Round Two, Whole30, Day 5 Guys, I don’t know how to say this, and I don’t want to sound all high and mighty Whole30, (and I could totally change my mind a few days from now) but the second time around is sooooo much easier! Quick and Easy Cauliflower Rice
I love finding new ways to cook different foods, especially foods that are Weight Watcher friendly and taste great. While doing Whole30, and counting SmartPoints, I’m always looking for different ways to eat my veggies. I had heard of Cauliflower Rice before, but I like Whipped Cauliflower so much, I hadn’t taken the time to try the rice yet. Well, that’s now changed. This could not be any easier to make, and I like easy. I make my Cauliflower Rice using this Vegetable Broth from Trader Joe’s because I love the flavor it gives the rice without having to add anything else, except maybe a little salt. You could certainly use water in place of the broth, but that seems boring. No judgement though if wanna be boring. Cut up the cauliflower and place it in a food processor. Pajamas All Day
Yesterday was a super lazy day that included sleeping in, then coffee in my pjs at a neighbor’s house with friends. After I came home, I made myself a yummy breakfast and remained in my pj’s for the rest of the day. I made a Shepherds Pie for dinner. This picture cracks me up below the above picture. It looks like a mini casserole! I cooked up a package of paleo bacon. Did you know that it’s really hard to find bacon with NO added sugar? I buy this at Whole Foods. I made a yummy breakfast for my pups. Yep, I did. These kids love sweet potatoes, bacon and egg whites just as much as I do! I put the rest of the cooked bacon in the freezer. Chilly!
I haven’t been for a walk outside in a while with the colder temps, but Tucker and I braved the cold yesterday and got in a 2 mile walk. It was a planned walk around the block, then I decided it wasn’t absolutely awful outside, so we continued. I suppose we stopped along the way a few times. He is ALL boy. I am in some kind of re organizing frenzy around my house right now with cleaning out closets, drawers and cabinets. Now I’m taking down everything hanging in the hallways and pondering a new paint color. With the colder temps, we are not able to open up the food truck, so I’m keeping myself busy around the house. Lot’s of Yummy Food Today!
I’ve been terrible about putting new recipes on my blog. I’m just not very good at writing recipes. Maybe a new 2016 Goal?? Learn how to properly write a recipe!! I’m a new fan of cauliflower rice, and because of this, I want those of you that like cauliflower, to give it a try! I promise, by the end of the week, to write a recipe on how to make cauliflower rice. It’s super simple. Put cauliflower in a food processor until it looks like rice. Then put your “rice” in a pot with just enough broth to make the cauliflower moist. Cook on medium until cauliflower is soft. Season to taste. There…. that’s the recipe!! Happy (Very Late!) New Year
I hope you all had a very safe, and a very Happy New Year’s Eve. My New Year’s Eve was filled with games, silly pictures and lots of laughs. There was even a trophy for the Wii Bowling Winner! I climbed in bed at 2:00 am. (Mike went home long before that. Sometimes….okay, most of the time, he’s smarter than me.) I woke up Friday morning (New Year’s Day) ready to start the New Year. I got dressed, made myself a coffee to go, and hopped in my car and headed to my WW meeting. I was really looking forward to starting my WW week and my New Year! What an idiot. 2015 In Review
I just reread my post titled, 2015, Bring it!. It was a recap of my 2014, and my plans and goals for 2015. After reading that post, I realize that 2014 was a really great and busy year and 2015 was really boring. Here is a recap. Hopefully the pictures make it seem a little more exciting than it was. January I made the following goals for myself, and posted them at the end of each blog post for most of the year. This is What I Will Accomplish in 2015 I Will Choose One Occasion Per Month for Social Drinking I will go no more than two days in a row without some sort of exercise. Are You Ready?
Are you ready for 2016? Have you had time to reflect on 2015? I hope it was a great year for everyone. The older I get, the more I enjoy reflecting on the past year, then planning for the upcoming year. I love change and I love a fresh start. It’s an opportunity to set new goals and challenge myself. It’s going to be a great year! The last few days of 2015 have been nice and quiet. I don’t take down my Christmas decorations until after New Year’s, so I’ve been enjoying the last few days of lights and stockings and candles and the fireplace. I met a friend for lunch yesterday, and today, I’m treating myself to a movie, which means I need to get myself dressed. Have a great day! I ate well yesterday, but I didn’t count points. Our First Snow
After posting yesterday’s blog, and thinking about what a wonderful Christmas we had, and how happy I was that Tess and Manuel made it home safely to Dallas, I felt completely selfish for not acknowledging in my blog post the fact that so many people around the country experienced tradgedy over this holiday season with the winter storms. Please know that we are all thinking of those affected by the storms and that we have you all in our thoughts and prayers. Now, we did end up getting some snow in Kansas City yesterday, but not much. First, freezing drizzle, then a little snow. Thank goodness the kids are still out of school on Winter Break, and at least some accidents were avoided with less traffic on the roads. Christmas Fun!
I’m pretty certain, that every year of my entire life, I’ve said…..”Now THAT was the best Christmas ever.” And each year, I mean it. They just get better and better, and the more the family grows, the more people we have to share it with. My Mother-In-Law thought it would be nice if we could all go to Christmas Mass together this year. I’ll be honest, we don’t go to Christmas Mass every year, but it was a pretty easy gift to deliver, so as many of us went as could, and I know that she loved having us all sit together on Christmas Eve. After Mass, most of us slipped into pjs, then we had a houseful for food and presents. I always save the stockings for the end.
