6. Remove from the oven and let cool.
  7. Store in an airtight container.

January Challenge, Day 21

January 22, 2015

I spent most of Tuesday cleaning house and organizing a few piles of things that have been overlooked since the Holidays. It always feels good to get things back in order. We’re talking, washing the car, cleaning out my purse, organizing my desk, moving the treadmill back into the “treadmill” room, and getting every single piece of laundry done. I also got a nice 6 mile walk in, so I was feeling pretty stoked about my day. By 8:30 that night, I was ready for bed!

Yesterday, I had breakfast plans with a few girlfriends, then I was talked into attending a Pilates class with a few of them. That was HARD! This core needs several more Pilates classes! I have a group of friends that are doing this class on Wednesdays at one of their homes, and the teacher comes to them, so it is super convenient and only $10/pay as you go. I have no excuses. 

After that class, I did a few more chores at home (the house seems pretty darned cleaned and organized now!) and then I went for a nice 2 mile walk outside. (Please stay above 40 degrees, Please stay above 40 degreed, Please stay above 40 degrees!) 

Would you believe that a couple of hours after that, I went to Jazzercise? Yeah, I really can’t believe it either. At my WW meeting this Friday, that scale better shout a Joy to the World and an Hallelujah to me! 

When I got out of bed this morning, I was very aware of every muscle in my core. It hurts just to lean forward. Actually, it hurts just to almost lean forward!

Today’s Stretch Yoga class should feel pretty darned good!

  4. I will RUN in a minimum of six 5K’s

January Challenge, Day 19

I can’t believe I’m on day 19 of my January Challenge!

At the end of December, I felt like crap. I was extremely bloated and puffy. I ate too much sugar, I overdosed on cheese, and I drank way too much wine and beer.

As December was winding down, I was ready to get back to rules and discipline.

After chatting with a friend, and reminiscing about the challenge we did in January of 2014, we decided to give up a few things again in January of 2015.

On day 19, I am feeling so much better! 

I’ll admit, I was nervous about going to Dallas for three nights this past weekend and feeling tempted to have a few beers, but I knew in my head that I wanted to be able to say at the end of this challenge, that I was successful.

I thought for the month that the thing that I would miss the most would be a glass of wine, but it’s actually my morning Frothy Coffee! I did end up having two latte’s over the weekend at the airport, but I counted them in my daily points, and that for me was way better than having two beer’s or two glasses of wine.

A food that I thought that I would miss, and something I eat a lot of….is cheese. I think the amount of cheese that I consume can really add up in my daily points for the week. Right now, not eating cheese doesn’t seem like that big of a deal, and I’m kind of surprised about that.

I’m enjoying coming up with meal and snack ideas that include whole foods. It’s not as challenging as I thought that it was going to be, and Mike has been super supportive of whatever I put in front of him.

I’ve lost track of the days now for him, but I believe he is on day 11 of NO Diet Coke, and this is huge! And what’s even better, he replaced his Diet Coke with water!

So, January is proving to be a really healthy month at our house and I’m looking forward to reaping the benefits of our healthy choices far past January.

So that’s my little recap of the last 19 days.

Here is my recap of yesterday.

After spending the morning at the Apple Store, I went a few doors down to the Trader Joe’s and grabbed a few new items. I bought this bag of Dried Apple Rings.

The only ingredient listed on the package is dried apples, and since fruit is zero points, I didn’t count them as any points. They were really really good, and I ended up eating several of them. I know I consumed quite a few calories, so at the end of the day,  it doesn’t look like I ate all of my points, but I figured I consumed plenty of calories for the day to make up for it.

I did get outside for an awesome walk in the afternoon, but unfortunately I think the cold temperatures are on their way back!

I didn’t get in as much water as I have been getting in.

While in Dallas, one of Tess’ roommates told me about a Chicken Butternut Squash Stew that she had found on Pinterest and loved, so I made it for dinner and loved it as well. You can click HERE for the recipe!
