What I Didn’t Eat

If you read my blog regularly, you know that I work for a friend of mine that bought a food truck a few years ago. I thought the whole Food Truck idea sounded like a lot of fun, so when she bought it, I told her that if she ever needed any help, to let me know. She did. I love this little part time job of mine! I take the orders on most days and I have so much fun chatting with people who are excited to be there and eat her yummy food! People say the nicest things. Some people say weird things too. Some people just trust the menu and order as is, and a few people ask questions. Those are maybe my favorite.

“What’s good here?”

“Is the mac and cheese any good?”

“I’d like the taco’s, but I don’t like spicy food. Is the jalapeño aioli spicy?”

“I want the Roadhouse Burger, but can I have it without the bacon jam?”

“Can I order the Pulled Pork Taco’s without the broccoli slaw?”

Usually I’m having fun there and in a spunky mood, so my response is typically…..

“Everything’s good. That’s why it’s on the menu.”

“No. The Mac and Cheese sucks. Would you like to order something else?”

“Yes. The jalapeño aioli is spicy. It has jalapeno’s in it. Would you like to try one of the 6 items on the menu that has no jalapeno’s on it or in it?”

“You can have that burger without the bacon jam, but I’m going to question your judgement.”

“Yes. You can order the taco’s without the broccoli slaw, but I’m making you take a side order and you HAVE to taste it.”

Usually they laugh and work with me. I only say that kinda stuff to someone that I think might appreciate it, but it makes the job all that more fun, and I like to think that as good as the food is, people are having fun when they come see us too!

The food is awesome and the truck has been super successful in the Kansas City area. I work for her anywhere from two to three days a week. Let’s be honest, most Food Truck food is not going to be super point friendly. I’ve managed to eat smaller portions, add less aioli (I could eat that stuff on just about anything!), skip the tortilla or the bun, but some days are harder than other days. Some days I can skip the food altogether, and other days I just want a Pulled Pork Taco and I wanna eat the Tortilla! So, I eat it and I count the points and move forward with my day. The thing is…I can be a bit of an all or nothing person, so if I have a Taco on Wednesday, and I’m also working on Thursday and Friday, those days can be a real struggle, and it’s just easier for me if I can skip it all together on Wednesday.

Yesterday, we weren’t as busy as we usually are, which means more time to think about all of the food that is at my fingertips!

I didn’t eat any of that. I didn’t eat any of the awesome Chicken Salad. I didn’t eat a pork taco. I didn’t eat any of the yummy chips that we sell, and I didn’t drink any diet coke. Yesterday, I made myself a small Salad for 3 PointsPlus (There is an awesome salad on the menu too!) and I drank 3 bottles of water! Eating a taco would have tasted great and I would have made it work for me and planned dinner accordingly. Knowing that I didn’t eat a taco, made me smile and I felt strong on my drive home. I cranked up the tunes and sang my heart out to a little Tracey Chapman.

I went to Jazzercise, I mowed the yard and I drank 120 ounces of water.

Here is what I DID eat yesterday…..

Breakfast – 7 PPV

Frothy Coffee and Peanut Butter Packed Pancakes topped with 2 tsp Almond Butter with 1/2 thinly sliced Banana. Usually I make One Large pancake with this recipe, but I was curious how many mini’s I could make, and just how high I could stack them!

My stack held up pretty darned good, too! Look at those banana slices buried in there!

  1. Oh my gosh. It all really is so good. I feel successful this week!

Good luck with the popcorn bags. That sounds like a lot of work for you! I hope you have some help!

    Have a great weekend Nancy!

    🙂

  2. Everything looks so good.
To have all that food around you and not eat it is a really strong will.
    Hope your Friday is good.
I’m making 400 bags of popcorn tomorrow for Family Fun Night because no one else will use the machine—-I have a feeling some of it will end up in my mouth. But I will count it.

  3. I’d never even heard of it before the food truck, but I’m learning it’s a real thing! Ha Ha! So dangerous…..the distance between you and the bacon jam might be a really good idea!

Have a great remainder of the week!

  4. Mmmm – bacon jam … Just discovered this little bit of yum ness while visiting my youngest son in Oklahoma last weekend !! And it’s a good thing that that jar of bacon jam is still in Oklahoma and I’m back home in Arizona !
