First let me say that no matter what I weigh, my highest weight, my lowest weight, Mike has always told me that I’m sexy, and when he says it, I know that he means it, whether I think it or not. For that, and for so many other reasons, I love him. I’ve talked with several women at my WW meeting that have spouses that aren’t super supportive in their journey to become healthier and lose weight. I can’t imagine living with a spouse or partner that didn’t support my journey to a healthier me. Sweet Potato Buns
I’ve been eating these Sweet Potato Buns for a few months now. They are so easy, they didn’t really seem worthy of their own post. I’ve now decided that because they are so easy, and that because I eat them so often, and because they are so good, that they do deserve their own post. Use as a Bun for an Egg and Avocado Sandwich. I had mixed some cooked Chicken with Taco Seasoning and Greek Yogurt. This was really good! Use them like Potato Skins and top with Smashed Avocado, Scrambled Eggs and Bacon Crumbles. Turkey Spaghetti
I love a bowl of spaghetti on a cold night. Wait, I love a bowl of spaghetti on any night, or any day, and I wouldn’t say no to a bowl of spaghetti for breakfast. Oh dang, Eggs on spaghetti? Maybe! It’s one of those comfort meals that I’ve learned to enjoy with less calories, more vegetables, but still taste great and it is so easy to make. Serves 4 One Serving = 0 SmartPoints Ingredients 1 lb. Ground Turkey, 99% Lean 1 onion, diced 2 garlic gloves, minced Sea Salt and Black Pepper, to taste 15 oz can diced tomatoes 15 oz can tomato sauce Optional: Oregano, Basil, Thyme to taste Directions Cook turkey, onions and garlic until turkey is no longer pink and cooked through. Homemade Marinara Sauce
This is an easy and healthy alternative to store bought spaghetti sauces and marinara’s. When you can get a hold of some fresh tomatoes at the produce stand, I highly recommend giving this a try. I am admittedly terrible at writing a recipe. I season to taste, therefore I don’t have measurements on my spices. Forgive me. Kitchen Chaos….
Wednesday I told you all about my new Home Gym. I used it yesterday and I think I love it! Today I am going to list all of the things that happened in the kitchen on Tuesday night. My plan was to cook a meatloaf for dinner, and while that was in the oven, I was going to grill Chicken Breast and Turkey Burgers on my gas grill to make dinner for the rest of the week a cinch. My light bulb in the kitchen, that is the closest to the stove, burnt out, and we were out of all light bulbs. Not a big deal, but just the start. Home Gym, Complete!
I’ve been calling it “The Exercise Room”, and now I’ve decided (although it’s small and really only has a few things in it) to call it our “Home Gym”. I always have fun doing a project, and I’m already pondering what the next one will be. I’ve been slowly painting each room upstairs, all lighter colors. Now I might have to lighten up the dark red bathroom upstairs, and the brown bedroom. Oh, and the entry and hallway. Or maybe……I’ll build that Barn Door that I’ve been wanting to build for the opening between the Master and the Master Bath? Okay, here’s my little room. Lots of Fun, Little Sleep
Not the healthiest weekend, but super fun! Friday morning started off with my WW meeting, then I took my husband on a lunch date, something we rarely do, but should do more often. After that, I ran errands the rest of the day doing some grocery shopping, and finding a few fun accessories for my newly decorated “Exercise Room”. It’s almost done. I hope to buy a TV today! I got home Friday afternoon just in time to make up a big pot of soup for Mike for dinner, then I was off to a friend’s house for a Girl’s Night, celebrating the birthdays of a couple of friends. Okay, I’m acting like this room is some really big deal, and it isn’t, it’s just the only thing I’ve got going on right now. I needed a project bad, and once I get a project started, it’s all I think about. Dinner was even an after thought last night. And….I forgot to prepare anything for Mike’s lunch…..and….I forgot….yes, I forgot….to go to Yoga last night at 6:30. and I really like that class! I was hoping to have a project that wouldn’t cost a lot of money, and so far, so good! We had extra paint leftover from recently painting Mike’s office and I had all of the painting supplies in the garage. Paint Day!
I’ve been slowly prepping my Exercise Room Project for paint, and yesterday afternoon, I finally got some paint on the walls. We recently painted Mike’s home office, and I really liked the color. I remembered yesterday that we had barely used any of the second gallon of paint, so I opened it up and got started. The paint covered great, so I didn’t have to buy paint! Yay! More money to buy fun stuff for the walls! I’m terrible about accepting a bare wall. Before I started painting, I went to a 10:00 am Jazzercise class, then I grabbed a Starbucks coffee. Just black coffee, but so good. Do you ever order a Pour Over? So fresh and yummy. Then I got in line for the car wash, along with everyone else in the city.
