Toothless Tucker…

My poor Little Tucker Man went to have his teeth cleaned yesterday (his breath smelled like rotten Tuna!) and he came home with 13 less teeth! He had his teeth cleaned about a year ago (again with the rotten tuna breath!) and came home with 5 less teeth. The Vet says that he apparently has a genetic issue that has caused his infected teeth. Poor guy. The Vet also told me that we will likely have to come back in less than a year and pull the rest of his teeth. There’s only a few left in there! Tucker is only five years old and otherwise super healthy and spunky. He definitely had a rough day yesterday though.

Tucker, not such a great day in the health department. Me, a great day in the health department. I worked prepping food for the food truck yesterday, and as tempted as I was to eat some of the cheese that we sliced, some of the juicy pork that we pulled, or a piece of the fresh bread when it was delivered (fresh baked bread smells soooo good!), I only had one taste of smoked corned beef and I ate 1/4 C of unsalted raw mixed nuts for my lunch.

After prepping food, I made a healthy snack at home, then I walked 3.5 miles before going to pick up my puppy.

It was a great day again, and that feels good.

Sweet Potato Buns

I’m loving using a Sweet Potato as a Bun. The first time that I made Sweet Potato Buns a few weeks ago, I baked them and made Turkey Burger Sliders. Click HERE for that Sweet Potato Bun recipe. I loved the recipe.

A week or so after that, I made them again (but my version) and topped them with Mexican Seasoned Chicken and Guac. Delish!

I tend to get in a hurry, so now I have been making my own version of a sweet potato bun. 

Ingredients

! Medium Sweet Potato

Directions

Wash and pat dry the sweet potato. Poke it several times with a fork. Cook potato for about 2 minutes in the microwave, flip it and cook another 2 minutes. (You could also bake your potato) You should be able to slide a fork into the potato. You may need an additional minute depending on the size of you potato, but don’t over cook. A mushy potato won’t work.

Slice it into 1/4″ slices, season with Cumin and Chili Powder and cook in a skillet with cooking spray or cooking oil until just a tad crispy!

1/4 C Raw Mixed Nuts, and I just kept filling up that 8 oz. water bottle.

Egg White Omelette with Peppers, Onions, Potatoes…topped with Salsa

Pear, 1 tsp Almond Butter, 1 tsp Honey, a sprinkle of Chia Seeds

Tilapia, Peas, Roasted Red Onions, Mushrooms, Carrots and Potatoes

Weight Watcher’s Points Plus

I can eat 26 PPV a day.

I can earn Activity Points by doing exercise, and eat them if I choose.

I have an allowance of 49 extra points that I can dip into throughout the week if I choose.

I should drink a minimum of 6 (8 oz) glasses of water each day.

My Weight Watcher Week Begins on Friday’s

 

Breakfast = 6

Lunch = 6

Snack’s = 5

Dinner = 9

Total = 26

 

Exercise = Walked 3.5 miles

Activity Points Earned for the Day = 5

Activity Points Earned This Week = 12

How many ounces of water I drank for the day = 80

Remaining points from my 49 Points Allowance = 0

 

This is What I Will Accomplish in 2015

I will choose one occasion per month for Social Drinking (um..this is a work in progress)

I will go no more than two days in a row without exercise. (I’ve done “two a day’s” to make up)

I will track every single day of the entire year. (I’ve only NOT tracked a few weekends this year.)

I will run in a minimum of six 5K’s. Three down, three to go!

  1. I haven’t tried to freeze them, but once I realized that I could Microwave the sweet potato, and then slice them and crispy them up in the skillet really quick, I haven’t baked them. Have you read that post?

    I love my Tucker man…..

  2. The sweet potato buns look like an amazing idea. Have you tried freezing them? I wonder if it would work to make a big batch, freeze them, then thaw out want you want to do and crisp them up in a hot skillet. Curious if you’ve tried it. I am going to try these!!!!! Thanks!!! And I’m sorry Tucker is losing his teeth. That really sucks!!

  5. Hi Nancy!

    Tucker did wake up much happier. Thank goodness! The vet said that dogs eat mostly with their tongue, and that the whole kibbles that they swallow break up when they digest their food, so no worries about my little guy still eating and being happy.

    Now if I can just give him a bath!

    That poor dog looks so sad but I know in a couple of days he will be wagging his tail.
    But how will he eat when they take the rest of the teeth out??

We are approx the same age, same life-stage with our kiddos, same weight – gain, re-gain challenge, and believer in eating healthy and WW! … I could go on, but the clencher was: we even have the same counter-tops! LOL! I read and look forward to your blog DAILY and glean so much info and inspiration from it – I have followed other blogs in the past, but they get too crazy for me and I lose interest – but you have a gift to post your real-life food and feelings – Thanks! I would have never tried eggs with avocado mash on top without seeing your menus and now that is one of my FAVS!!! I never take the time to leave a comment – mainly, because you can see, I haven’t learned how to make a “quick comment” (ha!), AND secondly, I haven’t figured out how to do that from my phone – where I usually read your blog from – but this am I’m on my desktop and I feel I just can’t go one more day without letting you know how much I enjoy our blog and what an inspiration your posts are to me!
