I spent a little time in the kitchen on Saturday and I was in a pizza mood. I ate Pizza all day long. I made this for breakfast, and I really liked it. It’s basically a frittata, which I’ve actually never made, but it is similar. I cooked the veggies, added the whisked eggs, topped that with crumbled cooked bacon and cooked sweet potatoes, put a lid on it and let it cook on the stovetop. Apparently a frittata is much the same, but finishes cooking in the oven. I imagine you all already knew that. I love everything that I have made from Trina at Paleonewbie.com. You can click HERE for her recipe that inspired this breakfast. She actually calls hers a Potato Bacon Pancake. I call mine…Crustless Egg Pizza. I know. I know. It’s a frittata. Whatever. This recipe was plenty to have leftovers for lunch, so I did. For […]

Ahhh…Control = Happy
Yesterday was a great Friday. I tracked, I counted, I went to bed happy. Today has been super productive, and I’m certain it’s because I have felt so “in control” all week. Busy day today that has included some housework, a few errands and a long walk (windy and chilly!!) outside with a friend. I’m making a new pizza recipe for dinner using a sweet Potato Crust (I hope it’s delicious!) and we’re watching a little Basketball. Quiet and chill night tonight. Celebrating Palm Sunday tomorrow at the In-Laws with our kids and grandkids….minus Tess in Dallas. 🙁 I’m looking forward to being able to go to my meeting next Friday. I hope you all are having a Happy and Healthy weekend! Here are yesterday’s eats….. Breakfast – 3 SP Egg Whites Scramble with added leftover roasted Butternut Squash, topped with smashed Avocado and a side of fruit. Lunch […]
Back Where I Like to Be, Mentally
It feels good to be back in control. Now that my brain is where it needs to be, I should be able to get the scale back where it needs to be. I never did make it to a meeting this past week, and I won’t be able to go to my regular meeting this morning, but I feel good and I’m looking forward to a great week ahead! Two years ago, a friend of mine and I spent St. Paddy’s Day bar hopping. We had a blast! Last week, we made plans to repeat that day all over again. After thinking about all of the calories that we consumed that day, we changed our minds and changed our plans to do something else later this week, maybe today, maybe tomorrow. I ended up spending the day at home taking care of things that I have been neglecting for several […]
Food Truck Fun
There was little time for eating yesterday, and that’s ironic, because I was surrounded by food while working at the Food Truck. All of that deliciousness can be really tempting! You guys, everyone should be so fortunate to have a fun job. We have a lot of fun customers. A few of them, I really enjoy harassing. I think they now expect it. I handed my phone to a regular customer that I like to harass, and asked him to take my picture while we cooked up his burger. Me: “Will you take my picture with my phone? Wait, do you know how to do that?” Him: grumble grumble Me: “I still don’t think you know what you’re doing. You’re holding it all wrong.” Him: grumble grumble Me: “Okay, I think you’ve got it now. Cheese.” Do you get to have this much fun at your job? I hope so. […]
Snacked and Tracked
I snacked a lot yesterday, but I snacked smart, and I tracked everything. I did not eat any sugar or drink any alcohol. I did eat a lot of protein. I got in a walk, I didn’t binge, and I went to bed feeling satisfied with my day, and happy. I’ve got a full day planned today and headed out the door, so here are yesterday’s eats….. Breakfast – 6 SP Veggie and 5 Egg White Scramble topped with Smashed Avocado and Salsa. Those mini bell peppers I grilled out on Monday tasted great in my breakfast scramble! This also has 75 g of cooked white new potatoes and 10 g of cooked bacon. Have you tried a Cara Cara Orange? So sweet! Snack – 5 SP 30 g of Raw Cashews Lunch – 5 SP Leftover grilled everything and some boiled new potatoes. This taste great hot or cold. […]
Do What Makes You Happy
Yesterday, I filled my day with things that make me happy, and avoided most of my “to do” list. I slept in (stupid time change), then I had coffee on the deck. I soaked up some late morning rays with my little Tucker man. He loves a nap in the sun. That’s some Doggie Bliss right there. I experimented with some sweet potatoes and zucchini for breakfast cakes. After writing my blog post, Sugar is the Devil, Tucker and I took an hour walk. A walk on a beautiful day is a great way to clear your head of negative vibes and fill it up with positive vibes. After doing just a few of my “to do’s”, I grilled out some Chicken and Asparagus and soaked up some more sunshine, all while listening to Bob Seger, Lynyrd Skynyrd, Elton John, the Eagles, Fleetwood Mac and a few other of my favorite oldies […]
Sugar is the Devil
I am never trying to beat myself up when I write a blog post like the one that you are about to read. Writing my blog (journaling) has taught me a lot about myself. When I get my feelings and thoughts out of my head, and down on paper (or here on this screen), it helps me solve my problems and it helps me to move forward, sometimes it just takes a little longer than others. I have journaled since grade school, and it’s just how I figure my shit out. If it helps you figure your shit out too, then that’s one of the benefits of me sharing. While I am not beating myself up, I am recognizing my struggles, and I am sharing my thoughts and feelings. I know for a fact that sugar and alcohol are to blame for my recent struggle to get back on track like I […]
Count it and Track it!
I’ve been a real crap WW member these last few days and I still have some vacation pounds to get off. Lately, it’s one good food decision, one bad, one good, one bad. I know that allowing myself to eat sugar and drink alcohol has increased my sugar and carb cravings, and I need to put a halt to that today! I could go on and on about what I have had to eat these last few day’s, but it would be a waste of my time, and yours. These are the facts. I’ve not been tracking these last several days and I know that I am eating too much food. My goal for the rest of the week is to know the nutritional information of the food that I am eating and track it before it goes into my mouth. Pretty simple, huh? “love the life you live, live […]
Lot’s of Work with a Little Play
Last weekend was spent in Dallas with one of my favorite peeps! My daughter, Tess, lives in Dallas and moved into a new apartment a few weeks back. She was wanting a little help getting organized and we were both feeling the need for some mother/daughter time, so we planned a visit and accomplished all sorts of things. It’s has taken me forever to sit down and write this post and get back into my weekly and daily routine. I came home early Tuesday morning to all sorts of unexpected events, but the week has finally slowed down, and Friday’s always seem the best day for me to get back on track, being my Weight Watcher weigh in day and all. I had to escort the hubs to a Dr. appt. this morning, and I’m working next Friday, so I really need to plan to attend a different meeting before I […]
Dallas Bound for a Long Weekend
I haven’t been to Dallas to visit my kiddo for a long weekend in quite a while, so it’s time! She has Saturday, Sunday and Monday off, so we are going to enjoy some much needed mother/daughter time. She is in a new apartment since I was there last, and loves it. She wants to just hang out and chat and cook. Maybe sip some wine. Okay! I spent yesterday running a few errands, doing laundry, housework, and making sure the hubs has plenty of healthy options while I’m gone. The weather was really nice yesterday, so I had the windows open letting in some fresh air and the tunes playing in the background. I love a day at home cooking and listening to music. My mom came over and we got all caught up while I whipped up a few things in the kitchen. It was kind of fun having her […]
