Thank You

June 28, 2017

Thank you to so many of you for your thoughts and prayers for my cousin, Anna Lee.

Anna Lee passed away today. I had planned to visit her at 2:00 in the afternoon with some of her friends, but we were too late.

My mom told her on Sunday that it was okay to go if that was what she was wanting. I found out tonight that one of her friends had told her the same thing. Maybe hearing from loved ones that it was okay to go, made it easier for her to do so.

Now she has no more pain, no more worries, no more fears. Now she has peace.

Thank you again for your comments, text, phone calls and prayers.


Life and Love

In February, my mom and I moved my mom’s cousin, Anna, into a nursing home. She has early signs of dementia, but is very alert, walks with a walker, and mostly knows what is going on. We had some difficult decisions to make as far as what to do with her apartment, her dog and her belongings, but we are her only relatives and they were decisions that simply needed to be made. Anna was not happy to be moving into the nursing home.

Slowly, she began to adjust. She likes the staff and the food and seems to be making some friends.

Recently her best friend (her next door neighbor from her apartment that she lived in right before moving into the nursing home) fell and hurt her leg and was now in the same nursing home receiving physical therapy. Bad for her friend but great that Anna could visit her!

In the last 12 days, her friend that fell became very ill, and Anna’s roommate at the nursing home became very ill. Anna was very stressed about both of them. She was worried for them but also worried that she would get sick too. She did.

The last several days have been a real roller coaster. First she just had bronchitis and needed a breathing tube. Then once off of the breathing tube, she seemed to not be improving.

Mike and I went to visit her in the hospital on Wednesday. I realize that nobody probably likes to visit a sick family member or friend in the ICU, but she did not look as well as I expected her to look at all and I was really glad that Mike had insisted on going with me. 

I had planned to leave Thursday afternoon to go see Tess in Dallas and decided to go ahead with my trip.

On the drive to the airport I got a call from the hospital and they said they didn’t feel that there was much that they could do and asked me if we would like them to bring in hospice. This was all happening so fast. Just the week before I had taken her some of her personal things that she had asked for and we sat in her room and chatted. 

The nurse told me to go to Dallas and when I came home on Sunday they would transport her back to the nursing home and there we could meet with hospice.

I enjoyed seeing Tess and her new apartment, but my mind was really back at home most of the time.

I came home Sunday morning, picked up my mom and we went to the nursing home where we met with hospice and watched them bring Anna back in to the nursing home. She now has Influenza A and Bronchitis MRSA, and we were told that it is a matter of days. so our final days with her are in full gowns, gloves and mask and really, I hate it. I feel like the least we can do for her now is to sit with her and hold her hand, but they are being very adamant at the nursing home that she is very contagious.

It’s so hard to know that there is nothing that can be done.

It’s been a rough few days emotionally and as much as I would love to say I’m holding it all together while taking care of the logistics, the emotions of it all hit me yesterday.

I have several things on the “Weight Watcher work” calendar this week and I am doing all that I can to keep my schedule as it is.

I’m also determined to finish the StepBet. So far I am on track. Walking helps with stress so this is good for me.

I am meeting with some of Anna’s friends this afternoon at the nursing home to discuss what to expect over the next few days. Her friends are really taking this hard since it was so unexpected.

If you pray, prayers for Anna of healing and to be free of pain would be appreciated.

If you don’t pray, we are also accepting positive thoughts and vibes sent our way.

Five Day Catch Up!

If you’ve been reading the blog for a while, then you know that I really prefer to blog daily for accountability, but when I miss a few days of blogging, I have this OCD thing where I feel the need to catch up on at least what is going on in life every single day. It just completes my brain.

I tried to do an update the other day, and I couldn’t seem to log on to my site via my computer, but I could on my phone? Blogging from the phone takes forever and if you read, you saw all of the typo’s. After a long chat with the tech guy and me feeling really really dumb, all I had to do was clear my cookies. It’s a miracle that I even know what that means. Anyhow, problem solved.

Here goes an update with life, and a few pictures of what I’ve been eating.


We had a super busy day working the food truck. It was hot, we had a constant line from 11-1, the customers were great and we had fun, as usual.

The Pizza truck across the way from us sent us all home with a pizza to bake for later!

On the way home, I had an invite to Happy Hour. I declined because I knew I had some steps to get in and Mike and I were due for a date night. Turning down even a short Happy Hour to get my steps in was a big deal!!

I got in about three miles on the treadmill, then showered and we headed out for date night.

Our old downtown area of the suburb that we live in, has had Third Fridays for a while now and I’ve always wanted to go. It is like the big Kansas City First Friday’s with art galleries welcoming customers in to browse, sip wine, have a snack, but just a much smaller scale with an old town feel. Most store fronts are open with live music playing, lots of food samples, and a few local wineries and breweries sampling also.

We stopped in my favorite Olive Oil store and they even had live music and food samples!


We had a great date night that ended with a beer and dinner on a patio just down the street from the Olive Oil Store.


I ended my day with over 13,000 steps!


At 4:30 in the morning, I received a phone call that my cousin (the one in the nursing home) had been taken by ambulance to the hospital. I knew that there was nothing I could do for her at the time and that I would figure it out later that morning.

I had to be at work at 6:15 am to sub as a Leader for two WW meetings. I loved being able to work at a traditional meeting in a store, but having to be there at 6:15 was not my favorite part of the day. That’s early!!

After work, Mike and I headed to the hospital (about 45 minutes away) only to find out that Anna (my cousin) was sedated and would be for the rest of the day. I decided that I would wait and go back on Sunday, so we turned around and came home.

I headed out for a 4 mile walk. When I got home, I chugged a huge glass of ice water and sat down on the couch. I closed my eyes. I woke up two hours later.

I had a mound of paper work to tackle and some organizing to do (I’ll explain later) so I did that well into the rest of the evening. It was a late night.

The spare bedroom closet is my WW storage room for product and office supplies needed for my At Work meetings. I received shipments that needed to be organized and I was preparing for my new meetings.


I had plenty of fixing for a salad, so I put the pizza in the oven that the Pizza Food Truck had sent home with us! Dinner was perfect!



Sunday morning I headed to the hospital. When I got there, I was informed that Anna would be under sedation for at least another day, so I sat with her for a few minutes, then headed to my dad’s house to wish him Happy Father’s Day. On the way to his house, I grabbed a Whole Foods Salad Bar lunch!


At my dads’, we sat outside and chatted with Charlie, his pet duck.


I headed home after a nice visit with Charlie and Dad. I had been home for a bit when this little angel and her mom and dad came by to tell Mike Happy Father’s Day.


She really was smiling the whole time she was at our house, except for this moment.



Jake was the only one of the four kids that Mike got to see for Father’s Day, and I hadn’t done or planned anything special, so I decided to make a yummy dinner to make up for it. 

Fish Taco’s with Homemade Tortilla’s, Cilantro Lime Caulirice and Trader Joe’s Roasted Plantains.


I forgot how much we love these tortilla’s! 


After dinner, it was close to 8:00 and I still needed 8,000 steps. Mike said, “Go get your shoes and lets go!”

He never walks with me, so I was happy that he wanted to go! The walk seemed to go so much quicker with him along.


The StepBet that I am doing runs Monday through Sunday, so it was nice to know that I was completing week one successfully!


Before a full day, I made this Sweet Potato Avocado Toast and topped it with my new Trader Joe’s Everything But the Bagel Seasoning! So Good!!


I have a new At Work meeting! Yay! I met with this group last Monday for an Information Meeting, then had to wait to make sure that enough members committed so that the meeting could happen. You have to have 15 members commit for an At Work to get started. Once you get the word that it is a “go”, there is a to to get done as far as paperwork and ordering supplies. The few days before Monday were crazy insane! This is only my second time doing this too, so I’m still learning what I need and what paperwork needs to be filled out. The members were all great and I can tell that I am all set up for another awesome At Work Group!

I have an additional Information Meeting scheduled next week with a third company, so I’m on my way to having three meetings a week! Now if I could just get a meeting in a traditional store, that would be great! My goal has been to lead four meetings a week. I continue to practice patience.

(When I get four meetings, I’m buying a Vintage Trailer and plan to begin camping! I’m getting antsy to start my new hobby!)

I had planned to go visit my cousin Monday afternoon, but they still had her sedated and she wouldn’t know that I was there, so I decided to wait.

I went to a WW training session on Monday night that I will share more about in a different post. 

I was zonked when I got home and happy to have Fish Taco leftovers to throw in a bowl.


Mike and I had a health screening early Tuesday morning at his office. I left the house around 7;00 am. These late nights and early mornings are wearing on me and I’m ready for a few days where I don’t have to do anything! Those days are coming shortly!

Mike’s company is offering the screening as a way to reduce our health insurance. We now have the opportunity to earn points for good health, earn points for steps, and points for annual physicals. We have more to learn about the program, but my test came back great! HDL, LDL, Triglycerides,  Glucose, Waist measurement and Blood Pressure all good. Because my weight is out of the BMI range, I had one bad mark. I shared my thoughts about that with the technician and she was very sweet. lol.

I had just enough time to run home and whip up this breakfast of Sweet Potato Ribbons from Trader Joe’s topped with and Egg and Avocado and more of that wonder Trader Joe’s Everything But the Bagel Seasoning! I am loving this stuff!


I finished up my first 17 week session with my At Work group and they have signed up for a second 17 week session! I love this group and they have been so successful. I’m looking forward to working with them for another 17 weeks! Some of them are really close to Goal!

After my meeting, errands then lunch!

After lunch, I met up with a friend to start weight lifting. We chatted about it a couple of weeks ago and made a plan to get started yesterday. We just did arms yesterday and plan to meet up on Tuesday’s for now. I think we need to lift twice a week, so we’ve got a schedule to figure out. Baby steps. We lifted for an hour yesterday and she led us on what exercises we were doing. I woke up with super sore Triceps!

I had the opportunity to sub as a Leader last night and it was another great meeting. I say it time and time again, but WW members are just some of the nicest people! We had three new members and I loved meeting with them afterwards to hear their stories and give them encouragement.

I came home to this in the mail.

More WW bling! This Weight Watcher Ambassador thing really is awesome! These great little bangles feel like leather. I love them!

I’ll share more about why WW sent these to me in tomorrow’s post.


I am headed out to work the Food Truck, then to visit my cousin at the hospital. She is improving and no longer sedated, but still has a few days before she can go back to the nursing home.

I’ve been tracking, getting my steps in and trying to keep a variety of foods in my diet. I feel good. I feel healthy. I just feel a little too busy right now.

I am going to Dallas tomorrow to visit my daughter Tess. I’ll stay until Sunday. She has been coming home regularly, but I haven’t been to visit her in Dallas in several months. I’m looking forward to a relaxing weekend filled with walks, coffee and girl chats.

It feels good to get caught up!

While I’m on hold with the internet folks (who do not seem to understand that I am really dumb about tech stuff. They keep asking me questions via chat and I keep replying….”huh?”) I’ll tell you that I successfully completed the first official week of the StepBet! That was a lot of steps! 

Some last minute steps were in pj’s.

One day I was so busy running around that I only needed 300 steps to reach my goal so I did that pacing back and forth in the living room while sipping on a glass of wine.

On Sunday night I was shy 8,000 steps and Mike came with me! He’s sore today.

Okay, I need to focus on this dude named Jamshid. I know he thinks I’m an idiot. He just asked me if I even had an account.

Walking in PJ’s

I am writing this post super quick and no time for proof reading, so I’m sure my thoughts all over the place and lots of errors. Sorry.

Yesterday was just busy enough that there was no time for snacking and no time for three meals. Ha! I was even just busy enough that I completely forgot to walk to get my steps for my StepBet until after I had put my PJ’s on! I was supposed to meet a friend to walk yesterday afternoon, but it was super hot and I ended up having to go see my cousin at the nursing home. That took most of the afternoon. I had a WW training class last night until after 8:00, and by the time I got home I was ready to chill for the night. At 9:30 I remembered to look at my steps. It was a busy day, so I knew it was likely a good amount of steps, but I was about 1,000 steps shy of meeting my daily goal, so in my PJ’s, I hopped on the treadmill. Yay! I would have been SO mad at myself had I completely forgotten! If you don’t meet your daily goals you are out of the challenge and OUT your forty bucks! You only have to complete your personal goals to get your $40 back!

I picked up two new items up at Trader Joe’s yesterday. Have you tried either of them?


I asked on Instagram what ideas people had for using this seasoning and I was given all sorts of ideas! If you have used this, I would love for you to share with me what you are putting this on!

Breakfast – 11 SP

Have you seen the newest menu at First Watch? They serve a Mixed Green Salad with a lemon vinaigrette with several of their breakfast options. I’m not really one for a salad with me eggs, but for some reason yesterday this sounded really good.

I took one of my left over salmon cakes and put it on top of a bed of greens, added 2 tsp of Lemon Infused Olive Oil, a dash of my new Trader Joe’s seasoning, topped it with my salmon cake, avocado and an over easy egg. A pear for later.

This was ridiculously delicious!!


Snack – 1 SP

The Pear I was going to have with my lunch, with Cinnamon and 1 tsp Mixed Nut Butter


Lunch – 0 SP

Blueberries on the go in the car while driving to the nursing home.


Dinner – 15 SP

Sweet Potato Ribbons (100 g raw) sautéed in Cooking Spray and served over a bed of greens, Beef Taco meat with tomatoes, Roasted Plantains, Guac


These little ribbons were perfect on a salad!

Weight Watcher Bling

What a fun day!

I started it out with coffee in bed, but what I should’ve started it out with was a walk. I walked in the late afternoon and it was H O T!!

Coffee in bed always starts my day out happy, so I guess a hot walk in the afternoon is the price I pay for morning happiness.

We worked a food truck lunch yesterday with five other trucks and we were crazy busy! I think we had 30-40 people in line the entire time and served almost 200 people in about a two and a half hour window. We always have fun working, but we were so busy I don’t’ think we ever did get in any chit chat. All work right after I took this picture! 


When I came home from work I had a UPS delivery that included a pretty gold envelope. When I opened it up I was pleasantly surprised to find some Weight Watcher Bling and a sweet hand written note welcoming me to the Weight Watcher Ambassador program!! It is so cute! WW, Julie and Inspire charms. I love it!


I still have all of my WW Charms. Look at that bling.


After my H O T walk, I had no desire to cook or grocery shop. After a short break, I came up with an easy idea for dinner.

Look! It’s the leaning tower of Salmon!


These were tasty!

Okay, out the door for a full day.

After a hot day in the food truck and a conversation about Ice Cream before we all left, I couldn’t stop thinking about Ice Cream.

I blended 1/2 Frozen Banana, 1/2 C. Frozen Strawberries and 1 Premier Protein Vanilla Protein Shake. When put in the WW App as a drink recipe, it came up as 5 SmartPoints.

This totally satisfied my Ice Cream craving and it was 30 g of protein!


Dinner – 13 SP

I googled Salmon patties and this was the first recipe that came up. Since I had all of the ingredients, I went with it.

I am saving this recipe. These were SO good!

I doubled the recipe, but only used enough dill for the original recipe. Not a huge dill fan. I made 9 cakes.

Unexpected Taco Tuesday

After I finished working my WW Meeting on Tuesday, there was a food truck in the parking lot of the building that I was in. I heard that they had good Taco’s, and since I work on a food truck, I decided to check it out, you know. Compare. It was weird being on the outside of the order window!


These were in small corn tortilla’s. I ordered one steak and two chicken. Not bad. Point friendly. Should have only ordered two though.


For dinner, the only meat I had on hand was ground beef. On Sunday at the baby shower there was a Taco Bar. I was in charge of Lettuce, Tomato, Cheese, Sour Cream, Chips, Salsa and Guac. There were going to be about 30 people at the shower. I have no idea how much food to buy for 30 people, so I was sure to buy what I thought would be extra. It was.

I came home with extra shredded lettuce, lots of chopped tomatoes, extra Guac and a 2 lb bag of shredded cheese.

Taco’s it is!

I ate a flour tortilla on Sunday at the shower and it tasted SO good! Last night was no different, and after filling up two of them and devouring them, I ate two more. Those are all gone now.

I went a little overboard on my unexpected Taco Tuesday.

I got in a good walk after dinner and am looking forward to this Stepbet!

While I was walking, Mike was tearing up stuff at home!


I’m hoping those Full Moon days are behind us for a bit. At least until there is actually a Full Moon to blame them on!

Pancakes using the Big Ass Waffle recipe, topped with 1 1/2 T. Pure Maple Syrup and fresh Blueberries and Banana Slices.

I gave these Food Truck Taco’s a guess of 4 SmartPoints each since they were small, and only included Corn Tortilla’s and the meat with onions and cilantro.


Snack’s – 1 SP

Finished off the Cantaloupe, then relaxed with a cold drink on the deck.


Dinner – 17 SP

This bowl of Beef Taco Meet on a bed of shredded Ice Berg with tomatoes and guac, then two more flour tortilla’s.

Really? No Full Moon?

Like what’s with the Full Moon kinda week?






In the last few days we have discovered that we really did have bats in the attic. While cleaning up the bat crap, the shopvac broke, so Mike had to go buy a new one. The crew that was supposed to show up to do mudjacking last week finally showed up today but then the driveway cracked and broke while they were mudjacking it up. I came home from working today and pulled into the garage, then remembered immediately that we aren’t supposed to drive on the driveway for 48 hours, so I backed out real quick. Mike doesn’t know this and I think that’s best. I’ve dropped two large containers of blueberries that rolled all over the kitchen floor. I’m not gonna lie. I ate some. The kitchen sink drain has been leaking for the past two days and Mike keeps fixing it and every time I pull out the dish soap from under the sink, it’s leaking again and he keeps finding a new problem with it. Mike got a speeding ticket yesterday in an area where it goes from 45 to 35 and it’s easy to forget that it does that. One of his clients backed into his front bumper a few days ago, but his car was just dirty enough that he didn’t notice any damage until yesterday when he washed his car. He spilled some wood stain in his car today and on his jeans. I think it came out of the car and his jeans, but when I washed a load of my clothes tonight, they smelled like stain.

I just walked in the bedroom where Mike is working away on the remodel. It is 9:30 p.m.

Mike – “Just go ahead and say it.”

Me – “What?”

Mike – “What’s broken now?”

Me – “Nothing as far as I know right now. I just wanna climb in bed.”

We just keep looking at each other and laughing. I still can not believe there is no full moon.

It’s been a full weekend and a happy weekend.

Sidenote: I did not track at all this weekend. I didn’t eat terrible, I just didn’t take the time that I needed to take to track. I tried to be mindful. I did eat some things that I likely would not have had had I known how many points I was eating. I feel good about getting in more steps this week and drinking lots of water.

Okay….the weekend.

Friday morning started off with a few girlfriends over to discuss our bathroom remodel and share ideas.

I may have made them breakfast…..

Sweet Potato Hash with Bacon, topped with Eggs and Berries on the side.


After making a few bathroom decisions, then pondering a few ideas, Mike and I were left to making some decisions on our own.

I know that in a remodel it is important to consider the resale value. Don’t over spend. You won’t get your money back. Keep up with the trends. Your house will sell first.

Here’s what I know.

I like what I like, and what I like isn’t always what’s best when considering resale. Long story short, I’m keeping my Jacuzzi Tub!!

After a full day of “to do’s”, I had a few girls over for a short evening that turned into a long evening. No surprise here, really. 🙂

I grilled up some really really dry pork chops for the girls, so we dipped them in Guac. I do not know how to grill pork chops. Never have. Everything taste great dipped in smashed Avocado. We all agreed to that.


We rinsed those dry chops down with sparkling Grapefruit water and a splash of vodka.


Here is what was happening with Mike in the master bath while I enjoyed my girls. 

Skip ahead to Sunday morning. Mike cut a hole in the drywall over the shower, and a bunch of bat poop fell out. I’m so grossed out, I thought we had bats several months ago because a couple of other neighbors had them in their attic, and I swear I could hear them in the walls. Yep. Fricking bats!!! We recently had the hole fixed in the roof where we believed that they were coming in. Now I’m just concerned there are a bunch of them up there, dead!



Saturday morning I slept in, (before I knew about the bat poop!) then enjoyed my coffee on the deck. Perfect Saturday morning.


I finally came inside and made Mike and I pancakes using the Big Ass Waffle recipe.


I topped mine with Bacon, Pure Maple Syrup, Banana’s and Mixed Nut Butter.


At around noon, this little angel showed up! Wrenley Rose!


I was watching her until late evening because Mommy and Daddy were at a wedding. Her mom and dad, Jake and Jordan, actually started their own company, Olive Media, and they work as a team video taping weddings. They do a beautiful job too! They were friends with the bride and groom, but they were working too.

A few of my friends came by to see Wrenley, and I swear it was the only time she was fussy. lol

This is what she was like 99% of the time.


She’s just three months old, so the smiles and giggles are still new and so much fun.


We even got in an evening stroll. (I had steps to get in!)


Her mom picked her up just before 10:00 pm. I loved having her so long. Can’t wait to do that again!

Sunday morning I was up early and out the door. I headed straight to Starbucks.

Do you ever order a pour over? My favorite is the Blonde Roast, Veranda? Zero Smartpoints for a Pour Over! If you like black coffee, give it a try.

Coffee, Gas, Groceries. All before 8:30.

Yesterday was Anne’s baby shower.

Guess who I got to see again?


I did a terrible job of taking shower pictures while at the shower.

I would have a picture of me holding Sawyer, our newest grand baby, but he cried when I took him. 🙁

I did get this picture of the cake! I told Mike that I would share a piece with him. He brought it over, we each took a bite, looked at each other, then he went and got another slice. It was soooo good!


Couples shower and a Taco Bar! I was a Salsa Fool! (We decided since it was 3:00, this would be dinner.)


Here is a picture of what I did not eat. That’s not even all of the donuts that were there. I took one bite of Mike’s and did not let him go get me my own! lol


Anne and Cortney got all sorts of great gifts. Now they have to drive them all back to Oklahoma and put them away. Anne feels great and is in no hurry to have the baby come. She said that she could be 7 months pregnant forever. 🙂


It’s been a full few and happy days. It is going to be another busy and full week this week, but I feel rested and ready.

Here is how Week 1 of my StepBet went. Week 1 is just a practice week, but the real deal starts today!

I really did want to complete my goals by 100% even though it was a practice week, but I missed one day by over 2,000 steps.

My goal for this bet is:

4 days of 9,727 steps,

2 days of 12,027 steps

1 rest day

I ended up with two rest days, completed my two 12,027 days and three days over 9,727.

That’s a lot more than I have been walking!
