This was the first time that I’ve asked anyone to join me in a Challenge, and the first time that I’ve done any type of “Give Away”. I am so glad that so many of you joined me in my walking challenge. Thanks for participating, and no matter how many miles you walked, congrats for getting out there and getting in some activity!

This months Challenge?

Exercise 5 days at week for at least one hour. That’s doable, and it gives me the opportunity to get in a little variety. I plan to Walk, Rollerblade and go to Yoga. Are you with me for “5 Days a Week for at Least an Hour”? I’m not doing a drawing, but I would love to know who’s out there exercising with me and what types of exercise everyone is doing.

It’s going to be a GREAT month! I feel it.

More Quiet Time

Yesterday was another quiet day. It’s been kinda nice.

I finished my walk yesterday. It was actually quiet too. I took both dogs for the first mile and it was a slow one. Then I dropped off Mishka at the house. If you’ve been reading for a while, you know she has had a rough couple of months and she is really starting to show her age of 14. She seems to be doing really well now though, and can even make it a mile before she completely wears out. The mile does her good, and after a short nap, she gets her spunk back.

Tucker and I did the last two miles alone. We saw several neighbors out and stopped to chat. We also said “hey” to a few dogs. It was a slow two miles, but we got er done.

I’m headed out to work the Food Truck!

Happy Wednesday.

Here are yesterdays eats…

Breakfast – 7 SP

Tiny Bowl of Oatmeal with Apples, Walnuts, Dried Cranberries and Maple Syrup

Mike and I have not had Oatmeal since eating a mostly Paleo diet starting back in October. We had no eggs yesterday, and our options for breakfast were 1) Oatmeal 2) Don’t eat at all 3) Go to the grocery store.

We ate Oatmeal.

I forgot how much I like it, but I was hungry two hours later. I like how long my Egg Whites stay with me!

Lunch – 12 SP

Fall Chopped Salad. You guys. Please, for the love of Salad, eat this.

Dinner – 12  SP

This bowl of food was 8 SmartPoints. I ended up taking some seconds on meat and avocado for 4 more SmartPoints.

Hello Taco Tuesday. I love you. Taco Meat with Zoodles added to the skillet of Taco Meat. I served that over Spanish Caulirice (I added Taco Seasoning to my Cilantro Lime Cauliflower Rice, and I thought it was pretty darned good!), topped with a little Smashed Avocado, crunchy veggies on the side, a few Plantains and a little Roasted Butternut Squash, because like Taco Meat, Roasted Butternut Squash taste great with everything!
