Immediately after I posted my blog yesterday morning, my new neighbors came out to play. I sat in my window with my dogs and watched them play for quite a while. Tucker is super confused as to why he can’t just go out in the backyard and play with them. I tried to explain to him that the three of the foxes together might decide that Tucker would make a good dinner, but he just didn’t seem to understand.

He did decide to just watch and be content. They would appear, then disappear all morning.

I’m a little hesitant to just let the dogs out in the backyard to do their business, so I’ve been putting them on a leash and taking them to the front yard, or taking them for short walks. Yesterday when I came home from working the food truck, Tucker had pooped in the living room anyhow. These foxes are jacking with my schedule and the dogs schedule just a bit.

This morning, I put the dogs on a leash and took them to the front yard. After standing in the driveway for a few minutes while the dogs sniffed around the front yard, I saw something out of the corner of my eye and I jumped, only to see a bunny rabbit speeding across the street! I’m like….geezzzzz Julie, chill out. Then I realize on of my new neighbors in RIGHT SMACK IN FRONT OF ME ON THE SIDEWALK! I froze. I know they aren’t going to come after me, but it still freaked me out a bit.I swear it looked at Mishka and licked its chops! Then the fox slowly walked towards the backyard, it’s new home.

Thankfully, Mike really seems to be enjoying walking with me and I am loving it! We got in a good walk after dinner last night. I won’t be going alone on my walks for a while. At least until my new neighbors move away. I’m a wuss, what can I say?

Breakfast – 5 PPV

I made Cherry Almond Oatmeal just like I make my Blueberry Oatmeal, but I used frozen cherries instead of frozen blueberries, and topped it with raw almonds.

My fruit and yogurt combo’s are proving to be a filling lunch. Yesterday I mixed 8 oz of Plain Nonfat Greek Yogurt with Cinnamon, Raw Stevia, Blueberries and Blackberries. Deeeeelish!

Leftover asparagus with leftover Shredded Chicken and some Quinoa on the bottom. Simple, yet tasty.

Cheerios and skim milk. I don’t keep cereal in the house very often because it’s a total trigger food for me and I am trying to eat less packaged food. Once in a while, I will buy a box of cereal so Mike has something around to snack on. I have no good explanation of why I even ate this, except for the fact that I had the points available. I’ve pushed it to the back of the pantry and plan to not eat any more of it.

Before I talk about the 7 miles that I walked yesterday, or the yummy dinner that I made last night, let me tell you about our new neighbors. In the last few weeks, several foxes have decided to make our nice little suburban neighborhood their home as well. I’ve seen some of them over the last several months crossing the street outside of the subdivision after dark, but I hadn’t seen any of them just hanging out in our backyard or in the street in front of our house in the daylight or anything…..until this past week.

There is a concrete storm drain at the back corner of my next door neighbors yard where the corners of our yards meet. Wednesday afternoon, three foxes came in and out of the storm drain off and on throughout the day. They have remained there since, even going so far as to sun bathe on the top of the utility box in the same corner. That’s the corner of our yard that my little Tuckerman likes to sniff around in under the tall grasses that we have planted back there. I’m certain that Tucker wants to play with the foxes, and I’m just as certain that they would like to eat him.

After talking to several neighbors, it sounds like we have several foxes in the neighborhood.

Saturday morning, at 4:00 am, I woke up to a terrible terrible screaming in our backyard. I really thought it was a person at first. Apparently foxes like to eat rabbits, and during the mealtime process, the rabbits scream terribly. It was an awful thing to hear. It lasted forever. Just as it finally finished, and Tucker stopped barking, it began all over again. Rabbit number two for breakfast. Let’s just say I haven’t let the dogs out alone since. I am hoping the foxes find a new storm drain soon.

Now, on with my day.

I knew I had to eat within my points yesterday, choose foods from the simply filling list and get in a few extra miles.

Thank goodness for my walking buddy Becky. I did realize after posting this picture to Instagram that it doesn’t look like we were moving very fast for walking only 7 miles in 2 hours, but I had done the first half mile with my dog, which was more of a slow paced sniff and stroll, then during our walk, we did occasionally stop and do some stretching. At the end of the walk, I was just super stoked that I had completed 7 miles for the day!

No foxes on the path, but we did see some turtles along the way!

Sautéed Red Onion and Sweet Potato in Olive Oil, then one egg white and one egg on top. I love this meal.

Snack – 4 PPV

8 oz of Greek Nonfat Plain Yogurt with one packet of Raw Stevia, 2 T. of PB2 Chocolate and a sliced banana. Lots of protein in this afternoon snack. If you really stir the heck out of the yogurt to blend in the stevia and the PB2, it makes it super creamy.

Dinner – 10 PPV

Um, dinner was delicious. I love it when a “kinda sorta plan” comes together so well. I really wanted a big Chipotle bowl, so I gave it my best go for a homemade version. This is not really a recipe, but l’ll tell you what I did for this yummy burrito bowl, then you can create your own.

  • I cooked 1 Cup of Quinoa in 2 cups of Chicken Broth. When it was done cooking, I added sea salt, lime juice, cilantro and Chipotle Infused Olive Oil to taste. It’s a little like the rice at Chipotle.
  • I boiled chicken breast in chicken broth until they were tender and I could shred them. I added taco seasoning, then put the shredded chicken back in the broth and let it simmer.
  • I combined some store bought Pico (because it is delicious) with canned, rinsed and drained, black beans, corn, sea salt, lime juice, cilantro and Chipotle Infused olive oil. I chilled this in the fridge while the chicken cooked.
  • I smashed up an avocado and weighed it. The entire avocado was 150 grams, which was 6 PointsPlus. Be sure to weigh your avocado if you can so you don’t sell yourself short. I added lime juice and sea salt to my smashed avocado, like I always do.
  • Now I was ready to assemble my bowl. My serving….1/2 C Quinoa, 4 oz Chicken, 1/4 C of Bean and Corn mixture and 50 grams of avocado.

Mike loved dinner, and although he always tells me dinner is good, I know when he really means it, and last night, he really meant it!

Our wedding anniversary is Mother’s Day weekend, and we never end up celebrating that weekend. We like to pick a weekend in June, and make a Staycation out of it. That’s exactly what we did this weekend.

We started out in the West Plaza neighborhood walking from block to block at the second annual Porchfest. I loved it. There were over 100 bands playing from noon-5:00 on porches throughout the neighborhood. Everyone was walking around pulling coolers or wagons full of beer….or maybe wagons full of kids, either way…lots of wagons, and dogs, lots of dogs. We had a great time and we can’t wait to go back next year with our own cooler on wheels, any maybe even our dogs!

After Porchfest, we checked into our room on the County Club Plaza, a great area to spend the night if you decided to visit Kansas City.

I packed us an appetizer of fruit and cheese, and I took a bottle of wine. We had a great view of the Plaza from our balcony.

After wine, we walked to dinner and the weather cooperated for a perfect date night.

We did a wine tasting and ate dinner at Cooper’s Hawk. The wine tasting was so good, but was completely unnecessary since we had already shared a bottle of wine. For dinner, we shared an appetizer and an entree, but hardly ate any of either. We really had too much wine before dinner. Ha! The food there is delicious, but we really weren’t hungry.

Sunday morning, there was a “Dog and Jog Two Mile Race” at 8:00 am on the Plaza, and after watching all of the people and dogs while we drank coffee on the balcony, we decided to take a walk of our own. I was super proud of us for agreeing to pack our clothes and shoes to walk in. IMG_9764

We walked along Brush Creek, which I had always thought would be a great walk, and we enjoyed a few of the Plaza’s beautiful fountains.

After our walk, we went to brunch at one of my favorite spots, then continued our Staycation with a visit to Kansas City’s 18 and Vine District.

We both have lived in Kansas City for our entire lives, and neither one of us has ever been to the very well known, Jazz District at 18th and Vine. We toured the Jazz Museum and the National Negro Baseball Museum, something we have talked about doing for a long time. After listening to others walking through the museum and paying attention to the license plates in the parking lot, we realized we may have been the only locals there. Both were great museums and if you live here and you haven’t been, put it on your KC Bucket List! If you come for a visit, check it out!

We had a great Staycation weekend. I hope that you all had a great weekend as well.

I admit, I lost track on points this weekend, so I’m going to assume that I ate (or drank) all of my 49 Extra Weekly Points, and only have 26 points a day for the remainder of the week. I’ll drink lots of water, get my exercise in and focus on the Simply Filling Food list.

I packed a cooler of snacks so we didn’t need to hurry out the door for breakfast, or spend a lot of money on room service. Blueberry’s, Granola, Grapes, Carrots and Cheese. We had a Chocolate Dipped Strawberry left over from dinner too.

Brunch – ?

Nonfat Latte and Breakfast Taco’s on Corn Tortilla’s, Fruit.

Dinner – ?

The fridge was pretty bare, but I had some chicken meatballs, a few low calorie hot dog buns, and some asparagus. I sprayed the buns with olive oil cooking spray and tossed them in the grill pan after I cooked the asparagus.  A little spicy mustard on these and dinner was not too shabby for thinking we had no groceries.

Un-Pictured Two Apples. While sitting in a class of about 50 people, and only the speaker speaking, my stomach was growling like crazy, and I just looked at the guy beside and said….”Sorry about that.”

Lunch – 5 PPV

Lunch was at 4:30, and it was the only protein I could find in my house. Carrots Sticks and a can of Tuna mixed with light mayo and pickle relish, all stuffed in some lettuce leaves. I ate the entire large can of tuna!

I went to visit a friend for a Friday afternoon beer. It turned into a late night out after I had dinner with the hubs.

Salad with strawberries, Mandarin Oranges, Almonds, Chicken and Poppyseed dressing. This was about the skimpiest amount of chicken I have ever seen on a salad!

Yikes! I had to revise my post from yesterday, because I completely forgot to include Jazzercise in my daily activity points or even mention the fact that I went to Jazzercise on Wednesday. How I could forget to mention a sweaty hour of jumping up and down, I do not know. But, I did. My activity points are all updated now.

It was another day at the food truck yesterday! This is me getting ready to take orders! Seriously….I love this job.

And these are the two awesome people that I get the pleasure of working with! Sidney, the boss, the owner, the creator, the genius, is on the left, and that’s Nina on the right. She’s okay. 

Yeah, totally kidding. I am in love with Nina, and she is leaving us in two weeks to move to Norway for a year! She’s going to be so hard to replace. The three of us really do have a great time working together!

I packed an apple and some carrots for my lunch yesterday. I think because I ate so little on Wednesday, I was starving all day yesterday, so I did cave in and have a little pork taco with no tortilla and two bites of mac and cheese. Literally….two bites.

After coming home from some food truck fun, I went to Verizon with my mom for her third phone in two weeks. I’m so over Verizon visits. I really have a good feeling about this phone though. I’m keeping my fingers crossed! Old people and phones!! Just kidding, Mom.

Then, I stopped at our favorite neighborhood spot (mind you, I am still in the clothes that I have had on all day, and I smell like hamburgers and sweat), plopped down at the bar, and ordered a beer to drink and two salads to go!

After dinner, Mike and Tucker and I walked 3 miles. I am loving that Mike is walking with me and I hope he keeps it up! Then I took our older dog, Mishka, for a one mile walk.

I’m not going to be able to make it to my WW meeting this morning, but according to my home scale, (it’s fairly accurate) I’m down one pound from last Friday. I might be able to get to a meeting on Saturday so I can have an official weigh in. We’ll see. I was hoping for more than one pound, but i did have pork and a beer yesterday, and I know my body and salt! Maybe a Saturday weigh in could be a good thing!!

(Revised: I completely forgot to include my Jazzercise class in this post! How could I forget an hour of crazy, sweaty activity? I’ve updated my activity points to include my class.)

 

Would you believe I had a hard time eating all of my points yesterday?? Yeah, I can’t believe it either! I ran out of greek yogurt, so I just took a big fruit bowl to eat at the food truck for my lunch, then when I came home, I basically had marinara and spaghetti squash in the fridge and no meat, so my point consumption for the day, so far was  really LOW! And….I was satisfied. I snacked on things throughout the afternoon, and had a salad for dinner, but I still didn’t eat all of my points, and I did NOT go to bed hungry.

I got out earlier than usual again and got a few miles in with Tucker man!

Breakfast – 6 PPV

Yum!!! Breakfast Quesadilla……Two Corn Tortilla’s stuffed with 4 scrambled egg whites and 1 Queso Laughing Cow Cheese Wedge mixed in. I grilled this for just a few seconds on each side so the tortilla’s were crispy! Topped with 1/4 Smashed Avocado and Salsa. Grapefruit, Berries and Black Coffee.

Zucchini Noodles, sautéed with garlic and onion in 1 tsp Butter Infused Olive Oli, served over spaghetti squash and topped with homemade marinara and 1 T. Parmesan Cheese. I hadn’t sautéed zucchini noodles in a long time like this, and I forgot how much I love this!

Now that the sun has decided to shine a few days in a row, it’s a little warm here in Kansas. A predicted high of 95 today. I decided to get up earlier than usual yesterday and get my miles in before I did anything else.

I’ve now got 50 miles under my belt…wait…under my shoes?

I worked at the food truck yesterday and we’ll be working today and tomorrow too, so I’ll be packing a lunch and eating a later breakfast as to avoid eating those Pork Taco’s that I so dearly love!

Black Coffee and these Apple Cinnamon Pancakes. These are SO easy! I added a little extra flavor by topping them with 1 tsp Almond butter.

Sunday night, I placed a big pitcher of water in the fridge with cucumber and lemon slices. This was super refreshing when I got home from my sunny warm walk yesterday morning! I don’t mind plain water at all, I actually really like it, but this was a nice little treat.

Let me talk about this bread for just a second. I have been buying it and talking about it for a while now. If you’re new to the blog, and you like crusty warm garlic bread, then you need to know about this bread. It is sold in the freezer in the healthy food section of my grocery store, and I would imagine that’s where you will find it in your store as well. It’s crusty on the outside (super crusty) but soft on the inside, and just the right amount of buttery garlic. You know what else??? Two slices of this bread is 3 PointsPlus! Dip it in your marinara. Eat it with a Big Salad for dinner. Dip it in your soup. Just eat it!

It was a great day yesterday in the healthy livin’ department!

Here are yesterday’s eats……

Breakfast – 5 PPV

1/2 C. Quick Cooking Oatmeal with 1 packet raw Stevia, 1/4 tsp Cinnamon, 2 tsp unsweetened Cocoa Powder, 3/4 Boiling Water. Mix well and top with 1 sliced banana and 1 T. chopped raw walnuts.

Taste like a great big cookie!

Lunch – 9 PPV

Leftover Salmon and Chicken from my Kabobs the night before along with some leftover roasted cauliflower. I also mashed a small Cooked Sweet Potato, smashed up some Avocado with lime juice and sea salt like I like to do, and with the salmon, this lunch was possibly better than dinner the night before….if that’s even possible.

I have an allowance of 49 extra points that I can dip into throughout the week if I choose.

Saturday was movie night at home on the couch and I’m loving those Saturday nights more and more. First, we watched Wish I Were Here, with Kate Hudson and Zach Braff. We thought it was weird at first, yet it was keeping us very entertained. The more the movie went on, the more we liked it, and at the end I was a blubbering idiot and loved this movie and the weirdness at the beginning of the movie completely made sense!

Then, we started The Last King of Scotland, but it was late and we couldn’t keep our eyes open.

Both being wide awake early Sunday morning. I made Frothy Coffee, and we finished The Last King of Scotland. What a great performance by Forest Whitaker! I always love his movies!

After the movie, I made breakfast and we chatted about our plans for the day. Knowing I had some miles to get in, I asked Mike if he’d like to join me. He keeps saying that he is going to. HE DID! We got in 3.5 miles and even added in a little jogging. He hasn’t done that in forever, and I loved that he went with me! We haven’t had much sunshine lately, but we had it yesterday and it was HOT out early yesterday!

The rest of the day was super productive with the two of us doing things around the house and making some yummy stuff for dinner!

Chicken Kabobs for Mike from ATasteofHoney.com, and Grilled Salmon Kabobs for me from SkinnyTaste.com. Dinner was AMAZING!!

Salad Bar from the grocery store. Lots of greens and veggies, Grilled Chicken, Kidney and Garbonzo Beans and about 1/4 C. of macaroni salad. I brought it home and chopped it all up. The macaroni salad was little treat without eating too many points. I think I’m being generous by giving it a PointsPlus Value of 10.

Dinner – 8 PPV

I’ve made both of these kabob recipes before, and forgot how great they both were! I make a lot of recipes from SkinnyTaste.com. If you haven’t checked out her website, or purchased her cookbook, I highly recommend that you do one or the other!  I also made the SkinnyTaste Roasted Cauliflower recipe, and while it was in the oven, the house smelled so good! Um, did I already say that dinner was AMAZING??

Friday morning I got up earlier than usual and prepared for the day. I was going to WW, then heading downtown for First Friday’s to work the food truck. I made myself a breakfast sandwich to eat after I weighed in, and I packed a bowl of fruit and yogurt and put it in a cooler to have when we got done working around 2:30. I was so glad I had it with me! After that, I got in a few more miles towards my walking goal!

My weigh in results? Good News and Bad News. The bad news is that I had gained more than I realized over Memorial Weekend, so the week before last, I was up more than I was hoping for. The good news is that, I lost 2.5 pounds this week. 🙂

I am trying to eat mostly from the Simply Filling Food List for this 5 Week Challenge so I can get myself back into the 160’s. I went a little overboard on Friday and Saturday with my total points, but it is my hope that with all of the walking/running that I am getting in, and the amount of water that I am drinking, I’ll continue down the right path this week, and have good results next week too!

Toasted Light English Muffing with Laughing Cow Cheese Wedge and Egg Whites. I made this, wrapped it in foil, and took it with me to my meeting. I put the laughing cow cheese on right as it came out of the toaster, and it made a really nice creamy cheese and egg sandwich without going overboard on points!

I made a fruit tray for Happy Hour! More Greek Nonfat Plain Yogurt with Vanilla Stevia Drops and Cinnamon. I also snacked on snap peas, carrots, hummus, blueberries and nuts, cheese and grapes…..and Wine.

Saturday, I took my niece to brunch, then it was gorgeous outside, and since she has only been 21 for a few months, we decided to find a patio and have a beer! We had a great Saturday together!

We ordered these donut holes at the Beer Kitchen….because the waitress told us to! Uh…..yum. I only had two. That’s chocolate sauce for dipping. Insane!

I ordered the Roasted Turkey Avocado Bacon Sandwich and Sweet Potato Fries. I only ate about 1/4 of the sandwich with the bread, and then I picked at the turkey and avocado. The sandwich was so good, but I knew eating all of it would be a mistake. I ate about 1/3 of the fries and tried to make my best guess on the food as I ate it.

Then I had two beers. Not my best day. Not my worst day. I drank over 100 ounces of water at the end of the day.
