Yesterday wrapped up the end of a really great Weight Watcher week! Short term goals and writing down my goals definitely proved to work for me this week. Last Friday, I worked in the yard, and that was the first activity that I had done in about 10 days since not feeling so great. Saturday I got in a 2.5 mile walk. Sunday, no activity. Monday, I walked 6 miles. Tuesday, Wednesday and Thursday, I went to Jazzercise. This morning, I am going to Yoga, which means that I am going to a Weight Watcher meeting later today than usual. Tomorrow, I am doing a 5K at the Kansas Speedway with a group of neighbors! I’m feeling really good about the activity that I got in this week, and my weekend activity plans. Counting Sheep…and Everything Else
I slept like absolute crap last night. I woke up at 1:00 am to pee from all of the water that I drank at dinner, then I literally just lay in bed awake. The last time that I looked at the clock, it was 3:45 am. I counted sheep. I practiced deep breathing. I made to do list. I covered up. I uncovered. I went from side to side and then to my back. Finally, sometime after 4:00 am, I went back to sleep, only to wake back up at 6:00 am. So….I got up. I had a busy morning anyhow, so I’m just now getting a post up. Here are yesterday’s eats….. Jazzercise and some Yummy Food!
Yesterday I worked at The Food Truck, then I went to Jazzercise, then I showered, made dinner and was on the couch with the hubs and the dogs in my PJ’s watching the Royals game before 7;30. I love those kind of days. It was also one of those really yummy food days that I just need to repeat often. I ate several small things yesterday. Days like yesterday sometimes make me think……..Why is it so hard for me on some days to not overeat? Some days, eating only 26 points can be so easy. I know it’s because I ate a combination of the right foods, and I need to remind myself of that. At the end of the day, I had to make something to eat after dinner, just to get my 26 points in! Banana Ice Cream
I had points left after dinner last night, and wanted something sweet. I decided to give the Banana Ice Cream a try. There are recipes all over Pinterest that say to just blend frozen banana’s. I’ve tried it before, and decided that it was…..okay. I love my banana’s and Almond Butter, so I decided to give it another go, but add a few tasty toppings. Ingredients 2 Frozen Banana’s 3-4 Tablespoons of Almond Milk 5-10 drops of Vanilla Stevia 1 T. of Almond Butter (I love my Trader Joe’s Almond Butter) 1 T. of Granola (I used Gluten Free Vanilla Granola) Directions Blend frozen banana’s, almond milk and stevia drops in blender until it has the creamy consistency of ice cream. A Busy Three Days
Friday afternoon I was feeling 100% like myself, and I was actually craving some physical activity! YAY! After dropping off my daughter at a friends house for her Bachelorette Party Float Trip, I mowed and worked outside in the yard for about an hour and a half and it felt great to sweat! Friday night, Mike and I went out to dinner and listened to a little live music while also watching the Royals game on the TV in the background. Perfect little date night. Saturday, I took a drive down to the Ozark’s in Southern Missouri to spend the night. Tess was on her float trip in that area, and needed to leave at the crack of dawn on Sunday to get to the airport. Happy Friday Y’all
Picked up my kiddo at the airport yesterday afternoon, and spent a nice evening getting caught up. Living in Texas now, she say’s Y’all….all the time….and it cracks me up. I just dropped her off at a friends house to head out on a Bachelorette Party Float Trip for the weekend. It was great to get to see her for the evening and this morning, and now that I’m feeling much better, I’ve got some things to catch up on around the house. A Happy and Healthy Weekend to you All! Lot’s of Sleep!
I was really hoping to wake up yesterday morning feeling like a million damn bucks, but I did not. I did go to work at the Food Truck yesterday, and after that, I had the energy of the Energizer Bunny, with no batteries. I was supposed to meet a couple of High School Friends in the evening, and I did do that. We had a few laughs and planned our next together, but it was an early night and I was home and in bed by 10:00. I woke up this morning at 9:30! Apparently, I was tired. So….I’m rested and I fee a bit better. I’m hoping the antibiotics will really kick in today, and I am hoping that whatever I have, it will go away. Veggie and Egg Breakfast Bowl
I truly love this Breakfast Bowl more and more every time that I make it. I can’t remember why I thought this combo of veggies would taste good together, but they do, and I hope that you’ll give it a try! Ingredients 1 small Zucchini, sliced and diced 1/4 small Red Onion, diced *3 oz cooked Sweet Potato 1 tsp Butter Infused Olive Oil (Any Olive Oil is fine, but the Butter Infused is amazing!) 1 Egg 1/8 Avocado, diced Cracked Black Pepper, Sea Salt *(For my sweet potato, I choose a small to medium potato. I wash them, dry them, poke them several times with a fork, then microwave for 2 minutes. I then turn it over and microwave it for 2 more minutes. If a fork will slide in, then it’s perfect. “Mock” Chipotle Bowl
(I originally had this for dinner a couple of weeks ago.) I love it when a “kinda sorta plan” comes together so well. I really wanted a big Chipotle bowl, so I gave it my best go for a homemade version. This is not really a recipe, but l’ll tell you what I did for this yummy burrito bowl, then you can create your own. I cooked 1 Cup of Quinoa in 2 cups of Chicken Broth. When it was done cooking, I added sea salt, lime juice, cilantro and Chipotle Infused Olive Oil to taste. It’s a little like the rice at Chipotle. I covered chicken breast in chicken broth and boiled them until the chicken was tender and I could shred it.
