I am loving the Spring weather. The tree’s have colorful little buds on them, the grass turned green while I was gone over the weekend, we are sleeping with the windows open, and I am ready to grill up dinner as often as possible!

I found a great recipe for Marinated Greek Chicken Kabobs last year. I loved the marinade and it tasted so good on the chicken and the veggies. As much as I like the kabob’s, occasionally I like for dinner to take a little less time. This marinade taste great on chicken breast alone, and on a night when I don’t want to spend the time cutting up veggies and making kabob’s, I marinade a few chicken breast for about 30 minutes, then throw them on the grill!

This is the recipe I used last night, and dinner was easy and tasted great!

Ingredients

4 Chicken Breast

4 Tbsp. Extra Virgin Olive Oil
3 Garlic Cloves, crushed
2 tsp. Oregano
2 tsp. Sea Salt
1 tsp. Course Ground Black Pepper
2 T. Lemon Juice

Directions

Poke the chicken breast several times with a fork on both sides to allow the marinade to penetrate the chicken breast. Place the chicken breast in a gallon sized baggie.

Combine the rest of the ingredients in a bowl and mix well. Add the marinade to the bag with the chicken and seal. Mix well, then place the chicken in the refrigerator for about 30 minutes before grilling!

Dinner was easy and I had time to sit on the deck and chill with my pups!

I went to the doctor yesterday for my cortisone shot and to go over my MRI results.

When I had surgery two years ago on my right rotator cuff, I had a complete tear in it. Now, my left rotator cuff only has a partial tear along with tendonitis. My doctor, whom I love dearly, explained in full to me exactly what the cortisone shot can do…reduce swelling and numb the pain. He said he wanted to try the shot, but also admitted that the shot is a 50/50 chance this could take care of things. I really don’t want to have that surgery again, so I’m hoping the shot does the trick! I’ve got a sheet full of exercises to start on tomorrow, then hopefully back to Yoga soon and back to some regular exercise!

Dallas – The Color Run!

I’m a little behind in blogging over the last several days….and surprise! I have LOTS to say!

I got to spend the weekend with one of my favorite peep’s this weekend, my daughter Tess!

I went to Dallas Wednesday night for a nice long weekend! We had beautiful weather and a great weekend together! I miss having her living here so much, and we both really needed this visit.

If you are a new reader, my daughter, Tess, lives in Dallas and works for Southwest Airlines. Basically, she tweets for a living. Social Media amazes me. What does that job at Southwest mean for me and my husband? It means we get to fly for FREE! 

It makes visiting Tess, and Tess visiting us, so easy. I’m not sure how we’d manage if we didn’t get to see each other as often as we do. She really is one of my best friends, and I never imagined that we wouldn’t live in the same city. Knowing that we can visit each other regularly has made it so much easier.

We planned this trip several months ago because we were registered for The Color Run 5K on Saturday! It was our first 5K together last year and our goal was to run it without stopping, and we did!

We decided that we would do it again this year and we had a great day! Before running a 5K last year, neither one of us had ever done that. We are registered for more this year, and our goal is to do six. Who knows….maybe 10K’s next year???

If you don’t get quite enough COLOR on you during your run, there is a huge dance party afterwards where you just act crazy and throw color everywhere! Behind all of that color in the air, there is a big stage that gets completely lost in all the color!

Thursday, I spent the day at the apartment while Tess and her roommates went to work. I love her apartment and feel very “at home” there, so I made myself some breakfast, attempted to write a blog post, and played house.  I was fighting the internet connection though and eventually, I gave up on the blog.

After dinner, Tess and I and two of her friends, Elly and Victoria, went to see Frozen on Ice! I was ridiculously excited!

To make our evening even more exciting……Victoria, on the far left, actually worked for Disney for about 5 years, and played several “Princess” rolls while employed there. We even got to see pictures of her as Snow White and Ariel. It kinda made me want her autograph. It also made me want to tell all of the little girls at that the show in their blue little dresses that I was with a real princess! She was cracking us up all night long. We listened to only Frozen songs on the way to the show, and Victoria knew all of the words. That girl could belt out a song! I think it was killing her to stay seated during the performance!

I loved the show and I’m hoping to take my granddaughter’s when it comes to Kansas City in August! It brought back some great memories of taking Tess to The Beauty and the Beast on Ice when she was little. Oh Disney….you do make me happy.

Friday morning, Tess and I went to a WW meeting, did a little Spring Clothes shopping, and then we went to lunch with Manuel!

Um, how cute are they together?? 🙂

Saturday’s lunch was at a place called the Porch, where I ordered this great Salmon Burger! I was loving the weather and our meals outside!

After lunch on Saturday, we enjoyed strolling in the park downtown that was full of people, dogs and Food Trucks!

Saturday night was a quite night alone with Tess and lots and lots of girl talk.

I was on an early flight home Sunday, just in time to get to my In-Laws for a great Palm Sunday dinner and Easter Egg Hunt with the family. It’s hard not having Tess in town for the Holidays, but I was sending her pictures all afternoon so she’d feel like she was there. Mike’s parents are the best Great Grandparents (and just great people!) ever! There was a houseful for dinner and lots of good playtime outside.

I had a great long weekend in Dallas, and it’s always so hard to leave my kiddo. We always try to plan our next visit so we have that to look forward to. Tess and Manuel are coming to Kansas City at the end of May so we can all run in the Chiefs – Finish on the 50 5K. That race will end on the 50 yard line at Arrowhead Stadium. Tess is a huge Chiefs fan and football fan in general, so the thought of being on the field in Arrowhead Stadium has her crazy excited!

 

Okay……I said that I had lots to say……..

MRI Update

Two years ago, I had rotator cuff surgery on my right shoulder. When I went to the doctor initially, both shoulders were bothering me, but the right shoulder was worse than the left shoulder, so the focus was on the right shoulder.

My right shoulder healed nicely, but I am still feeling extremely limited as to what I can physically do with my left shoulder, so I had an MRI on my left shoulder. I received the results while in Dallas.

I have rotator cuff tendonitis and a partial tear. Part of me is relieved to finally know what is wrong, and part of me is really bummed because that surgery on my right rotator cuff sucked. So……doc is recommending a cortisone shot today, and see if that doesn’t give me enough relief that I can strengthen it and not have any surgery. 

My morning is gone, and I’ve got a lot to get done today!

Dallas Time!

I came to Dallas Wednesday night to visit my daughter, Tess, for a nice long weekend. We went to Frozen on Ice Thursday night, we went to a WW meeting Friday morning, followed with a little “Spring Clothes” shopping and lunch outside, then early to bed last night and The Color Run 5K this morning!

It feels so good to be here with my kiddo!

I had this great long post that I was in the middle of writing yesterday morning while Tess was at work, when I lost internet connection. 

I also can’t seem to load any pictures!!

I haven’t blogged in a few days and I have all sorts of great things to chat about too!

Since the internet is questionable for me right now, I’m keeping this super short just to say “hi” and I hope that you all have a wonderful weekend!

I’ll get in a nice long post on Monday morning!

I recently discovered this Pizza Crust at Target.

When I calculated the Points Plus for this crust, I calculated it as 4 Points Plus, and I was ecstatic!

I made myself a great little pizza for lunch one afternoon, and it turned out so good, I made myself another one the next day for lunch too!

Yesterday, I received an email from a new reader who went shopping for this pizza crust, only to discover that 1/3 of the Pizza Crust was 4 Points Plus, not the entire Pizza Crust.

I was certain this was a mistake, so I went to my pantry to read the label again. I just went shopping yesterday to buy more of this amazing, low point crust!

She was right!!!! AHHHHHHH!

I suppose, because it is labeled “Personal Size Pizza Crust”, I didn’t even think to look at the serving size. And I thought that I had become such a great label reader too!

My apologies to those of you that may have run out to buy this crust, and possibly have already eaten it and tracked it as 4 Points Plus for the entire crust.

I should have known it was too good to be true. 

Of course, I’m still making a pizza with it!

Staycation is Complete!

March 23, 2015

Staycation ended yesterday with a great Sunday spent with my husband.

Saturday morning, I was pondering treating myself to a breakfast out, when a friend invited me to an early lunch with her and another girlfriend! Perfect!

We found a great little spot to sit outside in the sun. It was still just a tad cool outside, so I ordered a coffee and enjoyed the conversation and the sun on my face. While the girls sipped on beautiful sangria’s I sipped on coffee. When my shrimp salad came to the table, I ordered a beer.

Lunch was delicious and the three of us spent the rest of the day on my deck, sharing wine and enjoying my staycation!

I grilled up some Chicken Sausages and Asparagus for dinner, and went to bed happy.

Sunday, Mike was working a booth at the Home Show (Mike design’s Custom Cabinetry) in Downtown Kansas City, and I decided to tag along. I was having a great time checking out all of the booths, enjoying the massage chair’s, the massage pillows, the cooking demonstrations, chatting with the landscape people about my dream yard, and some really good people watching. While at the home show, I discovered a little beer garden with the Basketball tournament on, so……I ordered a beer and watched then end of a game……with a bunch of men…..while the wives shopped…..and my husband worked. 🙂

After the home show, we went to Taco Republic. I love this place! They started out as a Food Truck, and they also are now opened in an old Gas Station, and it’s just the cutest! The Blackened Tilapia Taco is my favorite so far! The sun was out, I was with the hub’s, and we were in vacay mood. We ordered a beer.

We ended our day at a friends house watching the Wichita State/KU game outside on their deck where I had one more beer.

I mention the beer’s like I do because I really wanted to limit the adult beverages this year, and although I am drinking less, I still am having more than I would like to, which means more calories in my diet, which means a much slower weight loss.

When I go over my daily 26 points, and I dip into those extra 49, I really need to be exercising pretty good to lose weight, otherwise, I’m not losing, just maintaining.

While I’m not beating myself up about the beers and wine these last few days, I did blog about drinking only once a month, and I’m struggling in that department.

 

Staycation has been great, and I am so happy that we’ve had such great weather!

I’m out the door to get in a walk, AND I’m going to Jazzercise today!! Yippee!!!!!!

Date Night!

I decided to cook shrimp for dinner last night.

I got out my grandma’s big iron pot, filled it up with water and lemon and seasonings! The house smelled so good!

I made a big salad, I was going to put some garlic bread in the oven. I wanted a cold beer, and I was boiling shrimp!

I have never cooked raw shrimp before. Any meal that I have made at home, that had shrimp in the recipe, I bought the shrimp already cooked. It’s just one of those foods that I fear I will undercook or overcook, so I don’t cook. It’s kinda like salmon. It took me forever to get that right! Yesterday, I put on my big girl pants, and boiled shrimp. Guess what. The suggested 1-2 minutes for large shrimp didn’t sound like long enough, so I added some time. Yeah, you guessed it. I overcooked the shrimp!

We went to our favorite little neighborhood spot up the street, where we hadn’t been in forever! We sat at the bar, got caught up with our two favorite bar tenders, and we enjoyed a few laughs, dinner and a few cold beers.

Unfortunate that I overcooked the shrimp, but we needed a good date night!

My WW meeting on Friday morning went well and I’m ready for a great week!

I was hungry all day yesterday, and I ate more than I had planned, but I was able to get outside and walk, and I drank lots of water, and I’m ready for a great week!

I always order the dressing on the side and eat about 1 T. of it. I pick off the croutons when I forget to ask for no croutons. This is my “go to” meal when going out to eat. I guess on how many ounces the salmon is, and then I add 2 points, just in case my guess is wrong. I drink a ton of water when I go out to eat.

When it comes to insurance, I’m an idiot, and I admit it. I’m an idiot actually on a lot of topics, but this one is right up there at the top of all of the top topics!!

Why can’t an office visit or a pill or a procedure just cost X amount of dollars. whether you have insurance or not.

Why is the insurance company billed a different amount for a procedure than what they claim the procedure actually cost?

Deductibles? We make a huge monthly payment….. Where’d that go?? Put THAT towards my deductible!!

Co-Pay? But I already Co-Paid when I made my monthly payment! Now YOU pay, Mr. Insurance Company!

Out of Pocket??? Who came up with that phrase? I pay. Insurance pays. Can we just call it what it is?

Okay…….I went for my MRI yesterday. I’ve had shoulder issues for over two years now. The right one needed rotator cuff surgery, and that whole process was so expensive, I’ve put off taking care of my left shoulder for too long. I’ve finally decided to bite the bullet.

My co-pay for my MRI……are you ready for it? $600. No joke. The cost for the MRI at the imaging center that I was at…..are you ready for that? $450. The very nice lady at the desk was appalled at my co-pay amount and said that she and her co-workers have never seen a co-pay that high before. Oh, and……our monthly premium would make a really really nice car payment!!

It was less expensive to just pay cash! However….if you pay cash, that doesn’t go towards your deductible, so are you doing yourself any favors for later if you pay cash now? Like, what the heck???

For the amount that we pay each month to HAVE insurance, we could just be putting that in a savings account and paying out of pocket for procedures!! But no one can tell you how much a procedure is because it varies from place to place, and then the insurance companies decide how much of it they will cover!!! Seriously…..I just don’t understand how it all works and why it’s all so damned expensive and complicated.

Yes, I do know that I have options, and I may be shopping around for an individual policy, but I remember when having insurance through work (or through your spouses work) was a benefit, not a ridiculous expense that really didn’t do much good for some of the small stuff. I also understand that if we had any MAJOR health concerns or cost, I would be happy we had insurance, but I needed to vent…..and now I’ll start shopping. Of course, now with a history of shoulder issues, I’m sure a policy will cost more than it would have had I not had any shoulder issues. AHHHHH……..still venting.

When I was first added to my husbands insurance, I thought the cost was crazy high, so I did shop for a policy, only to discover, since I was OBESE according to the BMI chart (They didn’t even weigh me, I was just honest about my weight!), my monthly premium was crazy high anyhow, so out of frustration in that situation, I stopped shopping around.

So, all of  that being said, I am truly thankful to have insurance, but I feel completely taken advantage of and I find our whole health care/medical/insurance business a gigantic financial mess!!

If I were smart, I would start my own health insurance company……and doctor’s office……..and imaging center……and physical therapy office……..and a dentist office………it would be fair, and friendly, and pretty, and people from all over the country would come there for fair and reasonable health care!!!

So much for Sunny and 70’s in KC in March. Yesterday was chilly, cloudy and rainy!

The rainy cool day did make for a great coffee day. I am loving this new flavor of Dunkin Donut’s Coffee! It smells amazing, and I’m liking it best strong with no milk! It has a natural sweetness and it’s super smooth. Coffee lovers must try!

I was home all day doing lots of paper work stuff……paying bills, gathering tax info, making phone calls, and I DID NOT SNACK!!

I had bed head for most of the day and that made me happy.

While still in my jammies, I put on my shoes and socks and hopped on the treadmill. I had to get in some exercise yesterday!

I walked at a 5% incline for 20 minutes, I did a few Yoga stretches, I did sit ups and crunches, and I even lifted a few light weights and worked on my biceps and triceps.

I was really pleased with the fact that I didn’t snack all day long, and I ate some really yummy food.

These Taco Shells are light and thin and only 1 PointsPlus per shell. These are made in Gladstone, Missouri, so I’m not sure where you might be able to find them if you are not here in the Kansas City metro, but I would imagine with a little label reading, one might be able to find some 1 Point Taco Shells too!

Dinner for me was some left over Taco Meat thrown together with a few things that ended up tasting just as good as it looks!

Mike’s dinner was some Chili I pulled out of the freezer on top of mashed potatoes. After I made his potatoes, I gave them a taste. Holy heck…I need to make this meal again, but a little more point friendly for me!

3 Taco Shells, 2 oz. Taco Meat, 28 g of reduced fat cheddar, lettuce and salsa. The package of cheese list a serving size as 1/4 C. or 28 g. I was curious how much cheese 28 g looked like. I think I gave myself more cheese than I would have had I filled up a 1/4 measuring cup! Most of the cheese is buried under the lettuce and salsa, but I really felt like I had a treat for lunch!

This is what I made for Mike’s dinner, and I had to have a taste because I made him mashed potatoes with real butter, and I added in a couple of Laughing Cow Cheese Wedges. Topping those potatoes with Beef Chili made me think of a Shepherd’s Pie!! Now I need to come up with a Point Friendly Chili Potato Pie!

Mikes dinner was delicious!

  3. I will track every single day for the entire year. No matter what. I’ll track if I eat 26 points, I’ll track if I eat 76 points.
  4. I will RUN in a minimum of six 5K’s

I Wore a Green Scarf

St. Patrick’s Day…2009…Me in Mexico acting like I’m a 20 something….I don’t know a single person in this picture.

2010. It rained that day in Mexico, and we were entertaining ourselves in the lobby, but I came prepared!

2011 and 2012….I must have done nothing…I can’t find any pictures…

2014. I was 110% Irish (I’m not any percentage at all….as far as I know.) I celebrated for a couple of days. It all began the weekend before St. Patricks Day with a 4 mile run with Rebecca! We celebrated the rest of the day with beers and dancing!

On St. Patrick’s Day last year, I started it out with Green Eggs and Ham, on an English Muffin.

The Grandkids came over, and I told them to drink thier Green Beer! She looked at her mom, like…..”uh…..Gigi want’s me to drink beer!” (Fine, it was Sprite.)

2015. I wore a green scarf. That is all.

I woke up early yesterday, and decided to head out the door to one of my favorite coffee shops. I pulled on a sweatshirt and added a green scarf cuz I was in the spirit of the Irish, for just a second anyhow. I really like this little coffee shop that I was headed to.  It’s good people watching, there’s fun art to look at on the walls, the food and coffee are yummy, and the owner occasionally sits down and plays music. Yesterday, he was playing the piccolo!

After hanging out for a while, I called my mom to see if she would like to join me. It was then that I discovered that she was hanging out at TiresPlus, just like I was last week. So I picked her up and we went to her favorite breakfast spot, Bob Evans.

We ended up spending the day together, basically waiting on her car. It was a nice, quiet day with mom. No 5K’s, no corned beef, no green beer (or Sprite), but I wore a green scarf!

Monday’s pizza was so good that I used the second crust for yesterday’s lunch. I did bake it on the rack instead of a cookie sheet and I liked the crispiness of it much better!

A Me Day!

I had a great day yesterday playing Staycation. Complete dork…I know, but I still had a good time.

It was 82 in Kansas City in March…..I had to enjoy it, right??

I had breakfast in bed, I did a little shopping, I ate my lunch on the deck in the sunshine, and I went out to dinner with a girlfriend that I hadn’t seen in a long time!

I woke up this morning and stepped on the scale. I was pleased with the number that I saw. I was happy at the end of January and the beginning of February with the Holiday weight that was coming off, then things seemed to come to a halt after my little injury and lack of exercise, which didn’t really surprise me. It looks like I’m back on track now and I can assume that the scale will continue to go down.

I’m going back to Jazzercise next week and I’ll just plan to start out low intensity and work my way back up!

I made a pizza yesterday for lunch using this crust that I bought at Target, and I will be buying this again. The package comes with two crust in it, and one crust is 4 PointsPlus. It was about 6″ X 8″, so it was a pretty good size personal pizza
