Day 19, Whole30

October 31, 2015

Yesterday was a busy day, and today has been no different. Today is Mike’s birthday but I’ll tell you all about what I did today, tomorrow, and tell you just a little bit about what I did yesterday, today.

Got it?

I’m writing this super fast today, so expect some errors (more than usual, I should say)

Friday started off with a trip to Doggie Day Care (this is not a joke) since I was going to be gone all day and didn’t want to come home to pee….or poop….which I may have from one dog who shall not be named, but he’s the white dog, not the brown dog.

Then off to my WW meeting. My weight stayed the same. I’m really tempted to count points, because even though we are doing 100% everything we are supposed to be doing, I’d still like to lose weight, and I’m wondering if I’m still eating too many calories/points?

Went from WW to work the food truck downtown. We made lunch for an awesome group of employees’ s at JE Dunn Construction Company here in Kansas City. Those folks stood in line in the cold for lunch and were all so nice! Lots of costumes too! Fun day.

Then errands, then a quick hello to a few friends having Happy Hour, then to pick up the dogs.

Then I made Chili. I made the recipe from the Whole30 book. Soooo Good!

Then we curled up on the couch to watch the Royals game, and they lost, and it was sad.

Tonight, we’re winning! I just know it!

I found these little treats at the grocery store in the produce department. They are Dates, Pecans, Cinnamon, Allspice, Nutmeg Ginger. I had a couple with dinner last night, and I’m taking them to our friends for Halloween this evening.

Okay, here are yesterday’s eats…..Gotta check the Roasted Chicken and Vegetables in the oven!

Breakfast

After WW, while driving downtown. Dried Apples, Walnuts and a Banana.

IMG_4408

Lunch

After the rush at the Food Truck. We pretty much sold out of everything, so I was glad I brought my lunch! Tuna, Carrots, Cherry Tomatoes, Cucumbers. This bowl of food looks small, but it was actually a big bowl of food.

IMG_4407

Dinner

Chili over Spaghetti Squash topped with Avocado. This was really good, and I didn’t even miss the beans, cheese or sour cream that I would usually eat with my Chili. (Mike snuck a second bowl)

Pumpkin Pie Spiced Date Rolls and Pumpkin Spice Hot Tea

Exercise = none

Water Consumed = 70 oz

This is What I Will Accomplish in 2015

I will choose one occasion per month for Social Drinking (um..this is a work in progress)

I will go no more than two days in a row without exercise. (I’ve done “two a day’s” to make up, and slacked lately)

I will track every single day of the entire year. (I’ve only NOT tracked a few weekends this year.)

I will not be tracking my food while doing the Whole30.

I will run in a minimum of six 5K’s. Four down, two to go!

Happy Halloween!

Day 18, Whole30

October 30, 2015

I forgot to mention that I bought Halloween Candy a few days ago! Yep. Candy just sitting in my house. Of course I bought candy that I don’t care for much, but still, it’s in the house and I haven’t been tempted. As I’m typing this, I’m trying to remember where I ended up putting it?

Yesterday, I registered for my last 2 5K’s for 2015. I had a lot of goals this calendar year, (they are listed at the bottom of my blog post each day) and while I didn’t meet them all, I feel like it’s been one of my healthiest years yet.

I knew for sure that I would do Six 5K’s this year, I just hadn’t planned on waiting so late in the year to get them all in. Running in the cold is not  my cup of tea (ahhhhh….I love a hot cup of tea) and it is not on my list of “Favorite Things to Do”, but I guess that’s what’s gonna happen.

I’m running this tomorrow, Halloween!

IMG_4374

I’m running Thanksgiving Morning!

IMG_4376

I guess I’m doing….Holiday Runs.

I was determined to make it to an exercise class yesterday, and I procrastinated that just long enough, that I almost had to tell you all how I didn’t exercise….again. But nope! I made it to Yoga at 6:30 last night. And really…..I had to go. Look what I bought at Target yesterday!

IMG_4394

After Yoga, I came home and had a post workout snack, showered and plopped in bed to write this blog post.

Mike threw his back out bad on Wednesday, and he was kind of a mess Wednesday night. Last night didn’t seem much better so he decided to call it an early night too.

I’m off to WW, then to work the Food Truck downtown today!

Maybe a Happy Hour with a few friends this afternoon?  Mike and I are watching the World Series at home tonight, and I think I’m in the mood for some Chili. There is a Chili recipe in the Whole30 book that’s full of veggies, so I think we’ll give it a try. I’ve never made chili without beans. Have you?

Happy Friday! Let’s Go Royals. Clap, Clap……Clap Clap Clap!!

Here are yesterday’s eats…..

Breakfast

Under this egg, is just a little bit of everything. Peppers, Onions, Turkey Bacon, White Potato, Sweet Potato and Asparagus. I also had Berries and 1/2 Banana with Almond Butter. I actually don’t miss my Greek Yogurt or Oatmeal like I thought that I would. It’s probably a good thing I’ve learned to really like eggs over the last few years.

IMG_4356

Lunch/Snack??

I left the house at 11:30 to run errands. It was too early for lunch, but I wasn’t sure how long I’d be gone. At 2:00, I was still out and about, so I ate my packed snack for lunch.

One Larabar, dried Organic Apples, Dried Cherries with no added sugar and Raw Walnuts.

IMG_4377

Dinner

Leftover Meatloaf and leftover Roasted Veggies from Sunday with added asparagus. Those veggies from Sunday came in super handy this week! Great for Mike’s lunch, great for breakfast with an added egg, and a great side dish for this leftover Meatloaf. Making more for sure!

IMG_4384

Post Yoga Snack

I ate dinner at 5:00, which is early for me, and I was actually feeling hungry when I got home from Yoga. This was perfect. Apple slices with Almond Butter. Some have dried cherries (no added sugar) and some have grape slices. Think….PB&J.

Day 17, Whole30

October 29, 2015

Yesterday, I made a yummy breakfast, I planned to eat lunch at the Food Truck, and that was tasty, I had a snack later in the afternoon that I ate mindfully, I made a new recipe for dinner that was awesome and the KC Royals won Game Two of the World Series!!

Pretty great day you guys.

While working at the Food Truck, I cut up dessert and put it in containers. Cobbler with peaches, blueberries, apples and cherries. I can NOT describe to you how awesome this smelled, and usually when I cut dessert at the truck, I lick the spoon and/or take a bite. Nope. Nothing.

IMG_4327

We watched the game at home in the coziness of our PJ’s. These are the socks that I fell down the stairs in last week! I walked down stairs very S L O W last night. I’m wearing my KC Chiefs Flannel PJ pants and a Royals T-shirt, covered with my favorite blanket! I’m pretty sure, I looked amazing.

IMG_4346

I did not exercise, BUT I WILL TODAY!!

Last night, kind of in between batters, I made some Egg Muffins for an easy and quick breakfast to heat up. I hope they’re good!

IMG_4349

This is Mike’s Breakfast and Lunch for today. I’ve done this everyday for the last 17 days. It’s just something I do now after dinner. The guys got it made, don’t ya think??

IMG_4350

Yesterday, I put this in his lunch.

Roast Beef wrapped around grilled asparagus, Whole30 Mayo under that green lid to dip it into, strawberries, Raw Nuts in the other baggie.

IMG_4313

I’m trying to give him a little variety, (not dinner leftovers every day) and also eat a little variety myself.  I don’t want us to get bored. Not having a sandwich for lunch isn’t the end of the world.

I tried a new Meatloaf recipe for dinner, and we both loved it!

IMG_4336

While eating dinner, Mike asked me if we’re going to just eat like this forever? What??? He said he really likes the way that we are eating, and that he feels good and wants to continue. Hmmmmm. I had no idea he would have such an opinion on the whole30, and because his routine around breakfast and lunch has changed so much, I expected him to have a few complaints, and he doesn’t! Yay!

Okay, out the door for a busy day!

Happy Thursday!

Here are yesterday’s eats…….

Breakfast

Two Poached Eggs, Sweet Potato Rounds and Strawberries with Black Coffee

IMG_4322

IMG_4324

Lunch

Burger at the Food Truck, on a bed of Mixed Greens, Red Onion, Cucumbers and Mustard

IMG_4329

Snack

Dried Organic Apples with Organic Cinnamon, Raw Walnuts, Hot Tea

IMG_4332

Dinner

Meatloaf, Whipped Cauliflower, Green Beans with Turkey Bacon

The Meatloaf was delicious, and taken from a Whole30 approved Website. No breadcrumbs, but almond flour instead. I cooked the green beans in a skillet with a little olive oil, sea salt and cracked black pepper, along with 2 pieces of Whole30 approved Turkey Bacon that has no sugar in it. I bought the bacon at Whole Foods. For the Cauliflower, I cut it up, boiled it for about 8 minutes, drained the water, added sea salt, cracked black pepper and a little clarified butter. I whipped them up with my Immersion Blender.

Day 16, Whole30

October 28, 2015

You guys, WE WON game one of the World Series!!  Yahoo! Yippee! Hoorah! Hooray! Whoo Whoo!! It was a late night too in extra innings. I admit, I dozed off, and woke up with bases loaded and got to see us win the game, then right back to sleep!

Kansas_City_Royals

I hope it’s another exciting evening, but nine innings would be great!

Okay….Whole30.

I really was not sure what Paleo was. If you are unclear on the difference between Paleo and Whole30, and would like to know more, click HERE for a great description of both.

My short version, the whole30 is a 30 day restrictive diet, where after 30 days, you begin to individually reintroduce food items back into your diet, and see how your body reacts to that food. If it’s a food that you chose to eat, and you experience no negative side effects (inflammation, gut issues, cravings), then it’s up to you to decide if you want to eat that food or not. Then, reintroduce another food.

The Paleo diet is more of a lifestyle. Meats, Seafood, Eggs, Fruits and Veggies and raw nuts. The Paleo lifestyle is all about eating whole foods, and avoiding processed foods.

Will we eat 100% Paleo after the whole30? I doubt it, but our diet will for sure be changed because of the Whole30, and I will continue the practice of a mindful snack.

I am learning to re-establish my relationship with food, and I feel like the whole30 plan is helping me do that. I needed this. My body felt good, and I was feeling very healthy, but my brain still struggles with food demons. This for me, is more about my mental relationship with food, than my physical health. I am learning that by feeding my body the right foods, (more protein and veggies, and no sugar) I am not experiencing any cravings at all. I miss my Frothy Coffee’s that I’ve had every morning for a long time, but I don’t crave them. Assuming milk and I have no issues, I will have them again, but maybe skip the flavored stevia drops. I am learning that even healthy foods can be a trigger for me, and I’m discovering how to manage that. No eating while standing in front of the pantry or the open refrigerator. Anything I eat in between meals, must be mindful and planned. This for me is the hardest part, but on day 16 of the whole30, it is becoming easier, and it’s an important thing for me to overcome.

I really couldn’t be happier that we are doing the whole30.

Oh, and Herbal, Decaf Hot Tea is my new beverage of choice! (Okay, I don’t crave wine, but I miss it, especially now that the evenings are cool and a glass of red wine sounds yummy.)

Here are yesterday’s eats…..

Breakfast

Scrambled Egg Whites, Avocado, Turkey Bacon (whole30 compliant, no added sugar, available at Whole Foods), Cherry Tomato salad with fresh Basil, Berries and Black Coffee.

IMG_4292

Lunch

The last of the Chicken Salad (with very little chicken). There wasn’t much left, so I bulked it up with more veggies and grapes. Kiwi on the side and a date rolled in raw coconut that I saved from yesterday. It’s a pretty big deal that that remained in my house for 24 hours.

IMG_4298

Snack

I didn’t have much protein in my lunch, so I made a smart snack of 4 scrambled Egg Whites and apple slices with cinnamon.

IMG_4304

Dinner

Leftover Roasted Veggies with Grilled Chicken Breast and Chicken Apple Sausage.

I like to roast the potatoes and carrots and keep some in the fridge. I marinate, and grilled up several Chicken Breast, sliced them, and put those in the freezer. When it’s time for dinner, dice up a few fresh veggies, mushrooms, zucchini, onions, whatever, and toss them in the skillet with olive oil and seasonings. Add in some of the potatoes and carrots and some of your thawed chicken, and dice up a few chicken sausages.

I got the idea for this from a dish made at the food truck, called Cowboy Skillet. Her’s is much better using a different sausage and a few different veggies, but this is an easy One Pot Meal.

Exercise = none

Water Consumed = 40 oz and a ton of hot tea.

Day 15, Whole30

October 27, 2015

This has only happened a couple of times during the last 15 days, but I had the munchies yesterday, and my snacking habit is one of the biggest changes that I am trying to make during the whole30.

I woke up early and I was wanting to eat, but not cook……so I ended up eating a handful of those fat and juicy Holiday Grapes, then I had another handful. After two cups of coffee, I made my breakfast and watched Dr. Oz, because he just happened to have Dallas and Melissa Hartwig, the authors of the Whole30, on his show! I thought they had some great tips, and they make eating whole foods forever sound very doable.

I got in a 3.5 mile walk yesterday afternoon, ran a couple of errands, and cooked a yummy dinner. Other than that, I decided that I had been going like crazy for the last several days, so I didn’t do too much. It was nice.

I saw this recipe in the Whole30 book on the first day that I opened up the book, and i knew I would be making it. Yesterday was the day. Shepherd’s Pie, but topped with Sweet Potatoes. Mike maybe loved it more than I did, of course he didn’t have time to eat his lunch yesterday, so he was super hungry! It really was good though.

IMG_0200

Pretty? Not so much. But very good.

IMG_0199

I had to make a trip to Whole Foods for a few items, so I did a little shopping for new things while I was there. I found this tea along with a few other yummy things.

IMG_0201

I found these little gems with the bulk foods. The only ingredients are dates and unsweetened coconut. These are likely more of a dessert item, which is a “no no” during the whole30, but i didn’t expect them to taste so darned sweet. I started with the two that I bought on my plate, but ended up saving one of them for today.

IMG_0203

I ate all Whole30 compliant foods yesterday, but I feel like I ate too much food and too much fat. A part of me wants to count points.

Here are yesterday’s eats….

Breakfast

Un-pictured Grapes and Coffee……..then,

a Veggie mix of Peppers, Onions and one New Potato with one Sausage patty crumbled, with 2 Egg Whites and 1 Egg, and a Pear with Cinnamon.

IMG_0209

Lunch

Turkey Taco Meat that I bulked up with carrots, bell peppers, green beans and onions, stuffed into lettuce leaves and topped with Smashed Avocado, and a few peppers and carrots on the side for crunch.

IMG_0208

With my lunch, I also had a Banana with 1 tsp SunButter and a sprinkle of Chia Seeds

IMG_0205

IMG_0206

Snack

Dates rolled in Raw Coconut with Raw Pecans and Hot Tea.

IMG_0204

One of those was plenty.

IMG_0202

Dinner

Shepherd’s Pie. I wish it looked as good as it tasted.

Day 14, Whole30

October 26, 2015

No doubt, it was a challenging weekend at times. Friday beers while watching the Royals game would have been nice, and Saturday night while at a party, a glass of wine would have tasted good, but we skipped on the beverages, and we survived. 🙂

Yesterday, we went to our son and daughter-in-law’s house for a family get together. Before I talk about the food challenges, let me talk about this awesome house that they bought and moved into last October.

The house was built in 1935.

Jake and Jordan moved in one year ago, and this was their first official family get together. We’ve been to the house, but not with all of our kids and grandkids and Mike’s parents. Everything was cozy and perfect.

I love the area of Kansas City that they live in. It’s an older part of the city with some beautiful old homes. I didn’t even think to take a picture from the street, but I took a couple of pictures while sitting on the porch, and the trees are beautiful.

IMG_0186

Papa Mike giving a shoulder ride to grab a leaf.

IMG_0185

One of my favorite parts of the house is the huge front porch. We sat out there for a large part of the afternoon and it was perfect. Papa Mike and Char are at the end of the porch on the porch swing. It reminds me of swinging in the porch swing on my grandparents front porch when I was a kid.

10417514_10103207946441579_3404817638099905525_n

We spent a little time browsing through the magazines that Jake and Jordan found in the attic when they moved in. I browsed through this October 1937 issue of the McCalls magazine. I love that they found these!

IMG_0183

IMG_0197

The kids were either climbing tree’s in the backyard, or painting pumpkins in the basement with Aunt Jordan.

IMG_0184

They have done such a great job of making their house so cozy. It looks like they have lived there for years. When we all got there, Jake had a video with music playing in this living room (I forgot to take a picture of the wall with the TV and the wall with the sectional that we all piled onto) with pictures he’s taken over the last four years.  It was great looking at pictures of the grandkids and seeing how they’ve changed in just a few short years.

IMG_0179

The house is beautiful.

IMG_0178

The Guest Room…..maybe one day a Nursery?

IMG_0193

Okay…let me talk Food Challenges…..

First, dinner was delicious! There is an awesome Meat Shop down the street from Jake and Jordan’s house, McGonigle’s, that has been around for years, and they are know for their quality meats. Jake bought some ground beef and we had the best burgers ever! No seasoning needed.

IMG_0195

We got to their house around 3:00, and ate dinner around 5:00? Mike and I ate lunch at home a little later than normal so we weren’t hungry when we got there, but when we did get there, there were lots of yummies out to snack on.

Jordan did such a great job of decorating for the family and they both put in a lot of work for our family get together.

Beer Dip and Pretzels, Cookies, M&M’s, Roll Ups and Salsa…..along with a dinner menu. So cute.

IMG_0194

Smore’s Fondue……the kids LOVED this! Jake and Jordan were excited to use one of their Wedding Gifts!

IMG_0177

There was also a large fruit platter. I was really trying to just not eat anything until we sat down for dinner, but I did have few strawberries and I sipped on hot tea, but I was thinking about those M&M’s, Cookies and Fondue for a long time before we sat down to dinner.

I knew we were having burgers, so I made a big batch of roasted veggies, and included some chicken sausage, to take as a side to share. Everyone seemed to like the veggies, and we all had a great dinner!

Mike and I agreed on our drive home that passing up on the sweets was tough, but just one more reason why I think doing this challenge together has been so great!

Here are yesterday’s eats….

Breakfast

Egg White Omelet with Salsa, One Diced New Potato, Raspberries and 1/2 Banana with SunButter

IMG_4126

Lunch

Chicken Salad with Whole30 Mayo, Cucumbers, Celery, Sliced Almonds and big, fat, juicy Holiday Grapes.

IMG_0190

Dinner

Burger with Avocado and mustard, Roasted Veggies with Chicken Sausage, Fruit

Day 13, Whole30

October 25, 2015

Day 13, and weekend number two, almost complete!

I started my Saturday morning off with a 8:00 am Hot Yoga class, and it felt great to get back there!

We went to our grandson’s football game (number 34) before lunch, and they won 19-0, with him scoring TWO Touchdowns!! Of course, I didn’t get a touchdown picture! It all happens so fast!

IMG_4088

After game snacks are super important! What a great kid he is.

IMG_4103

His little sister entertained us between plays….”Nobody touch my hotdog!”

IMG_4097

The rest of our Saturday was filled with a few chores and errands. We had dinner at home, then went to a party where we didn’t even look at the food table, drank bottles of water, and focused on the people. I will admit that this weekend was a little harder than last wanting to have a glass of wine. Friday afternoon, a girlfriend came by for a short happy hour, and I wanted wine, but had hot tea. Last night, I just wanted to sip on a glass while I was getting ready, then again while we were chatting with friends at the party. But….to walk away knowing that we stuck with our plan and curious as to how we will feel, both mentally and physically at the end of the 30 days, made it all worth while.

We are headed to our sons house this afternoon for a large family get together. Burgers and dogs on the grill. I’m taking a ginormous bowl with assorted roasted veggies and sausages. We’ll be busy playing with the grandkids, so again, focusing on the people instead of the food. Blah, Blah, Blah…..just kidding. It does feel good to have a plan and feel in control.

Here are yesterday’s eats…..

Breakfast

Leftover Salmon, Two Eggs, Avocado and a few dates with Black Coffee.

IMG_4081

IMG_4083

Lunch

Tilapia, a few potatoes, cherry tomatoes with fresh basil, Balsamic Vinegar and Olive Oil.

The tilapia and potatoes came together in less than 10 minutes in the skillet. I’ve been keeping a few boiled new potatoes in the fridge, so right at the end of the fish cooking, I sliced two and tossed them in the skillet. Keep some cooked in the fridge has allowed me to enjoy potatoes without eating too many of them, or too large of a portions. Lunch was awesome! Keeping lemons and limes has come in handy too!

IMG_4110

IMG_4114

Dinner

I bulked up my Taco Turkey Meat. I cooked the meat with onions, added my homemade taco seasoning and water and let it simmer. About 5 minutes before we ate, I added in green beans, shredded carrots, red bell pepper and a few diced potatoes.

IMG_4117

Mike ate his in a bowl topped with Smashed Avocado and Salsa.

I ate mine a few different ways. Some, I ate on top of a smashed new potato. Some, I ate in two lettuce leaves, like a taco. The remainder I ate like Nacho’s, but on Bell Peppers instead of chips. Dinner was great!

Day 12, Whole30

October 24, 2015

First, and most importantly…..You guys…..The Royals are going to the World Series!!! Yahoo! Whoo! Whoo! Yippee!

I love following Salvy’s Instagram Page! He makes me smile. Last night was awesome. It did make me want to snack, but I didn’t!!

IMG_4086

We watched the game at home, Mike’s favorite place to watch, and really…..with as emotional as he gets, it’s best. I’ve never seen anyone go from Happy, to Pissed Off, to Ecstatic, in such a short amount of time. Whew!

During the game, I got off of the couch and got down on the floor and did about 30 minutes of Yoga. I was trying to calm myself down, and get in a little stretching.

At my WW meeting yesterday, we talked about activity, and different ways to spontaneously get some in. Exercising during TV commercials was suggested, so I figured, why not a little Yoga to calm my nerves during the game?

I’ve decided that while doing the whole30, I will weigh. I completely understand that the goal of the whole30 is more about re-establishing your relationship with food, and not so much about weight loss. It just so happens, that weight loss is common when doing the whole30 because you are doing so many nice things for your body, your body says….”Hey! Thanks! Because of all the great things you’re doing, I said good-bye to some extra fat!”

I am officially out of the 170’s! Again…..Whoo Whoo! It’s been over a year and a half! My body was holding on to 172 like there was no tomorrow. I knew that if I took a break from the adult beverages, that would help, but I also was ready for a change with a few other eating habits I had developed, and eating too much fruit was one of them.

We’re almost half way through the 30 days, and I have to say that week two has not been nearly as overwhelming as week one. Now that my pantry is stalked with whole30 compliant items, and I know what’s working for us, and what some of the quickest meals are to prepare, week two is just a bit easier.

While making things a little easier for the upcoming days, I made up some chicken salad. I made way too much for just Mike and I, and I don’t want to have to throw any of it away, so you might see a lot of that on my plate for the next few days.

For my Chicken Salad, I boiled (medium high)  four chicken breast in water until they were so tender, they would almost fall apart (40-50 minutes). I let them cool, then shredded them, added some of my Whole30 mayo, celery, cucumbers, sliced almonds and grapes and a little sea salt and cracked black pepper. It’s loaded with good stuff and the grapes give it a yummy sweetness, Mike’s favorite part!

Food Find! I had heard that Sunflower Seed Butter taste very similar to Peanut Butter, but that it is better for you, so I decided to buy some. I love my Almond Butter, but this stuff was pretty darned good too! One Tablespoon = 3 WW Points, so it’s not like its low fat or low in points, but it’s one of those foods that I can get away with a smaller serving, 1 or 2 teaspoons, and be satisfied. Not a trigger food for me, thank goodness! The only ingredients, like my almond butter is only almonds and cashews, this Sunbutter is only made of sunflower seeds, and it does taste very similar to Peanut Butter!

Day 11, Whole30

October 23, 2015

One of my readers, (that I feel like I personally know!) had some great questions on my blog yesterday and I loved answering all of them!

I’ll certainly do a review of the whole30, on day 31, but I am trying to blog about the journey as I go too.

I loved all of her questions, and I thought others might have a few of the same questions, so I thought I’d share, even though you can go to yesterdays post and read for yourself. 🙂

Q – “A few questions for you – what did you do with all the non compliant foods in your house?”

A -I  had been planning on doing the whole30 for a while, so I was trying to use and eat up the foods that I knew we wouldn’t be eating while we were doing the whole30. Coincidentally, one of the kids in the neighborhood was doing a food drive, so I filled a bag with canned goods and non-perishable foods that I knew we wouldn’t eat, so maybe a donation? Anything I had left that would spoil, I just tossed.

Q – “How do you cook spaghetti squash (just bought my first one)?”

A – I cut the squash in half, lengthwise. Clean out all of the seeds and the loose parts. I rub just a little Olive oil and Sea Salt and Cracked Pepper inside the squash. I put the squash open side down on a baking sheet and bake at 400 for 30-40 minutes, depending on how the big the squash is. Let it sit for just a few minutes to cool so you can scrape out the cooked spaghetti noodles with a fork. I scrape them all out until I reach the skin of the squash. This is great with just a little Olive Oil or Butter and 1 T. of Parmesan Cheese. Of course, it is also great in any recipe where you are wanting to sub it for pasta.

Don’t think of it as spaghetti though, think of it as a vegetable. It doesn’t have a pasta texture, in my opinion, but I do like the taste and the texture of it!

Q – “Do you think a modified approach would show any benefits?”

A – A modified approach? Yes! I do! Each day, I think to myself…Okay, I want to eat like this forever! (mostly…I miss my morning frothy coffee and wine) For me, learning how to not snack and graze, is big!!

I know this Friday morning, my Leader will say…Wow! What did you do different this week? My answer will be, I ate protein at every meal. I ate three meals a day. I only ate two fruits a day. (I was relying on fruit pretty much between every meal) I increased the amount of veggies I was eating and tried to eat veggies at every meal. (One of my biggest changes!) For the most part, I only ate one snack a day, and it was a planned snack that I ate between lunch and dinner, and I sat down and mindfully ate it.

I love WW, and out of respect for the program and my Leader, I really don’t want to talk about whole30 specifically, in the meeting. I’m really doing Simply Filling, without dairy, without bread, without legumes. Kinda sorta, right?

Hopefully that answers a few questions for anyone else that is curious. Obviously, I’m no expert, but as I am doing this, I am trying to pay really close attention to what it is that I am doing differently.

So glad that i got in a 5 Mile walk yesterday morning, then did my errand running.

Exercise first thing….Exercise first thing…Exercise first thing……

Here are yesterday’s eats…..

Breakfast

Have you ever cooked an Egg in a slice of of Avocado? It’s quite delicious! I ate mine with a few bites of Sweet Potato and a Banana with Almond Butter.

IMG_4003

Snack

A few Raw Pecans and Grapes after my 5 mile walk.

IMG_4018

Coffee with Mom

I did a little blogging at Starbuck’s after having coffee with my mom. Did you know that Two Tall Black Coffee’s cost less than One Grande Latte?? Yep! Saving, saving and more saving!!

IMG_4019

Lunch

Leftover Turkey Spaghetti Sauce served over a bed of sautéed Green Beans. YUM!! Who needs pasta?

IMG_4026

Dinner

Salmon, Steamed Broccoli and Whipped Cauliflower. I cut up the cauliflower and boiled it for about 8 minutes, then drained the water and added a little salt and pepper and clarified butter. I used my Emersion Blender to whip these babies up. Mike loves this stuff maybe more than I do! I’m not a huge fan of broccoli, raw or cooked, so I didn’t eat all of the broccoli on my plate.

Exercise = Walked 5 Miles. Whoop! Whoop!

Water Consumed = 80 ounces

Day 10, Whole30

October 22, 2015

1/3 of the way there. The last 10 days have flown by.  I don’t have any complaints.

I worked at the Food Truck yesterday from 10-2:30ish, and my stomach was growling at 1:00. That’s the first day that my stomach has growled in between meals since starting the whole30. I ate breakfast at 9:30, and planned to eat lunch when I got home. I don’t know if it was smelling the food or what, but I was hungry, stomach growling hungry. I had a small bowl of the pork and a few cucumber slices, all Whole30 compliant, I just hadn’t planned on eating until I came home.

When I got home, I ate my planned lunch of leftover Chicken Cacciatore, (which seemed to get better and better each day!). That was the last of it and I will for sure be making that again!

An hour later, I was hungry. I didn’t have much pork at the truck, and there wasn’t much chicken in my leftovers, so I think I hadn’t had enough protein for the day? I ate pecans and an apple, and then a few more pecans. I waited to fill full, or at least to not feel hungry, but satiated (super big word for me.) and it just wasn’t happening. I had another hand full of nuts, made some hot tea, and chugged some water. Finally, I wasn’t hungry.

Come dinnertime, time to eat, I wasn’t hungry. Go figure. Once I took a few bites, dinner tasted great, and I ate it, and I was satisfied.

Now…..I said I would get in some sort of exercise yesterday. After work, I watched the game, and it was sad. But now my Royals get to come back to win at home! After the game, I got dinner ready. It was almost 7:00 and Mike wasn’t home yet, so I headed out for a walk with the dogs, and we walked a mile. Lame……

I’ve got a huge “to do” list today, and no appointments anywhere and no Food Truck today, so I’m out the door for errands.

A friend sent me a text for a walk, so I got in 5 miles this morning! Yay! That ought to kick me into gear now.

I haven’t been blogging about my water. I changed the end of my blog up a bit since doing the whole30, and forgot to add it in there, but I like including it in the blog because it encourages me to drink more when I’m telling someone, apparently.

Yesterday I drank 120 ounces. What what? I know. I feel cleansed. Okay, I’m rambling. Off to accomplish some stuff.

Oh…one more thing. Mike and I have both stepped on the scale, (even though the plan say’s to only weight on day 1 and on day 30) and we are very pleased. Of course since he is a boy, he is more pleased than I, but I expected that. After I called him a few names and said “Holy Crap! Are you kidding me?” when he told me how much he had lost, I assured him I was very happy for him and his results, and the fact that he is sleeping so well is just icing on the cake! (Did someone say cake?)

Here are yesterday’s eats…..

Breakfast

Four Egg White Omelet filled with bell peppers, asparagus and a few bites of potato, along with a pear sprinkled with cinnamon, and black coffee.
