We had a super busy day working the Food Truck in the West Bottoms of Kansas City on First Friday yesterday. That, along with our regular Wednesday location, is one of our busiest lunches and we dish out some food! Along with Burgers, Pork Taco’s and Crawfish Mac and Cheese, we served up about 25 of these yummy Chicken Salad Sandwiches. Her Chicken Salad is to die for! Guys, seriously. After about 5 hours on our feet, we went outside, sat in the shade (it reached about 88 degrees yesterday!) and drank some cold beer. (This is my friend, Renee. We’ve know each other for about 30 years. I think I’ve mentioned that before. Anywho, I’ve sucked her into the food truck fun, and were having a great t time working together.) Loving it Outside
Yesterday was spent mostly outside, and I loved it. Today’s high? 82. It should be another beautiful day spent outside! Yesterday I walked, I mowed, and I babysat Char and we went to a patio party for Cinco De Mayo. I walked 5 miles yesterday and that puts my total miles for the month at 12. I’d like to have 25 miles in by the 8th, and that means 4+ miles a day for the next three days. How’s everyone doing on the 100 Mile Walking Challenge? Keep me posted! I mowed my yard yesterday and now everything is so nice and green, it’s time for some flowers. Mother’s Day weekend always seems like a great weekend to do that, so maybe I’ll get some purchased today. A Little Girly Time
Every once in a while, ya gotta get away. I left on Monday afternoon for a short girls trip with a few friends, and came home Wednesday morning just in time to work at the Food Truck. It was the perfect little two day break. Fire Pits, Four Wheelers, Food, Friends and Fun. I did not count points. I ate things that I don’t usually eat. I drank beer and wine, but I didn’t go overboard. I forgot to drink water the first day, and made up for it the second day. I took my walking shoes so I could get some miles in, and I ended up walking ZERO miles, so I’ve got some catching up to do! After work yesterday, I got in a three mile walk, then ran a few errands, then went back out and got in another two miles. I’m off today, and plan to enjoy […]
Yoga, Brunch and a Walk
It was a great Sunday. It started off with a Hot Yoga class with my niece by my side. Her and I have been trying to get to my Yoga class together for a while, and it finally happened. She loved the class, and I knew that she would. After Yoga, her and I headed over to my mom’s house for Brunch. Mom did a great job of planning the menu around what would please us all, and we really appreciated that! She even poached me some eggs! After Brunch at mom’s, I had a busy afternoon in the kitchen. I’m leaving for a couple of days, and I like to leave Mike with plenty of food cooked up for breakfast, lunch and dinner. He told me “Thank You” all afternoon. Life Stuff First of all, absolutely everything from my garage sale is gone and I am ecstatic! My dad came over for coffee and a chat during the sale on Saturday. Knowing I didn’t want any stuff left after the sale, he offered to take it all to his house for his sale in a few weeks. I could not have loaded up his truck any quicker! Hallelujah! And….Mike has has been shopping for a “Fun Car” to take for a drive with the top down and play with on the weekends. You know, in all of his spare time. Selling More Stuff!
Garage Sale I woke up feeling a little spunky yesterday and prepared for a good day. My Garage Sale yesterday was more successful than I thought that it was going to be, especially since not one person came from 7:00 – 8:00? Anyhow, I was selling and giving stuff away left and right and made all sorts of new friends. I’m a terrible sales person. If I got to talking to somebody for a long time, I was like…..”You know what? Just take it. I’m donating everything that doesn’t sale anyhow.” One lady and I started up a conversation about Book Club while she looked through some of my older books, then I came inside and got the Rosie Project, one of the books that I just finished, and gave it to her. Everything Must Go!
I haven’t had a garage sale in forever, and I despise them. You do all that work, and only sell 25% of your stuff. Is that just me? I spent the entire day yesterday organizing my pile in the garage that I made a few weeks ago, then I went crazy and searched the house for anything and everything I could find to get rid of. Mike is going to come home one day to a living room with only a couch and a TV! I’m not sure how many trips I made up and down the stairs to the spare bedroom closet making sure I had everything out of there that I think I can sell, and multiple trips to the basement to do the same. A Happy Day & Brussels Sprouts
Food Truck Fun While working The Food Truck window yesterday, a man came out of nowhere, stepped in front of the 10 or so people in line, gave me a $100 bill and told me to use that money to buy lunch for everyone in line. He looked at the first guy in line, patted him on the back, and said “Lunch is on me”. Then he left! I think everyone that got a free lunch paid it forward and put a nice amount of money in the tip jar, because we had really great tips yesterday! I’ll need to do my own “Pay if Forward”, “Random Act of Kindness” today. 🙂 Ahhhh, Happy Day. Yesterday…I ate…
A lot going on today and headed out the door, so this post is all about the food that I ate yesterday. Have a great day! Breakfast – 9 SP Taco Tuesday Breakfast Tacos with a Grilled Pear I woke up thinking about Taco’s. No joke. So I got the coffee going, then made some of those Paleo Tortillas using Unsweetened Almond Milk. The recipe makes 6-8 Tortillas and they are approximately 3 SmartPoints each when made with Almond Milk. I sautéed a few veggies and seasoned those with some Homemade Taco Seasoning, then scrambled a few Egg Whites and added them to the veggies. I topped that with some Smashed Avocado and a few grape tomato slices. While my eggs cooked, I sprinkled a Pear with some Cinnamon, and put it on my grill pan coated with Olive Oil Spray. Spaghetti Squash Tuna Casserole
Yesterday was a full and busy day, just the way I like it. I worked Food Truck prep for a few hours in the morning, I got a lot done around the house in the afternoon, Tucker and I took a nice 2 mile walk, and I found a new recipe for dinner! Perfect day. The lasagna over the weekend is about as comfort food as one can get, in my opinion. However, one of my favorite meals as a kid, and a total comfort food for me, was my mom’s Tuna Noodle Casserole.
