Selling More Stuff!

Garage Sale

I woke up feeling a little spunky yesterday and prepared for a good day.

My Garage Sale yesterday was more successful than I thought that it was going to be, especially since not one person came from 7:00 – 8:00? Anyhow, I was selling and giving stuff away left and right and made all sorts of new friends. I’m a terrible sales person. If I got to talking to somebody for a long time, I was like…..”You know what? Just take it. I’m donating everything that doesn’t sale anyhow.”

One lady and I started up a conversation about Book Club while she looked through some of my older books, then I came inside and got the Rosie Project, one of the books that I just finished, and gave it to her. She was so appreciative! Remember the Random Act of Kindness I said that I would do the other day? Well, I tried to do that yesterday. 🙂

Food and Beverage

I ate a breakfast full of protein before I opened up the Garage door,

I found this creamer at Whole Foods and gave it a try yesterday. 2 T. = 1 SmartPoint

I closed up for lunch and went to Whole Foods. It was cold and rainy, and all I could think about was the Turkey Chili I saw on their Hot Bar the day before. I ended up getting some fish and steamed broccoli too.

I went to a friends house for two beers for our Friday Happy Hour.

For dinner, Mike and I went out. I was craving my Shrimp Fajita’s, and they were perfect! I like to order them with No Beans, No Rice, Extra Fajita Veggies, Corn Tortilla’s, and extra Guac. They don’t usually come out that way. They either come out with random steamed veggies (broccoli, carrots, etc) or they come out with one extra slice of bell pepper and lots of onions.

Last night, perfection! They came out with tons of extra peppers, the shrimp was perfect, and they forgot the tortilla’s, which was perfect because I usually don’t want them anyhow. I drank lots of water with dinner and I didn’t eat ANY of the chips and salsa.

Okay, I gotta go sell more stuff!

Everything Must Go!

I haven’t had a garage sale in forever, and I despise them. You do all that work, and only sell 25% of your stuff. Is that just me? I spent the entire day yesterday organizing my pile in the garage that I made a few weeks ago, then I went crazy and searched the house for anything and everything I could find to get rid of. Mike is going to come home one day to a living room with only a couch and a TV!

I’m not sure how many trips I made up and down the stairs to the spare bedroom closet making sure I had everything out of there that I think I can sell, and multiple trips to the basement to do the same. Basically I have $1 on everything. That should get rid of it all, ya think?

Okay, I’ve gotta go. I need to get my coffee cup filled up, and open up the doors!

Food Truck Fun

While working The Food Truck window yesterday, a man came out of nowhere, stepped in front of the 10 or so people in line, gave me a $100 bill and told me to use that money to buy lunch for everyone in line. He looked at the first guy in line, patted him on the back, and said “Lunch is on me”. Then he left!

I think everyone that got a free lunch paid it forward and put a nice amount of money in the tip jar, because we had really great tips yesterday!

I’ll need to do my own “Pay if Forward”, “Random Act of Kindness” today. 🙂

Roasted Brussels Sprouts and Grapes

I made a recipe last night out of a free magazine that I recently picked up at a local grocery store. Pretty tasty! The recipe calls for Prosciutto. I didn’t have any of that, so I used some Chicken Apple Sausage instead, and we both loved it!

My Afternoon

After a fun day at work, I came home and took Tucker on a 2 mile walk. I’ve been much better at getting in at least a little walk. I had all sorts of excuses lined up as to why I didn’t have time for a walk, but I got it in anyhow.

I got home from my walk just in time to babysit the youngest granddaughter. I absolutely adore her. I adore all four of our grandkids, but I think that you adore the one that you are currently with….the most. 

We played outside for a long time with just the wagon, a few bubbles (we started with a lot, but little ones love to dump stuff out)….

…and a large variety of chalk. I’m not sure who enjoys the chalk more, her or me? She likes to put it in buckets, then take it out of buckets. She also likes to hand it to me, then tell me what to draw. After a few smiley faces and trees, I’m like, “Can a two year old Hopscotch? I like to draw those”. She looked at me like I was speaking a foreign language. I love that confused look on her face. Occasionally, when I have no idea what she is saying, I give her the exact same look and say, “Yo, hablo Ingles?” More confused looks.

Mishka was feeling great yesterday and played outside with us for a while. She tolerated the wagon for about 45 seconds, but it was 45 seconds of absolute sweetness.

After lots of playtime outside, I made dinner. It was a Potluck type dinner for all of us.

Check out this plate of food. She ate it all and more too! Raw Cashews, Dried Cherries, Grapes, White Potatoes, Clementine, Chicken Apple Sausage, Sweet Potatoes, Applesauce and Almond Milk. It’s a Paleo Potluck, for a Two Year Old!

After dinner, more playtime, then we took a shower. I couldn’t get the water temperature right and I got soap in her eyes. Egads. She still loves me though. She told me so.

There is nothing sweeter than a two year old wrapped up in a towel.

Her mom picked her up, and I was zonked. What a great afternoon and evening with a little ball of energy.

Breakfast Burritos (kinda), Fruit and Almond Butter

I scrambled some Egg Whites, added a piece of cooked bacon, crumbled, then divided that into two of my Paleo Tortillas. I put a little Olive Oil spray in a pan and cooked them for about a minute on each side to get them crispy. I was devastated when I realized I had NO AVOCADO!! Still good though. I heated up some frozen Blueberries, sliced a Banana and added 1 tsp of Almond Butter.

Taco Tuesday Breakfast Tacos with a Grilled Pear

I woke up thinking about Taco’s. No joke. So I got the coffee going, then made some of those Paleo Tortillas using Unsweetened Almond Milk. The recipe makes 6-8 Tortillas and they are approximately 3 SmartPoints each when made with Almond Milk. I sautéed a few veggies and seasoned those with some Homemade Taco Seasoning, then scrambled a few Egg Whites and added them to the veggies. I topped that with some Smashed Avocado and a few grape tomato slices.

While my eggs cooked, I sprinkled a Pear with some Cinnamon, and put it on my grill pan coated with Olive Oil Spray.

Last night I made Paleo Newbie’s Mediterranean Chicken. With Artichoke Hearts, Kalamata Olives, Sun Dried Tomatoes, Chicken, Spinach and Mushrooms, this dish is bursting with flavor! I doubled the chicken that the recipe called for. I divided the dish into four servings. One serving = Approximately 9 SmartPoints.

Yesterday was a full and busy day, just the way I like it. I worked Food Truck prep for a few hours in the morning, I got a lot done around the house in the afternoon, Tucker and I took a nice 2 mile walk, and I found a new recipe for dinner! Perfect day.

The lasagna over the weekend is about as comfort food as one can get, in my opinion. However, one of my favorite meals as a kid, and a total comfort food for me, was my mom’s Tuna Noodle Casserole.

There have been a few times since we changed up our diet that I thought, “How could I make Tuna Casserole, using more whole foods?” I knew there had to be a recipe floating around somewhere out there that included Spaghetti Squash and Tuna, and I needed to find it!

Well, I found it!

Dinner last night was another hit, and a meal that I can add to our list of favorites.

Weekend Update

April 25, 2016

Hi Guys. I took a little blogging break over the weekend, enjoyed some fun with friends, reading in my hammock, a Hot Yoga class and a great day with the kids and grandkids here yesterday.

Update on my pup.

On Thursday, I put my nose right up to hers, and told her that I needed a sign from her. I needed to know if she was exhausted and ready for doggy heaven, or would she like to stick around a little longer.

Within a few hours, Tucker ran across the backyard, and she chased him, which she had not done since she had her stroke last week. Then, I was upstairs at my house with a friend of mine showing her something, and all of a sudden, there was Mishka! She had come upstairs by herself! She hadn’t done any stairs since her stroke either. I got my sign from my little puppy. We had a houseful yesterday, and she was in and out the back door all day, and up and down the deck stairs as if nothing ever happened. So thank you for your positive thoughts. My little pup wants to stick around a bit longer!

Whole30

In a nutshell, we like eating Whole Foods. I lost three pounds, and Mike is back where he wants to be on the scale.

Our plan is to continue to eat a mostly Paleo Lifestyle. If we want a piece of cheese, or a dinner roll, or a beer, then we will have it. What we liked the most about Whole30, is that we have learned to enjoy eating a diet of Whole Foods and reaping the benefits of that. We both feel really good, and feeling good was the ultimate goal in changing up our diet.

Yummy Eats over the Weekend

Here are just a few of the things that we had over the weekend.

I made these Paleo Lemon Poppy Seed Pancakes and they were so moist and full of flavor! The recipe made 8 pancakes. They were 2 SmartPoints each. I had four one morning, and saved four for the next morning!

I heated up some frozen Blueberries for my topping. Breakfast was yummy!

We had the kids and grandkids over Sunday for a family dinner. I made a big salad that was Paleo friendly, and I cut up lots of fruit, so everything so far was Paleo friendly.

I made garlic bread for everyone else, then I made  Traditional Lasagna from The Pioneer Woman for those who might be skeptical about our Paleo Lasagna. Dinner was a hit and I think everyone even tasted our Paleo Lasagna!

After the kids left, I chilled in my hammock and read a little.

We had a great weekend, and now I need to come up with a challenge. The blog gets boring for me when I’m not challenging myself in one way or another.

Maybe walk 100 Miles? I haven’t done that one in a while, and now that the weather is so nice out, that’s a thought.

I bought roller blades, but have yet to put them on. Maybe I do a Roller Blade/Walk Challenge??

I’ll ponder it, but now I need some breakfast and need to get to work

Round 2, Whole30, Day 30

April 22, 2016

Day 30! While I did a great job with my food these last 30 days, I did end up having a glass of wine or a beer on a few days towards the end of the 30 days. The important thing is that I feel awesome. I’m eating a great variety of whole foods that I love, I’m always trying something new, I have lots of energy, I’m sleeping great, and I’m happy with my food choices. What more could you ask for on a journey to a healthier you?

I have more time tomorrow morning to write a recap of where I’m at on the scale, and what I plan to eat from now on, but for now….here’s what went on yesterday

A couple of different friends of mine had told me about this free magazine at one of my favorite local grocery stores, and I’m glad they did. All sorts of yummy recipes and some great articles too!

Breakfast Pizza, Frittata with huge Blackberries on the side.

I sautéed several veggies, then I chopped a cooked Purple Sweet Potato and grabbed some cooked Pancetta out of the fridge. I poured my whisked eggs into the skillet, then added the toppings and cooked on medium low with a lid on it until the eggs set.

Paleo Sweet Potato and Chorizo Enchiladas with Gluten Free Tortilla’s

Another yummy recipe from Trina @ PaleoNewbie.com. I think with any new recipe that includes several ingredients, it can take a while to make the first time. I made the Enchilada Sauce and the Tortilla’s from scratch, so this required some time, but it was so good and I will be making these again for sure.

I also made some Cauliflower Rice and added a little homemade Taco Seasoning and Lime Juice to it. Mike raved about dinner, and had seconds. 🙂

Round 2, Whole30, Day 29

April 21, 2016

After working the Food Truck yesterday, I got in a three mile walk with Tucker, then came home and enjoyed my niece being here. It was a lot easier to get her moved in that we thought, which left a lot of time for chatting and getting caught up. I’m really looking forward to having a girl in the house to chat with. Sometimes asking Mike to talk to me like a girlfriend would, can get old. 

I had a menu planned for the week, and that always makes the week go smoothly. I also roasted plenty of Butternut Squash for the week, and we have used that in several meals. I ended up with a lot more leftover Chicken and Steak and salad fixin’s than I thought that I would, so we ended up eating lots of salad for dinner this week. I needed easy meals for Tuesday and Wednesday, so the leftovers came in handy, and the simple meals that I had planned, are things I can just add on to the end of the week. I won’t end up wasting any food. Yay for planning!

The rest of the evening was super chill, and I showered and climbed into bed early.

Afternoon Meal – 9 SP

Dinner was going to be late, so I pulled out one of these new bars. This is a new flavor for me. I liked the flavor, but it was a bit dry? I can never decide if the 8-9 Smartpoints for one of these bars is worth it for such a small amount of food that really doesn’t fill me up. These really are best used in an emergency when your day just doesn’t go as planned, and you need something to get you by.

I’m pretty sure I buy these just to satisfy my sweet tooth.

We had a little chicken and a little steak leftover. I gave Mike his choice. He wanted the Steak Salad. I made myself this yummy chicken salad. If you haven’t tried the Chopped Salad that we have come to love, and you’re a salad lover, I really think you should!

Round 2, Whole30, Day 28

Sometimes, I goof.

The short version.

That Steak Salad that I raved about in yesterday’s post? Well, I goofed and forgot to include the recipe for the marinade. I have revised that post to include the marinade recipe.

I did change the recipe just a bit from the original, and I have now posted the recipe, Flank Steak Marinade, here on the blog.

My apologies if anyone was super eager to make that salad (like my daughter was) and was perplexed as to where the marinade for the flank steak was.

My Day

Yesterday was one of the first days in what seems like forever, that I did not have a “to do” list, or any place that I needed to be. It was nice.

You know what I did do? I’m ridiculously excited. I planned a trip for Mike and I to go to NYC! Guys, I’m super stoked! I have been wanting the two of us to go to New York for a long time! I want to see a play on Broadway, I want to stay right smack in the middle of Times Square, I wanna eat some yummy New York food, I want to go to Museums, I want to go to coffee shops and people watch, I wanna walk the streets of New York City! I just wanna soak up as much of the city as we can, in four days.

I booked our flights and our hotel. Now for some planning of all of the things that we want to do! We’re going in October! Yay!

I also got to have this little angel over last night.

Um, please note the nice clean garage that allowed her all sorts of room for wagon pulling fun! It was a moment of pride for me. 

Her mom got to go to the KC Royals game with her co-workers. Mom was spoiled in a suite at the stadium for the evening. She has a new job that she is loving, and they really seem to be taking great care of her! So happy for her!

My niece started moving in last night too, so we had all sorts of excitement going on here last night at our Empty Nester house.

Flank Steak Marinade

I love a Flank Steak, but I think there is a secret to making sure it is tender and juicy, the way a good steak should be.

The secret? Poke it and soak it!

This taste great with potatoes and green beans. It also makes an amazing Steak Salad!

Flank Steak Marinade

Ingredients
  1. 1.5 lbs flank steak
  2. 1/2 C olive oil
  3. 1/3 C soy sauce or coconut aminos
  4. 1/4 C apple cider vinegar
  5. Juice from 1/2 lemon
  6. 1 T of mustard
  7. 3 cloves of garlic, crushed
  8. 1/2 T paprika
  9. 1/2 T onion powder
  10. 1/2 T salt
  11. 1 tsp dried thyme
  12. 1/2 tsp chili powder
Instructions
  1. Cut steak into smaller pieces, or leave whole. You decide.
  2. Poke steak generously with a fork on each side.
  3. Put steak in a large bag.
  4. Mix all other ingredients in a bowl, then pour over steak in the bag and seal.
  5. Refrigerate overnight.
Notes
  1. Grill for 6 minutes on each side and it is perfect every time!
