5 Week Challenge…Day 9

Yesterday’s activity was supposed to be 2 miles of walking in the morning, and a Jazzercise Class in the afternoon, but due to a few unexpected changes in my day, and just enough of a dry spell in the afternoon to mow, I mowed and missed Jazzercise.  With all the rain, I’m mowing every four days! It’s crazy! I did get in my 2 mile walk yesterday morning. Yesterday was a yummy food day, and for the first time since January, I’m looking forward to my weigh in this morning! I earned 40 activity points this week, and I only ate just over half of my 49 Weekly extra points, so the scale should be fairly kind to me tomorrow. Have a Happy and Healthy Weekend! Here are yesterday’s eats….. Breakfast – 5 PPV Blueberry Oatmeal with Sliced Almonds, Black Coffee   Lunch – 6 PPV 1 C Nonfat Greek Plain […]

5 Week Challenge…Day 8

We had one day of slightly blue skies, then right back to rain and thunderstorms. I have a treadmill, and I’m glad that I do for those snowy, winter days, but I would MUCH rather walk outside and soak up the fresh air!  I sent my friend Becky a text to see if she was available to walk, and I’d say that 9 times out 10, she is! It makes this challenge so much easier knowing that I will usually have a walking buddy! Just a few minutes into our walk, it started to sprinkle, then rain. We kept at it and decided that it actually felt kind of good! She’s pushing me to run a bit, so I’d say out of the six miles that we got in yesterday, at least of 2 of them were running! Yay! I’m racking up some activity points this week! Here are yesterday’s eats….. […]

5 Week Challenge…Day 7

We finally got a little sunshine yesterday. I’m not complaining. I planted just enough flowers a couple of weeks ago that I’m certain had it not been for the rain the last several days, they wouldn’t look so pretty! It was nice to walk with a little blue sky above me though. I’m right on track with my Walking Challenge! One week down and 25 miles down, four weeks and 100 miles to go!   I’m really trying to get in 100 ounces a day! Are you keeping hydrated? Here are yesterday’s eats….. Breakfast – 3 PPV Blueberry Pancakes, Black Coffee. I truly love how easy and yummy these are.   Snack – 3 PPV Nonfat Latte. Why does this look like chocolate milk?   Snack – 0 PPV You gotta love a zero point snack!   Lunch – 10 PPV Black Bean Quinoa Taco’s for Taco Tuesday! After eating my […]

Black Bean Quinoa Taco’s

I love throwing things together that I find in the fridge. While eating a dinner the other night of egg whites, quinoa, black beans, smashed avocado and salsa all mixed up in a big bowl, I wondered why I hadn’t thought to add taco seasoning to my bowl of yumminess. With the fridge still stocked with cooked quinoa and black beans, I came up with this little creation, and I decided I’d share. 3 Taco’s = 10 PointsPlus Ingredients 1/2 C. Broccoli Slaw mix 1 tsp Chipotle Infuse Olive Oil (Any Olive Oil is fine) 2 T. Bell Pepper, chopped 1/4 C. Corn, cooked 1/4 C. Black Beans, rinsed and drained 1/4 C. Cooked Quinoa (I like to cook mine in Chicken or Vegetable Broth for more flavor.) 1 tsp Homemade Mexican Seasoning (or any taco seasoning) 2 Wedges of Laughing Cow Cheese, Creamy Light Swiss (The Queso flavor would be […]

5 Week Challenge…Day 6

On the 1st of April, I got a cortisone shot in my left shoulder. I have rotator cuff tendonitis and a partial tear in the rotator cuff. (I had rotator cuff surgery on the right shoulder 2 1/2 years ago.) The shot gave me relief for about 5 weeks, then its slowly been wearing off. My last Yoga class was super uncomfortable. Today I went in for shot number two! I’m taking a break from Yoga and Jazzercise (again), but should be good to go by Thursday or Friday! Finger’s crossed for no more surgeries, but I’m not feeling very optimistic about that!   I did however get in a good 5 Mile walk!   I got a few more Instagram followers yesterday that got me to 1000!! I feel this ridiculous pressure now to make something that looks super kick ass in a picture, is low in points, and […]

5 Week Challenge…Day 5

Yesterday was Day 5 of my 5 Week Challenge to focus on Simply Filling Foods and Walk (a little running too) 125 Miles. I’m on schedule with my walking, and my legs were needing a break, so I took the day off yesterday. When you are eating Weight Watchers Simply Filling, you can eat things that are not on the Simply Filling  Food List, you just count the points. Since I’m counting points anyhow, I just kept track and at the end of the day, I felt like I had done a good job of keeping my choices within moderation. If you’re new to the blog, I like my adult beverages, and I had planned to really limit those in 2015. I’m not doing so great in that department. My Sunday started off with coffee at a girlfriends house with a few friends, followed with going out for brunch! The […]

5 Week Challenge…Day 4

I’ll just start by saying that yesterday was a lot of fun and a Perfect Saturday! A friend came over for coffee, then we headed to downtown Overland Park to the City Market. It’s small compared to downtown Kansas City’s market, but they have a lot to offer, just on a smaller scale. My friend and I noticed a long line at a tent, so we stopped to see what must be so good that there was such a line! It was for toast.  This toast…… They also had Pour Over Coffee, (you can see them making it behind my toast!) which I love! The toast was amazing. We had them cut ours in half so we could share it, and I did share a couple of bites of mine with some friends that we ran into! I’m guessing on the points, but it really was worth standing in line […]

5 Week Challenge…Day 3

I’ve literally spent the last 3 days at the Verizon store in an effort to help my mom enter the texting world so she can keep in contact with my brother. Mom can now text, and send and receive pictures. Miracles do happen. My older brother (haha, my only brother) sold his house and everything that he owns last year and lived in his camper for one year to prepare for a new journey in his life. This is him, learning how to use his iPhone. Also…a miracle. He prefers the simpler things in life, hence the camper.   He left three weeks ago to head to the east coast and start a new life of camping and beaching it! This is his home! (I think this picture was at a KOA campground is N. Carolina?)   He calls her Stella.   This is the rear end of the trailer […]

5 Week Challenge, Day 2

I did some shopping yesterday! The last time that I went to Jazzercise, I knew I would have to buy new shoes before I went to another class. Walking Shoes are NOT Jazzercise shoes!  And speaking of walking shoes, those babies had a few miles on them and it was time for a new pair! Good shoes are important!   I bought a pair of workout pants at TJ Maxx a couple of weeks ago that I love! They are fairly high waisted and the waist band is wide, so they stay up when I’m jumping all around! I found a few new pairs to jump up and down in! Now I’m really ready for my 5 Week Challenge! I walked one mile in my new Walking shoes, and I jumped up and down in my new pants while wearing my new Jazzercise shoes! I ate some yummy food, and went […]

5 Weeks…Day 1

It’s so much fun to write a blog post when I’ve had a really successful and healthy day! It felt good just writing my blog yesterday morning knowing I had a goal for the next five weeks. On Tuesday, I walked 6 miles with a friend in the afternoon and watched Extreme Weight Loss on Tuesday night, so I was feeling energetic and motivated to set some goals. Yesterday, I worked at the food truck, and I did end up eating my lunch there. I ate a burger with no bun, no cheese, no mayo, but I enjoyed it with the avocado corn relish that we serve on one of the burgers. So, while I had planned to not eat at the food truck, what I ate was a good choice, and I kept within my points for the day. After work, I took the dogs on a walk. The route […]
