Lot’s of Work with a Little Play

Last weekend was spent in Dallas with one of my favorite peeps!

My daughter, Tess, lives in Dallas and moved into a new apartment a few weeks back. She was wanting a little help getting organized and we were both feeling the need for some mother/daughter time, so we planned a visit and accomplished all sorts of things.

It’s has taken me forever to sit down and write this post and get back into my weekly and daily routine. I came home early Tuesday morning to all sorts of unexpected events, but the week has finally slowed down, and Friday’s always seem the best day for me to get back on track, being my Weight Watcher weigh in day and all. I had to escort the hubs to a Dr. appt. this morning, and I’m working next Friday, so I really need to plan to attend a different meeting before I let myself get carried away with not planning and tracking my food. I’ve not been super disciplined about tracking, and I know that I am eating too much food. I need to be tracking. More on that subject tomorrow.

I went to Dallas on Friday night, and Tess and I had some great girly chats, we accomplished several task at her apartment, we cooked up some yummy food, and I came home knowing that my kiddo feels organized and happy in her new home.

I love her bedroom….and so does she.

We found a couple of chairs, outdoor pillows and a table at Big Lots, for basically pennies, and they fit perfectly on her little patio. Bonus….the table and the chairs all fold up, so we were able to fit everything into her car! We found that awesome lantern at Marshall’s.

We even were able to enjoy a few meals outside!

We only got in one good long walk on Saturday, (and it was beautiful on the Katy Trail) but with all of the running around and constant task that we were completing, I think we earned a few FitPoints.

When I got to Dallas on Friday night, Tess had a yummy Quinoa Enchilada dish she had made that was so darned good, we had it for dinner a couple of nights.

Tess is a WW fan, like her mom, so food choices were easy this past weekend. Her roommate is in the process of doing the Whole30, so the three of us had some good food conversations, and I always love talking about food! Look at that Whole30 plate! I’m like….lemme snap a pic of your plate!

Tess made a really tasty Twice Baked Sweet Potato Egg Bake for breakfast Saturday morning. It was so darned good, we had it for breakfast on Monday too!

She had lots of yummy and point friendly things in the fridge which made snacking a cinch.

We even worked in Church on Sunday morning with her boyfriend, followed with a tasty Brunch outside. I love to eat outside, and I love spending time with these two!

After several hours of organizing, hole drilling, and more organizing and hanging things, Tess and I decided to call it a night, and go out to dinner to our special Mother/Daughter date place, Fireside Inn. As many times as I have gone to visit Tess in Dallas since she moved there, I think we’ve only skipped this place a couple of times. We usually order a bottle of wine, a few appetizers, and get into that really deep chat that we like to have. You know the one, where you solve all of your problems, you set goals, you share your dreams, you get teary eyed, you share memories and you’re just glad you have each other? That chat.

Along with shared memories, dreams and plans, we also shared some awesome food. Cheat meal? Pretty much.

Peppadew peppers stuffed with goat cheese and topped with basil pesto. (Holy heck! Amazing!!!)

A bowl of butter, served with a side of crab claws and crusty bread (Not so crusty when soaked in that dish of butter!)

Meatballs. Huge, saucy, cheesy, delicious meatballs.

All of that paired nicely with a bottle of Red.

Monday…..more organizing. Tess worked in her closet most of the day. I hung the stuff above her bed.

While she finished up her room in the evening, I made Chicken Salad for her lunches and Turkey Spaghetti and Spaghetti Squash for our dinner, with plenty leftover for her dinners throughout the week. Yep, just like home. Cooking and counting points.

It was a productive weekend, and even though she’s so far away from home now, it’s nice to know that I still get to be Mom once in a while. She makes me super proud, and I love watching each new phase of her life.
