I Feel Pumpkinny!

Yesterday was the second morning in a row that I’ve included some Pumpkin in my breakfast. I made these Pumpkin Pancakes.

I am also loving my Pumpkin Spice Flavored Dunkin Donuts coffee.

What is your favorite Pumpkin Treat? Is it low in WW SmartPoints or is it a treat that you are willing to sacrifice a few SmartPoints for?

 

Yesterday was one of those days that was filled with healthy choices and at the end of the day, I went to bed feeling good on the inside, and out!

A Hot Yoga class last night was a great way to end the day.

Here are yesterday’s eats…

Breakfast – 7 SP

Pumpkin Pancake’s, Egg White and Veggie Scramble

Lunch – 9 SP

Tuna Salad, Plantains and Veggies

Dinner – 11 SP

This was really yummy. I sautéed Zoodles, onions and garlic in Olive Oil spray for just a few minutes. I topped that with leftover Flank Steak, chopped mini tomatoes and 2 T. of Basil Pesto (Kirkland Brand from Costco).

Dessert – 3 SP

1 T. of Almond Butter on top of Ice Cream made only of frozen Banana’s and a splash of Almond Milk

    I have never bought the Kodiak Cakes mix, but I have been hearing a lot about it, so it looks like I am adding it to the list.

    I have also never owned a Waffle Iron? What is my problem???

  2. Hi Girlfriend! Yes, I’m still here, paddling to keep my head above water! My favorite new pumpkin treat: Make “Kodiak Cakes (brand) Power Cakes, Protein Packed Flapjack & Waffle mix” according to pkg directions, but add in some canned pumpkin, a half of thinly sliced fresh pear, pp spice, and a stiffly-whipped egg white and make a waffle out it. Makes 2 large Belgium waffles for at total of 5 smart points! I love this waffle and pancake mix! hugs, ronda

  3. Ok I remembered–lol.
    Trader Joe’s Pumpkin Butter
    Brussels Sprouts
    sea salt
    –shred brussel sprouts, put pumpkin butter on top, and add a little sea salt
    400 20-25 minutes

  4. I put pumpkin in baking, pancakes, oatmeal, chili, soups and last fall I made a pumpkin sauce to put on pasta.
    I had a pumpkin dip for gram crackers.
    And I know I’m missing other ways.
