I made it to the Hot Yoga class, I got a lot of Christmas shopping done, I did a few chores, I had dinner planned and Mike and I enjoyed a quiet night on the couch with a fire going, the Christmas Tree lights sparkling, and watching a Country Christmas show hosted by Jennifer Nettles. I can’t remember the name of it, but I loved all of the music and while I watched it, I sipped on Candy Cane flavored coffee! Today will be a real close repeat to yesterday. I’m headed out to yoga now, I’ve got dinner planned (Chicken and Roasted Veggies) and a Christmas shopping list ready to go! I hope you have a Healthy and Happy Day! Here are yesterday’s eats. The Perfect Thanksgiving
Tess came in town for the Thanksgiving Holiday early last Monday morning, and I just took her to the airport last night. We had almost an entire week together and I loved every minute of it! I spent two full days getting the house ready for Thanksgiving, and the rest of the week, we spent having lunches, coffees and dinners with lots of family and friends. We had 21 family members here for Dinner, and it was The Perfect Thanksgiving! How Mike didn’t realize that a large portion of his face was covered up, I have no idea….and, not ONE grandkid cooperated for this picture, but from goofy to prayerful to irritated to completely oblivious, their expressions and this whole family picture makes me smile! Just Checking In….
Things are not going exactly as planned for my week! Friday, the first day of my Weight Watcher Week, was an early birthday celebration with too many cocktails, but I did get my walk in. Saturday, I didn’t make the best choices where food was involved for my birthday dinner, but I did walk. Sunday, Thanksgiving number one seemed to be a plate full of carbs with a side of wine. Tucker and I took a misty three mile walk on Sunday, but I am really behind in this challenge! I picked up Tess at the airport early Monday morning and we got all caught up over latte’s and breakfast. I spent the rest of Monday getting the house ready for Thanksgiving. Happy Birthday to Me!
Yesterday was my 48th birthday and I’ve been spoiling myself all month long. I like having a birthday month! I know there are some who would rather not discuss their age, some who don’t want to make a big deal of their birthday, some who say “It’s just another day”, and some who don’t expect much on their birthday. I am none of those people. I say celebrate all month long! I like card’s. I like girly lunches. I like Happy Hour’s. I like massages. I like coffee in bed. Thanksgiving Table for 20, Please.
Success! When I rolled out of bed yesterday morning, (it’s not just a metaphor, sometimes I literally roll out!) I went to my coffee corner. Staring me in the face was a baggie with a leftover corn muffin in it. That corn muffin seemed to be staring at me. I really wanted to make that first morning cup of coffee, heat up that muffin, drizzle it with honey and gobble (hello, it’s almost Thanksgiving…..gobble…get it?) it up! Instead, I threw it away. I promised myself that I was going to have a great week, and Thursday is day 7 of my WW week! I didn’t want to blow the last day of my awesome week! Vegetable Tot’s?
I’ve been looking at a lot of recipes lately, and I have loved everything that I have made from Gina’s awesome recipes over at skinnytaste.com. When I found this recipe for Broccoli and Cheese Tot’s, I knew I had to try it! They were absolutely delicious! Now, I can’t wait to try her recipe for Zucchini Tot’s and Cauliflower Tot’s. These were easy too!. You mix up a few simple ingredients, roll em in little tater tot shapes, and put em in the oven! Ta Da! The last thing I would have thought to dip these in was ketchup, but you know what? That’s exactly what we did and they were crazy tot tasty! I planned for a successful week this week, and so far things are really going well. I planned out my meals for the week on Sunday and I did my grocery shopping, I am continuing on my 100 Miles in November Challenge, AND I’m getting in some awesome Yoga classes! I’m keeping myself busy while I’m at home and staying out of the kitchen! If you read my blog regularly, you know that I work at my friends food truck throughout the week. Her food is really awesome, and that can be a real challenge for me sometimes. I took this first week of November off, and since then it’s just been to cold for the propane to cooperate, so we haven’t been working. Salted Caramel Smoothie
Even though it is ridiculously freezing outside, I was craving a cold sweet treat! I always keep a few of the Weight Watcher Smoothie Mixes in my pantry, and I hadn’t had one in a long time! I stepped away from the fireplace for just a few seconds, and I pulled this out. I put it in a blender, then I added a few other simple ingredients (frozen banana chunks seem to give smoothie’s an awesome creaminess!) and then I remembered that I had some caramel ice cream topping in the fridge! It’s tough to say why or when I bought that ice cream topping (I’m thinking grand kids), but the shelf date was safe, so I knew I wouldn’t die if I used a teaspoon or two. Then I made this….. Chicken Sausage Skillet Meal
We came home from our night out on Saturday night (okay, Sunday morning) at 1:00 am. Tucker had pooped in his crate and it was a mess. I spent the next hour giving him a bath and disinfecting the crate. FUN!! At 2:00 am, I crawled into bed. Mike was fast asleep. I’d love to tell you about how Mike helped me clean up the poop mess, but the last time this happened he did it all wrong and I let him know it, so this time, I just sent him to bed.
