Make it your own!

Steel cut oats. They take a while to cook up, and you really can’t make one serving, but they are worth the wait. You really need to cook these for about 30 minutes. I cook 4 servings, then separate them into four bowls and cover the other three with Saran wrap. Pop it in the microwave for a quick breakfast throughout the week! One of my favorite ways to top this great big bowl of goodness is with an apple. I chop it up into lots of small pieces, then I sprinkle it with a little cinnamon, then put it in the microwave for about 2 minutes. Putting the apple in the microwave really softens them up and adds a great baked apple to your oatmeal. Focus on the Power foods

Weight watchers really focuses on power foods. Mostly that includes fruits and vegetables, lean meats, whole grains, skim milk and non-fat yogurts. I do know that when I plan and work those in each day, I am much more successful at the scale. Today is Super Bowl Sunday and I know we are going to friends, but I have no idea what snacks will be lurking around while I am there, so I’m trying to save most points for the evening. Are you kidding me right now?

Holy…..moly……macramoly…….check this out! 30 seconds in the microwave and you have THIS! 4 PPV of chocolate, gooey brownie topped with peanut butter! After watching the rest of the family eat bacon and pancakes at my mom’s this morning, I came home craving something sweet and cakey! Well, there you have it! Snack perfection! These Vita Muffins come in several different flavors, but the chocolate is my favorite. These little babies are packed with NINE grams of fiber and FOUR grams of protein. IN A BROWNIE! Sunday at Mom’s

I am headed over to my Mom’s for breakfast and coffee, but I’ve made an executive decision……to just have coffee.My husband and I are headed to Florida in a few days, and I am really trying to be on my best Weight Watcher’s behavior. Mom wants a big breakfast of pancakes and bacon, (she’s 4’8″ and weighs 75 pounds). If I weren’t so much like her, I’d SWEAR I was adopted! I opted to eat at home! Then I’ll go over and watch them eat their feast! Today I made a filling 5 PPV breakfast burrito so I shouldn’t even be tempted when I get there. I used 4 egg whites, turkey sausage, a cheese wedge and a high fiber whole wheat tortilla. Added an orange and a kiwi to really bulk up my plate. White chili? Yep!

I love this stuff, and so does the hubby! This was perfect for a CHILI (get it? Chili? It’s cold outside? I crack myself up sometimes.) and rainy Saturday night in, spent on the couch watching the Kansas/Missouri game. I try to make most things without the seasoning packets anymore, but I really like this one, and when I’m in the mood for it, I hate to try and make my own for fear it won’t taste as good. Okay, next time I will give it a go from scratch. Anyhow, I use one seasoning packet, one rotisserie chicken, two cups of water, two cans of shoe peg corn, and two cans of great northern beans. Love this tortilla

It’s 2 PPV And super tasty! You can wrap just about ANYTHING you’d like in it! Breakfast burrito!Peanut butter and banana or add an apple…yum.How about a quesadilla?Maybe a chopped apple topped with a little cinnamon. –Today I made a wrap with a little hummus, some deli turkey, and some romaine for crunch! I’ll eat chips once in a while, but I have been substituting these carrot chips, and they do the job! Just a whole bunch of crunch!

Hearty!

I was really in the mood for something warm and yummy and filling! I typically do 3 or 4 egg whites because it increases the protein in my meal and reduces the fat which helps to reduce the Points Plus Value. I believe one egg has 6 grams of protein, and one egg WHITE has 4 grams of protein. So if I chose 4 egg whites, which I typically do, that’s an awesome SIXTEEN grams of protein! But today I was really craving that yolk! So I whipped myself up a toasted light English muffin (3), made a WHOLE Egg (2) in the skillet and topped it with 1 T of bacon bits (1) and a slice of Kraft sharp cheddar 2% cheese (1). Friday lunch!

It’s rainy and cold outside today and I am really craving some warm, yummy goodness! This is what I came up with. I had some frozen black beans, corn and bell peppers. I had some reduced fat Colby jack cheese (Hello! Good on anything!) I had a can of fat free refried beans (I may regret all the beans later, I wasn’t thinking clearly), and I had whole wheat tortillas! These are all things I usually have on hand, but I hadn’t thrown them all together in a while. I’m so glad I did today. I made myself a really yummy 12 PPV quesadilla! It actually ended up being way too much food, so I just ate half, which works out well since it’s Friday and soon I will be headed out the door for HAPPY HOUR! – Posted using BlogPress from my iPad
