Lots going on today. We might be helping Kate get home this afternoon with baby Charlotte, and I still need to shovel her car out of the driveway, so I’m keeping this short today. I didn’t make it to my WW meeting yesterday morning. I was sleeping…… I did not weigh this morning when I woke up. I feel a little puffy. We leave Wednesday for the beach and I am really looking forward to vacation. I bought new swimsuits for this trip and I went through my closet briefly the other day looking at a few things to wear in the evenings. The scale can really do a number on my mood, so I likely will not weigh before we leave. I feel good right now, and I’d like to continue feeling good the remainder of the days here before we leave. I’d Like to Introduce You to……..
Charlotte Anne Born on February 6th at 4:58 p.m. 7 pounds, 5 ounces 20″ Long This is her mom, Kate. (and me!) I don’t think I can put into words today all of the emotions that I have experienced over the last few days. A few days before Charlotte was born, I found out that I was going to get to be IN the delivery room with Kate! I was super excited, but I kept reminding myself that things might change, there might be too many people around, we might be over the limit on people allowed in the room, who knows…… I tried to not let myself get over excited. Blueberry Pancakes
It was another Snow Day……which meant fighting staying away from the pantry. While pondering what all I would get done for the day (and knowing shoveling would fall into the day somewhere for activity points) a girlfriend called to see if I wanted to go Four Wheeling!! You Betcha!! Okay, actually she called to say that she was getting out of the house in her pick up, and would I like to join her? So I did! We ran a few errands, had lunch out, then came home to shovel. But before any of that happened….I made these! So, like I said….pulse just a few times. Too much pulsing makes for runny batter….. Snow Day!!!
A “Snow Day” has had a lot of different meanings throughout my life. When I was a kid, a “Snow Day” was a really big deal and an unexpected day of fun! As a mom, a “Snow Day” meant I had to use a vacation day to stay home with Tess, but still, an unexpected day of fun…..now, a “Snow Day” basically means….. the floors are going to be a mess after the dogs go in and out all day long….. But for some strange reason, I still feel a little excitement inside me when our school district rolls across the bottom of the TV screen. Maybe that feeling never goes away. Maybe I’m just weird. I enjoyed a gorgeous and beautiful 73 degree Friday afternoon in Dallas, and came home to an icy 18 degree Monday in Kansas City. The last 24 hours have been a bit of a whirlwind! First of all, I have rear wheel drive and if we had the snow on the ground yesterday, that we have now, I never would have made it home from the airport! So thankful the snow waited for me to get safely home….. Now, to the big stuff. Our daughter, Kate, was scheduled to go to the hospital Wednesday morning to be induced! Baby Charlotte is on her way!! Due to the arctic blizzard predictions, the Doctor thought it best to delay things until Thursday. A Sunny Day in Dallas!
Let me start with……I spent over an hour and a half yesterday morning writing my blog. I talked about The Life Changing Loaf of Bread that I made on Thursday. I’ll tell you more about it next week when I make it again! I talked about how much fun I had at the airport while I was waiting for Tess to pick me up when she got off work. I inadvertently was talking about my daughters’ love of football because there was a lot of Super Bowl chat around the bar. After the 31 year old lawyer beside me, (that does live in Dallas) expressed interest in my daughter, I took that opportunity to give him a great “Mom” quiz about what kind of a guy he was?? Apple Quesadilla
(Revised to SmartPoints 9/25/16) You will want to make the Warm Cinnamon Apples filling to put in this Quesadilla. I found these Gluten Free, Brown Rice tortilla’s at tSprouts Grocery Store. They remind me more of a pastry? They’re a little flaky…..and they are 4 SmartPoints. I sprayed one of the tortilla’s with nonstick cooking spray. I put it on the hot skillet. I made my Warm Cinnamon Apples, and put them on half of the tortilla, leaving a few out to sprinkle on the top. I browned the tortilla for just a few minutes….then, I don’t know how ordinary people flip their quesadilla’s, but I use my “Pig Cutting Board” that my Great Grandfather made. A Very Tasty Tuesday!

Peanut Butter Packed Pancake!

Since I’ve been reading blogs and looking on Pinterest for recipes, I’ve discovered all sorts of different ways to make an easy, healthy, low point pancake. You really can’t mess these up either. Happy 4th Birthday, Amiyah!
(Revised 1/11/2018 to WWFreestyle) Sunday we celebrated Amiyah’s (our Granddaughter) 4th birthday with a few friends and family. It was a “Frozen” theme, but being all out of the 4 year old loop, I didn’t really know anything about “Frozen” until the party. Her cake was super cute! Her mom always does such a great job decorating! There was even a Photo Booth! Kinda….. Thanks Uncle Jake! Of course, Amiyah had to approve all photo’s…..
