Day 17, Whole30

Yesterday, I made a yummy breakfast, I planned to eat lunch at the Food Truck, and that was tasty, I had a snack later in the afternoon that I ate mindfully, I made a new recipe for dinner that was awesome and the KC Royals won Game Two of the World Series!!

Pretty great day you guys.

While working at the Food Truck, I cut up dessert and put it in containers. Cobbler with peaches, blueberries, apples and cherries. I can NOT describe to you how awesome this smelled, and usually when I cut dessert at the truck, I lick the spoon and/or take a bite. Nope. Nothing.

We watched the game at home in the coziness of our PJ’s. These are the socks that I fell down the stairs in last week! I walked down stairs very S L O W last night. I’m wearing my KC Chiefs Flannel PJ pants and a Royals T-shirt, covered with my favorite blanket! I’m pretty sure, I looked amazing.

I did not exercise, BUT I WILL TODAY!!

Last night, kind of in between batters, I made some Egg Muffins for an easy and quick breakfast to heat up. I hope they’re good!

This is Mike’s Breakfast and Lunch for today. I’ve done this everyday for the last 17 days. It’s just something I do now after dinner. The guys got it made, don’t ya think??

Yesterday, I put this in his lunch.

Roast Beef wrapped around grilled asparagus, Whole30 Mayo under that green lid to dip it into, strawberries, Raw Nuts in the other baggie.

I’m trying to give him a little variety, (not dinner leftovers every day) and also eat a little variety myself.  I don’t want us to get bored. Not having a sandwich for lunch isn’t the end of the world.

I tried a new Meatloaf recipe for dinner, and we both loved it!

While eating dinner, Mike asked me if we’re going to just eat like this forever? What??? He said he really likes the way that we are eating, and that he feels good and wants to continue. Hmmmmm. I had no idea he would have such an opinion on the whole30, and because his routine around breakfast and lunch has changed so much, I expected him to have a few complaints, and he doesn’t! Yay!

Okay, out the door for a busy day!

Breakfast

Two Poached Eggs, Sweet Potato Rounds and Strawberries with Black Coffee

Burger at the Food Truck, on a bed of Mixed Greens, Red Onion, Cucumbers and Mustard

Snack

Dried Organic Apples with Organic Cinnamon, Raw Walnuts, Hot Tea

Dinner

Meatloaf, Whipped Cauliflower, Green Beans with Turkey Bacon

The Meatloaf was delicious, and taken from a Whole30 approved Website. No breadcrumbs, but almond flour instead. I cooked the green beans in a skillet with a little olive oil, sea salt and cracked black pepper, along with 2 pieces of Whole30 approved Turkey Bacon that has no sugar in it. I bought the bacon at Whole Foods. For the Cauliflower, I cut it up, boiled it for about 8 minutes, drained the water, added sea salt, cracked black pepper and a little clarified butter. I whipped them up with my Immersion Blender.

Exercise = Urg. None.

Water Consumed = 70

 

This is What I Will Accomplish in 2015

I will choose one occasion per month for Social Drinking (um..this is a work in progress)

I will go no more than two days in a row without exercise. (I’ve done “two a day’s” to make up, and slacked lately)

I will track every single day of the entire year. (I’ve only NOT tracked a few weekends this year.)

I will not be tracking my food while doing the Whole30.

I will run in a minimum of six 5K’s, Four down, two to go!
