Steps and More Effie Stories

Yesterday I coached my Workshop from my deck. It was beautiful outside and early enough in the day that I couldn’t hear any kids or dogs, so working from home had a whole new meaning yesterday. I’m thinking about some Effie Workshops. Some of the Kansas campgrounds will be opening soon and that feels like a safe and fun thing to do. Who knew I’d one day be combining two loves of mine, coaching workshops and camping!

I spent some time at my dads house working on my trailer. I still have several small things that I would like to do, and it’s a great way to occupy my time. I don’t want to bore you with Effie stories everyday, but I’ve been spending a lot of time over there playing. I have been mulling over ideas to make the dinette area comfortable to sit in while also having the option of making it into a bed like it was originally designed to do.

This was good for camping for just me. I slept in the back area and this served its dinette purpose. I thought the fabric for the seats was cute and I used pillows for the backs. Easy.

To make this dinette area turn into a bed, I needed to figure out the cushions. I had cut the mattress that the previous owner had in here into four sections and I was using two of them for the seats while the other two patiently waited in my garage until I decided what to do with them. I do not sew. I found body pillow covers one day while browsing through Target and decided that I would give those a try. They were a little long, but otherwise snug and perfect, so I just tucked the extra fabric in at the ends and for me, they worked great! For the seat cushions I cut a large gray blanket in half and wrapped each cushion. I looked at this for a couple of days before deciding if this was what I wanted to do. Yesterday I decided that it was and I went to town with the staple gun and stapled the blanket to the piece of plywood that I had already added to the bottom of these cushions last year. That staple gun is a powerful tool!

I have A/C now so I don’t have to worry about this being too hot in the summer. I like this look better than the fabric that I had on them. More cozy. Less busy.

I had purchased a gray shag rug at the same time I purchased the white faux fur one. The shag rug arrived and I was anxious to see which one I like the best.

This shag rug is sooooo thick and comfy! This baby is staying!

The cushions and the table worked great for making this into a second bed. I lounged over at this end for a while yesterday afternoon.

Just a few changes over the last year while Effie evolves into who she is meant to be.

I was a slacker in the step department Monday and Tuesday, so I knew I needed to get my steps in before the day got away from me. After playing in Effie, I went to my favorite childhood park and walked the trails. As many times as I have been to this park, yesterday I discovered a few trails that I had never walked on! I was determined to get my 10K steps before leaving the park. so I enjoyed a few new trails twice! I ended the day with just over 11K.

You never know what you’re going to see when you’re out and about. This panda person was simply walking circles around the lake. Things that make ya go, hmmmmm.

It was a perfect weather day and I’ll stay outside as long as I can on those days so I decided to grill and enjoy a beverage. Enjoying all the sparkling waters for a mocktail.

Banana Egg Pancakes

These get easier with practice. They are very thin. Crepe like. I’ve discovered the secret is medium to low heat and keep an eye on them. I used one medium ripe banana and two large eggs to make 7 thin pancakes. Ate em all. I mashed the heck out of that banana before I added the whisked eggs. I also added a few drops of vanilla Stevia and a dash of cinnamon.

I put 1/2 C of fresh blueberries in the microwave for one minute. Perfect topping for 0 SP. Isn’t that a beautiful and easy topping?? This does feel like a Blueberry Crepe. 1 tsp Powdered Sugar = 1 SP.

Last nights meal brought to you by Trader Joe’s. These potatoes are the best discovery. You put them in the skillet. That’s it. Add nothing. Stir until desired crispiness. I steamed the broccoli.

I think I’ve only grilled shrimp one other time so I went to Google to search for a simple recipe that had lots of good reviews. I found this Spicy Grilled Shrimp I only used half of the Cayenne pepper as I don’t love spicy food and these turned out great!

Making the decision to put your shoes on can some days be the hardest part. Remember how good you feel physically and mentally when you get in a little activity and breathe in some fresh air.

  2. Love the upgrades to your baby!!!! I am so interested. Jason and I are seriously contemplating buying a van or RV to be able to camp comfortably and do a bit of traveling in that lifestyle. So keep posting…it’s inspirational!!

    Just wish we had a Trader Joe’s near by. Your dinner looked divine. As did those pancakes! I need to try those again using your cooking tips. The ones I made were disappointing.

    I am enjoying your blog so much! Its fun to hear about Effie! Which was my grandma’s name by the way.
    I especially am enjoying the “what you ate”. I am so bored with cooking lately. I wish I was more creative with what I have in the pantry & freezer.
    You take me away for a moment from this life were living. Although incredibly still blessed with my job and health, we have had large changes that has made it tough.
