Happy Weekend!
I spent Thursday evening with my Little Sis, Samone, baking cupcakes and making pizza’s here at the house. I experimented with a Cauliflower Crust. It smelled delicious in the oven! I’ll experiment with it again, and post the recipe when I come up with some amazing toppings! The crust wasn’t bad, I just think it could have been better and I could have been a little more creative with my toppings! Samone made mini pizza’s for her and Mike. She also decorated 24 cupcakes and we both made a nice mess in the kitchen! I sent 12 cupcakes home with Samone. I ate this one…… Friday morning, I threw the remainder of the cupcakes away! Those Balls!
So, those Almond Butter Balls that I made on Tuesday tempted me all day long yesterday, but I only ate three of them with my breakfast and two for a snack after dinner, and then I left them alone for the rest of the day! I’m feeling overly proud. You guys….it’s a big deal. Oh, and I walked on the treadmill for 30 minutes! 🙂 Today? Get in some veggies and another treadmill walk! They are a great little sweet treat and they are full of healthy ingredients! Bonus? They are super easy to make! Busy Day….Good Day
Keeping it short today. Yesterday was busy, and full, and good, and happy! Lot’s on the “to do list” for today too! Posting this blog and going straight to the treadmill. 🙂 Have a Great Day! Updates…..
I haven’t posted anything all weekend! I’ve been busy and it’s felt great! Weekend Update….. Friday was a full day with my WW meeting in the morning, then some grocery shopping, a little house work and a small Happy Hour. Saturday I had breakfast with a few girlfriends, came home and did a few chores, went to a movie with friends in the afternoon, followed up with a few app’s and a Bloody Mary. Mike and I made dinner plans with friends, but due to the snow, those were cancelled, so we stayed in for a cozy night at home. Sunday my dad came over for a long coffee visit with Mike and I, then we spent the rest of the day cooking and doing laundry. We spent Sunday afternoon and evening binge watching House of Cards. What’s Up Doc?
No Doc for me today, but I’m heading out the door early this morning to chauffeur Mike to a doctor’s appointment. He’s been having all sorts of throat, heart burn, acid reflex type issues for a few months now, and after giving up several foods and all soda pop, and seeing no change, he’s decided it’s time for the doc. Today they will send a little scope down his throat and hopefully find some answers?? We’re out the door. Have a great day! Here are yesterday’s eats……. Ahhh….Much Better
Tuesday was a much better day than Monday. 🙂 I started off the day with a great breakfast, then I walked on the treadmill. It was only 0.6 mile, but I did it. It didn’t feel good. I think I’ll give the collarbone one more week before I go all treadmill. It was warm enough today to open the Food Truck! I honestly am not sure if I should be working or not, but I wanted to try. I am feeling less pain and the swelling is almost all gone. I was cautious. I know the ultimate goal is to maintain stability in order to heal, and I certainly don’t want to prolong healing, but I wanted to work today. So…..I did. Carb’s and Comfort Food Mood
Let me first say this…… If you are trying to lose weight, or even maintain a weight loss, tracking what you are eating can be such a great tool! Whether you are counting points, or counting calories, or simply writing down what food you eat, I encourage you to continue to do so, even when it’s difficult. I had a rough day yesterday. I didn’t take pictures of everything that I ate, but I did write it all down. When I start to see those points add up, it can be helpful in not going as overboard as I might have otherwise. Yesterday…….was icky. I slept like crap and woke up cranky. I had lot’s of things that I could have done yesterday at home. I did none of them. I had errands that I could have ran. Family Time
We had a great Sunday! As much as I like hanging out with Mike at the house on a Sunday, I’ve been trying to plan things for us to do so were not just sitting on the couch all day, although, once in a while, that’s a pretty good way to spend a Sunday. We’ve been hitting the movie theatre a little more than usual and trying to be better about spending time visiting family. Being an empty nester has it’s perks, but this house can get lonely at times, so we’ve been trying to spend more time seeing our parent’s, kids and grandkids. Yesterday, after lots of coffee and a late breakfast, we went to visit our son and daughter in law, Jake and Jordan.
