I wrote a blog post in February, 2014 about Overeater’s Anonymous. I wrote an update regarding that post in July, 2014. I’ve received a lot of emails from readers who really seem to relate to those post, and due to some of the comments and emails that I’ve received lately, I thought I would repost it. I am, and I always be, a work in progress. Lot’s of Sleep!

I was really hoping to wake up yesterday morning feeling like a million damn bucks, but I did not. I did go to work at the Food Truck yesterday, and after that, I had the energy of the Energizer Bunny, with no batteries. I was supposed to meet a couple of High School Friends in the evening, and I did do that. We had a few laughs and planned our next together, but it was an early night and I was home and in bed by 10:00. I woke up this morning at 9:30! Apparently, I was tired. So….I’m rested and I fee a bit better. I’m hoping the antibiotics will really kick in today, and I am hoping that whatever I have, it will go away. Veggie and Egg Breakfast Bowl

I truly love this Breakfast Bowl more and more every time that I make it. I can’t remember why I thought this combo of veggies would taste good together, but they do, and I hope that you’ll give it a try! Ingredients 1 small Zucchini, sliced and diced 1/4 small Red Onion, diced *3 oz cooked Sweet Potato 1 tsp Butter Infused Olive Oil (Any Olive Oil is fine, but the Butter Infused is amazing!) 1 Egg 1/8 Avocado, diced Cracked Black Pepper, Sea Salt *(For my sweet potato, I choose a small to medium potato. I wash them, dry them, poke them several times with a fork, then microwave for 2 minutes. I then turn it over and microwave it for 2 more minutes. If a fork will slide in, then it’s perfect. “Mock” Chipotle Bowl

(I originally had this for dinner a couple of weeks ago.) I love it when a “kinda sorta plan” comes together so well. I really wanted a big Chipotle bowl, so I gave it my best go for a homemade version. This is not really a recipe, but l’ll tell you what I did for this yummy burrito bowl, then you can create your own. I cooked 1 Cup of Quinoa in 2 cups of Chicken Broth. When it was done cooking, I added sea salt, lime juice, cilantro and Chipotle Infused Olive Oil to taste. It’s a little like the rice at Chipotle. I covered chicken breast in chicken broth and boiled them until the chicken was tender and I could shred it. (30-40 minutes)I drained the broth into a separate bowl, shredded the chicken, added taco seasoning, and added some of the broth back to the chicken. I then let the […]

Zucchini Bites

It was one of my Pinterest browsing days, and some Zucchini Pizza Bites caught my eye. I had some leftover Turkey Taco Meat with Black Beans, Corn and Tomatoes mixed in, and I decided that sounded like a great topping for some  Zucchini, so I made these little Zucchini Bites.   Broil for 1-2 minutes, or until cheese melts. Today…Ugly Food Pictures

Yesterday was one of those days at home that I wanted to eat all day long, but since I had Mike home to occupy me, I didn’t do too bad. I had breakfast, later I had lunch, then I had some healthy snacks. While preparing a salad to go along with dinner, I started eating the Walnuts and Dried Cherries that were supposed to go into the salad. When it came time to make the main course, I cut up leftover Baked Chicken Parmesan, cooked some spaghetti noodles, added marinara and a little Ragu Light Alfredo Sauce. I kept tasting it as I was making my concoction and before I knew it, I realized I was full. I’m sure the walnuts and dried fruit didn’t help. Blah, Ick….and some more Blah…..

Aside from a friend coming over for coffee with her dog for a doggie play date in the backyard, then my mom coming over for coffee and to see the new floors, I napped off and on and hung out on the couch all day yesterday. I snacked a lot, but kept it to fruits and veggies. Last night I switched from NyQuil to Mucinex and right now, I hate mornings.  That is all…….   Here are yesterday’s eats…… Pre-Breakfast – 1 PPV Frothy Coffee, Banana and Clementine   Breakfast – 4 PPV Peanut Butter Packed Pancake  I usually top this pancake with Almond Butter or Peanut Butter, but yesterday I put frozen blueberries in the microwave for 1-2 minutes and used them as topping along with a banana. Hand Hugs!

I live one mile from my Walmart. I almost despise going in there. I’m the person that always picks the super slow line when checking out, when I’m looking to buy something that I don’t typically buy, I can never find it there, and I always seem to get the grumpy cashier. Friday, I went to a Walmart that is down the street from my WW meeting, about 20 minutes from my house. I did not find what I was looking for, but I did find this super cute coffee mug, and I had to have it. While I was waiting in line to check out, the elderly gentleman that was working the check out, shook the hand of the customer (an elderly woman) in front of me as he handed her change back to her. Well, finally……

I had a successful day in the healthy eating department yesterday. I ate a smart breakfast, I packed a snack to take to the Food Truck, and I did eat lunch at the food truck, but it was a smart choice. The rest of the day felt easy to make the best choices. I drank a ton of water and I even chatted with a few neighbors before dinner who were having drinks, while I sipped on a latte. Yay!  I’ve got some sort of an icky cold, or alergies, or something, but I feel blah and still have done no exercise this week. I’m the absolute worst at knowing what “over the counter” drugs to take when I don’t feel great, so I usually take a lot of Advil and hope for the best. My Blog and Accountability

Between not feeling so great the last couple of days, the rainy weather with temperatures in the 60’s, and 4 days of alcoholic beverages over my long weekend, I was craving comfort food and carbs all day yesterday. I literally thought about food and eating ALL day. I don’t have any extra points left for the week, and it was my goal for the day to only eat 26 points. I ate 35 points yesterday, and that’s actually just a good guess. Blogging about how much I eat on a “bad food day” can be difficult to do because admitting to eating so much in one day is embarrassing. Having this blog has saved me from some really bad binge days. I feel obligated (my choice) to blog everything that I’ve eaten. Last night I could have continued eating all evening long, but knowing I would be blogging about it this […]
