Yesterday, I woke up with an agenda, and I was fairly certain that I knew everything that I needed to do for the day, and the evening.

I woke up and hopped on the scale. Down 2 pounds from the morning before. It will take me about 5 days to get back to where I was. I think it is mostly water. Remember…..kankles.

Yesterday, I posted a short blog, made breakfast, went to Yoga (not hot either, just plain ole), then I got busy on the computer. There is a lot to know about being a WW Leader that has nothing to do with being a WW Leader! Well, okay it does, but I never really thought about all of the behind the scenes stuff. Employee email to set up, timesheet program to learn about with a code for everything that you do, training manuals online. training videos online, and a lot of things to download and become familiar with. Lots of reading and learning yesterday.

When I began to feel like my brain might explode with all of the new information that I put in it, I took a break from learning and did a little food prep. I made some Roasted Butternut Squash and cut up a bunch of veggies and Chicken Sausage for our skillet dinner last night.



You gotta love a one skillet dish!


More training in the meeting room tonight! First, I’m off to work at the Food Truck.

Here are yesterday’s eats….

Breakfast – 5 SP

An empty Egg White Omelette (I made breakfast in a hurry, no time for Omelette fillings), Turkey Bacon, Fruit



Lunch – 11 SP

This Ridiculously large Salad had Chicken, Egg, Bell Peppers, Avocado, Apple, Red Onions and  Vinaigrette. I ate every single bite!



Snack – 0 SP

Two handfuls of Black Grapes. I love Black Grapes!! I didn’t realize that I had a handful of some mushy ones, but the ones that were good, were really really good! 🙂 Look….almost normal ankles!!



Dinner – 9 SP

I made a Skillet dish with Rotisserie Chicken, Chicken Sausages, Mushrooms, Bell Peppers, Red Onion, Zucchini, Yellow Squash, and Roasted Butternut Squash. I had everything all cut up from my afternoon prep and in one container, except for the butternut squash. It is in a separate container. Come time to eat, I took enough out for Mike and I and tossed it in a hot skillet with a little Olive Oil. I have plenty for tonights dinner too.

This meal is inspired from an item on our menu at the Food Truck called The Cowboy Skillet. We serve it mostly in the Fall. It has Cooked Chicken, Andouille Sausage, Roasted White Potatoes, Corn, Zucchini, Mushrooms and Bell Peppers. The seasonings are a secret, so I can’t share that, but it does make it taste amazing!! We also have a great Jalapeño Aioli that we like to put on it at the Food Truck that is to die for. Dang, I hope we have that back on the menu soon!!

You could do any combo really of Cooked Chicken and your favorite Sausage with a few veggies tossed in and your favorite seasoning! What an easy dinner! Look at all of those veggies!

Detox…or Wine Tasting?

After a long weekend of adult beverages and eating out, yesterday was a planned sort of detox day. Whole foods, exercise and lots of water.

I started my day off with a great breakfast, then I went to a Weight Watcher meeting for some training. After the meeting, I came home to work on more training online. I ate a healthy lunch at home, I was drinking lots of water and I was planning a long walk in the evening. My day was going great.

Around 6:00, I was still working on the computer, but thinking of getting dinner ready when I remembered that we were invited to a wine tasting party at 6:30. I couldn’t remember the details of the party, but I knew that it was for charity, so at 6:15, we hopped in the car to go to the wine tasting. We hadn’t eaten dinner, and I hadn’t exercised.

While walking to the front door of the house where the party was, I looked at Mike and said…”I think this is a couples thing? What if this is a ladies night thing?”

Mike….”Um, are you serious?”

Me….”Yeah, it just dawned on me that this might not be for couples.”

I stepped into the house to a room full of women while Mike waited outside the front door. I really am an idiot. I told him that I would call him when I was ready to be picked up.

A half a case of wine later, he picked me up.

Not exactly how I thought my day would go.

I’m gonna try that detox thing again today.

The wine event was great! It was your typical “Home Party”, but a portion of each bottle of wine purchased, goes to a charity!

The company is, and the wine was not expensive. Each wine helps a different charity. I loved this whole concept. Enjoy wine, help a charity!

A Nashville Weekend

A spontaneous trip to Nashville recently came up, and I knew that going to Vegas the weekend before would make going to Nashville this past weekend, highly unlikely. Well, we went anyhow and we had a blast!

We left early Thursday morning and arrived at our hotel in Nashville just in time for brunch.

Some of our friends arrived Thursday evening, and others Friday evening. We had zero plans, we all flew by the seat of our pants for the entire weekend, and it was perfect!

We were able to get on the Sunday afternoon flight home which left us plenty of time for breakfast in Nashville with our friends without hurrying, and plenty of time to get some laundry in and grocery shop when we got home yesterday afternoon.

I have learned that when I take a trip, whether it is for a long weekend, or an entire week, I never try to track my points. I find it too difficult to guess on food that I don’t know the points on. I don’t enjoy myself as much, and I just end up feeling bad about myself when I think that I may have had too many points.

Here is what I do like to do now and what seems to work for me.

  1. Get in as much water as possible.
  2. Get in some activity and walk whenever possible.
  3. Make the best choice possible, but order something that I know that I will enjoy.
  4. Remind myself that it is okay to leave food on my plate, even on vacation. (It’s hard! It’s like throwing money away!)
  5. Share something with Mike, or give him what I don’t plan to eat.
  6. I like to weigh myself the morning after we get home, just to know where I’m at and what the damage might be. Sometimes it isn’t as bad as I think that it is going to be!
  7. Get right back into my routine when I get home.

Thursday afternoon, before the rest of the gang got to town, Mike and I went boot shopping for him. The guy has been talking about buying some cowboys boots forever. Honestly, I never thought that it would happen.

Have you been to Nashville? There are boot stores everywhere! These big boots are everywhere too!






We looked in several stores for just the right pair. Like…..we shopped a LOT!!



Giggle Giggle. You guys….Mike bought some boots and I don’t have one single picture of them, but I do have this.



If you haven’t been to Nashville, you never really know what you are going to see driving down the road. A Party Wagon/Trailer?



These are new to me. Need a ride? It’s free too! They just like to be tipped.



Speaking of tipping! I forget about this every time, and really, I don’t get it, but I tip and I made friends with Tammy. It made Tammy happy when my friends walked in and called her by name. 🙂



After a successful shopping spree and a new pair of boots, we stopped in a few bars for a cold beer and some good music. The Whiskey Bent Saloon seemed to be a favorite of ours all weekend.



We decided to stop at Merchants for dinner. At this point, I was still making good food choices and drinking lots of water.



Fish Taco’s and Sweet Potato Fries….with wine. Mmmmmmm.



Finally, our friends made it! 



Mike and I made it back to the room at a reasonable hour and rested up for the weekend.

We all had a pretty chill Friday morning eating breakfast together, then Mike and I headed out for a walk along the river.

By now we had worked up a good sweat and we were headed back to our hotel to clean up and check in with everyone. As we were walking to the hotel, we passed by Rippy’s, where we saw a girl singing that we had heard for just a couple of songs on Thursday afternoon.  We had hoped to find her again over the weekend. This is a great corner location with all of the doors open and it was early enough that there were all sorts of open tables. We stopped in for what we thought might be a cold cup of water and two songs. On the second song, Mike ordered a beer.



Um, okay, I guess we’ll stay! There was another girl and a guy singing with her and all three of them were really good!! We hated to leave!



Soon, the bar was filling up and we were having a great time, sweaty and all. Our friends met us there and it was one of my favorite parts of the weekend, even though I was a sweaty mess.



Finally, Mike and I decided to get cleaned up and then we met back up with everyone at the same spot. Keeping hydrated!! I swear that most of those are empty water cups!!



We met all sorts of KC peeps by wearing these shirts! We also got a few snarky comments. Too funny. Such a great afternoon! 



And… was easy to find our boys in a crowd.



My food choices in the begging of the day were better than they were by the end of the day. This is lunch on Friday.



By evening, the rest of our group showed up and we had a great time!


Nashville has become a big hot spot for Bachelor and Bachelorette parties. We were surrounded by twenty somethings everywhere. We fit right in. I’m certain of it!

This cracked me up! She carried her fiances head around on a big stick! Her friends were all following her through the bar and one of them was carrying one of those big plastic containers of Cheese Balls! Dying.



It is common in Nashville for the band to say…..”Okay everybody, it’s time for a Holler and Swaller”…which means you put your drink in the air, and at the same time, every one hollers, then ya take a drink. It’s required that you participate. (Okay, not really. Actually….really.) One of our friends bought this shirt. I kinda love it.



At 2:00 a.m., we went to Paradise Park. It’s just what you do at 2:00 a.m. in Nashville. Whether you are 21 or 50! Wait….I actually don’t remember seeing anyone our age in line at Paradise Park? Well, all the cool kids go here, so we went.

Lets just say, it was a really good day…..and night. This is in the elevator on the way to our rooms. Yes, it is 3:07 a.m.



Saturday morning wasn’t as rough as I thought that it was going to be. We all met for breakfast and I ordered this big ass breakfast burrito and drank a lot of coffee. I even left some on my plate! (Not much, but the point here is that I did leave some on my plate!)



Saturday, more music and fun. Lots of laughs, lots of dancing, lots of sing alongs. I love Nashville.

This was an afternoon of shared appetizers, beverages and lots of singing at this table right here. I loved this day! (So did Mike.)



This guy had a really good time this weekend, and that makes this girl really happy.





Guess where we went at the end of the night? Yep. Got there at 1:00 a.m. to beat the 2:00 a.m. crowd!

After three days on my feet, salty foods and adult beverages, these are my toes and kankles before getting in bed on Saturday night. This is actually normal for me on vacation. Hot, huh?

I’m just playing. I rolled out of bed, and we were out the door to meet our friends for coffee and breakfast. More food!

I just wanted bread, so I ordered pancakes and fruit. I shared my pancakes with Mike. He was eyeballing them before I had my first bite.



We headed back to the room to pack up. We were able to get on the flight with our friends, and they even saved us seats in the exit row! Extra leg space for my kankles!



Back home in plenty of time to prepare for the week!


We had a great time with friends. It’s been a full and fun month, and now it’s time to do some serious Weight Watchering!

I did step on the scale this morning, and it was what I expected it to be. A few days of counting points, making healthy choices, drinking water and exercising, and I’ll be right back where I was before we left. Do what works for you.

Vegas/Dallas Fun!

Wow! What an entertaining weekend!


This is only my third trip to Vegas, and each one has been a completely different Vegas experience.

My first trip to Vegas was ten years ago or more with some girlfriends for a weekend. My memory of that trip is a little fuzzy, but as I recall, we stayed on the strip in the newer part of Vegas, had a dinner at the Bellagio (I think that is where we ate?), did a little gambling at a roulette table while drinking $2 Bloody Mary’s, and enjoyed some really good people watching in the lobby of the MGM hotel. My jaw dropped open at many of the things that I saw. After all, I was a Vegas virgin.

My second Vegas trip was a work trip with my husbands company (8….9…..10 years ago?) and we stayed at a Golf and Spa Resort several miles off of the strip. Lake Las Vegas?? Anyhow, I loved that trip! I remember feeling very spoiled. The organizer of that trip did a great job of making everyone feel very catered to. We went to the strip one night for dinner and to see The Beatles “Love” (Cirque du Soleil) show. I think we took a limo to the strip? The rest of that trip, everyone was either poolside or on the golf course. Great trip, lots of fun, but I didn’t really get the “Vegas” experience.

This trip to Vegas was all about downtown Vegas on Fremont Street and celebrating the 60th birthday of a friend of ours. This trip was exactly what I think of when I think Vegas!


Mike and I and around 30 others went to Vegas for the big birthday party! We stayed at the Golden Nugget downtown on Fremont Street, and that was a whole new eye opening experience!! People watching Capitol!! I didn’t take nearly enough pictures and the ones that I did take, aren’t a great representation of all that we saw. I was too busy watching and enjoying to even think about pictures. You guys, lots of boobs. I’m not sure what I found more shocking, all of the nipples with painted on pasties, or the amount of small children and babies on Fremont street at midnight for a family vacation! Here is what I do know, we had a blast and I am so happy that we went to celebrate our friends birthday!

For lunch one day, Mike had a burger the size of a house!



Oddly enough, he had that burger at this Mexican Cantina. This was a really fun afternoon! About 20 of us from our group ended up here, not realizing we were all going to be there. This was a great afternoon and we couldn’t have planned it if we had tried.



We walked a bit after lunch and checked out a part of the strip.



Sunday morning I was up early to catch a flight to Dallas while Mike came back to Kansas City. Tess wanted me to come out to celebrate her birthday with her, which was Monday, so I did!

We met a group of her friends for an early dinner on Sunday, and of course had a great time. She has met so many great people since moving to Dallas just three years ago. I love seeing her happy with her friends.



She wanted a party of Burgers and Beer….

On Monday, her actual birthday, I slept in while she made coffee and read a book. Exactly what she said that she wanted to do.

When I woke up, we got dressed and took our traditional walk down the Katy Trail. We walked for about an hour and a half. The last half of an hour was all in the rain! We finally came upon a car port to hang out under for a few minutes.



Then, while still fairly wet, we stopped at the Katy Trail Ice House for a birthday lunch and beer. This is one of our favorite things to do in Dallas, walk the Katy Trail, then stop at the Katy Trail Ice House for lunch.



The rest of the day we spent doing exactly what Tess likes to do when I come to visit. We meal planned, then we grocery shopped, then we meal prepped. Yep, that’s what she wanted to do, get organized for the next 10 days of no time off from work.

She found herself an Orchid at the grocery store. She bought that with some birthday money that her grandma sent to her. She carried it around the store like a baby fearing that I would knock off a pedal! Oh, and we are still wearing wet clothes.


For dinner, we ordered take out from one of our favorite spots and sipped on a bottle of wine at her apartment. It was a great day!

Tess dropped me off at the airport Tuesday morning, and I spent the rest of the day trying to get in some veggies, lean protein and drinking lots of water!

Would you believe I’m leaving again Thursday morning for a trip to Nashville? Yeah, I can’t believe that either. It is kind of a spontaneous trip, but I love Nashville and I can’t imagine passing up a trip there!

When I come home, I’ve got some serious work to do! I’ve got some Weight Watcher Leader training sessions lined up and more online classes to take!

I’m also looking at a challenge for September. I was thinking about my 100 Mile Walking Challenge that I like to do, but I think I need to switch it up a bit.

I’m thinking about “30 Days of Yoga”. I was doing one day a week for a while, then I started trying two days a week once in a while. I feel so strong when I go to Yoga. I’m curious as to how differently my body would feel after 30 days in a row of Yoga?

Okay, I worked the food truck, and now I’ve got some laundry to do!

Mike and I are starting our weekend early. We have had this weekend planned for a few months now and I am really looking forward to it. It will be a challenge in the food and drink department as we celebrate the birthday of a friend of ours for the entire weekend, but I am going to do my best to stay active and drink lots of water.

After our long weekend, I am headed back to Dallas to celebrate my daughters 25 birthday! How did THAT happen?? How is my baby girl 25? It’s funny sometimes to think about just how fast time really does go by.

With Tess living in Dallas, I know we won’t always be able to spend out birthdays together, but I’m glad we get to add one more spent together to our birthday celebrations!

After a full weekend of two year old fun stuff, I had a big list of Thirty-Something not so fun stuff to get done for the last two days. (Ya see what I did there? Ahhh…Fine. Whatever. 49 year old stuff. Geezzzz.)

All items are crossed off of my list and that always makes me really happy. I mean, I have a new list for today, but the Monday and Tuesday list are completed. My big list left little time for blogging.

The next few weeks are going to be busy, so I will blog as often as I can, but my post may just include what I’ve had to eat and the SmartPoints Value of my meals. Blogging what I eat helps keep me accountable. If I knew that I wasn’t going to blog for say……a month. I think it would feel like an open invitation to eat whatever I wanted. Of course, I’d regret it, but when I know I’m blogging the details of what I am eating, it helps me to eat smarter.  That being said, over the next few weeks I may not have time to ramble on about all of the silly stuff that I tend to ramble on about. Sad, I know.

You guys motivate me to make good choices and I thank you for that!

As I move down the road into the role of a Weight Watcher Leader, I’d like to vamp up the blog a bit and make it a little more professional. I would like for it to be more user friendly, I’d like to have more recipes in a more organized and professional manner. I have a few other ideas that I have up my sleeve. I may have to bring in a blogging professional!! 🙂

For now, here is my usual and unprofessional, but tasty eats for the last two days. Actually, one dinner wasn’t tasty at all, but the rest were pretty good!


Breakfast – 6 SP

I haven’t been eating Oatmeal for several months. I knew that it was a trigger food for me. All of that stuff that I like to add in made it taste like a big cookie! I feel like I really have a grasp on my snacking and grazing now, so I thought I’d bring Oatmeal back into my diet and see if it causes me any cravings or the desire to snack. So far, so good!

This was a half of a serving (trying to keep the SmartPoints lower) with 1/2 Smashed Banana, Almond Butter and Warm Blueberries mixed in. I did not add any additional sweetener and it was perfect! I added scrambled egg whites for some protein so I would stay full, and hopefully not have any cravings or desire to eat before lunch. Success!



Lunch – 8 SP

Leftover Chicken, Leftover Steak, Cucumbers, Avocado, Tomatoes, Red Onion, New Potatoes, Olive Oil and BalsamicVinegar



Snack – 2 SP

Berries and 2 tsp Almond Butter



Dinner – 8 SP

Ground Turkey, Black Beans, Carrots, Broccoli Slaw, Tomato Sauce, Vegetable Broth, Seasonings. I just made a big skillet. It taste about as good as it looks. Not one of my better concoctions.

Such a fun filled weekend. When I sat down last night and thought about the weekend, I really couldn’t believe all that we got in and how relaxed I was all weekend with our two year old granddaughter here. She came on Friday night around 5:00 and we spent the evening watching the Olympics and playing. We ate dinner a bit late and went to bed without a bath. No biggie. Super relaxed and having a good time.

Saturday morning, I left Papa and Char and I went to my 8:00 am Yoga Class. After Yoga, I cooked breakfast, then Char and I were off to the City Market. I wanted to spend some time outside before it got too hot out!

She loved the Market and I loved watching her play. The weather was perfect outside and there was an awesome band playing Beachy type music. Char took it all in and apparently loves to people watch just as much as I do!

When I’m there by myself, I wish I had a kid with me to play in the fountain. Well, we did that Saturday!


Eventually she was right in the middle and completely wet and happy!


On the way home, she took a 5 minute nap. Dang it when they wake up when you take them out of the car! She was chipper though and we played Barbies and read books for the rest of the afternoon. Papa even took her for a wagon ride while I pondered dinner.

I eventually convinced her that a shower was more fun than a bath and we hopped in the shower. I showed her that if i stood on the drain long enough, it was just like a bath, and that seemed to satisfy her request for a bath. When all of the hot water was gone, we got out and ate dinner. Mike and Char and I were all in bed and asleep by 9:00.

When I woke up at 7:30 on Sunday, I had my coffee and decided I could get in another Hot Yoga class before anyone woke up. I was out the door. When I got home, all was good and I was greeted with hugs like she hadn’t seen me in ten years. So much love in that little body!

I cooked breakfast, then Mike’s parents came over for a visit and hugs. They hadnt been gone but 20 minutes when my mom called and said that she was coming over. She got to our house just in time to watch Char take a two hour nap on the couch. It was a good chat with my mom and I was happy to just sit for a bit.

After nap time, Char’s mom came to pick her up. Mom had a much needed adult weekend at the Lake!

After 48 hours of Char, I cooked up a few things for dinner. When I went out to light the grill, it seemed fairly comfortable outside, so I cracked open a beer and put my feet up while I grilled up some Flank Steak.

After dinner, I decided that it felt pretty great outside, so I mowed! I finished just before dark and was glad that I didn’t save that for today.

Not only did I get my Yoga in while Char was here, I was able to cook, clean, do laundry, visit with two sets of grandparents, relax on the deck and mow the yard. It was seriously the longest, yet most productive and stress free weekend that I’ve had in a long time. I felt rested, accomplished, happy and ready for the week!

I’m not sure if it was because both days started off with a Yoga Class, or the fact that Char is about as close to perfect as a kid can get, all I know is that last night, I went to bed fulfilled.

Breakfast – 8 SP

Sweet Potato Hash with lots of veggies, topped with Eggs and Thinly Sliced Avocado and a couple of berries.

Leftover Taco Meat and lots of veggies and thinly sliced Avocado.

This salad has become a staple and it always taste great. I change it up depending on what I have on hand.

The original recipe calls for…

Chicken, Bacon, Hard Boiled Egg, Roasted Butternut Squash, Diced Apple, Red Onion, Dried Cranberries, Pecans and homemade dressing. I think when I add everything in it is 14 SmartPoints, depending on how much Chicken and Bacon I add.

Yesterday, I left the cranberries and pecans off of mine, but added extra chicken. Mike likes his without the Red Onion. I usually make two bowls, based on what we have and what we each like, then measure out the dressing and give it a good stir and shake.

I LOVE THIS SALAD!!! So does the hubs.

Weight Watchers

Over the last several days, I have been receiving Weight Watcher Employee emails and phone calls, and I am starting to feel the reality of becoming a Weight Watcher Leader. It’s been a long road to this part of my journey, and I am so excited to finally be moving forward.

Friday was my first official paid day in the office! Ha! I was giddy like a kid on the first day of school. I planned my outfit. I woke up early with excitement to start something new. I ate a good breakfast and I left the house a good 20 minutes early just to be certain that I wouldn’t be late.

I did some shadowing at a Weight Watcher Meeting where I met some great co-workers (Guys…I have Weight Watcher co-workers….cuz I’m an employee!!) and I also met some great Weight Watcher members. It was the perfect first day!

I received my training packet yesterday, so next week I should keep pretty busy going through it all and beginning my online training! After shadowing for just one meeting, and looking through my packet, I know that I have a lot to learn. You guys, I’m official!

After a hot day in the food truck on Wednesday, I got in a Hot Yoga class on Wednesday night. That was kind of ridiculous considering that it was crazy hot outside and I don’t think that my body needed any more heat! I woke up with a headache on Thursday and I’ll assume I was a bit dehydrated. Zen wasn’t really at all what I was feeling, but it is nice to be back at the Yoga Studio.



I really like to smash up Avocado’s and add a little lime juice and sea salt. I would eat them prepared that way on just about anything. However, my new favorite way to eat them is to simply slice them as thin as possible and spread them all over the top of whatever they sound good on. You would be surprised at how far you can get 2 SmartPoints of Avocado to go when you slice it super thin!

Staying Accountable

The last few days have been crazy and I don’t like it when I’m not blogging my food. Knowing that I am going to blog what I eat, even when I’m eating too much food, or eating foods that I don’t typically eat, or drinking more beers than I had planned to, helps keep me accountable and helps me to not get too far off track.

Please excuse any typo’s or anything that doesn’t make any sense at all. There is a two year running around the house, so I’m a bit distracted. (How can she get so many things out in SO little time??)

Here is what I ate Wednesday and Thursday, then I’ll follow with a my usual blog of what I’ve been up to…if the two year old allows it, that is.


Breakfast – 7 SP

I haven’t had Oatmeal in forever!

Oatmeal with one smashed Banana and one T. of Almond Butter mixed in.


Lunch – 7 SP

Greens, Chicken, Egg, Apple, Balsamic Vinegar and Olive Oil while working at the Food Truck.


Snack – 1 SP

(Blended fruit can vary in SmartPoints. If you are eating blended fruit several times during the week, then you should probably use the WW tracker and track the SmartPoints accordingly.)

One Frozen Banana and 1 T. Cocoa Powder Blended, topped with a few sprinkles of Cacao Nibs and Raw Coconut


Dinner – 14

Ground Beef, Roasted Butternut Squash, Zucchini, Red Bell Pepper, Onion and some random seasonings. Topped with a small amount of freshly grated Parm. Easy and good.

Making a Plan…or Not

My plan for yesterday 

  1. Plan meals for the rest of the week.
  2. Weight, Measure and Track.
  3. Exercise
  4. Drink plenty of water.

What actually happened yesterday

  1. I planned dinner for two nights and bought some eggs for breakfast.
  2. Worked the food truck, didn’t take my lunch, guessed on points.
  3. Worked in the yard for 90 minutes mowing, edging and pulling weeds.
  4. Drank 140 ounces of water.

The day went about halfway right.

I’m out the door to work the Food Truck again. I’m taking my lunch today!
