I’ve been craving Mexican Restaurant Chicken Fajita’s for a week or two now! I wanted chips, I wanted refried beans and cheese, I wanted tortilla’s and I wanted a cold beer! We had decided to meet some of my family for lunch yesterday afternoon and have a Mexican Feast! When it was time to order drinks…..I went with coffee and water. While the chips sat on the table…..I had none. When I ordered my Chicken Fajita’s, I asked for corn tortilla’s, no rice and black beans. For Super Bowl, we kept it simple and stayed home. January Challenge, Day 31
Well, I made it. I made a challenge for myself for the month of January, and at the end of my challenge, I am feeling very successful. My weigh in on Friday went really well, which set me up for a positive mood for the weekend, and for February. This ridiculously long blog post is really for me. January Challenge, Day 30
My weigh in went really well yesterday morning, and that completely set the mood for me for a healthy weekend. This month has proven to be a good challenge for me. I didn’t miss the alcohol as much as I thought that I would, and I really didn’t miss the sugar as much as I thought that I would. I did my best to stay away from packaged foods, and I only had 1 packaged protein bar for the whole month, and that was really only because I was on an airplane, my stomach was growling, and I found it in my bag from my last trip! January Challenge, Day 29
I waited to post this blog until after I weighed in this morning! Down 3.8! Yay! It’s been a weird month at the scale, and I’ll do a recap of my month and my thoughts on it in Sunday’s post. I was really half scared to eat yesterday! When I stepped on the scale yesterday morning, I was really happy with where it was at, and I didn’t want to jinx it! I ate well yesterday, I drank my water, I avoided salt, I increased my effort at Jazzercise yesterday, I had a “girls night” with some friends last night and I passed on the wine and pizza and cheese platter! Apparently, those choices paid off. I feel like I burned off some serious calories at Jazzercise. Mexican Turkey Black Bean Veggie Skillet
Okay, it’s a mouthful, but I didn’t know what else to call it. I would just call it “Skillet Deliciousness”, but then you wouldn’t have a clue what might be in it until you came here! In an effort to come up with different meal ideas that did not include Gluten, or Dairy, or Red Meat or Sugar, my friend and I have been trying different idea’s, and sending each other pictures on occasion of meal ideas that we came up with. I think the first week that we did our January Challenge, she sent me a picture of a bowl of cooked Turkey and Black Beans with Fire Roasted Tomatoes. Mexican Seasoning
This will season about 2 pounds of ground meat. 4 tsp Chili Powder 2 tsp Sea Salt 2 tsp Paprika 1 tsp Onion Powder 1 tsp Garlic Powder 1/2 tsp Cayenne 1 tsp Cumin Mix all together and store in an airtight container. January Challenge, Day 28

January Challenge, Day 27
I completely forgot to share my trout/salmon experience at the grocery store the other day! I have never bought or cooked trout before, and decided to pick some up at the store. I had read recently that it, like salmon, was a good source of omega 3 fatty acids. Aside from the health benefits, I had decided to give a new fish a try! When I went to the fish counter at my local grocery store, I didn’t see trout. When I asked if they had any trout, the fish man (not to be confused with the fisherman) pointed to the salmon and said…”That’s trout right there.” I replied, “Are you sure?
