Round 2, Whole30, Day 22

After a terrible headache Tuesday evening (likely from Tuesday’s eats??) but a really good nights sleep, I made much better food choices on Wednesday. I even drank all of my water and got in a  30 minute walk. Here are yesterday’s eats… Breakfast – 5 SP 5 Egg Whites and One Egg, Scrambled. Apple Slices with 2 tsp Almond Butter.   Lunch – 3 SP Lunch at the Food Truck. I packed a Tuna Salad made with Mustard, Dill Pickle Relish, S&P, Chopped Apple and Red Onion.   Dinner – 14 SP Turkey Taco Meat bulked up with Broccoli Slaw and Bell Peppers. I put my Taco Meat over a baked Sweet Potato, then topped it with tomatoes and smashed Avocado and a side of Plantains.     These are my 2016 Goals Make time each week to Meal Plan Drink 100 ounces of water each day Exercise 5 days a […]

Round 2, Whole30, Day 21

Let me just say that having a glass of wine on Saturday, one on Sunday and a beer on Monday, made me crave foods that are not Whole30, and not Weight Watcher Point Friendly. I was running late to work at The Food Truck on Monday, and skipped breakfast. We worked an event with other food trucks. At the end of the day, we all trade food. I have done this before during Whole30 and easily passed on all of the yummy food. That did not happen yesterday. Besides showing up for work hungry, it was that time of the month (You’re welcome), and I know that having alcohol makes me want to eat everything for the next few days. So, I had a bite or two of everything! I ate one of our Pork Taco’s The Pizza guy brought the three of us three pizza’s. I had a few bites.   […]

Round 2, Whole30, Day 20

We went to bed at 4:30 am Monday morning, and I slept in until 11:00 am. The rest of the day felt pretty unorganized. I hadn’t had a meal since our lunch in Dallas late Sunday afternoon, so at 2:00 pm, I finally made a big plate of eggs and sweet potatoes. The rest of the day was just as unorganized as the morning. Mike and I had tickets to the Jamey Johnson/Willie Nelson concert and aside from being exhausted, we were really looking forward to our evening. I had wanted a date night with dinner out and then the concert, but due to our rather hectic day, we were doing good to just get to the concert. We never did have dinner, and decided to just have a good time and have beer for dinner. Yep, that’s right. Another Whole30….NOT! The concert was great! Our seats were on the floor, […]

Round 2, Whole30, Day 19

Food Truck Success I worked Monday thru Friday last week at the Food Truck, and I stuck to the Whole30. Some days with ease, others, a little more challenging. Thursday night I had Book Club. I ate dinner before I went, and drank water, coffee and hot tea while there. There is always lots of great food at Book Club, but there seemed to be an extra amount of yumminess on Thursday night. Dips and Chips and Pizza and Cookies and Cupcakes and Wine. I kept my focus on my girlfriends and the books and never took a bite, but I’m not saying it was easy. I did have a really great time laughing with the girls. Friday, I went to my WW meeting, but had to leave just a few minutes early to make it to work in time to serve up lunch at the Food Truck. It was a great meeting […]

Round 2, Whole 30, Day 18

I’ll write a bit more detail in today’s next post, but Mike and I went to Dallas this weekend to visit our daughter, Tess. I wasn’t really thinking about this trip when we had decided to do another committed round of the Whole30. A few days ago, it hit me how challenging the weekend could be with eating out all weekend and socializing. I had made up my mind to not stress about it, and eat healthy and do the best that I could. Breakfast was easy. Tess picked us up at the airport Saturday morning and we went to her apartment for breakfast. For lunch we went to a BBQ restaurant. Again, I had decided to not stress about my food, and just eat healthy. I surprisingly discovered a Smoked Red Fish with vegetables on the menu, and it was amazing, and as far as I could tell from the description […]

Round 2, Whole30, Day 17

Friday was crazy busy and we were out of town over the weekend, so I am behind on my Whole30 post. Here are Friday’s eats with more post to follow to get caught up! I had a lot of Chicken and Mixed greens in the fridge, so that is what I ate on Friday……for EVERY meal. I packed my lunch to eat after my WW meeting and while working at the Food Truck. Breakfast Mixed Greens, Avocado, Sweet Potato, Red Onion (Balsamic Vinegar and Olive Oil in the dressing container) Apple and Plantains. Lunch Mixed Greens, Avocado, Red Onion, Chicken, Balsamic Vinegar and Olive Oil and a Pear and Banana and Almond Butter afterwords with coffee on the deck. Dinner It doesn’t look great. but it was. Weekend Trip!

I didn’t get a blog posted yesterday, so I will have to catch you up on Monday about what I ate on Thursday and Friday. Thursday was a great Whole30 day, as was yesterday. I went to a Social outing both nights, and didn’t eat one bite of all of the lovely dips and chips and pizza, and I drank coffee and water, or hot tea. I loved my meeting on Friday and have a few things to tell you about that, but that is going to have to wait until Monday as well. Mike and I are headed to the airport to go to Dallas for the weekend and visit our daughter,  Tess. You guys….we are going to meet the boyfriends parents! It’s kind of a big deal. I’m in a huge hurry, and don’t have time to look for a picture of just the two of them, or […]

Round 2, Whole30, Day 15

I was out of bed earlier than usual yesterday, and I woke up hungry. I had an early appointment (about 45 minutes away in morning traffic) to drop off all of my Hazardous Waste! You guys, I had a trunk full! I had 20 gallons of partially full paint, and three boxes of random cans of spray paint, motor oil, paint thinner and a variety of yard chemicals. Um, have I mentioned that I’ve been cleaning out the garage?? Just a large screen TV to get rid of, and my job is complete! Anyhow, before I headed out for my early drive, I ate a bowl of Chia Pudding. I might be liking this Chia Pudding thing. After my early errand, but before working at the Food Truck, I had a little Breakfast Casserole, breakfast number two. While working at the food truck I had a small, very small….Whole30 baby slip. […]

Round 2, Whole30, Day 14

I guess you could say I got my veggies in yesterday. Running a little late this morning, so….. Here are yesterday’s Veggie eats…. Breakfast – 5 SP My favorite breakfast veggie combo. Red Onions, Zucchini and Sweet Potato with 6 Scrambled Egg Whites (lots of protein) topped with Smashed Avocado.   Lunch – 8 SP I packed a salad and a banana to take while working the food truck. Chicken, Mixed Greens and Roasted Butternut Squash.   Afternoon Meal – 10 SP Un-pictured Raw Almonds and a bowl of more Mixed Salad Greens topped with a half an egg and a little leftover Ribeye.   Dinner – 6 SP Turkey Spaghetti over Spaghetti Squash, and because 1/2 a Spaghettis Squash just wasn’t enough noodles, I added a few Zoodles and some Green Beans. These are my 2016 Goals Make time each week to Meal Plan Drink 100 ounces of water […]
