Literally heading out the door! Ate pretty good yesterday and drank lots of water and did a 30 minute walk/run in the treadmill!   Heading to Chicago!!   Breakfast Egg Whites, Green Pepper, Cheese, Canadian Bacon Lunch Pulled Pork and Slaw while working at the Food Truck Snack Crockpot Shredded Mexican Chicken Dinner Veggies, Chicken, Sausage   Snack This little treat came in the mail from some friends! Decorating From Pinterest!

 Loving Some of the Pinterest Ideas! I’ve been spending a little bit of time looking on Pinterest for a few decorating ideas for the front porch, the mantel, and a few different ideas on what to do with lanterns. I finished up the decorating on Tuesday and I am loving some of the Pinterest ideas! My pictures are dark and don’t really do any of my decorating any justice, but I’m in a hurry and it’s all I’ve got! 🙂 I’ve never done pots on the porch before for Christmas. Not sure how I feel about them. One Big “To Do List!”

My “To Do List” Monday morning.   1. Pay Bills (um, a couple might be late! I seriously have been busy……) 2. Order Christmas Cards. (Christmas Eve is in THREE WEEKS!!) 3. Laundry…ALL OF IT! (I like cloth napkins and real plates for Thanksgiving, so I had a lot of clean up yet to do from Saturday’s dinner at our house.) 4. Start packing for Thursday’s trip to Chicago. (Most people that know this about me likely think it’s weird, but I like to plan outfits, then take a picture of them. Even the accessories! For me, it makes packing so much easier. The Truth Is In Your Jeans……

You thought I was kidding??   You wanna be able to fasten those babies with a little room!   That tight thigh thing? Happy Thanksgiving (Number Two!)

I lied.   I didn’t intentionally lie, but I did lie. I said I was going to take a walk after Thanksgiving Dinner on Thursday. I said I would blog everyday over the Thanksgiving Holiday. I said I would go to my WW meeting on Friday morning AND weigh.   I did none of those things. I swear I had really good intentions. Here is what I did right. On Thanksgiving Day, I put small portions of what I really liked on my plate. I did NOT go back for seconds. I drank a LOT of water. Friday morning, Tess and I met a group of my girlfriends from high-school (one was only here for a few short days from out of town)  for coffee and breakfast. Happy Thanksgiving!

  We picked up Tess at the airport at midnight last night! I was sooo happy to see her and I am so excited for the next few days together! She mailed me a birthday card last week and included in it was the sweetest letter! Then last night she gave me this coffee mug (this girl know’s her mama loves her coffee!) that she drew the cutest design on!     Moving from Kansas City…..     all the way…….     to Dallas! Simple Post….

Running behind this morning, so basically I’m just telling you what I ate yesterday. I LOVE the baked oatmeal. I individually wrapped the rest of it in wax paper and put it in freezer bags and popped it into the freezer, so I’ll let you know how those frozen portions taste when I eat them! I made chicken in the crockpot and Mike ate that for dinner, but I had some other chicken that needed to be eaten, so I had that. I cooked a lot of food this week that had absolutely NOTHING to do with Thanksgiving!! I will post through Thanksgiving and through the weekend, even though I know things will be busy. Baked Oatmeal, Chicken & Eggs!

In preparation for Thanksgiving Dinner on Thursday, then again on Saturday, I’m planning on basically eating Chicken and Vegetables all week, and by all week, I mean Monday, Tuesday and Wednesday. After Sunday night’s Chicken & Green Bean Casserole success, I decided to cook up some more chicken in the crockpot to have for the next few days. I’ve mentioned before how I know that planning is so helpful for me when it comes to eating healthy. If I have a plan, and I have food prepared, or at least on hand, I am so much more apt to be successful. Crockpot Shredded Mexican Chicken

This is maybe the easiest and tastiest way to have shredded chicken on hand for Taco’s, Quesadilla’s, Enchilada’s, Nacho’s, Taco Pizza, Taco Salad, Omelets or just to eat out of the bowl! Top a bowl of this with a bit of cheese and light sour cream and I am good to go! I can’t remember who first told me about this recipe? I know a lot of my friends make it, and everyone loves the fact that it IS so easy and you can use the chicken for so many different meal ideas. Ingredients 4-6 Frozen Chicken Breast 1 (24 oz) Jar of Salsa 1 Packet of Taco Seasoning (I like to use Homemade Taco Seasoning) Directions Put the frozen chicken breast in the crockpot. This recipe comes from Rachel over at RachelCooks, which she apparently adapted from allrecipes. I want to give credit where credit is due.
