Eating Clean & Simple

Monday and Tuesday are now my weekend, kinda. I don’t work on Monday or Tuesday now so I am trying to make those my errand days and meal prep days. Sometimes a meal prep day simply means I plan out what we’re going to have for the week. Sometimes just knowing what we are going to be eating can save time later in the week.

This week I made Betsy’s Zucchini Soup , a Fall Chopped Salad a Beef and Pork Meatloaf and a tray of Roasted Veggies. We ate that all week long and it was a perfect little variety.

If you go to my recipe tab, I have a few links to favorite recipes from other sites. I forgot how much Mike loved that meatloaf!

I’m trying to eat as little processed foods as possible in hopes of my joints and just my body in general feeling better and hoping for some improved sleep. I’ll let you know when the starts to happen.

On Monday I went to a WW workshop as a member. You know we call them workshops now, right? We used to call them meetings. It was a great workshop and I left feeling motivated and energized.

After dinner on Monday night, Mike and I worked out together in my our home exercise room. I think that’s the first time we’ve ever been in that room together. I’m not sure how he felt about watching Dancing with the Stars instead of Monday Night Football while working out, but it was nice to have him in there with me.

In the last few days I’ve ran several errands that involved shopping for accessories for the newly remodeled master bedroom and bathroom. I’m not having much luck. I just can’t decide what I want in there I suppose. We are making progress though. The shower doors are being installed right now! Yay!

I started a little Christmas shopping. Every year I say I’m going to keep it simple this year, and then I don’t. I think this is my year. I think this is my simple year. (Please let it be my simple year. 🙏🏼)

I ate lunch out on Monday and Tuesday and I found two spots with great choices! Do you have a Zoe’s kitchen where you live? They have a great menu with lots of healthy choices. I’m trying to eat as clean as possible (Little to no processed foods.) right now to see if I can get to feeling better, and they have several options on the menu that allowed for some great choices.

Lunch was great!

I ordered the Mediterranean Chicken with roasted veggies and grilled potato Salad.

I guessed lunch at 6 SP for the potatoes and any oil for cooking.

 

 

 

 

Monday night for dinner I made one of my favorites.

Fall chopped salad. , a long time favorite. So happy I came upon this recipe a few years ago.

Rotisserie Chicken, Sugar Free Bacon, Eggs, Apples, Red Onion, Walnuts, Dates, Roasted Butternut Squash and home made Dressing.

I LOVE THIS SALAD!!! So does Mike.

 

Tuesday I tried a new place for lunch after I cast my vote. I hope you were able to get out and vote!

Again, lots of choices that were Smartpoints Friendly at this new little spot that a WW member recommended.

Crushed Red.

Salads, Flatbreads and Soups. They also have a Wine Bar. Bonus!

I did a “Build Your Own Salad” and I drank water.

 

Tuesday I made a big pot of Betsy’s Zucchini Soup for me and a Paleo Beef and Pork Meatloaf for Mike. The meatloaf isn’t low in points, but it’s one of his favorite meals and I knew he’d eat it for a few days while I enjoyed some soup.

 It was chilly and rainy and I was really in a soup mood. The soup hit the spot!

This taste great over tortilla chips or roasted plantains and is also really good topped with cheese or avocado or both!

 

I’ve eaten some of this Zero Smartpoints Soup Every single day.

 

This really is a good one if you’re wanting a new meatloaf recipe.

 

For breakfast this week? Omelets.

Egg White Omelet filled with Asparagus, Onions and one Diced New Potato, topped with Smashed Avocado, Berries with 1 tsp Trader Joe’s Mixed Nut Butter on the side.

 

This one is filled with Asparagus and Peppers and topped with Smashed Avocado. Apple one the side with some Vanilla Almond Butter.

 

1 T. = 3 Smartpoints. No added B.S. (bad stuff)

 

 This is a new “Food Find”. I love to do Food Finds in the WW Workshops.

I like these with a cup of hot tea as a snack. They are high in points since they are only nuts and dried fruit, but totally worth it for me if I have a day filled with Zero Smartpoints foods.

This RXBar is 7SP and made a great breakfast on the go with an Apple.

  1. I’m on board with better eating.
    Last year a blogger stated that the weight you gain the eight weeks before/during Christmas time takes 5-6 months to lose afterwards so last year I was really careful and lost weight and felt good.
    I counted 8 weeks before Christmas Eve and carefully indulged during the holidays and that’s what I’m trying this year.
