Cleaning Up Shop

I had several blog post go out last night.  My daughter (who likes a lot of the same foods that I like) had recently mentioned to me that she has had a hard time finding a couple of my simple recipes, and that a few of them needed a little more instruction for the less experienced cook. I don’t claim to be an experienced cook at all, but I understood where she was coming from and appreciated the constructive criticism. Like my body and my health, my blog is a work in progress. I took her advice and revised a few recipes and then rewrote a few all together. I’m now going through each item under my recipe tab, one at a time, and making the necessary changes. Banana Nut Butter Roll Up

  I thought these made a great Gluten Free Snack. I don’t eat “Gluten Free”, but sometimes I just like to buy different products and give them a try. These are simple and this particular brand of tortilla reminds me of a pastry. Ingredients 1 Brown Rice Tortilla (3 PointsPlus) 1 T. of your favorite Nut Butter (Most Nut Butter’s are 3 PointsPlus for 1 Tablespoon) 1 Banana Honey to drizzle Directions It’s self explanatory, but I’ll tell you what I did just for fun. Spread Nut Butter on Tortilla. Roll up banana in tortilla. Slice and drizzle with honey. This is approximately 6 PointsPlus, so you might want to share these with your children. They will love you….more than they already do. (I’m fairly certain these would taste good on any kind of tortilla. There are no rules.)   “love the life you live, live the life you love”

Just a Little Catching Up!

Since I indulged a bit over the weekend, I wanted to make sure yesterday was a great and healthy day. I ate 26 points. I went to Jazzercise after lunch, and I went to Yoga before dinner! I’m feeling pretty fantastic! Guess who got an award for attending 25 Yoga Classes? This girl. The Reward was a Chocolate Kiss. It made me giggle that I got a piece of candy as an award for exercising, but I think it’s dark chocolate, so I’m certain that it’s good for me. 🙂 Here are yesterday’s eats…. Weekend Fun, Friends and Food

I’ve had a busy and full weekend and I allowed little time for blogging. A couple of friends came over Friday for a small Happy Hour. Happy Hour started at 4:00 pm and ended at Midnight. Saturday I was very busy……sleeping in. My 8:00 am Yoga class did NOT happen. Saturday evening, Mike and I had a date night. We went out for Mexican food, and the only thing that I drank was water, and more water, and then some more water. Did I mention that Happy Hour lasted longer than an hour? After dinner, movies on the couch. Possibly my new favorite way to spend a Saturday night. Feeling Strong

My Weight Watcher week begins on Friday, and I’m feeling really good about this past week. My goals for the end of July and the month of August are…. Exercise Jazzercise three times a week (I’ve never gone more than once or twice a week) Yoga one time a week (I’ve never made a Yoga commitment….I just go when the mood strikes me). Walking three miles at least two times a week. Food – Only Allow myself to eat 10 of the 49 Extra Weekly Points. Drinks – Drink only ONE time per week.    I did make it to three Jazz classes, I went to Yoga two times, and I completed a 5K. So things were switched up a bit, but I got in 6 days of good exercise, which is the point of having my plan. I did eat half of my 49 points instead of only 10. I only […]

Healthy Day, Happy Day

I planned my food for the day a little better yesterday than I did the day before. I spread my points out throughout the day, I allowed myself to eat a delicious lunch at the food truck, I snacked smart, I ate Cake AND Ice Cream, I stayed within my 26 points and I went to Jazzercise. Yay. Good day. Here are yesterday’s eats….. Pre-Breakfast – 1 PPV Banana and  Frothy Coffee made with Vanilla Flavored Coffee, Vanilla Stevia Drops and topped with cinnamon.   Breakfast – 5 PPV Light English Muffin with Egg Whites and 30 g Smashed Avocado, Strawberries and a Pear.   Lunch – 8 PPV Pork Bahn Mi Bowl at the Food Truck   Snack – 3 PPV I ate the missing 1/4 (basically, two bites) of this really rich, Cherry Filled Iced Chocolate Brownie Cake at the Food Truck. Yuuuummmmmm. Too Many Points…Too Little Points

Yesterday I was out of the house and busy. By the end of the day, I really had to work at dinner to get my points in, where as the day before I was at home all day and I ate more points than I needed to eat. It’s funny how the brain can work sometimes. One day, practically all that I am thinking  about is food and eating, and the next day, food and eating (or should I say overeating) is not on the brain at all. I had a great breakfast yesterday and I headed off to work (doing food prep for the Food Truck this week) without a plan for lunch.  We worked from 10-3 and I never really thought about eating anything, except for a taste of cheese.
