I got, got, got, got no time………

Did you start singing along? I got, got, got, got no time…..no time, no time……..   Okay, for real. I got no time for a long post today, I am out the door to work at the Food Truck, Beauty of the Bistro, in the West Bottoms of Kansas City today! We’ll be there tomorrow too! The Dollar Store

  I’m pretty sure no matter how old our kids are, we are constantly parenting. My recent conversations with Tess seem to include lots of financial advice. I feel like I have done a pretty good job of teaching her to be thrifty, only buy what she can afford, and avoid credit whenever possible. She loves Target just as much as I do, and on occasion, we have to remind each other that you really can buy clothes at other stores besides Target, although neither of us really know’s why one would do that. We like not being overwhelmed by a large selection of clothing and accessories and we like the way our Target jeans fit!!! One time we walked into the ridiculously large Nordstrom Rack, and we practically had simultaneous Panic Attacks!! Oatmeal & Tilapia??

I had an awesome and productive Tuesday! First of all, I am learning a little more about how to write these post. I certainly still have a lot to learn, and a few kinks to work out, but I’m getting there. Last night I posted two new items to the “Food” tab at the top of the page. One is an idea for Oatmeal, the other for Tilapia. You didn’t think I made a recipe with Oatmeal and Tilapia, did you? I am calling it “Food”, not “Recipes”, because I’m really not the best cook, and many times, I’m just throwing stuff together. Tilapia Fajita Bowl

Tilapia Fajita Bowl    This is not so much a recipe, but an idea…….       I had several bell peppers that I needed to eat up, and I had purchased several Tilapia Fillets on sale at the grocery store yesterday. I diced up some peppers and yellow onion and sauteed those in a little bit of Olive Oil. You could certainly use cooking spray too! Then I opened a packet of Fajita seasoning and sprinkled a little bit on the veggies, maybe 1 to 1 1/2 tsp. Then I added a bit of water and let it all sizzle. Then I cut up a tilapia fillet into bite size pieces and cooked it for a couple of minutes on both sides. Chocolate Peanut Butter Banana Oatmeal

Ingredients 1/2 C. Dry Quick Cooking Oats 2 T. Chocolate PB2 1 Packet of sweetener of your choice 1/2 Banana, smashed 3/4 C. Boiling Water 1/2 Banana, sliced Combine all dry ingredients, then add smashed banana. Pour boiling water over the top and stir. Now get yourself a nice cup of coffee, let the dogs in, yell at the kids to get up. Whatever you need to do for the next 2 to 3 minutes while that Peanut Butter Powder does it’s thing! Top with Sliced Banana 5 PointsPlus “love the life you live, live the life you love”

A Very Quiet Labor Day

  My “Worker Bee” of a husband went to the office. Typically, the Holiday Weekends are a good opportunity for him to play “catch up” since his phone is so quiet.  I’ve become so used to it, I’m no longer the nagging wife. When he does get caught up, he’s a Happy Man! When he’s happy, I’m happy. Funny what 14 years of marriage will teach you! I spent the day walking the dogs, walking myself, doing a few chores, making phone calls and getting caught up myself! I found this on my walk! That was probably the most exciting thing to happen all day, until dinner. I made myself one of my favorites, but one of Mike’s least favorites, so I put together a little something special for him. Greek Yogurt Banana Bread Protein Pancakes

That title is enough to make a girl hungry!! I follow another blogger, and she always has the BEST and EASIEST recipes! And BONUS!! I usually know what ALL of the ingredients are!! She had a recipe for a Banana Bread Protein Pancake made with Cottage Cheese. I had Greek Yogurt on hand, so I gave that a try. Click HERE to check out her awesome website! It’s Finally Done!!

I’m super excited to be writing my first blog post today from my new site!! Again, I have to thank my awesome son, Jake, for whom I owe greatly!! I don’t really think he realizes how much help he was to me. I was either going to have to break down and pay someone to help me finish things up, or take a lot longer to learn what I was doing and not have it ready to go by the deadline I had hoped for, which is today!!!
