Time Off….

I’m not taking the weekend off of tracking. I’m going to track like a WW fool over this long weekend because we have a lot going on and I want to feel good about my choices at the end of the weekend, but I am taking the weekend off of blogging so there is plenty of time for family fun.

I picked up my daughter Tess and her boyfriend Manuel early this morning and we plan to spend the weekend holding babies and spending time with family.

A cookout here tonight and spontaneous stuff for the rest of the weekend.

I hope that you all have a great weekend and be safe! I hope that you get an extra day off to enjoy family and friends.

We started off our morning with these pancakes!

I made the Big Ass Waffle batter and made pancakes. We shared the recipe for one which gave each of us four cute little cakes. We topped each pancake with 1 tsp of Almond Butter, 1/2 T of Pure Maple Syrup, 1/2 Banana and stuffed a slice of bacon in there.

I just made myself a yummy beverage and now we’re headed to the deck!

Wednesday was spent working at the food truck, then paying bills and paperwork crud, then dinner, then a 90 minute bath and some reading. You know you might be in there too long when you have to add hot water…..twice.

It really did feel good.

I did crappy on steps yesterday, but I forgot to mention in the post before that I had a great step day on Tuesday.

Yesterday – Blah Blah Blah….whatever. Standing in the food truck for four hours doesn’t give you ANY step cred!!



Tuesday – A nice walk with Becky as we got caught up with each other.

Pancakes made using the Big Ass Waffle batter.

Topped with Warm Cinnamon Apples and 1 T. Pure Maple Syrup


Lunch – 12 SP

I packed some raw veggies and an egg to take to the food truck.

I had a Burger with an Egg on my mind. Why have I not done this at the food truck before???

Bed of mixed greens, Burger, Egg, and the Salsa and 1 T. of the Jalapeño Aioli that we put on our Boom Boom Burgers.

Lunch was awesome!!

Just the Food

Busy day, no time for spilling all my thoughts here, but need to post my food. I’ll have a hard time going to sleep if I don’t do it.

Maybe something will sound good to you?


Breakfast – 8 SP

Sweet Potato Hash made with Peppers and Onions and Zucchini topped with two Soft Boiled Eggs.

For Soft Boiled Eggs, bring water to a boil. Add eggs and boil for 6 min. Remove eggs from boiling water and place in a bowl of Ice Water for 2 min.

Peel and enjoy.


Lunch – 5 SP

Bell Peppers, Hummus and One Chicken Brat on Toast with Dijon Mustard.


Snack – 4 SP

Still hungry after lunch….

Two Mama Lupe’s Low Carb Whole Wheat Tortilla’s with Hummus

Leftover Pot Roast from Sunday and steamed Broccoli for a little color!

This doesn’t look extremely delicious, but there is a bunch of juice under all of that food and it tasted really good with the broccoli!

I decided to use my last 2 Smartpoints for the day on 1/2 cup of this delicious Vanilla Ice Cream, then I ate a cup instead.

Really shouldn’t eat out of the container……

Slow Go….

I had a hard time getting going yesterday morning. Monday is my “get sh*t done” morning and I was having a hard time making that happen.

I was happy in my bed with my old school coffee pot, which actually does not keep my coffee warm at all, but it’s cute, so I keep the dang thing.

After lots of coffee, I finally came around. Compared to our busy weekend, yesterday was really boring, so I’ll just leave you with what I ate.

Breakfast – 7 SP

Sweet Potato (100 g) with Peppers and Onions topped with Two Eggs Over Easy.


Snacks – 9 SP

Handful of Cheerios, Raw Cashews, One Graham Cracker

Premier Protein added to 2 shots of Espresso in a Venti Cup with Ice while running errands. I just needed more caffeine.

I follow a few ladies on Instagram that order this regularly. I liked the sound of it, so I have been adding the Premier Protein to a cup of Iced Coffee at home, but I decided to give this a try yesterday afternoon when I was needing a little pick me up!

Sugar & Spice

It was a little girl weekend filled with giggles and hugs and snuggles.

We had our 3 year old grand daughter and our 7 year old grand daughter with us for the weekend and I just can’t love these girls enough. These two cousins love each other to pieces and it is always so much fun to have them around.

I feel like I need a diagram or a family tree each time I post about the grandkids, but I’ll just tell the story of the weekend, and likely you will figure out who belongs to who, or not. Or perhaps it doesn’t even matter. 

I picked up these two cuties on Friday night. We had dinner, then some messy cup cakes for dessert. This picture was taken right before they both decided to bend over their plates and take bites of cup cakes without using their hands. Kids these days. You can see where Charlotte (on the left) likes the sound of my idea while Amiyah is pondering it.

On Saturday morning I had all of these great plans of picking strawberries, or going to the city market or going to my dad’s house to play with his pet duck Charlie. It was rainy and blah, so we spent the first half of the day in our pj’s and my dad came out to visit us instead. I made 1000 pancakes and we ate them all.

My dad likes to play just as much as I do, so they enjoyed some time with Grandpa Max doing card tricks and playing hide and seek under his hand with some Jenga blocks.

(Note the crockpot. I did meal plan as best as I could. These girls like meat and fruit, so cooking for them and making good choices for myself really is pretty easy.)


After Grandpa left, it was bath time. All of the grandkids LOVE a bubble bath at Gigi’s. It could be because I fill the tub with as many bubbles as possible. I remember enjoying a big bubble bath as a kid, and if that’s all it takes to provide a good hour of entertainment, then why the heck not??



After a bath, we had a graduation party in the neighborhood to go to. We didn’t stay long but the girls both did a great job of being cute and polite. 🙂

Once back home, we went outside to play so we could get dirty all over again.

While the girls were playing in the driveway, I decided to get out the fire pit. I bought it last year and I have never used it!

I sent Mike for S’more fixins.

I love to roast a marshmallow more than I love to eat it.


This was one sticky and fun mess!


I don’t know what time we finally came inside, but we had a full day and I was glad that I had put dinner in the crockpot early in the day.

We were in bed earlier than the night before. Perfect Saturday!

On Sunday morning, Amiyah’s mom came to pick her up shortly after breakfast. They had come to town to meet the new baby (Charlotte’s brother Sawyer, who is one week old), but needed to drive back to Oklahoma, where they just recently moved to.

The conversations that take place with that girl just amaze me.

First she told me that I was ONE of her favorite grandma’s, but not her favorite. (I didn’t even ask.) She said that I couldn’t be her favorite because she has other grandma’s and that just wouldn’t be right to have a favorite.

Then later she was telling me how she puts lotion on every time that she takes a bath. She said that she didn’t always like to do that but she knew that sometimes you just have to do things that you don’t want to do because it’s just the right thing to do. I’m like….Uh, how old ARE you??

Anyhow, I told her later that I thought that she was very smart and very kind and very considerate. I asked her if she learned all of that from her mom.

She said “No. I think it’s because of God.”

After they left, Mike and I and Char headed to church where we would watch baby Wrenley (our third grand daughter, who belongs to our son Jake) be baptized.

Char was a doll during church. The whole family sat together right up front, and the church is big, so I think she was entertained with so much to look at. I wasn’t sure what to expect from her. She was absolutely perfect.

This is our son Jake and his wife Jordan with Wrenley Rose. Wrenley is now two months old.

The couple to the right is Jordan’s brother, also named Jake, and his wife Casey. They are the God Parents and they are expecting their first baby any day.  So many babies……

After the baptism, we went to Jordan’s parents for lunch. The weather cooperated and it made for a nice afternoon outside. They have a beautiful backyard with a gold fish pond.


Char was enjoying the dogs (there were several there) and the pond.

Kate, our daughter, was on her way to pick up Charlotte after the baptism luncheon and she was bringing baby Sawyer with her, so Mike’s mom came over to meet the baby for the first time.

I guess I was done picture taking, because I didn’t take any pictures the rest of the day. 

Char said she wanted to stay at our house and didn’t want to go home. I love that kid!! But I did tell her that she had a big job at home to do and that was to give her new baby brother a lot of hugs and kisses so that he would know how much she loved him. I told her that big sisters have important jobs, and loving their little brothers is the most important job they have. I don’t know if that helped or not, but she willingingly climbed into the car to go home. I think she was having a good time pretending like she didn’t want to go home just to give her mommy a hard time. She has some stinker qualities. lol

After everyone left, Mike and I got out the convertible and headed to our last graduation party of the year.

My friend, Renee, that I sucked into working with me on the food truck and loves it just as much as I do, has three children. Her youngest graduated from high school this week.

Renee and I met 31 years ago working at a bank together, before husbands, before our kids. We’ve had some crazy and wild times together.

It was a bit of a full circle weekend to babysit grand kids, then end up at a friends house talking about all that has happened in our lives over the last 31 years.

Loved my weekend.

I tracked every bite on Saturday, then Sunday was a bit more difficult with the luncheon and the party. I’m sure I dipped into my weeklies, but no upcoming food challenges this week and I am going into the week feeling good.

I was active over the weekend, that’s for sure, buy my steps were below 10,000 each day.

I spent the entire morning in bed on Friday and I loved it! I slept super crappy the night before and I knew I had some ZZZZ’s to catch up on, so I did. Once awake, I made a yummy cup of Frothy Coffee and crawled right back into bed to enjoy it.

I was on the computer all morning, but it was nice to stay in my pj’s for as long as possible. I ended up doing some housework in my pj’s too. I finally decided it was lunch time at around 1:30 and made myself a nice big plate of French Toast. It was rainy and blah out, Mike was working away from home today, and I was enjoying pj’s and bed head for as long as I could.

I left in the pouring rain at about 4:30 to go pick up the two oldest grand daughters (not sisters, but cousins). Char, the three year old, has a new baby brother and is feeling a little jealous and mom thought some time with Gigi might be a good idea. Char agreed. Amiyah came too! Amiyah just recently moved to Oklahoma but came back to visit the new baby. She has her own little stresses of moving away from her cousin (they basically shared a backyard) and some Gigi time seemed like a good idea for her too.

As I drove the girls back to our house (it’s about a 40 minute drive) we talked about all of the things that we would do for the evening and today. We talked about watching a movie last night. Amiyah is always eager to watch something that she has never seen, and we always seem to have some old Disney movies that she doesn’t yet know about. As I was thinking about movies, I remembered that we had The Wizard of Oz. I started talking about the movie and the characters. They seemed interested in the Wicked Witch. I started laughing like she laughs and saying in the high pitched screechy voice…”I’ll get you my pretty! And your little dog Toto too!” Then I would do her ridiculous laugh. 

These girls cracked up all the way home, not even knowing who the Wicked Witch was.

Last night, we watched The Wizard of Oz and they loved it.

Every time the Wicked Witch made her scary screetchy laugh, they’d say “Do it Gigi!”

Today, several ideas, but who knows what we’ll do. We might go say hi to my dad’s duck, Charlie.

French Toast (5 SmartPoints for the toast) with warm Blueberries, Scrambled Egg Whites with Salsa.


After I took pictures (and a bite), I decided to add 1 tsp of Pure Maple Syrup and 1 tsp of Trader Joe’s Mixed Nut Butter.

I used 3 Egg Whites for the French Toast and I scrambled 4 Egg Whites for a side. 7 Egg Whites is only 1 SmartPoint! All Protein!


This would have been just a bit better with vanilla, but I completely forgot!

Snack – 4 SP

Chicken Salad, made just like the day before.

Rotisserie Chicken Breast, Avocado Oil Mayo, Grapes, Apples and Cucumbers with a little S & P.

Stressed? Breathe.

This week in the Weight Watcher meeting room we are talking about Stress. I ended up filling in as a sub for two meetings this week and each meeting was completely different, which is just one of the things that I love about being able to be in different meetings throughout the week.

These are the questions I asked that led to some great conversations. 

What gives you stress?

How does your body feel when you are stressed?

What do you do when you are stressed?

Do you turn to food when you feel stressed?

What are some things that you can do when you feel stressed so that you do not turn to food (or punch someone in the face)?

I heard some great feed back from members in all three meetings on how they deal with stress. Many members already have a plan in action for when they face stress.

We talked in each meeting about breathing and how it can help you when you are feeling stressed. Deep breathing can help lower your blood pressure, calm your anxiety, relax your tense body and clear your head, just to name a few things. It obviously won’t take the issue that has you stressed away, but it can help you to deal with it and avoid over eating (or punching someone in the face) to deal with your stress.

I’ve downloaded these two apps onto my phone that I really like.


Calm. You can hear the rainfall on this page while also doing a breathing exercise that the app will lead you through.

You can also have Calm gently talk you to sleep.

Try it!


The Breathe app. You determine how many seconds you want your breath to be.


When you press Start, this calming blue screen comes on and the blue color fills the screen from the bottom to the top as you breath in, then back down to the bottom as you breathe out.

It is very calming.

Give this a try too!


Really, even if you are not feeling stressed, both of these are great apps for simply relaxing/meditating. Do one of these before you climb into bed, I’m almost certain that you will fall asleep easier.

Each week, this very creative WW Leader writes a poem that is related to the weekly meeting room topic. Almost every week, I remember to share it in the meeting room.

This is her poem for the week. I think it is just the cutest and I read it just like I read Dr. Suess books to the kids.

“What am I doing with my head in this fridge?!
I’m not even hungry, not even a smidge!
My day was SO stressful and my cat HAS been sick
Will this big bowl of ice cream, perhaps do the trick?

I’m worried, overwhelmed, and almost out of money,
Over-worked, and congested, and my car’s sounding funny!
Being sued by my neighbor!…and I only just met her….
Can this big hunk of chocolate, really make it all better?

All of that breathing talk yesterday reminded me of how much I miss my Yoga classes. My plantar fasciitis is much better, but the last time I did Yoga my foot gave me all sorts of pain. You would think that the stretching would just be a good thing for it, right? I haven’t walked barefoot in forever (and I spent ALL of my time at home barefoot!) so I spend my time at home in the OOFOS flip flops that have the high arch in them and I wear the KT tape. I bought these flip flops at the store where I buy my walking shoes. I have Black and Grey. Pretty boring, huh? Note to self. Go buy prettier colors for summer.



I wear these right up until I climb into bed and I put them on as soon as I step out of bed. If I’m not wearing these, then I have on my walking shoes. I wear these flip flops to work and change into nicer looking work type shoes just before the WW meeting gets started. Now you’re all up to date on my feet! LOL

Anyhow, all of that aside, last night I did yoga beside my bed for about 20 minutes.

I will go to ONE yoga class this week and see how it feels. I do miss it.

I am getting in my steps these last few days, and that feels good! I knew I kept busy most days before I got the Fitbit, but I wasn’t sure just how much I was moving.

After having the Fitbit now for several weeks, I have discovered that keeping busy throughout the day and a 3 mile walk each day gets me my 12,000 steps.

I have to guess on this toast at First Watch. It’s super thick and oh so delicious. I forgot to say “no butter”. I ordered toast, poached eggs and fruit.


I ate one bite of the second half of the toast, then pushed it aside. It is ridiculously delicious. Did I say that already?

Two Taco Meat/Laughing Cow Cheese filled Tortillas, Salsa and a Pear with Cinnamon.


I spread 1/2 Wedge of Cheese in each tortilla then set it on the scale.


Then I added the Taco Meat. This is about the easiest way to weigh cooked meat when you are adding it to other ingredients.

The Food Truck Rocks!

Seriously, this food truck gig not only rocks because we just have fun while we’re working, we also have the tunes a playing (A customer asked me yesterday if I could turn the juke box down. He was old.) and the winds were crazy yesterday so we literally rocked in that truck all dang day!

And……it was our busiest Wednesday I think maybe ever! We sold out of everything. Good day at the truck!

Before heading out to the food truck, I made these Egg Cups for breakfast. I guess before making a recipe, you should check to make sure that you have all of the ingredients.


Okay, I didn’t actually have a recipe. Egg Cups are easy. Put your favorite filling ingredients into a muffin pan sprayed with Olive Oil, then top with an egg and bake.

I lined each muffin tin with 1/2 slice of center cut bacon. The bacon didn’t go all the way around the cup. It didn’t need to. I then put Cooked Sweet Potato Spirals (I had these left over from dinner the night before) in the bottom and topped with an egg.


Bake at 350 for 20 minutes. Breakfast is served!


Baked Egg Cups
Yields 6
Write a review
  1. 6 Eggs
  2. 3 Strips of Oscar Meyer Center Cut Bacon, cut in half
  3. Veggies of your Choice, raw or cooked
  4. Cooking Spray
  1. Spray muffin tins with cooking spray.
  2. Line each muffin tin with 1/2 slice of bacon. The bacon will no likely go all away around the muffin tin. This is fine.
  3. Add cooked or raw veggies to the muffin tin.
  4. Add one egg to each cup.
  5. Bake at 350 for 20-25 minutes.
  1. Make sure to count your SmartPoints if you are using any veggies that have a SmartPoints value, like the Sweet Potatoes that I used in this recipe.
The Weight of My Weight

I came home from the food truck with what seemed like an overwhelming list of “to do’s”, so I made my list and sorted out what really needed to be done. I had quite a bit of food in the fridge that I didn’t want to go to waste, so I just started pulling things out of the fridge and got to work. I feel like I haven’t cooked in forever. We have either been eating out or eating salads.

I cooked ground turkey and made Taco Meat. I had a bag of Broccoli Slaw that I tossed in with the Taco Meat. I used to do that a lot and I forgot just how much I liked that.


I roasted Butternut Squash. I washed my strawberries that we won’t eat this week and put them on a cookie sheet in single layer to freeze, then bagged them. I cooked up a big bag of green beans with a little bacon and onions, and unfortunately I did find a few things that I had to toss. I hate to do that!

We were done with dinner by 7:00. then Tucker and I went out to get some steps in.

I got my 12,000 in and even a few extra.


Okay, I’m out the door to work my early At Work WW meeting, then I’ll be Leading the noon meeting today as a Sub at our Merriam, Kansas location if any of you just happen to be attending that meeting.

Mixed Greens, Rotisserie Chicken (3 oz), Red Onion, Cucumbers, Bell Peppers, Avocado (35g), Trader Joe’s Roasted Plantains (10) and Salsa


After I snapped my picture, I chopped it all up so the Avocado and Salsa would mix together for a tasty dressing.


Snack – 10 SP

Since lunch was low in points, I had a nice serving of Raw Walnuts (20g) and Cashews (30g) mixed with Blueberries.

If you are eating mostly fruits and veggies and lean protein and having a hard time getting in all of your SmartPoints for the day, this is a great way to get in some of those healthy fats.


Dinner – 13 SP

I was in a Salad mood yesterday!

Mixed Greens, Rotisserie Chicken (3 oz), Center Cut Bacon (1 slice), Sliced Apples, Egg, Red Onion, Cooked Sweet Potato Spirals (cooked in a little bacon fat) and Homemade Dressing from Juli over at Paleomg. The Dressing is 6 SmartPoints for 2 T. and worth every SmartPoint! In my opinion. 🙂


Snack – 2 SP

I’ve got some new readers, so business first.

Thanks so much for stopping by the blog. I’m really glad that you’re here!

I tend to ramble on and on and make lots of spelling and grammar errors, so I apologize in advance.

I was so going to post everyday in May, but family came first this weekend. Instead of posting a blog on Saturday morning, we were taking turns holding this guy!


Mom (our daughter Kate) went to the hospital at 12:45 am Saturday morning and Sawyer was here at 2:15 am! Quick and easy for mom. I knew when the phone rang in the wee hours of the morning, we had a baby on the way or he was already here. I could hear him crying when I answered the phone. This is grand baby number six. He is just adorable.

Meet Sawyer Graye. 6 lbs even. 


Here is a picture taken over the weekend of grand baby number five, Wrenley. She is two months old already!

lol. I have no idea why this is so small, and I’m dumb, so I can’t seem to make this picture bigger!

We didn’t stay at the hospital as long as we would have liked to on Saturday morning. We had some celebrating of another kind to do!

We had tickets to see Garth Brooks! Since the concert was close to our wedding anniversary, we decided that we would get a hotel room downtown and make a “staycation” out of it. If you read the blog regularly, then you know I appreciate a staycation. (You know, stay in your own city and do things people do when they’re on vacation!) We checked into the hotel early and headed out to enjoy the outside. We were in the Kansas City Power and Light area of downtown, and it consist of lots of places to eat and lots of places to enjoy a beverage and play and people watch. The place was packed early! I thought I was being so organized by checking in and being out and about at 4:00 pm for a 7:30 concert! There seemed to be several graduation parties happening. Hadn’t thought of that.

We did find a great spot on a patio to sit and ended up having a few friends join us. The weather was great, the chit chat was great, when the waiter spilled an entire beer (not even a drink we had ordered) down Mike’s side of his shirt and jeans, Mike handled things like a champ and all the pre concert time spent playing outside and seeing friends was great!

Garth was awesome! I swear that guy is so genuine and sings with so much passion. I cried. Like what the heck? I’m pretty sure that I’ve never cried at a concert before, but I did.

I sent our friends a text with this picture telling them that we got moved to the floor! She knows me too well and didn’t buy it.


We were like up in the roof! Didn’t matter. So. Much. Fun.


The lady beside me was super emotional through the whole concert, so I kept giving her hugs. 

We were happy.


As we left the concert at 12:30 (the time FLEW by!) we realized that we never ate dinner! We had a few drinks and a few bites of Calamari, but we were both hungry. We stopped at a bar that was still serving food and had dinner at 1:00 a.m. STAYCATION!!!

Sunday morning we slept in and checked out at around 10:00. Then more downtown fun with breakfast on a patio.


After breakfast, we went to visit each of our moms and wish them a Happy Mothers Day. By the time we got home it was after 5:00.

Busy weekend, relaxing evening, short walk and early to bed for me.

Monday was a full day of errands and “to do’s” that didn’t get done over the weekend.

We’ve made a habit of meeting at our neighborhood spot (Sunset Grill) for dinner on Monday nights when I get done working as a receptionist at a WW meeting. It’s kind of a nice way to wind down the day and we always see people we know there.

One of the reasons that I really didn’t want to miss a day of blogging this month was so that I wouldn’t take any days off of tracking.

I tracked everything these last few days!

Here are the weekend eats along with Monday’s.


Breakfast – 5 SP

Two Mama Lupe’s Low Carb Tortilla’s filled with a Veggie and Egg White Scramble and a Laughing cow Cheese Wedge with Salsa and berries.


Lunch – 3 SP

I took these leftovers along with an apple to eat while working at the Food Truck. No food truck food for me this week!


Dinner – 17 SP

Big Ass Waffle topped with 1 T. Pure Maple Syrup, 1 T. of Nut Butter, Warm Blueberries and Banana Slices


Lunch – 8 SP

This RXBar (new flavor! Yum!) for 7 SP and an Apple with 1 tsp Nut Butter for 1 SmartPoint and a LaCroix Lime for zero SmartPoints


Dinner – 35

Un pictured wine and a few bites of Calamari before the concert and one beer at the concert.

Dinner at 1:00 am was a cup of coffee and this flatbread veggie pizza.

Brunch – 17 SP

I didn’t eat all of this, and I had to guess on points….but it was yummy!

Kind of like Breakfast Nachos?

Corn Chips covered in some yummy spicy sauce with Chicken and Queso Blanco with Scrambled Eggs on the side.


Dinner – 12 SP

Trader Joe’s Palette Super Green Salad with added Grilled Chicken

Did not care for it.


Added a leftover grilled Chicken Brat on a slice of bread with relish and mustard. (Bread – 4 SP, Brat – 2 SP)

Total = 29



Breakfast – 7 SP

Trader Joe’s Sprouted 7 Grain Bread (1 Slice = 1 SmartPoint….2 Slices = 3 SmartPoints) with smashed Avocado (40 g) and Scrambled Egg Whites,

Strawberries and 1 tsp Trader Joe’s Mixed Nut Butter


Lunch – 7 SP

Whole Foods Salad Bar. All Zero SmartPoints Veggies with Sweet Potato, Rotisserie Chicken, Balsamic Vinegar and Olive Oil.


Snack – 5 SP

Needed a pick me up while doing some paperwork!


Dinner – 14 SP

When we eat out at our little neighborhood spot, I have a few items that I pick from and feel like I can give a pretty accurate guess on SmartPoints.

I order this salad with Grilled Chicken (not the fried that is on the menu), no Cheese (just saving some points here for a small glass of wine) Avocado Ranch dressing on the side, and a side of Salsa.

I only use about 1 T. of the Ranch and stir in the Salsa for a nice creamy dressing. There is also a diced egg in there somewhere.

One Glass of Red Wine. (I am my grandmother’s granddaughter. She had a cocktail everyday at 5:00. I just wanna be her.)
