Cleaning Up and Catching Up!

My plan over a busy and rather long Thanksgiving/Birthday holiday was to make the best choices possible, drink plenty of water and get in lots of activity.

Seven of the eleven nights that Tess and Manuel were here visiting from Dallas, we had something on the calendar. I had a family birthday party one day, a small birthday party with some girlfriends another day, then dinner out on my actual birthday, we had two baby showers, one a party at night with couples, the other at a winery during the day, of course we had Thanksgiving Day, and we had a family sleepover the day after Thanksgiving. I did say “no” several times to food and beverage, but I also said “Yes” more times than I should have to food that I didn’t need, and of course to, beer.

These last three days have been filled with clean eats and lots of water and my body is feeling much less bloated and happier. I’m cleaning this body up and it is thanking me already.

Here are a few pics from my Thanksgiving break that was filled with family, fun and a little food too.

Friday morning, Tess and I headed to my WW meeting with our Frothy Coffee’s and a Pumpkin Spice RXBar to share.

At the meeting, Tess weighed in at her goal weight for six weeks in row. If you are a WW member, you know that means that Tess got Lifetime on Friday!! Yay! I am so proud of her for sticking with WW and learning so much about living a healthy lifestyle. She looks amazing and I am so happy for her.

We celebrated with food. Just kidding. We did, however, go out to breakfast.

First Watch. Breakfast Taco’s, no cheese, egg whites and sub fruit for the beans. I ate two of the taco’s and was satisfied, so I left a taco on my plate. Yay me. No guilt about leaving food on my plate.

Friday night was a little family get together at Top Golf for my 50th. It was a tad chilly if you weren’t sitting directly under one of the heaters. Snuggling helped too.

Saturday morning, Tess and I played with my new toy. I bought a Waffle Iron. I have no idea what took so long.

Plain, Pumpkin, Vanilla Protein and Bacon and Cheddar. The Bacon was my fav!!

Saturday afternoon, a nice 4 mile walk for Tess and I while the boys took a nap. 

Saturday night we went to a couples baby shower and had a great time catching up with friends, hanging out at the bon fire and watching the happy couple open gifts!

Sunday, church with our son Jake and his wife Jordan, then brunch. We’ve discovered a Cinnamon Chip pancake at First Watch, so we ordered one for the table and we all shared. Yummmmmm. You guys…I love breakfast and I love First Watch.

Tess and I also shared this yummy Chickichanga? It is chorizo and chicken wrapped in an egg and a flour tortilla, topped with some kind of yummy sauce. Again. Yummmmmm

Then… football and the couch! Such a great Sunday.

I asked Tess and Manuel what one of their favorite weekend meals was. They both agreed Fajitas made with the marinated steak and chicken that they buy at the Mexican market in Dallas. We have a Mexican grocery store fairly close and I thought that sounded delicious, so we went to the market.

Tuesday was my actual birthday, so Mike and I and Tess and Manuel went to a bar (of course) that I had been wanting to go to AND a restaurant that I had been wanting to go to.

Both were great!

The bar is called Ruins Pub. There is a wall of beer! The waitress/waiter gives you a card, you place your card on the tap (there’s a chip in the card), and pour your own beer. You are charged by the ounce. This allows you to try a few different beers and only have a few ounces of each. Love it!

Wednesday was a chill day working at the food truck, then to an annual Thanksgiving Eve party in the neighborhood.

Thursday was Thanksgiving, filled with fun, food and of course family.

Every once in a while, the burning bushes still have their leaves on them on Thanksgiving and make for beautiful pictures!

You guys…..my face looks huge. Thats what several days of crap food does to me!! Is that a wig I’m wearing?? What the heck?? Really, this is not a great picture of either of us, but I had to include it. Lets just focus on that bush!! It’s gorgeous!

Saturday morning, we had breakfast casseroles, made all sorts of waffles, drank coffee and hot cocoa.

Then, everyone left us.

I spent the day decorating for Christmas and got in a walk.

Sunday, I got up early and went to Hot Yoga and began my Thanksgiving Detox.

Just before heading to the airport, Tess and Manuel finished the 1000 piece puzzle they had worked on for the past 11 days!

It was a great Birthday/Thanksgiving holiday and I was so happy to be able to spend so much time with all of our family.

Now, Weight Watchers and how I handled the Holidays.

Here is what I have learned about my body. Just over a year ago, I gave up a lot of different foods to see how my body would react. My body loved what I did for it, so I continued to do so. Over the last two months or so, I have gradually brought some of those foods that I had given up, back into my diet. This has absolutely nothing to do with the Weight Watcher plan or SmartPoints, but how my body feels when I eat, or do not eat, certain foods.

My body is not a fan of sugar, however my taste buds are. After several days of sweet treats, I really was beginning to feel like crap. My joints hurt and I felt sluggish. Mike said the exact same thing. We had gone for so many months having none of it in the house, then we both went on a sugar overload and it did NOT feel good to our bodies.

I’m not saying that I will never eat sugar again, but I do know for sure that I need to limit it.  After just a few days of clean eating and lots of water and exercise, the scale is back at my happy place of 172 and I feel like me again. 

My next post will be all about officially Leading a WW meeting in just a few short days!!

Stopping By to Say Hi!

The last 11 days have been full of family, friends and fun. We took Tess and Manuel to the airport last night and it felt like our Thanksgiving break was officially over.

You know when I haven’t blogged in a while, I always feel the need to write a novel and catch the blog up on every single day. I don’t have time for that right now, but plan to do so tomorrow.

For today, I will say that my birthday was great, Thanksgiving was great, coffee chats by the fire were great, the baby showers that we attended were great and our first annual family sleepover the day after Thanksgiving was great.

I ate like crap, and now my body feels like crap. The last two days I’ve gotten back on track with a long walk on Saturday and a hot yoga class on Sunday, The last two days I ate awesome and I drank lots of water. Two days ago the scale was really ticked off at me, and this morning, we are closer to being pals again. Today, more treating my body as it should be treated.

We had all of our kids and grandkids at our house for a sleepover the day after Thanksgiving. I’m hoping it was our first annual. We had pizza and snacks, decorated the tree and hung the stockings on Friday night. The little ones made Christmas ornaments.

After they went to bed, Mike and I and our kids watched a really inappropriate stand up comedian? I’m not sure about this tradition, but we were all dying laughing.

Saturday morning, coffee and snuggles, breakfast casseroles and a variety of waffles, more snuggles and Papa Mike teaching Malik how to play Chess.

This is one of my favorite activities from the last several days. Mike organized all the kids and grand kids going to Top Golf for my birthday. We had a great time and this is one of my favorite family pictures.

I’ve got to go now. I have a WW training session today and a couple of training videos to watch online.

You guys…..I go to Dallas on Friday to wrap up my WW training, and next week I am Leading a Weight Watcher Meeting! I can’t believe that it is finally happening!

I’ll write a longer blog tomorrow, hopefully. I have a LOT to say. Of course I do.

I hope that you all had a wonderful Thanksgiving and were able to enjoy some time off of work with family and friends.

Family, Friends and Traditions

I picked up my daughter and her boyfriend at the airport at midnight on Wednesday. I’m not really sure how they both were able to pull this off, but they are going to be here until the 27th! That’s 11 days with me!!

Besides working the food truck and a few WW meetings, here is what is going on for the next 11 days.

Two Baby Showers for one of our friends. Tess was in her wedding, so I am really happy that she is able to be here for the showers.

My 50th! (You know that I’m taking full advantage of as many days to celebrate as possible) One birthday celebration is a family day at Top Golf with all the kids and grandkids. I have a birthday breakfast planned with a few close loved ones, another birthday get together with a very small group of close friends. On my birthday night, dinner out….somewhere. That outta do it. Ya think?

We have an annual Thanksgiving Eve party at a friends house.

Thanksgiving at the In-Laws, then dessert at my moms.

The day after Thanksgiving, a family sleepover here with all of our kids and grandkids so we can put the tree up together, watch Christmas movies and play games. I’m hoping it’s a new tradition! Breakfast casseroles and hot chocolate the next morning.

I know that we have a lot planned, but we also are going to work in some nice down time with long walks, couch time and football games, yoga and coffee chats.

I’ll keep you posted.

Tess and I are actually snuggled up in my bed right now. I love that when she is here, she likes to come crawl into my bed in the mornings.

There are going to be a lot of food and beverage challenges over these next 11 days. I plan to make the best choices possible, drink lots of water and stay active.

Breakfast

Tess and Manuel and I were out doing a little shopping, then we grabbed lunch out.

Salmon Salad. Simple, yet delicious. I ordered the dressing on the side, but the tomatoes were marinated and the salmon was cooked to perfection, so I didn’t even need the dressing.

Dinner

I had no idea what the day had in store, and I hadn’t planned dinner, so Mike and Tess and Manuel and I all grabbed a bite out at our little neighborhood bar and grill.

I was in a salmon mood yesterday.

Blackened Salmon Caesar Salad. Again, dressing on the side and I ended up using less than a Tablespoon.

With so many things planned over the next several days, I’ll try to blog, but I don’t want to take a lot of time away from the fam.

Fall Trees. That is All.

We planted two maple trees in the backyard just a few years ago (five?) and I absolutely love them. We planted them for privacy, but I’m so glad that we did because I am really enjoying them in the fall. Soon, the leaves will fall, and we will again be aware of the fact that we can almost reach out and touch our next door neighbor.

I think that this one is called a Brandywine? It is much more purple than it appears in this picture. I seriously just stand there and look at it. It makes getting up in the morning to let the dogs out just a tad easier.

I roasted my Butternut Squash the EXACT same way that I always do. I have no idea why it was so dark! The flavor was great though!

A Full Few Days!

When it’s been a few days since I’ve blogged, I never really know if to blog about what I did, or what I ate!

I’ll blog a little about what I did, and if it doesn’t seem to be turning into a novel, I’ll throw in some food pics too!

Friday day was a Food Truck work day. Friday night was a quiet night at home with a girlfriend chatting over wine while I did some food prep in the kitchen.

Saturday was a full on play day with that same friend. Everybody needs a good Saturday play day once in a while! I picked her up in the convertible, with the top down, (it was a tad chilly) and off we went to the City Market. We walked, shopped and bought just a few items. I bought this. I can not, for the life of me, remember what kind of squash it is, but you can be certain that I’ll be roasting it up soon!

After the city market, we went to one of my favorite breakfast spots, The Beer Kitchen in the Westport area of Kansas City.

I ordered the Corned Beef hash,(served over root vegetables) and it was amazing! Yeah, I had beer with breakfast. No judgement. (This can’t really surprise many of you anyway, can it?)

After breakfast, we took the scenic ride home with the top still down. It was a gorgeous day, and with our hot tea in hand, the heated seats on and the heater full blast, it was perfect!

Saturday night I went to a friends house where we did a food prep workshop for a company called Wildtree. Have you heard of it?

Prior to the workshop, we were able to choose what meals we would like to make. We were sent our grocery list in advance with directions on what prep we should do prior to the party. At the party, we were given our full recipes along with the oils and seasonings, and we put together our meals!

Girlfriends, wine, making up some meals….um, okay!

Meals in freezer bags, then into the cooler to take home! I’ve got dinner for a while! All Weight Watcher friendly too!

Check out the fridge. (Those meals are all in the freezer now.) I feel so organized, and you know I love that!!

I went to Hot Yoga at 9:00 a.m. and it felt so good to be there!

After Yoga, I was back in the kitchen cooking! I was in the mood for some Sweet Potato Turkey Chili. It sounded yummy to have on a Fall day to eat while we watched our KC Chiefs win. Chiefs, that win was a little stressful!!

After the game, we headed out for some fresh air. Mike put up the Christmas lights while I assemble some cheap little fire pit that I bought. We are thinking about something permanent in the backyard as far as the fire pit goes, but we haven’t yet agreed on what we’d like back there. 

He LOVES hanging the lights!! (He hates hanging the lights.)

Monday was an errand day. The calendar is pretty well packed for the remainder of November and I had several things that I wanted to get knocked off of my “to do” list and my “to buy” list. That “to buy” list was a killer!

I did get in a 6 mile walk with a friend. I saw so many of these beauties!

I’m in search of everything necessary to make two of these for my porch. Is that not gorgeous?? I can’t remember where I found this picture, but I need to make this!! Twice!!

Our two year old granddaughter was here for a bit last night. The moon was gorgeous, so her and I were going out in the backyard to look at it.

I had on socks and slippers and I was carrying her, wrapped up in my long sweater, down the deck steps. There are several steps.  I missed the last step and went down hard. ON TOP OF HER! My top half landed on her in the grass while my knees hit the concrete landing pretty hard. It all happened so fast and I was so worried that she was hurt! She was totally fine. “Let’s go see the moon Gigi.” I was so relieved.

My knee has doubled in size. I think I broke a vein?

Busy Week, Feeling Good

Tuesday night I went to the tasting party that I told you that I would share more info about this weekend, and I will.

Wednesday night I had book club. Aka…Wine Club. (( stared at, but did not eat ONE Peanut M&M!)

Thursday night, we had a birthday dinner for my dad. Happy Birthday today, Pops! I took him an individual size cake. No temptation there for me!

I worked WW meetings on Tuesday and Thursday, and the Food Truck Wednesday and Thursday, and again today, so a busier than usual week.

Loving the busy week and the beautiful weather that has accompanied it!

I’ve missed being able to go to my Friday morning WW meetings, so I’m going to sneak in there for just a bit this morning before heading off to work at the food truck.

I hope you all have a great weekend planned and that the weather is beautiful where you are too!

It’s a Small World

I will be finishing up my Weight Watcher Leader training in Dallas in December. For the meantime, I have been lucky enough to be working as a receptionist at a few meetings during the week. I am doing a bit of a “job share” with a coworker on Tuesday’s and Thursday’s, and we are quickly becoming friends.

We both attended a Job Fair back in June where we introduced ourselves to one another, then realized that we had at one time attended the same WW meeting. We were both hired after attending that job fair. We have been texting and calling each other throughout our training with questions ever since.

We are discovering that we have quite a bit in common, but more interesting than that? We have daughters that are the same age and they know each other from college! We went to lunch last week, and after even more conversation, we’ve discovered that our daughters went to the same grade school for a couple of years. It can be a small world at times.

I think we were meant to be co-workers, and friends!

Okay, here is what happened yesterday.

After having a great breakfast, I walked out the door and forgot my lunch! Ugh. So while working at my first WW meeting for the day, I bought some Weight Watcher Dark Chocolate Breakfast Bars, to eat for lunch.

While driving from the first meeting that I was working at to the second meeting that I would be working at, I ate one of those bars. One of them is 5 SmartPoints. It was pretty darned tasty, so I ate another. That was lunch. Breakfast Bars….for lunch.

For dinner, Mike asked me if we could have some more of that Stroganoffy stuff that I made on Monday?? I guess he really liked it! 

Of course, we couldn’t because we ate it all, so I made him up the dinner that I had planned to make on the Stroganoffy night. 🙂

Roasted Potatoes and Carrots, tossed in the skillet with Rotisserie Chicken, diced Zucchini and Mushrooms. He said that he liked the Stroganoffy stuff better. You guys, it’s hard to make something amazing every single day! Ha ha.

I didn’t eat dinner at home, and I didn’t take dinner pictures. Last night, I went to a food party that I will explain in more detail over the weekend. Last night, I went to a tasting party, and on Saturday I will go to a Workshop for the same company.

Last night I was able to taste food, and order oils, seasonings and mixes that were used to make the food that I tasted.

On Saturday, I will be making food and putting it in bags that I can take home and put in my freezer. I’ll be sure to fill you all in when I know more. Last night, I tasted some yummy food!

I drank 120 ounces of water yesterday! I feel cleansed.

What this breakfast lacks in color, it made up for in taste!

Apple Fennel Breakfast Sausage (cooked as crumbles, not patties), Egg Whites, Apple, Almond Butter

If you haven’t tried this sausage recipe, I highly recommend it! I love to cook it as crumbles, then add a small amount to a breakfast skillet for just a little flavor.

A PJ Day

November 8, 2016

Occasionally, there’s nothing better than a day at home in your pj’s. Anybody else think so?

All of that organizing over the weekend made me think of a few more things that I could organize! lol. So, I did! In my PJ’s.

I drank lots of coffee, I drank lots of water, and I didn’t even think about getting dressed until well after 3:00 pm. I loved it!

I had decided to get outside, so I walked the dogs, then I took a walk with a friend.

After my walk, I started dinner. I had plenty of leftover Meatballs, but I had a weird craving for Beef Stroganoff? What the heck?

I’m sure I saw it on an Instagram feed or Facebook. Anyhow, I couldn’t stop thinking about it.

Turkey, onions, celery, seasoning, broth, mushrooms and just a little sour cream.

I had roasted some potatoes and carrots to eat along side, then I just decided to add them to the pan. What can I say? I like a one dish meal.

After dinner, Dancing with the Stars. I love that show! I wish that I were a celebrity JUST so I could dance on that show!

The rest of the week is crazy busy. It was great to have a PJ Day!

I never buy Prosciutto, but I was trying to add a little variety to breakfast. I cooked two slices in the skillet and it was super thin and crispy! 3 SmartPoints for these two slices.

I heated up some of my Roasted Maple Delicata Squash and it was the perfect Sweet & Salty with the Prosciutto! Egg Whites topped with Avocado. It was a great combo!

Time for a Regroup

I hope that you all had a wonderful weekend!

It was a beautiful weekend here! The mornings and evenings were cool, and I was loving it! I took a few walks with the dogs and a few walks without the dogs. I sipped on a lot of coffee, some on the deck and some while running my errands with the windows down. 

We spent Saturday at a friends house sitting around the fire pit sharing stories that we hadn’t shared in a long time. Lots of laughs and it was my favorite part of the weekend!

I did do a little work too. I worked on Friday at the food truck and I worked two meetings at Weight Watchers on Saturday morning. 

Yesterday? I spent all day yesterday regrouping. I had several things that I needed to address ranging from my schedule/calendar, my desk, the checkbook, a food plan for the week, an exercise plan for the week, and I needed to prioritize some things in my head. You know how sometimes you just need to refocus? Well, that is what I spent yesterday doing, and I’m now ready for the week, the remainder of the month and maybe even for the rest of the year!! Okay, that last part might be a stretch, but I’m feeling refocused and organized.

I’ve had a hard time getting into any kind of schedule since coming home from our New York trip. I think not feeling well was a large part of that, and I just wasn’t taking the time needed to plan meals or prepare for the week. I was opening up my desk and tossing the mail in there without opening anything or sorting through it, and I haven’t made the time for a Yoga class in over two weeks! I was going to attempt another Yoga challenge, and that hasn’t happened yet.

I’ve brought things back into my diet that I know are causing me to have some cravings that I haven’t had in almost a year, and that needs to change. Bread, chips, cheese, sugar and artificial sweeteners……all things that cause me food cravings, and all things that I was comfortable leaving out of my diet.

I made a grocery list for the week, then I shopped. I spent the day in the kitchen meal prepping while listening to the Chiefs play, and also listening to Mike yell at the Chiefs play. It wasn’t a pretty game, but we did walk away with a win! I took the time to write everything down in my calendar that I have planned for the week, and that makes it easier for me to schedule my exercise out for the week.

Yesterday’s regrouping really was what I needed.

Here is what I cooked up yesterday!

I made up some Tuna Salad for lunches this week. I’m working at the Food Truck three days this week, and as much as I love that food, I make better lunch choices when I take something from home.

I put all of those squash to good use yesterday.

Have you ever seen a Spaghetti Squash shaped like this? Turns out, they taste just like their little brother, the smaller, more yellow Spaghetti Squash. I thought the skin was more firm, and it took a bit longer to cook. It was a real booger to cut up too!

I made Butternut Squash Chicken Soup and Mike and I both loved it! The recipe calls for Coconut Milk, but I used Skim Milk to keep the soup lower in SmartPoints, and I’m just not a big fan of Coconut Milk in my savory dishes. To simplify things just a tad, I used some of the rotisserie chicken that I had in the freezer and I used some Butternut Squash that I purchased already peeled and cut. No worries, I’ll still make up that squash in the picture. I do love a Butternut Squash.

The Soup without the chicken is only 2 SmartPoints per serving (Points calculated using the Weight Watcher Recipe Builder) if you make it with skim milk and leave out the coconut milk.

We have plenty for lunch this week when we are wanting something quick!

Now for a nice little surprise. I played with a Delicata Squash. Have you had it before? Thank you so much to my wonderful reader, Nancy, for suggesting that I give it a try! Nancy said that she had not had it, but had heard that it tasted similar to a sweet potato. It did!

I made this Maple Roasted Delicata Squash recipe. Yum!! You can eat the skin, which made this prep much easier than I had anticipated!

(I just heated some of this up and ate it with my breakfast this morning. SO YUMMY!)

I made Trina’s Meatballs for dinner (I used ground turkey) and served them over that great big Roasted Spaghetti Squash. Dinner was a hit!

While shopping at Trader Joe’s yesterday, I discovered that they were now carrying a couple of varieties of RXBar’s. Have you tried any of these?

They have Egg Whites in them, which makes them higher in Protein and lower in SmartPoints than the Larabar that I have been eating. Both the RXBars and the Larabar are made with natural ingredients, nuts and unsweetened dried fruit. They have no sugar and no artificial sweeteners. Yes, they are a little high in points due to the fat in the nuts and the natural sugar in the dried fruit, but they do not cause me to have sugar cravings and I really like the way that they taste.

Roasted White Sweet Potatoes, topped with a Bacon and Egg Scramble and Smashed Avocado.

Late afternoon, it felt so good to step outside and get some fresh air. I sprinkled a Pear with some Pumpkin Pie Spice and poured myself a cup of Pumpkin Spice coffee.

Bird Free. Thank Goodness!

Tuesday

I had the back door open so the dogs could come and go for a bit. While sipping on some coffee, a bird flew in my house! I freaked out, opened all the doors to the house and ran out the front door. When I decided to come back inside, I realized that I would have no idea if the bird had decided to fly out the back door, or stay in.

After searching the house while carrying an open umbrella (It just seemed like a good idea at the time. That sparrow was GIGANTIC!), I felt fairly certain that the bird had gone back outside, where he belonged. Thank goodness!

Wednesday

I got in a walk after working at the Food Truck and I am loving the subtle changes that I am seeing in the trees. Now if it could just be a bit cooler?

We spent the evening on the couch going back and forth between the CMA’s and the World Series. I love Country Music and THAT was a heck of a World Series Game 7! Congrats to the Cubs and our former Royal, Ben Zobrist, for being the MVP! 

It was an exciting night at home!

No work for me today, so knocking a few things of the “to do” list

Here are Tuesday’s eats…

Breakfast – 18 SP

Farmhouse Hash at Frist Watch and creamer in my coffee. I only ate half of the toast, did not eat all of the hash, and I am giving it my best guess on SmartPoints.

Dinner – 2 SP, Beer – 10 SP

I never did have lunch, so dinner was at about 4:00, and it was 3 oz of Grilled Chicken and some veggies.

After dinner I went to a friends house and had two beers while Mike went to play golf.

Here is what I ate yesterday.

Breakfast – 10 SP

Chicken Apple Sausage cooked in the skillet with a diced apple. Then I added in a few bites of cooked purple sweet potato and topped it with an egg. YUM!

A No Bun Burger at the food truck, and two BIG of bites of Mac and Cheese.

Un-Pictured Banana and 2 tsp Almond Butter

The Grilled Chicken and Veggies that I cooked up a few days ago have really come in handy for a quick and low point meal!
