Yesterday was a successful and social Friday, with no drinks. First, I got to finally go to my WW meeting. I hate not being able to go a few weeks in a row. I miss those girls terribly. The meeting was great, and I was down 3.4 pounds from the last time I was there, and that was an awesome way to start off my weekend. It’s only day 3 of Whole30, and I already feel less bloated. After my meeting, I met a friend for lunch that I hadn’t seen in forever and we had all sorts of catching up to do. Round 2, Whole30, Day 2
Yesterday was Day 2 of Whole30, and also day two of just go go go. Before we ate dinner, I showered and put on my pj’s. After dinner, couch time for American Idol and KU Basketball, then bed later than I really wanted. Bed felt like clouds and I was zonked. Dinner could not have been any easier. Cut up veggies in big chunks. Put a chicken on top and season. Bake. This is my Roasted Chicken and Vegetables recipe, and I forgot how…. Easy it is to make. How good it makes the house smell. How delicious it taste! This is a perfect Whole30 meal! Ahhhhh….the smell makes me happy. Think….Grandma’s house. I like to put it on a platter and admire it. Round 2, Whole30, Day 1
I like it when I do some sort of a challenge. It makes coming up with a title for my daily Blog Post a much easier task. Boring, but easy. Day 1 was great! I didn’t snack and I realized that planning and meal prep this go around will be much easier. (I say I didn’t snack, and I didn’t, but I do plan to eat three meals and one planned snack between lunch and dinner each day.) The weather was great yesterday, windy, but sunny and pretty. We were super busy at the food truck and I was equally busy for the rest of the day as well. More Fun at Work
Yesterday was a prep day for us at the food truck. What that means is that I go to the bosses house and we chop, we slice, we blend, we mix and we get to have really good girl chat. My girlfriend Renee (We’ve known each other for about 30 years!) has been working with us for the last several months. Yesterday she came out to help us do some prep work. Really, I think she just came out to see the horses….and the goats. Yep, the boss has two horses, two goats, three dogs and two cats. Renee loves the horses…..I love the dogs. The horses love Sidney. That horse went right up to her and gave her a kiss! Renee fed them carrots, then brushed them, then rode one! It was a pretty darned good day at work! Here are yesterday’s eats…. Round 2, Whole30
If you’ve been reading the blog for a while now, you know that back in October, my husband and I did the Whole30 and we had great success. Feel free to read my Whole30 Recap. I have attempted to do it again since then, but my heart and my brain were not completely committed. We went on an All Inclusive vacation in February, and we ate and drank anything and everything that we wanted. That was the first time since completing the Whole30 in October, that we had really allowed ourselves to eat and drink anything that we wanted. We ate a lot of dairy, a lot of bread and a good amount of sugar and consumed a lot of alcohol over that seven day vacation. Fun at the In-Laws
Because the family has grown so much, we have become pretty good about celebrating holidays together on the day that works best for everyone, and not necessarily on the actual holiday. For the last few years, we have all gotten together on Palm Sunday at my In-Laws house for our Easter celebration. Yesterday was no different. Yummy food and an Easter Egg Hunt in the back yard….. The kids opened up their eggs and munched on candy. Jelly Beans….yum. Lots of fun playing with the grandkids and chatting with the fam. Not only was there an Easter Egg Hunt, there was also a lesson in SnapChat for all of the old people. So entertaining. Me and the hubs both had too much sugar. This is a sugar coma happening here….. Pizza Pizza Pizza
I spent a little time in the kitchen on Saturday and I was in a pizza mood. I ate Pizza all day long. I made this for breakfast, and I really liked it. It’s basically a frittata, which I’ve actually never made, but it is similar. I cooked the veggies, added the whisked eggs, topped that with crumbled cooked bacon and cooked sweet potatoes, put a lid on it and let it cook on the stovetop. Apparently a frittata is much the same, but finishes cooking in the oven. I imagine you all already knew that. I love everything that I have made from Trina at Paleonewbie.com. Ahhh…Control = Happy
Yesterday was a great Friday. I tracked, I counted, I went to bed happy. Today has been super productive, and I’m certain it’s because I have felt so “in control” all week. Busy day today that has included some housework, a few errands and a long walk (windy and chilly!!) outside with a friend. I’m making a new pizza recipe for dinner using a sweet Potato Crust (I hope it’s delicious!) and we’re watching a little Basketball. Quiet and chill night tonight. Celebrating Palm Sunday tomorrow at the In-Laws with our kids and grandkids….minus Tess in Dallas. 🙁 I’m looking forward to being able to go to my meeting next Friday. Back Where I Like to Be, Mentally
It feels good to be back in control. Now that my brain is where it needs to be, I should be able to get the scale back where it needs to be. I never did make it to a meeting this past week, and I won’t be able to go to my regular meeting this morning, but I feel good and I’m looking forward to a great week ahead! Two years ago, a friend of mine and I spent St. Paddy’s Day bar hopping. We had a blast! Last week, we made plans to repeat that day all over again. After thinking about all of the calories that we consumed that day, we changed our minds and changed our plans to do something else later this week, maybe today, maybe tomorrow. Food Truck Fun
There was little time for eating yesterday, and that’s ironic, because I was surrounded by food while working at the Food Truck. All of that deliciousness can be really tempting! You guys, everyone should be so fortunate to have a fun job. We have a lot of fun customers. A few of them, I really enjoy harassing. I think they now expect it. I handed my phone to a regular customer that I like to harass, and asked him to take my picture while we cooked up his burger. Me: “Will you take my picture with my phone?
