Busy Crazy Day…

Everything that didn’t get done on Monday, got done yesterday….along with the Tuesday “to do” list, AND….the Wednesday “to do” list!

Oil changed, a menu made for the weekend, groceries bought, fridge cleaned out and stocked and a clean house! All I can think about is what a great weekend it is going to be with my daughter and her boyfriend here at the house! They are coming in Thursday night, then Friday is a full day of Kansas City stuff, Saturday is the 5K at the Chiefs stadium, and Sunday is family day at the house with grandparents and siblings stopping by for coffee or lunch and to hang out and meet the boyfriend!

As productive as yesterday was, I ate too much bread, and I didn’t get to Jazzercise.

It’s rainy and chilly outside right now and I am leaving soon to work at the Food Truck. These rainy and chilly days are the hardest for me to not eat lots of comfort food while working! Planning to eat lunch today in moderation and go to Jazzercise after work!

Have a great day!

Here are yesterday’s eats…..

Breakfast

Granda Nonfat Latte, Egg White Breakfast Sandwich

9 PPV

I rolled out of bed and left right away to get to the car dealership early for an oil change. I hung out at the Starbuck’s next door. I wouldn’t eat this sandwich again. Kinda dry, kinda blahhhhh

Lunch

Corn Tortilla’s

Shredded Carrots, 2 Laughing Cow Cheese Wedges

3 PPV

Weird, I know. But good and low in points and I didn’t have much in the fridge at the time.

Snack

Banana, 1 tsp Almond Butter, Water

1 PPV

I bought bottle of water at the grocery store check out and just kept filling it up for the rest of the afternoon. I kept forgetting to drink water on Monday!

Snack

Two (One Un-Pictured) Slider Sized Pretzel Bun’s

8 PPV

So these are really dangerous. I’m not sure why they are so good, but I bought them to have for little sandwiches over the weekend. I bought all sorts of groceries yesterday (I did buy lots of fruit and veggies for snacking too!) that I don’t usually have in the house since we will have Tess and her boyfriend here all weekend. I made the mistake of opening these up. Now I’ve set myself up for a real challenge to not eat a ton of these over the next few days!!!

Dinner

Chicken Breast, Roasted Brussels Sprouts, Salad, Pasta

10 PPV

I cut the Chicken Breast into bite sized pieces and sautéed them in Butter infused Olive Oil and seasoned them with Montreal Steak Seasoning.

When I have chicken breast, but no real plan for dinner, I’ll cut the chicken into bite sized pieces and sauté them in Olive Oil in the skillet. It cooks up quick this way, and you can season it a variety of different ways. I really like the Montreal Steak Seasoning, but I also really like Sea Salt and Cracked Black Pepper, or Cavendar’s Greek Seasoning is a yummy option too!

You can eat it like we did last night, or add it to a big salad!

  1. I knew better too! What was I thinking? I did make it through yesterday without eating one though! Yay!

I love going through the fridge and throwing random things together. Sometimes it actually taste pretty darned good!

    🙂

  2. yeah… I cannot keep those pretzel buns in my house AT. ALL! I would eat the entire package for sure. Now I need to go shred up the last of my carrots and mix the into my laughing cow cheese. I think it looks yummy!
