I spent a little time in the kitchen on Saturday and I was in a pizza mood. I ate Pizza all day long.
I made this for breakfast, and I really liked it. It’s basically a frittata, which I’ve actually never made, but it is similar. I cooked the veggies, added the whisked eggs, topped that with crumbled cooked bacon and cooked sweet potatoes, put a lid on it and let it cook on the stovetop. Apparently a frittata is much the same, but finishes cooking in the oven. I imagine you all already knew that.
I love everything that I have made from Trina at Paleonewbie.com. You can click HERE for her recipe that inspired this breakfast. She actually calls hers a Potato Bacon Pancake. I call mine…Crustless Egg Pizza. I know. I know. It’s a frittata. Whatever.
This recipe was plenty to have leftovers for lunch, so I did.
For dinner? I made pizza. I made my first Sweet Potato Crust.
I personally liked it better than the Cauliflower Crust that I have tried a couple of times, but the hubs likes them both. I think he just likes everything.
I really liked this recipe. My only complaint was that it called for 3 medium sweet potatoes, and I would liked to have known a measurement or a weight for the potatoes. My crust was a little thick and I think I had too many potatoes in there. Still, the flavor was yummy. In all of my pizza excitement, I dumped all of the ingredients into the mixing bowl, and forgot to weigh my own sweet potatoes. I’m just giving my best guess on the SmartPoints, but the next time that I make it, I will weigh out the potatoes.
This was pretty dang tasty.
Lots of sautéed veggies, Turkey Taco Meat, Turkey Pepperoni and a little Mozzarella, more on the hubs side.
I got in a great walk with a friend, enjoyed all my yummy pizzaness, and we ended the night at a friends watching KU Basketball, where I had three beers. I took our beers in this bag. How cute is this? Ya gotta love a fun Marshall’s find.
