Weekend Trip!

I didn’t get a blog posted yesterday, so I will have to catch you up on Monday about what I ate on Thursday and Friday. Thursday was a great Whole30 day, as was yesterday. I went to a Social outing both nights, and didn’t eat one bite of all of the lovely dips and chips and pizza, and I drank coffee and water, or hot tea. I loved my meeting on Friday and have a few things to tell you about that, but that is going to have to wait until Monday as well. Mike and I are headed to the airport to go to Dallas for the weekend and visit our daughter,  Tess. You guys….we are going to meet the boyfriends parents! It’s kind of a big deal. I’m in a huge hurry, and don’t have time to look for a picture of just the two of them, or […]

Round 2, Whole30, Day 15

I was out of bed earlier than usual yesterday, and I woke up hungry. I had an early appointment (about 45 minutes away in morning traffic) to drop off all of my Hazardous Waste! You guys, I had a trunk full! I had 20 gallons of partially full paint, and three boxes of random cans of spray paint, motor oil, paint thinner and a variety of yard chemicals. Um, have I mentioned that I’ve been cleaning out the garage?? Just a large screen TV to get rid of, and my job is complete! Anyhow, before I headed out for my early drive, I ate a bowl of Chia Pudding. I might be liking this Chia Pudding thing. After my early errand, but before working at the Food Truck, I had a little Breakfast Casserole, breakfast number two. While working at the food truck I had a small, very small….Whole30 baby slip. […]

Round 2, Whole30, Day 14

I guess you could say I got my veggies in yesterday. Running a little late this morning, so….. Here are yesterday’s Veggie eats…. Breakfast – 5 SP My favorite breakfast veggie combo. Red Onions, Zucchini and Sweet Potato with 6 Scrambled Egg Whites (lots of protein) topped with Smashed Avocado.   Lunch – 8 SP I packed a salad and a banana to take while working the food truck. Chicken, Mixed Greens and Roasted Butternut Squash.   Afternoon Meal – 10 SP Un-pictured Raw Almonds and a bowl of more Mixed Salad Greens topped with a half an egg and a little leftover Ribeye.   Dinner – 6 SP Turkey Spaghetti over Spaghetti Squash, and because 1/2 a Spaghettis Squash just wasn’t enough noodles, I added a few Zoodles and some Green Beans. These are my 2016 Goals Make time each week to Meal Plan Drink 100 ounces of water […]

Round 2, Whole30, Day 13

A full day yesterday prepping food for the week and loading the food truck. This is me driving the golf cart out to the truck with a load. It was gorgeous outside yesterday. We have a lunch every day this week. I have not had a 5 day work week in a really long time! I did not eat the most balanced of meals yesterday….really just lunch. I had a bag of trail mix and a banana while working, then a pear with Almond Butter when I got home. I did not “exercise”, but we were on our feet prepping and loading the truck from 11:00 to 4:00, then when I got home a little after 4:00, I spent an hour in the back yard pulling grass out of our new Mulch areas, then an hour and a half completing my garage project. I moved a lot of things, swept […]

Round 2, Whole30, Day 12

Whole30 I haven’t blogged much about our Whole30 experience this time around. The first time that we did the Whole30 back in October, we made so many changes in our routine and the foods that we were eating and not eating, that the first 10 days were really overwhelming. The planning, the shopping and the food prep seemed to take up a lot of time, and it was all very different from the way that we had been eating. I learned so many things in those 30 days that have made this time around much easier. Routine: I try to find time each week to meal plan. When nothing sounds good, or I’m not in the mood to look at recipes, I turn to the list I’ve made of “Favorite Meals”. All of the meals on my list are Whole30 compliant, and Mike and I both like them all. Favorite New […]

Round 2, Whole30, Day 11

Saturday, after Yoga, my food truck boss, Sidney, picked me up and we headed down to KC’s West Bottoms for a little fun.   Lots of shopping, live music and some sunshine.   On my “Project” list for one of these years, is to make myself a headboard, something like this. I love this.   For now, I’ll settle with these purchases for the day. You could say it was a Tray Day.   My Oils fit perfectly, exactly what I was hoping for.   Loving this one on my coffee table. I’m working on the larger Wooden tray for my dining room table.   After shopping, we went to lunch at a great little place in KC, called the Westside Local. All fresh, Farm to Market style.   How cute is this place? One large dining area, an outside dining area and just a few tables in this little […]

Round 2, Whole30, Day 10

Hugs for everyone! Guess what I learned how to do last night at Happy Hour? Yes, this is a Bitmoji. You just download the Bitmoji App and make yourself! My friend Becky made me. Although I wasn’t a fan of the hair color at first, I agree, this is me. Great day yesterday. Worked a long lunch at the Food Truck. Happy Hour in the evening with friends. I drank coffee. Now I’m off to Yoga! Guys…..Whole30 is much much easier the second time around, and I feel great! The scale was kind to me this morning. Here are yesterday’s eats….. Breakfast – 12 SP Leftover Taco Meat and Roasted Butternut Squash topped with Soft Boiled Eggs and chopped Avocado. This was crazy good.   Lunch – 4 SP Un-Pictured bites of food while working at the Food Truck. We had a little down time, and we are working on […]

Round 2, Whole30, Day 9

I have been reading Julie’s blog over at Peanut Butter Fingers for a few years now. When I read one of Julie’s post this week, Abstainers vs Moderators, I could totally relate, and think that some of you will too. She wrote her blog based on information from Gretchen Rubin’s book The Happiness Project,. Julie discusses Gretchen’s thoughts on the difference between two types of people, Abstainers and Moderators. Most of us will fall into one category. Me? I’m totally an Abstainer, and after reading her post, I know now that I can stop trying to be a moderator. I’m just not one. “There’s no right way or wrong way–it’s just a matter of knowing which strategy works better for you. If moderators try to abstain, they feel trapped and rebellious. If abstainers try to be moderate, they spend a lot of precious energy justifying why they should go ahead and indulge.” […]
