Happy Mother’s Day!

I started off my Saturday with Hot Yoga, which was a great way to get in a good healthy mind set for the day.

I ate breakfast at home, then went to a graduation party that was filled with all sorts of my favorite foods! It was a Brunch party and all of the food looked so good! Pancakes cooked as you waited, tons of toppings for the pancakes, biscuits and gravy, bagels, fruit and mini quiches are just a few of the things that I saw. I tried to avoid the food table.

I did end up having a small Mimosa and One Mini Quiche. Not too bad I thought.

I went home and made myself a big spinach salad before heading out for the rest of the afternoon.

We had a family dinner at a BBQ place last night, and they had very few low point options to chose from. The sides were the typical BBQ sides…..fries….baked beans…..cole slaw and potato salad. I had planned to order and entree salad with maybe some grilled chicken, or a turkey sandwich with green beans. Working at the food truck, and eating her pulled pork on a regular basis has made me some sort of a pork critic, so I decided to order the pork sandwich and compare. The pork sandwich just wasn’t great, and I should have just ordered the turkey. Lesson learned. I was happy though that as hungry as I was, that I didn’t order any baked beans, or potato salad or fries. I drank 3 huge glasses of water and had NO BEER! 🙂

A few day’s ago, I was planning my Mother’s Day menu and I found a Blueberry Breakfast Cake on Pinterest that for some reason I felt I needed to have! I made it last night when we got home from dinner.

Um….it is likely TOO delicious! Yes, I had a piece.

Breakfast

2 Nutri Grain Low Fat Waffles

1 tsp Almond Butter

1 C heated Blueberries, Banana

Black Coffee

Seriously, there are waffles buried under there, but these berries and banana’s and almond butter would have been delicious without the waffles! I put one cup of frozen blueberries with raw stevia in the microwave for 2 minutes, and I LOVE it!

I can earn Activity Points by doing exercise, and eat them if I choose.

I have an allowance of 49 extra points that I can dip into throughout the week if I choose.

I should drink a minimum of 6 (8 oz) glasses of water each day.

I will choose one occasion per month for Social Drinking (um…this is a work in progress)
I will go no more than two days in a row without exercise.
I will track every single day for the entire year. No matter what.
I will RUN in a minimum of six 5K’s. One down, 5 to go!
